This study evaluated the effect of starter culture and fermentation period on the isoflavone content of protein-rich soybeans variety TG145. Initially, soybeans were washed, soaked in water for 16 h and autoclaved at 121°C for 40min. Three different bacterial starter cultures (~104 CFU/g) namely Bacillus subtilis BEST195, B. subtilis Asaichiban and B. subtilis TN51 were then added and the fermentation was allowed to proceed at 42°C for 24 h (natto-style) and 72 h (thua nao-style). The quantities of six major isoflavones (daidzin, genistin, glycitin, daidzein, genistein, and glycitein) were then determined in these fermented soybean products using reverse phase HPLC technique. Generally, our results clearly showed that the content of total isoflavones in the fermented products prepared by Bacillus starter cultures greatly increased ranging from 43 to 99% compared to that of the unfermented autoclaved soybeans. In addition, a dramatic increase of aglycones was also observed (> 400%) in the soybean products fermented by Bacillus subtilis strain TN51. This present study suggests a promising use of Bacillus starter cultures in improving isoflavone compounds especially the aglycones which would benefit for novel functional food development.

Soybeans can be consumed directly as food, and in China hey are the major ingredient in food products such as tofu and soy milk, but direct consumption is small relative to their wider use in animal feed, and it is the requirement for livestock feed that drives international trade. Rapid growth of economies and population, especially in Asia, has led to increased demand for animal protein and cooking oil. This paper analyses the recent growth in supply of soybeans from North and South America to China, and considers the factors that may affect this trade in future; a contrast is made with supply from North and South America to Europe, which has not been increasing. The constraints preventing an increase in supply of soybeans to Europe are reviewed. The paper concludes with brief discussion of the factors which will affect world markets for soybeans and soybean products in future.

El conflicto agrario del año 2008 dividió a la sociedad argentina en sectores que apoyaron y se opusieron a la aprobación de la Resolución Nº 125 de la Secretaria de Agricultura, Ganadería. Pesca y Alimentación referida a establecer derechos de exportación móviles a la exportación de granos y derivados de la soja. La confrontación abordó, indirectamente, un clásico debate teórico en la historia económica argentina, el del origen y definición del concepto renta de la tierra y su distribución, cuestiones que incluyen como tema principal a la Renta Diferencial. La problemática abordada por diversos autores, entre los que se pueden citar trabajos recientes de Ernesto Laclau, Guillermo Flichman, Eduardo Azcuy Ameghino y Juan Iñigo Carreras, remite a los enfoques teóricos propuestos por Adam Smith, David Ricardo y Carlos Marx sobre esas cuestiones aplicados a países europeos en el siglo XIX. El objeto de este trabajo es analizar aquellos conceptos clásicos sobre la renta y contrastar los enunciados de esos enfoques teóricos con datos estadísticos referidos a la evolución de la producción y renta derivada de la producción de soja y sus derivados en las décadas inmediatamente anteriores y durante el año 2008, cuando se produjo el largo conflicto agrario. A la luz de lo señalado, se pretende analizar la vigencia y limitaciones de los enfoques teóricos tradicionales para analizar la realidad agraria presente

The soybean aphid (Aphis glycines), native to China, has become the most economically damaging insect in soybeans in northeast Iowa. Soybean aphid may have up to 18 generations per year, beginning with overwintering eggs on the alternate host buckthorn. In spring, winged aphids migrate from buckthorn to nearby emerged soybeans. Generations advance in these fields, and then another winged migration occurs in summer spreading from these fields to others. A third migration occurs in fall with aphids moving back to buckthorn. Depending on the season, soybean proximity to buckthorn, and soybean aphid migration patterns, populations of aphids tend to peak in soybeans anywhere from late July to early September. With higher aphid populations, the production of honeydew (the excrement of the aphid) and the resulting black fungus that grows on it (sooty mold) may become apparent. Aphid feeding may cause stunted plants, reduced pods and seeds, and may also transmit viruses that could cause mottling and distortion of leaves, reduced seed set, and discolored seeds.

In previous work with soybean (Glycine max), it was reported that the initial product of 3Z-nonenal (NON) oxidation is 4-hydroperoxy-2E-nonenal (4-HPNE). 4-HPNE can be converted to 4-hydroxy-2E-nonenal by a hydroperoxide-dependent peroxygenase. In the present work we have attempted to purify the 4-HPNE-producing oxygenase from soybean seed. Chromatography on various supports had shown that O2 uptake with NON substrate consistently coincided with lipoxygenase (LOX)-1 activity. Compared with oxidation of LOX's preferred substrate, linoleic acid, the activity with NON was about 400- to 1000-fold less. Rather than obtaining the expected 4-HPNE, 4-oxo-2E-nonenal was the principal product of NON oxidation, presumably arising from the enzyme-generated alkoxyl radical of 4-HPNE. In further work a precipitous drop in activity was noted upon dilution of LOX-1 concentration; however, activity could be enhanced by spiking the reaction with 13S-hydroperoxy-9Z,11E-octadecadienoic acid. Under these conditions the principal product of NON oxidation shifted to the expected 4-HPNE. 4-HPNE was demonstrated to be 83% of the 4S-hydroperoxy-stereoisomer. Therefore, LOX-1 is also a 3Z-alkenal oxygenase, and it exerts the same stereospecificity of oxidation as it does with polyunsaturated fatty acids. Two other LOX isozymes of soybean seed were also found to oxidize NON to 4-HPNE with an excess of 4S-hydroperoxy-stereoisomer.

The characteristic of biodiesel fuel production from transesterification of soybean oil is studied. The reactant solution is the mixture of soybean oil, methanol, and solvent. A new lipase immobilization method, textile cloth immobilization, was developed in this study. Immobilized Candida lipase sp. 99-125 was applied as the enzyme catalyst. The effect of flow rate of reaction liquid, solvents, reaction time, and water content on the biodiesel yield is investigated. Products analysis shows that the main components in biodiesel are methyl sterate, methyl hexadecanoate, methyl oleate, methyl linoleate, and methyl linolenate. The test results indicate that the maximum yield of biodiesel of 92% was obtained at the conditions of hexane being the solvent, water content being 20 wt%, and reaction time being 24 h.
