The town of Sopron (Ödenburg) is situated near the western border of Hungary at the junction of major routes of commerce, no further than 70 km from Vienna. As early as in 1291 the town had become a chartered town or free royal town, which meant the most fully-fledged municipial autonomy in this period. The town was subordinated only to the king and could represent itself in parliament from 1445. The surrounding seigniorial towns and villages often lodged an appeal with the Town Court due to its wide legal autonomy. The inhabitants of seigniorial towns and the villagers could have been under the necessity of going to the town, and the legal proceedings they experienced in Sopron may have meant a model pattern for them. The seigniorial town (oppidum) is a settlement under the landlord's authority, with limited legal privileges, concentrated mostly on agricultural production and on the exchange of products of its immediate hinterland. Sopron as a county town was gradually becoming significant during the early modern period. The county (megye) was not only the unit of administration in Hungary, but that of the autonomy of nobility, too. The importance of Sopron as a county town attracted many noblemen dwelling in Sopron county to the town. The county was one of the most densely populated in the 15-18th c., at the beginning of the 18th c., for example, the density was 32 person/km2 and it rose more than 40 p/km2 by the end of the century. The population of Sopron was approximately 3500-3700 in the middle of the 15th c., and due to the decline during the later decades some 3000 persons lived in the town in the early 16th c. According to the first national census the population of Sopron was 12600 in 1784-87. These data place Sopron at the high level of Hungarian urban hierarchy in this period. This paper will explore two significant aspects of the relation between the town and its countryside: the problems of mutual economic dependence and the role of Sopron as a centre of culture.

In his discourse - The Chef In Society: Origins And Development - Marcel R. Escoffier, Graduate Student, School of Hospitality Management at Florida International University, initially offers: “The role of the modern professional chef has its origins in ancient Greece. The author traces that history and looks at the evolution of the executive chef as a manager and administrator.” “Chefs, as tradespersons, can trace their origins to ancient Greece,” the author offers with citation. “Most were slaves…” he also informs you. Even at that low estate in life, the chef was master of the slaves and servants who were at close hand in the environment in which they worked. “In Athens, a cook was the master of all the household slaves…” says Escoffier. As Athenian influence wanes and Roman civilization picks-up the torch, chefs maintain and increase their status as important tradesmen in society. “Here the first professional societies of cooks were formed, almost a hierarchy,” Escoffier again cites the information. “It was in Rome that cooks established their first academy: Colleqium Coquorum,” he further reports. Chefs, again, increase their significance during the following Italian Renaissance as the scope of their influence widens. “…it is an historical fact that the marriage of Henry IV and Catherine de Medici introduced France to the culinary wonders of the Italian Renaissance,” Escoffier enlightens you. “Certainly the professional chef in France became more sophisticated and more highly regarded by society after the introduction of the Italian cooking concepts.” The author wants you to know that by this time cookbooks are already making important inroads and contributing to the history of cooking above and beyond their obvious informational status. Outside of the apparent European influences in cooking, Escoffier also ephemerally mentions the development of Chinese and Indian chefs. “It is interesting to note that the Chinese, held by at least one theory as the progenitors of most of the culinary heritage, never developed a high esteem for the position of chef,” Escoffier maintains the historical tack. “It was not until the middle 18th Century that the first professional chef went public. Until that time, only the great houses of the nobility could afford to maintain a chef,” Escoffier notes. This private-to-public transition, in conjunction with culinary writing are benchmarks for the profession. Chefs now establish authority and eminence. The remainder of the article devotes itself to the development of the professional chef; especially the melding of two seminal figures in the culinary arts, Cesar Ritz and August Escoffier. The works of Frederick Taylor are also highlighted.

Se analizan y estudian aquí las averiguaciones hechas en 1590 sobre las actuaciones en pleitos de hidalguía de los fiscales de Granada desde 1579 a 1590, así como se edita una colección documental que viene a resumir la misma. Averiguaciones efectuadas por el oidor Benavente de Benavides, estuvieron centradas en el fiscal Diego de Amézaga y están insertas en la Visita de don Juan de Acuña a la Chancillería de Granada. La minuciosidad de esta actuación, su naturaleza netamente jurídica y las consecuencias que tuvo, aportan una nueva visión sobre estos contenciosos que en determinados casos han sido definidos por la historiografía como meros trámites y que sin embargo poseyeron una complejidad y una dureza, en cierto modo, hasta ahora inadvertida.

El proyecto tipográfico del irlandés Albert O’Farail se concibió como un libro misionero destinado a la empresa confesional que la monarquía de España desarrollaba en las Islas Británicas desde comienzos del Seiscientos. Las traducciones de distintos tratados doctrinales y teológicos, representados por su devoción particular a la Virgen María, procuraban acercar la religión a los católicos del Norte a través de mecanismos de proximidad cultural como complemento a la predicación de los ministros espirituales patrocinados por Carlos II. El empeño por dar a las prensas esta miscelánea de obras, financiada por la corona y compuesta por el arte de su propio autor, discurrió en paralelo a la querella abierta por su esposa, María Manuela Laínez, para reivindicar sus derechos nobiliarios al título marquesal de Mayo. Tanto en Madrid como en Roma, la imbricación de ambos negociados determinó su malograda resolución.

This work intends to analyze the letters exchanged between doña Teresa de Saavedra y Zúñiga, countess of Villalonso, and Bartolomé de Cartagena, a merchant who lived in Seville. Those letters are a very detailed account of their financial relationship during two decades; but they also give us important information about the countess’ life. In her letters the countess discussed her domestic familial life but also made reference to her social position at Court, so we can reconstruct the strategies used by doña Teresa in order to accomplish all her objectives and the ways she used to present these goals to the others.

This work studies the creation, development and evolution of the Spanish midshipmen, through their requirements, from the early 18th century to the second third of the 19th century. The aims are: to know deeply an essential post in the Navy –naval cadet- that still requires an exhaustive review; and, primarily, to link the transformations of the candidates’ requirements to the social debates which were proposed in Spain during this two centuries. The so-called transition from the estates society to the class society, or the step from a society of inheriting criteria to a society based on achieving variables, did not occur linearly; changes and inertia went hand in hand with contradictions and conflicts, thus in this paper the Spanish midshipmen are analysed by several relationally variables.

La ciudad ofrecía en la Baja Edad Media claras oportunidades para aquellos nobles que supieran situarse en el complejo juego de la política urbana y sus diversas instancias de poder. Para ello siempre se hace necesario contar con los apoyos sociales y físicos adecuados. La dinámica de enfrentamientos entre el Arzobispo de Santiago y el concello compostelano presenta un ejemplo inmejorable para valorar en su justa medida la inserción de la nobleza territorial en las relaciones de poder. Para abordar este caso se analizará la participación en la vida pública –también las revueltas urbanas– de la Casa de Moscoso tanto a través de su larga trayectoria de enfrentamientos con la Iglesia como mediante el estudio de su patrimonio urbano, incluyendo aquellos elementos relacionados con la creación de una memoria específica del linaje dentro de la ciudad.
