The book "Dimensions of Mediterranean diet" develops the reflection around the Mediterranean Diet concept - Intangible Cultural Heritage, which took place by initiative of the University of Algarve, during the first cycle of Seminars on Mediterranean Diet, in 2013. Starting with the multiplicity of this concept, the authors follow exploring the reality of this way of life (between the sky and the earth), which is the result of an age-old training process, integrates a habit of eating well in a healthy life practice and is a vehicle for future sustainability. The images accompanying the text portray this Mediterranean identity, straight from Algarve current realities.

The decoupling of CAP payments leads production decisions and resources allocation to be more dependent on market prices and competitive advantages. The objective of this paper is to assess the effects of CAP trends on the montado/dehesa traditional ecosystem of Mediterranean regions in terms of farm income, land, labour and capital. A positive mathematical supply model disaggregated by the montado agro-forestry production systems of the Alentejo region in southern Portugal is developed. The results show that decoupling payments of CAP have negative economic effects on agricultural activities and resource use. Agricultural income increases with single farm payments but the foreseen increases in prices do not compensate the loss of the Agenda 2000 area payments in terms of competitiveness. These results reinforce the need to promote alternative agricultural and non-agricultural activities and policies in Mediterranean rural European areas and regions. The challenges of Common Agricultural Policy are driven by internal and external factors, such as the budgetary constraints, the budget reform, the globalization and the world financial crisis. According to this work results, CAP will continue its evolution from a sectorial to a territorial approach, with a slow re-balance of its two pillars. The Portuguese agriculture will slowly adjust itself to the disappearance of prices and markets policy and the reinforcement of rural development policy. As in the past, agriculture will accommodate the reform effects and adjust to a new framework without sudden brakes or disclosers.

Fig production evolution registered an enormous decrease in Portugal on the last decades. In what concerns any agricultural production and its evolution we have to look to the structural issues affecting the culture trying to understand what is going on and where to act. This paper will begin to show the decrease on Portuguese fig production, according to FAO statistics. Then, we will look to this evolution in parallel with the evolution of farm structure on the last decades that has been quite strong, in Portugal, even if in what concerns farm area and the distribution of farms among area classes there has been only slight modifications. The population evolution is also a matter of importance and we will try to characterize the Portuguese agricultural population, in what concerns educational level and age and then move to fig producers, trying to understand what is the age and educational level of those who produce rig in Portugal. Finally, we will briefly focus on the economics of production. As a conclusion, there will be some appointments on the fig production future in Portugal.

In this work we develop a methodology for the economic evaluation of soil tillage technologies, in a risky environment, and to capture the influence of farmer behaviour on his technology choice. The model has short-term activities, that change with the type of year, and long-term activities, in which sets of traction investment activities are included. Although these activities do not change with the type of year, they lead to different availability of resources for each type of year, since the same tractor has different available fieldwork days under different weather conditions. We prove that the model is sensitive to the greater income variability resulting from the use of alternative technologies and to the balance between income and risk, accounting for the probability of occurrence of each state of nature and giving an investment solution that considers the best production plan for each type of year. Serpa and Moura region, in the South of Portugal, have important agricultural potential as well as important agricultural resources that can and should be used and developed, in spite of economic and social depression signs reinforced by demographic difficulties that can lead to desertification in some areas. The main farms' Technical-Economic Orientation (TEO) is olives production, to produce olive oil, since this region has excellent conditions for the activity development. Some mobilizations traditionally made in olive groves lead to soil erosion and make the farm vehicles mobility much more difficult, namely those used in cultural operations. The maintenance of a soil cover in the olive grove space between lines is good, both because it favours the vehicles mobility, it promotes the rain water infiltration and, last but not the least, the soil airing. The objective of this work has been to make a socio-economic characterization of a zone of Serpa and Moura Councils in which a project of soil covers under olive trees is being developed. At the same time cultural accounts were made for the different situations under the study - irrigated olive grove with spontaneous vegetation in the space between lines, irrigated olive grove with seeded vegetation in the space between lines, irrigated olive grove with herbicide application in the space between lines, dry olive grove with spontaneous vegetation in the space between lines, dry olive grove with seeded vegetation in the space between lines and dry olive grove with herbicide application in the space between lines. The survey shows farmers in this area are younger then usual, although they don't have a high level of formal education, general or specific in agriculture. Farm areas are usually high, which can be determinant for the proposed technology adoption. Installation and operation costs for the olive grove are higher on the irrigated olive grove, but of course expected productions are also higher. For this production technology profits coming from olives production are higher then the operation costs. However, in the dry olive grove technology costs are always higher then the profits, being profitability only due to subsidies. The importance of soil cover maintenance, in this region, beside the benefits in what concerns erosion, infiltration and soil airing, is also due to its capacity to minimize the risk farmer's face.

European Agenda 2000 considers the integration of environment in CAP and the role farmers can play on natural resources management. Alternative tillage technologies to seed cereals play an important economic and environmental role on the development of a sustainable agriculture and its adoption may depend on the agricultural policy, particularly policies on income support. The results obtained clearly show that the use of alternative soil tillage technologies would be promoted by the change of supports from the first to the second pillar of CAP and we can conclude that, in general, this change will encourage a faster technological adoption. Montado ecosystem in the Alentejo Region, south of Portugal, has enormous agro-ecological and economics heterogeneities. A definition of homogeneous sub-units among this heterogeneous ecosystem was made, but for them is disposal only partial statistical information about soil allocation agro-forestry activities. The paper proposal is to recover the unknown soil allocation at each homogeneous sub-unit, disaggregating a complete data set for the Montado ecosystem area using incomplete information at sub-units level. The methodological framework is based on a Generalized Maximum Entropy approach, which is developed in thee steps concerning the specification of a r order Markov process, the estimates of aggregate transition probabilities and the disaggregation data to recover the unknown soil allocation at each homogeneous sub-units. The results quality is evaluated using the predicted absolute deviation (PAD) and the "Disagegation Information Gain" (DIG) and shows very acceptable estimation errors.

This paper presents several combined agricultural data disaggregation models in order to recover the farms' land uses, the livestock numbers and main crops' productions. The proposed approach estimates incomplete information at disaggregated level through entropy, using an information prior, and generating information for a combined calculation use of data in the estimation of other variables. The models were applied to the region of Algarve, to some rural pilot areas (Salir-Ameixial-Cachopo and Alcoutim) for livestock data, since this data in some Algarve's inland areas is needed for a European forest fire prevention project, and to the agrarian zones in a more complex framework. The results are promising. They were validated, in cross reference to real data, having proven to be valid and reliable. The total error was small and a considerable level of information heterogeneity was recovered. The total error was about 27,9% for the counties' land uses and 21% for the agrarian zones, and for the livestock it was also acceptable. The level of heterogeneity recovered was always higher than 50%, revealing some improvements regarding previous studies.
