RESUMO: O desafio era mostrar aquilo que poucos vêem e ninguém mede, mas que pode ajudar a resolver muitos problemas no sector da restauração. Assim, o objectivo é identificar, analisar e mensurar os custos de desempenho ocultos no dia-a-dia de um restaurante. A síntese bibliográfica reflecte a pesquisa efectuada, visando um método que nos ajudasse a medir concretamente os disfuncionamentos que ocorrem nos desempenhos diários dos empregados de mesa de um restaurante. Descobrimos a abordagem socioeconómica de Henri Savall e o seu método de avaliação dos custos de desempenho ocultos. Explicitamos de seguida este método de Savall e apresentamos uma síntese da história do restaurante, com o intuito de mostrar que, desde o seu nascimento, o restaurante é muito mais do que um local onde vamos comer. Feito este caminho, apresentamos o restaurante de luxo que escolhemos e onde aplicámos o método de avaliação dos custos de desempenho ocultos com algumas alterações, pois originalmente este método foi desenvolvido e aplicado ao sector da Indústria. Terminamos com a explicação da forma como aplicámos o método e os respectivos resultados encontrados. Concluímos que a aplicação do método escolhido revela informações preciosas para a gestão e para a tomada de decisão e enfatiza a importância do trabalho efectuado pelos empregados de mesa no seu dia-a-dia. ABSTRACT: Our challenge was to show what few people see and nobody measures, but that can help to solve lots of problems in the restaurants line of business. Our objective is to identify, analyze and measure the performance hidden costs in the daily activity of a restaurant. The bibliography used reflects the researches made, searching for a method which would help us to measure in detail the dysfunctions which occur in the daily performance of the waiters in a restaurant. We discovered the socioeconomic approach of Henri Savall and its evaluation method of the performance hidden costs. Next, we explain Savall’s method and present a synthesis of the restaurant history with the aim to show that, since its birth, the restaurant is much more than the place where people go to eat. This path made, we present the luxury restaurant which was chosen and where we have applied the evaluation method of the performance hidden costs, with some minor changes, because originally this method was developed and applied in the Industry sector. We finalize this work with the explanation of the way how we applied the method and with the presentation of the results. We have concluded that the application of the chosen method of study reveals vital information for the management department and for the decision processes, and that it emphasizes the importance of the waiters in their daily work inside a restaurant.

This thesis studies the marketing plan for the new brand Book-a-Cook. Book-a-Cook is an online platform connecting well-to-do urban Germans with professional chefs that prepare meals at consumer's homes. By analyzing the external and internal audit, it was possible to develop an appropriate strategy to launch the service in Germany. The main goals are stimulating demand and creating a strong brand in order to establish a successful business model. A quantitative research was made to identify potential customers, their needs and how Book-a-Cook can satisfy them.

Tutkimuksen tarkoituksena oli selvittää tulospalkkiojärjestelmän vaikutuksia käytännössä. Päätutkimusongelmat olivat: toimiiko tulospalkkiojärjestelmä toivotulla tavalla ja jos ei toimi, niin miten sitä tulisi kehittää? Vastausten saamiseksi kerättiin empiiristä aineistoa suomalaisesta hotelli- ja ravintola-alan yrityksestä. Aineisto kerättiin www-kyselynä Internetin kautta. Kyselyssä selvitettiin mielipiteitä myös avoimin kommentein. Teorian mukaan hyvin toimiva tulospalkkiojärjestelmä voi tukea merkittävästi yrityksen strategisten tavoitteiden saavuttamista. Toisaalta huonosti suunniteltu ja strategian kanssa ristiriidassa oleva järjestelmä voi toimia tavoitteiden vastaisesti. Tulospalkkiojärjestelmän rakenne, kehittämistapa, yhteensopivuus strategian kanssa sekä ennen kaikkea työntekijöiden tietämys järjestelmästä vaikuttavat tulospalkkiojärjestelmän merkitykseen työntekijöille. Tulospalkkiojärjestelmä vaikuttaa yksilön toimintaan merkityksensä kautta. Tutkimuksen teoreettisena viitekehyksenä käytettiin TKK:n tulospalkkiojärjestelmän toimivuusmallia. Mallin avulla arvioitiin tulospalkkiojärjestelmän vaikutuksia tavoitteisiin, toimintaan, yhteistyöhän ja ilmapiiriin sekä työasenteisiin. Lisäksi arvioitiin järjestelmän toimivuutta järjestelmän tarkoituksen, rakenteen sekä esimiestyön kannalta. Tutkimustulokset osoittavat arvioidun järjestelmän toimivan pääosin hyvin ja sillä on merkitystä työntekijöille. Järjestelmä tunnetaan hyvin ja sillä on myös rahallista merkitystä. Toteutuneiden tulospalkkioiden määrä ei kuitenkaan näytä olevan riittävän suuri motivoidakseen sellaisenaan. Teorian ja tutkimustulosten perusteella esitettiin ehdotuksia tulospalkkiojärjestelmän kehittämiseksi. Tulospalkkiojärjestelmää tulisi kehittää yksinkertaisemmaksi, jotta sillä olisi enemmän toivottuja vaikutuksia.

