Twenty five different species belonging to 16 genera of freshwater fishes were analysed for protein, fat, moisture, ash, carbohydrate, phosphorus, calcium and total iron content in their muscle. Calorific value for protein, fat and carbohydrate fractions and total calories for each species were also calculated.

A general survey carried out on several brands of frozen prawn products has shown that along with the standard plate count (SPC), the numbers of pathogenic organisms like Escherichia coli, enterococci and coagulase positive staphylococci have also to be taken into consideration for the evaluation of the quality of these products. No correlation could be established between the total plate count and the number of E. coli, enterococci or staphylococci. Enumeration of enterococci, however, is advocated as a better index of faecal contamination of the products than E. coli.

The paper deals with the investigations carried out on the preparation of odorless fish-starch flakes using partially deodorized trash fish meat and different sources of starch like corn, tapioca, maida and black gram. It has been found that the products using corn and tapioca are better compared to those prepared using other two starches, the product from corn being the best. The product has a protein content of about 20% and has been found to have a storage life of 4 months at 37°c.

The distribution of phenolases in certain species of Penaeid prawns has been studied. Attempts were made to locate the regions of maximum enzyme activity in the prawns. The relative dopase activity has been examined in extracts from head, tail, shell with cuticles and muscle. The head juice and tail extracts were found to register very high order of enzyme activity. Metapenaeus affinis, Metapenaeus monoceros and Penaeus indicus record comparatively higher enzyme activity than Parapenaeopsis stylifera and Metapenaeus dobsoni, no definite relationship has been found between the relative activity of the enzyme and size grade at least in one species examined. Experiments were done to determine the pH optima of the enzyme and the influence of pH on its deactivation. Exposure to higher temperatures up to 55°c was shown to activate the crude enzyme considerably. The possible implications of the observations have been discussed.

The paper deals with certain technological aspects of transportation of fish. Frozen fish packed in thermocole insulated plywood box (tea chests) and transported has been found to remain in good condition, for 3 to 4 days. Fish reaching the destination in a thawed state can be stored in crushed ice for a further period of 2-3 days. The effect of initial temperature of frozen fish on the storage life, the maximum storage period for different types of frozen fish packed in the insulated container and the changes in chemical and organoleptic qualities of different varieties of fish under condition of transport are also discussed.

Various phosphates and their mixtures were screened for their efficiency of preventing drip loss in frozen prawns. The effectiveness of the phosphates decreased in the following order: Sodium tripolyphosphate — Sodium pyrophosphate — Sodium hexametaphosphate Sodium metaphosphate — Sodium dihydrogen phosphate; the last two being ineffective. Even though thaw drip loss was reduced by the above treatments the organoleptic quality of the thawed as well as cooked products was unsatisfactory, discoloration being the major defect. A solution of a mixture of 12% sodium tripolyphosphate and 8.6% sodium dihydrogen phosphate or 2% citric acid in water when used as dip prevented thaw drip loss, improved cooked yield and organoleptic quality without adversely affecting the biochemical characteristics. Commercial scale trials showed that the results are highly reproducible.

Seasonal variations in proximate composition of the different parts such as head, middle, tail and skin of black pomfret (Parastromateus niger) are reported over three years on monthly basis. The lean and fatty conditions of fish are discussed on the basis of spawning period, food and feeding activity, size group appearance and the gonadal maturity of the pomfret.

There is apparently great scope for improvement of the design and operational aspects of the gear particularly for the effective exploitation of seasonal fisheries like that of seer, tuna, barracuda etc. In order to evolve improved, yet cheap trolling gear regular investigations were undertaken by the Craft & Gear Wing of the Central Institute of Fisheries Technology, off Cochin for five fishing seasons and the results of these studies are incorporated in this paper.

The chemical and organoleptic properties of prawn held in ice for different days prior to cooking and the changes after freezing and subsequent storage were studied with three different species of prawn viz. Metapenaeus monoceros, Metapenaeus dobsoni and Parapeneopsis stylifera. The optimum period for which the prawn can be kept under ideal conditions of icing prior to cooking has been worked out.

A linear relationship was observed between the copper content and intensity of blackening in commercially canned prawn meat. Average copper and iron contents of non-blackened canned prawn meat were 9.6 and 32.5 ppm on dry weight basis respectively. In the blackened product copper content ranged from 15.8 to 63.9 ppm and iron content between 43.7 and 71.45 ppm depending on the intensity of blackening. But incorporation of copper in the above range to experimental cans produced blackening while iron up to 250 ppm did not impart any blackening under standard conditions of canning.

