The safety of food has become an increasingly interesting issue to consumers and the media. It has also become a source of concern, as the amount of information on the risks related to food safety continues to expand. Today, risk and safety are permanent elements within the concept of food quality. Safety, in particular, is the attribute that consumers find very difficult to assess. The literature in this study consists of three main themes: traceability; consumer behaviour related to both quality and safety issues and perception of risk; and valuation methods. The empirical scope of the study was restricted to beef, because the beef labelling system enables reliable tracing of the origin of beef, as well as attributes related to safety, environmental friendliness and animal welfare. The purpose of this study was to examine what kind of information flows are required to ensure quality and safety in the food chain for beef, and who should produce that information. Studying the willingness to pay of consumers makes it possible to determine whether the consumers consider the quantity of information available on the safety and quality of beef sufficient. One of the main findings of this study was that the majority of Finnish consumers (73%) regard increased quality information as beneficial. These benefits were assessed using the contingent valuation method. The results showed that those who were willing to pay for increased information on the quality and safety of beef would accept an average price increase of 24% per kilogram. The results showed that certain risk factors impact consumer willingness to pay. If the respondents considered genetic modification of food or foodborne zoonotic diseases as harmful or extremely harmful risk factors in food, they were more likely to be willing to pay for quality information. The results produced by the models thus confirmed the premise that certain food-related risks affect willingness to pay for beef quality information. The results also showed that safety-related quality cues are significant to the consumers. In the first place, the consumers would like to receive information on the control of zoonotic diseases that are contagious to humans. Similarly, other process-control related information ranked high among the top responses. Information on any potential genetic modification was also considered important, even though genetic modification was not regarded as a high risk factor.

This work evaluated the beef quality parameters of 108 bulls randomly administered to three treatments during rearing in pastures and two treatments during fatting in feedlots, including mineral and rumen-protected lipids. Meat and fat color, cooking yield, shear force, sensorial traits and chemical and fatty acid compositions were evaluated. Generally, the beef quality parameters were not affected by the rumen protected lipids; however, supplementation with rumen-protected lipids during the rearing period yielded darker beef and brighter fat and increased beef tenderness in meat aged for 28 days compared to the meat from animals that received only mineral supplementation. In addition, the percent of meat polyunsaturated fatty acids was negatively affected by the inclusion of protected lipids, yielding 5.58 and 3.72% in animals fed with and without rumen-protected lipids, respectively, during the fatting period. The noteworthy of this study is to predict seven quality parameters for beef samples using time-domain nuclear magnetic resonance (TD-NMR) relaxometry data and multivariate models. Samples from 61 Bonsmara heifers were separated into five groups based on genetic (breeding composition) and feed system (grain and grass feed). Seven sample parameters were analyzed by reference methods; among them, three sensorial parameters, flavor, juiciness and tenderness and four physicochemical parameters, cooking loss, fat and moisture content and instrumental tenderness using Warner Bratzler shear force (WBSF). The raw beef samples of the same animals were analyzed by TD-NMR relaxometry using Carr-Purcell-Meiboom-Gill (CPMG) and Continuous Wave-Free Precession (CWFP) sequences. Regression models computed by partial least squares (PLS) chemometric technique using CPMG and CWFP data and the results of the classical analysis were constructed. The results allowed for the prediction of aforementioned seven properties. The predictive ability of the method was evaluated using the root mean square error (RMSE) for the calibration (RMSEC) and validation (RMSEP) data sets. The reference and predicted values showed no significant differences at a 95% confidence level.

The potential of Raman spectroscopy for the determination of meat quality attributes has been investigated using data from a set of 52 cooked beef samples, which were rated by trained taste panels. The Raman spectra, shear force and cooking loss were measured and PLS used to correlate the attributes with the Raman data. Good correlations and standard errors of prediction were found when the Raman data were used to predict the panels' rating of acceptability of texture (R-2 = 0.71, Residual Mean Standard Error of Prediction (RMSEP)% of the mean (mu) = 15%), degree of tenderness (R-2 = 0.65, RMSEP% of mu = 18%), degree of juiciness (R-2 = 0.62, RMSEP% of mu = 16%), and overall acceptability (R-2 = 0.67, RMSEP% of mu = 11%). In contrast, the mechanically determined shear force was poorly correlated with tenderness (R-2 = 0.15). Tentative interpretation of the plots of the regression coefficients suggests that the alpha-helix to beta-sheet ratio of the proteins and the hydrophobicity of the myofibrillar environment are important factors contributing to the shear force, tenderness, texture and overall acceptability of the beef. In summary, this work demonstrates that Raman spectroscopy can be used to predict consumer-perceived beef quality. In part, this overall success is due to the fact that the Raman method predicts texture and tenderness, which are the predominant factors in determining overall acceptability in the Western world. Nonetheless, it is clear that Raman spectroscopy has considerable potential as a method for non-destructive and rapid determination of beef quality parameters.

In Australia rural research and development corporations and companies expended over $AUS500 million on agricultural research and development. A substantial proportion of this is invested in R&D in the beef industry. The Australian beef industry exports almost $AUS5billionof product annually and invest heavily in new product development to improve the beef quality and improve production efficiency. Review points are critical for effective new product development, yet many research and development bodies, particularly publicly funded ones, appear to ignore the importance of assessing products prior to their release. Significant sums of money are invested in developing technological innovations that have low levels and rates of adoption. The adoption rates could be improved if the developers were more focused on technology uptake and less focused on proving their technologies can be applied in practice. Several approaches have been put forward in an effort to improve rates of adoption into operational settings. This paper presents a study of key technological innovations in the Australian beef industry to assess the use of multiple criteria in evaluating the potential uptake of new technologies. Findings indicate that using multiple criteria to evaluate innovations before commercializing a technology enables researchers to better understand the issues that may inhibit adoption.