Picanha Burger es un restaurante que busca diferenciarse de sitios similares en el tipo de comida ofrecido en la ciudad de Bogotá, gracias a aspectos como calidad en el producto y en el servicio, relación entre calidad y precio, el valor agregado que se ofrecerá al público y la originalidad de los productos. Este restaurante se especializará en preparar hamburguesas de Picanha, plato tradicional en la cultura brasilera; es por esto que se desea entrar en el negocio de las comidas puesto que es un producto muy atractivo y de calidad superior a muchos otros de los que actualmente se ofrecen en el mercado, por lo que es notablemente diferente en cuanto a producto y estilo del negocio frente a los competidores. Después de realizar el estudio de mercados se estableció el público objetivo según la propuesta del negocio. Dicho estudio arrojó que este mercado estará conformado por personas que se encuentren en los estratos socio-económicos 4,5 y 6, y que no superen la edad de los 60 años. Este público objetivo está conformado por 696.240 personas. El sector gastronómico en Colombia está en crecimiento y representa una opción bastante atractiva para los inversionistas extranjeros así como para los nacionales. Inclusive mundialmente se está alabando el buen momento que vive la gastronomía colombiana; revistas especializadas como La Barra han destacado la excelente oferta gastronómica que Bogotá presenta.

This study aims to investigate the mediating effects of consumer satisfaction on the relationship between consumer-based brand equity and brand loyalty in the hotel and restaurant industry. Based on a sample of 378 customers and using structural equation modelling approach, the five dimensions of brand equity—physical quality, staff behaviour, ideal self-congruence, brand identification and lifestyle-congruence—are found to have positive effects on consumer satisfaction. The findings of the study suggest that consumer satisfaction partially mediates the effects of staff behaviour, ideal self-congruence and brand identification on brand loyalty. The effects of physical quality and lifestyle-congruence on brand loyalty are fully mediated by consumer satisfaction.

En los últimos años es evidente el éxito creciente de la gastronomía, no sólo como mercado económico sino también desde una perspectiva comunicativa. Entendida como una Industria Creativa, la gastronomía está adquiriendo cada vez más peso en el mercado de la comunicación y se están desarrollando planes estratégicos que acercan progresivamente el sector gastronómico a todos los públicos, democratizando el arte de la cocina y haciendo de éste un talento accesible y disponible para todos los públicos. En pleno contexto de crecimiento, las estrategias y recursos comunicativos que utilizan tanto los mass media como los propios restaurantes y profesionales de la cocina, se han de convertir en objeto de estudio necesario para entender, por ejemplo, de qué manera se explotan los recursos comunicacionales y cuál es el alcance de los mismos así como sus oportunidades. El presente artículo se centra en un análisis de contenido de las páginas webs y las redes sociales utilizadas por los ocho restaurantes españoles galardonados con tres estrellas por la Guía Michelin España-Portugal (2014), sometidos a estudio en la misma semana (del 15 al 21 de septiembre). El objetivo principal es tratar de conocer estrategia de comunicación online llevada a cabo por estos restaurantes y establecer la importancia que se les atribuye a los recursos web a la hora de contribuir tanto a la consolidación de sus propias marcas como a la propia Industria Creativa gastronómica. Los resultados muestran cierta disparidad en el uso tanto de los recursos web como de los social media y avanzan que el sector gastronómico y de la restauración española tiene un reto: seguir comunicando implicándose en mayor medida con la bidireccionalidad e invitación a la participación de sus públicos, con el objetivo de captar nuevos contactos, fidelizar a los clientes actuales y convertir a todos ellos en prescriptores de sus servicios.