Ethylestrenol (17β Hydroxy-17alpha-ethyl-estr-4-en-3-one) and Stanozolal (17β-Hydroxy-17alpha-methyl 1-5 alpha-androstano-(3,2-C)-pyrazole), both synthetic androgenic steroids, were fed via diet at 3ppm to the fry of catla, rohu and silver carp which were reared up to fingerling stage over a period of 167-172 days in earthen ponds. Ethylestrenol enhanced growth in silver carp and rohu but retarded growth in catla. Stanozolal depressed growth in all the 3 species. Length-weight relationship for these fry had been worked out and the relative condition factor in all the cases was very close to or slightly above 1.0.

Hilsa (Hilsa ilisha) caught by gill net were immediately killed by cranial spiking. Three fish were kept in ice (0°C) and three other at room temperature (33°C) to follow development of rigor mortis and changes in muscle pH. The rest were frozen stored at -20°C. Rigor started 15 minutes after death in all fish and reached full rigor (100%) state in 2 and 4 hours respectively in fish kept at 33° and 0°C. The fish at 33°C deteriorated 16 hours after while in full rigor but those at 0°C lasted 26 hours of death without deterioration. Freshly caught hilsa had a muscle pH around 7 which decreased with time rapidly at 33°C and slowly at 0°C. The relative proportion of protein fraction in white and dark muscle of fish stored at 0°C and -20°C were also studied. The proportion of dark muscle was 30.34% of the white muscle. White muscle in fish at 0°C was found to contain 32.0% sarcoplasmic, 57.6% myofibrilla, 9.4% alkali-soluble and 1.1% stroma protein whereas these proteins in dark muscle were 29.9%, 58.4%, 9.8% and 1.9% respectively. The protein fractions of white muscle in frozen-fish were found 27.6% sarcoplasmic, 64.7% myofibrilla, 6.0% alkali-soluble and 1.7% of stroma protein whereas they were 30.6%, 58.6%, 8.9 and 1.9% for dark muscle. Some changes occurred in protein composition during frozen storage. The relative amounts of sarcoplasmic, alkali soluble and stroma protein fractions decreased while myofibrilla fraction increased in frozen condition. This may be attributed to drip loss of soluble protein during thawing.

The organoleptic characteristics such as appearance, textural condition, colour and odour indicated that the M. rosenbergii stored in ice for 5-6 days was acceptable for processing in the industry while P. monodon under similar ice storage condition was acceptable for 8-9 days. In both species, samples stored in headless condition in ice had longer shelf life than that of stored in head-on condition. Physical changes were evaluated by determining expressible moisture and breaking strength of sample of muscles. The expressible moisture increased continuously in both samples with the lapse of storage period. The expressible moisture increased up to around 44% in 4-5 days of ice stored M. rosenbergii muscle while it was around 40% in 8-9 days ice stored P. monodon. At the end of 9 days of ice storage, the expressible moisture content in M. rosenbergii increased up to 60%, while it was up to 47% in P. monodon after 11 days of ice storage. The breaking strength declined from 0. 78 kg/cm² to 0.53 kg/cm² in tiger shrimp after 8 days of ice storage, while in case of immediately killed prawn, the breaking strength of muscle was 0.8 kg/cm² which declined to 0.43 to 0.35 kg/cm².

An experiment was conducted for rearing of Meni, Nandus nandus in laboratory condition for seven months with the objective to select appropriate feed for the species and to develop a rearing technique of the species up to the stage of sexual maturation. Different trials were conducted using artificial feed (35.5% protein), dead fresh kachki (Carica soborna), dead fresh prawn (Macrobrachium lamarrei) and live prawn (Macrobrachium lamarrei). The provision of bottom sediment did not significantly influence the growth of fish. Between dead fresh kachki and dead fresh prawn, the fish preferred dead fresh prawn. The fish was found to be reluctant to take dead fresh kachki and prawn as food unless they became very hungry. The fish was found actively feeding on live prawn. The FCR of the prawn as food for N. nandus was found to be 2.5. From the study, it was observed that in laboratory rearing N. nandus preferred live prawn as food than artificial feed, dead fresh kachki and dead fresh prawn. The fish fed on live prawn became sexually matured (eggs or white milt extruded by gentle pressure on the abdomen of the fish) in the laboratory at the end of the experiment.
