A cor dos alimentos está directamente associada à sua aceitação pelo consumidor. A procura de métodos de processamento seguros e eficazes destaca a radiação ionizante, já que permite a desinfecção do alimento e a extensão do seu tempo de prateleira [1]. O espaço de cor CIELAB é comummente utilizado para avaliar diferenças de cor (ΔE*) entre dois objectos. No entanto, a fórmula CIEDE2000 permite atenuar variações entre valores calculados e percepcionados [2]. O impacto da radiação ionizante na cor de um vegetal folhoso foi avaliado durante o tempo de armazenamento e os resultados discutidos utilizando ambas as fórmulas de ΔE*.

This in vitro research verified the possibility of eliminating staining caused by coffee and red wine in five composite resins, after being submitted to thermal cycling. Thirty-six specimens were prepared and immersed in water at 37 degrees C for 24 hours. After polishing, specimen color was measured in a spectrophotometer Cintra 10 UV (Visible Spectrometer, GBC, Braeside, VIC, Australia). All specimens were submitted to thermal cycling at temperatures of 5 and 55 degrees C with a dwell time of 1 minute, for 1,000 cycles in a 75% ethanol/water solution. After thermal cycling, the specimens were immersed in water at 37 degrees C until 7 days had elapsed from the time the specimens were prepared. All specimens were then taken to the spectrophotometer for color measurement. The specimens were divided into three groups (N = 12): distilled water (control), coffee, and red wine. For the staining process to occur on only one surface, all the sides, except one, of the surfaces were isolated with white wax. The specimens were immersed in one of the solutions at 37 degrees C for 14 days. The specimens were dried and taken to the spectrophotometer for color measurement. After this, the specimens were submitted to 20 mu m wear three times, and the color was measured after each one of the wear procedures. Calculation of the color difference was made using CIEDE2000 formula. According to the methodology used in this research, it was concluded that the staining caused by coffee and red wine was superficial and one wear of 20 mu m was sufficient to remove the discoloration.

Pienien värierojen mittaamiseen käytetään CIE:n (The International Commission on Illumination) kehittämää ja standardoitua CIELAB – väriavaruutta ja sille suunniteltua CIEDE2000 – värieromittaria. CIELAB ei kuitenkaan ole täysin yhtenäinen ja siksi mittareita joudutaan virittämään sopivammiksi tähän väriavaruuteen. Työssä tutkitaan millä tavoin CIELAB - väriavaruutta voitaisiin korjata, jotta siitä saataisiin yhtenäisempi ja yksinkertainen ja virittämättömämpi värieromittari toimisi siinä paremmin. Työn tuloksena saatu muokattu väriavaruus paransi yhtenäisyyttä keskimäärin kymmenen prosenttia, mikä on liian vähän kun tavoitteena oli 30 - 50 prosenttia.

Olemassa olevat spektrieromittarit eivät vastaa riittävästi CIEDE2000-värieroa. Tämän työn tavoitteena oli toteuttaa menetelmä, joka laskee värispektrien eron siten, että tulos vastaa CIEDE2000-värieroa. Kehitystyön tuloksena syntyi menetelmä, joka perustuu ennalta laskettuihin eroihin tunnettujen spektrien välillä ja niiden perusteella johdettuihin laskentaparametreihin. menetelmällä pystyy laskemaan spektrieroja vain niiden spektrien välillä, jotka saadaan sekoittamalla tunnettuja spektrejä. Laskentaparametrien laskenta on työläs prosessi ja siksi menetelmään toteutettiin hajautus usealle tietokoneelle. Menetelmä saatiin vastaamaan hyvin CIEDE2000:ia suurimmalle osalle spektrejä harvoja poikkeuksia lukuunottamatta. Ongelmat johtuvat mallissa olevasta matemaattisesta ominaisuudesta. Spektrieromittari näyttää metameerisille spektreille nollasta poikkeavan arvon, vaikka CIEDE2000 näyttää nollaa. Tämä osoittaa spektrieromittarin oikeamman toiminnan CIEDE2000-värieroon verrattuna.

This thesis work studies the modelling of the colour difference using artificial neural network. Multilayer percepton (MLP) network is proposed to model CIEDE2000 colour difference formula. MLP is applied to classify colour points in CIE xy chromaticity diagram. In this context, the evaluation was performed using Munsell colour data and MacAdam colour discrimination ellipses. Moreover, in CIE xy chromaticity diagram just noticeable differences (JND) of MacAdam ellipses centres are computed by CIEDE2000, to compare JND of CIEDE2000 and MacAdam ellipses. CIEDE2000 changes the orientation of blue areas in CIE xy chromaticity diagram toward neutral areas, but on the whole it does not totally agree with the MacAdam ellipses. The proposed MLP for both modelling CIEDE2000 and classifying colour points showed good accuracy and achieved acceptable results.