Iron (Fe) is an essential mineral for metabolism and plays a central role in a range of biochemical processes. Therefore, this study aimed to identify differentially expressed (DE) genes and metabolic pathways in Longissimus dorsi (LD) muscle from cattle with divergent iron content, as well as to investigate the likely role of these DE genes in biological processes underlying beef quality parameters. Samples for RNA extraction for sequencing and iron, copper, manganese, and zinc determination were collected from LD muscles at slaughter. Eight Nelore steers, with extreme genomic estimated breeding values for iron content (Fe-GEBV), were selected from a reference population of 373 animals. From the 49 annotated DE genes (FDR<0.05) found between the two groups, 18 were upregulated and 31 down-regulated for the animals in the low Fe-GEBV group. The functional enrichment analyses identified several biological processes, such as lipid transport and metabolism, and cell growth. Lipid metabolism was the main pathway observed in the analysis of metabolic and canonical signaling pathways for the genes identified as DE, including the genes FASN, FABP4, and THRSP, which are functional candidates for beef quality, suggesting reduced lipogenic activities with lower iron content. Our results indicate metabolic pathways that are partially influenced by iron, contributing to a better understanding of its participation in skeletal muscle physiology.

Colombia es un país que gracias a sus características topográficas y ubicación privilegiada se destaca por su amplia variedad de ganado en las diferentes regiones del país, esto le ha permitido tener diversas ventajas frente a otros países. Sin embargo, desde el año 2012 entro en vigencia el Tratado de Libre Comercio con Estados Unidos, en donde se demostró que debido a los subsidios y al bajo costo en la producción ganadera, este país ofrece precios inferiores a los de Colombia, con los cuales es más difícil disputar. Por esto es importante que Colombia logré implementar estrategias para competir con precios como los de Estados Unidos y a su vez debe buscar la admisibilidad sanitaria para lograr exportar nuestros productos a esta Potencia. Además, Colombia debe identificar las oportunidades, fortalezas y amenazas que se tienen con el Tratado de Libre comercio, para establecer diferentes proyectos y programas los cuales permitan potencializar el subsector ganadero colombiano.

Important information about the Brazilian agribusiness, population and economy are presented in this paper, as well as details of beef production, market, industry and production system, to inform people involved in meat industry about details on demography, production, economy and production systems of a country that is the largest player in beef exports in the world and that uses, mostly, Bos indicus based bovine population, reared under pasture conditions, for meat production purposes. Herd size, genetic evaluation programs, quantity of beef produced and market is informed, with figures about the global and major players` production. Some discussion related to environmental concerns, methane emission and carbon fixation is also presented, as well as meat quality. O manejo do pastejo e a suplementação estratégica permitem maximizar a produção de carne bovina em pastagens de forma sustentável. A intensidade de pastejo influencia diretamente o crescimento individual, taxas de aparecimento e mortalidade de perfilhos, a determinar o acúmulo de forragem e a estrutura do dossel. Dessa forma, nas águas, é função do manejo do pastejo adequar a frequência e intensidade de desfolhação para que o animal possa colher forragem com idade fisiológica e valor nutritivo adequados. A idade e tamanho dos perfilhos determinam a proporção de tecidos de suporte lignificados que reduzem a digestibilidade da forragem. No período seco, o manejo do pasto e a estratégia de diferimento, ao final do período das águas, são determinantes na obtenção de forragem de melhor valor nutritivo. Assim, o manejo das pastagens visa, primeiramente, à produção de forragens com altos teores de fibra potencialmente digestíveis. A partir de então, a caracterização da quantidade e qualidade da forragem são primordiais à adequação dos nutrientes fornecidos, via suplementos, para otimizar a utilização dos recursos forrageiros basais. A suplementação da dieta dos animais em pastejo, com concentrado, permite aumentar o desempenho dos animais, o que reduz a idade de abate e melhora a qualidade da carcaça e da carne obtida, além dos benefícios na preparação dos animais terminados em confinamento. Portanto, o manejo do pastejo e a suplementação da dieta dos animais permitem aumento de produtividade e maior qualidade dos produtos.

Objetivou-se avaliar o efeito da suplementação com cromo complexado à molécula orgânica do suplemento no desempenho produtivo, nas características de carcaça e na qualidade da carne de bovinos terminados em regime de pastagem. Foram utilizados 18 bovinos Nelore e 18 F1 Brangus × Nelore castrados, com 16 meses de idade, mantidos com suplementação mineral protéica, com ou sem cromo complexado à molécula orgânica e abatidos aos 22 meses de idade. O ganho médio diário de peso vivo (GMD) não diferiu entre grupos genéticos, entretanto animais mantidos com suplemento contendo cromo apresentaram maior GMD (494 g) em comparação aos demais (420 g). A adição de cromo orgânico no suplemento não promoveu alterações na área de olho-de-lombo (63,42 cm²) e na espessura de gordura subcutânea do dorso (5,46 mm) e da garupa (5,58 mm), tomados por meio do ultra-som. O peso médio de carcaça quente foi 235 kg e o rendimento médio de carcaça quente, 52,09%, com superioridade do suplemento contendo cromo (238 kg e 52,9%) em relação ao controle (231 kg e 51,2%). Animais Nelore e F1 Brangus × Nelore apresentam potencial similar de produção de carne a pasto. A suplementação mineral protéica com adição de cromo complexado à molécula orgânica aumenta o ganho de peso e o rendimento de carcaça, mas não influencia os parâmetros qualitativos da carne.
