A descriptive study was developed to compare air and surfaces fungal contamination in ten hospitals’ food units and two food units from companies. Fifty air samples of 250 litres through impaction method were collected from hospitals’ food units and 41 swab samples from surfaces were also collected, using a 10 by 10 cm square stencil. Regarding the two companies, ten air samples and eight surface samples were collected. Air and surface samples were collected in food storage facilities, kitchen, food plating and canteen. Outdoor air was also collected since this is the place regarded as a reference. Simultaneously, temperature, relative humidity and meal numbers were registered. Concerning air from hospitals’ food units, 32 fungal species were identified, being the two most commonly isolated genera Penicillium sp.

Diplomityön tavoitteena on ollut kehittää elintarvikeyrityksen palveluruokamarkkinoille uusi innovatiivinen toimintamalli haastattelujen, havainnoinnin ja kirjallisuuden perusteella. Tutkimusongelman päätutkimuskysymys on: Miten yrityksen palveluruoka- eli valmisruokatuotteille suunnitellaan innovatiivinen toimintamalli tuoteperheen ja jakelun suhteen? Tavoitteena on kartoittaa yrityksen palveluruoan nykytilanne ja luoda toimintamalli, joka toisi yritykselle selkeää lisäarvoa ja kilpailuetua. Teoreettisessa osuudessa selvitetään elintarviketeollisuuden, valmisruoan ja elintarvikelogistiikan tilannetta suomalaisesta ja globaalista näkökulmasta. Työssä on tarkasteltu elintarvikepuolen nykytilannetta ja tulevaisuuden suuntauksia tuotteiden, ruokailutottumusten ja logistiikan osalta. Innovaatioiden osalta työ painottuu palveluruokapuolen konseptin ja uuden logistisen yhteistyöhön pohjautuvan mallin kehittämiseen. Työn käytännön osiossa on tehty case-tutkimus ”yrityksen palveluruoan nykytilanne tuotteiden ja logistiikan osalta”. Toimialan markkinatilannetta on kartoitettu, jotta hahmotetaan, missä on potentiaalisimmat markkinat palveluruoalle. Työn tavoitteena on ollut kehittää Hoviruoka Oy:lle palveluruoan segmentointiin ja logistiikkaan liittyvä innovatiivinen toimintamalli. Toimintamallin avulla yritys saa kilpailuetua ja taloudellista hyötyä kilpailijoihin nähden, ja on edelläkävijä kyseisen toimintamallin ansiosta. Työn tuloksissa on käsitelty keskeiset tulokset ja mahdolliset jatkotoimenpiteet. Työssä kehitettiin yritykselle uusi toimintamalli palveluruoka puolelle. Työlle asetetut tavoitteet saavutettiin kaikkien kolmen - tekijän, yliopiston ja yrityksen - kannalta.

O objetivo deste trabalho é identificar e descrever os processos de gerenciamento dos projetos de ajuste na estrutura organizacional, processos e governança de uma grande empresa brasileira. Os processos de gerenciamento de projetos são o encadeamento das ações e atividades que permitem atingir os objetivos do projeto, constituindo o objeto de estudo do Guia PMBOK e outras bases de conhecimento em gestão de projetos. A pesquisa identificou e descreveu o fluxo de gerenciamento dos projetos de gestão de uma das gerências da Empresa “X” a partir de análise documental, entrevistas e observação participativa. Os resultados foram analisados à luz do referencial teórico sobre processos de gerenciamento de projetos, processos de gerenciamento “front-end” e governança de projetos. A pesquisa concluiu que, comparado ao processo de gerenciamento previsto no Guia PMBOK, o gerenciamento dos projetos de gestão analisados coloca ênfase relativamente maior nos processos que antecedem o início formal do projeto (processos front-end), responsáveis por garantir seu alinhamento aos direcionadores e variáveis organizacionais.

The main objective of this Master’s thesis is to develop a cost allocation model for a leading food industry company in Finland. The goal is to develop an allocation method for fixed overhead expenses produced in a specific production unit and create a plausible tracking system for product costs. The second objective is to construct an allocation model and modify the created model to be suited for other units as well. Costs, activities, drivers and appropriate allocation methods are studied. This thesis is started with literature review of existing theory of ABC, inspecting cost information and then conducting interviews with officials to get a general view of the requirements for the model to be constructed. The familiarization of the company started with becoming acquainted with the existing cost accounting methods. The main proposals for a new allocation model were revealed through interviews, which were utilized in setting targets for developing the new allocation method. As a result of this thesis, an Excel-based model is created based on the theoretical and empiric data. The new system is able to handle overhead costs in more detail improving the cost awareness, transparency in cost allocations and enhancing products’ cost structure. The improved cost awareness is received by selecting the best possible cost drivers for this situation. Also the capacity changes are taken into consideration, such as usage of practical or normal capacity instead of theoretical is suggested to apply. Also some recommendations for further development are made about capacity handling and cost collection.

Integration of marketing research data in new product development. Case study: Food industry company

The aim of this master’s thesis is to provide a real life example of how marketing research data is used by different functions in the NPD process. In order to achieve this goal, a case study in a company was implemented where gathering, analysis, distribution and synthesis of marketing research data in NPD were studied. The main research question was formulated as follows: How is marketing research data integrated and used by different company functions in the NPD process? The theory part of the master’s thesis was focused on the discussion of the marketing function role in NPD, use of marketing research particularly in the food industry, as well as issues related to the marketing/R&D interface during the NPD process. The empirical part of the master’s thesis was based on qualitative explanatory case study research. Individual in-depth interviews with company representatives, company documents and online research were used for data collection and analyzed through triangulation method. The empirical findings advocate that the most important marketing data sources at the concept generation stage of NPD are: global trends monitoring, retailing audit and consumers insights. These data sets are crucial for establishing the potential of the product on the market and defining the desired features for the new product to be developed. The findings also suggest the example of successful crossfunctional communication during the NPD process with formal and informal communication patterns. General managerial recommendations are given on the integration in NPD of a strategy, process, continuous improvement, and motivated cross-functional product development teams.

This article intends to show the relationships between quality practices and the process of organizational learning. When we look at the literature about programs of continuous improvement we see that theoreticians consider that the process of organizational learning is a superior stage in the quality culture adopted by companies. To investigate this possibility, we put together a series of indicators taken from classic authors who have written about organizational learning. Adopting a multiple methodology, we applied these indicators to two plants belonging to the Nestlé food product company which have introduced continuous improvement programs over the last two years.