Customer satisfaction and service quality are two important concepts in the marketing literature. However, there has been some confusion about the conceptualisation and measurement of these two concepts and the nature of the relationship between them. The primary objective of this research was to develop a more thorough understanding of these concepts, and a model that could help to explain the links between them and their relationships with post-purchase behaviour. A preliminary theoretical model was developed, based on an exhaustive review of the literature. Following exploratory research, the model was revised by incorporating "Perceived Value" and "Perceived Sacrifice" to help explain customer's post-purchase behaviour. A longitudinal survey was conducted in the context of the restaurant industry, and the data were analysed using structural equation modelling. The results provided evidence to support the main research hypotheses. However, the effect of "Normative Expectations" on "Encounter Quality" was insignificant, and "Perceived Value" had a direct effect on "Behavioural Intentions" despite expectations that such an effect would be mediated through "Customer Satisfaction". It was also found that "Normative Expectations" were relatively more stable than "Predictive Expectations". It is argued that the present research significantly contributes to the marketing literature, and in particular the role of perceived value in the formation of customers' post-purchase behaviour. Further research efforts in this area are warranted.

The purpose of this paper is to explore the use of automated inventory management systems (IMS) and identify the stage of technology adoption for restaurants in Aruba. A case study analysis involving twelve members of the Aruba Gastronomic Association was conducted using a qualitative research design to gather information on approaches currently used as well as the reasons and perceptions managers/owners have for using or not using automated systems in their facilities. This is the first study conducted using the Aruba restaurant market. Therefore, the application of two technology adoption models was used to integrate critical factors relevant to the study. Major findings indicated the use of an automated IMS in restaurants is limited, thus underscoring the lack of adoption of technology in this area. The results also indicated that two major reasons that restaurants are not adopting IMS technology are budgetary constraints and service support. This study is imperative for two reasons: (1) the results of this study can be used as a comparison for future IMS adoption, not only for Aruba’s restaurant industry but also for other Caribbean destinations and the U.S., (2) this study also provides insight into the additional training and support help needed in hospitality technology services.

Social responsibility (SR) is becoming an increasingly significant component of many firms’ strategic planning decisions. Research has shown that consumers tend to reward socially responsible behavior. However, there has been little testing of the construct in the hospitality industry. Additionally, when other important variables that influence consumer brand loyalty are considered, will brand social responsibility image (BSRI) still play a significant role? This study investigates the importance of SR and its impact on brand loyalty, relative to product quality and service quality in the quick-service restaurant industry. The authors were also interested to learn whether BSRI impacted consumers' image of product and service quality. It was found that BSRI had a positive impact on brand loyalty, product quality, and service quality. However, product quality was a significantly stronger predictor of brand loyalty than BSRI. Where the vast majority of studies of SR have utilized scenario analysis of hypothetical firms, this study utilizes consumers' perceptions of a real-world firm.

The purpose of this study was to investigate the motivations that push consumers to dine out and restaurant attributes that pull diners to a specific restaurant. Surveys were administered to a convenience sample of 559 respondents at a large university in the Southwest of the USA. Crosstabs, ANOVA, Correlations, Factor Analysis and Multiple Regression were employed to explore differences and relationships between variables. Findings identified a profile of diners at casual restaurants. Using the involvement construct, the push-pull motivational framework, and the hedonic and utilitarian motivational framework, results of this study indicate two primary reasons behind the decision to dine out at casual restaurants and six principal attributes that draw customers into these types of restaurants. In addition, diners were categorized into high/medium/low involvement categories and the linkages between involvement levels and motivations were explored. Both hedonic and utilitarian motivations were identified. Furthermore, motivational factors and restaurant attributes were found to predict diner loyalty. This paper provides the restaurant industry with insight and understanding as to what attracts diners into an establishment and what influences decisions behind dining out.

The use of tabletop technology continues to grow in the restaurant industry, and this study identifies the strengths and weakness of the technology, how it influences customers, and how it can improve the bottom line for managers and business owners. Results from two studies involving a full-service casual dining chain show that dining time was significantly reduced among patrons who used the tabletop hardware to order or pay for their meals, as was the time required for servers to meet the needs of customers. Also, those who used the devices to order a meal tended to spend more than those who did not. Patrons across the industry have embraced guest-facing technology, such as online reservation systems, mobile apps, payment apps, and tablet-based systems, and may in fact look for such technology when deciding where to dine. Guests’ reactions have been overwhelmingly positive, with 70 to 80 percent of consumers citing the benefits of guest-facing technology and applications. The introduction of tabletop technology in the full-service segment has been slower than in quick-service restaurants (QSRs), and guests cite online reservation systems, online ordering, and tableside payment as preferred technologies. Restaurant operators have also cited benefits of guest-facing technology, for example, the use of electronic ordering, which led to increased sales as such systems can induce the purchase of more expensive menu items and side dishes while allowing managers to store order and payment information for future transactions. Researchers have also noted the cost of the technology and potential problems with integration into other systems as two main factors blocking adoption.
