The efficiency of five dietary lipid sources (fish oil as control—C; canola oil—CO; poultry fat—PF; pork lard—PL; and oleine oil—OO) were evaluated in juvenile brown trout (58.4±0.7 g) in an experiment conducted over 70 days at 14.6±0.4 °C. The best growth was observed in fish fed the C diet whereas the PL diet fed fish had the best feed utilization. Significant differences in carcass and muscle proximate composition, but not in liver, were noted among fish fed the different dietary treatments. The fatty acid composition of muscle largely reflected that of the diets, while total cholesterol was not affected. The atherogenicity and the thrombogenicity qualities of the trout flesh were modified by the lipid sources. Sensory analysis did not show any significant differences among the cooked fillets with respect to dietary treatments, while in uncooked products, some significant differences were observed. The carnitine palmitoyltransferase I and II (CPT-I and CPT-II) activities of liver and white muscle were assayed for a better understanding of the potential β-oxidation capability of the different dietary lipid sources. The hepatic, but not white muscle CPT-I and CPT-II activities were affected by dietary treatments. This study showed that alternative lipid sources could be used effectively for oil coating extruded diets for brown trout.

The presence of carotenoids in animal tissue reflects their sources along the food chain. Astaxanthin, the main carotenoid used for salmonid pigmentation, is usually included in the feed as a synthetic product. However, other dietary sources of astaxanthin such as shrimp or krill wastes, algae meal or yeasts are also available on the market. Astaxanthin possesses two identical asymmetric atoms at C-3 and C-3' making possible three optical isomers with all-trans configuration of the chain: 3S,3'S, 3R,3'S, and 3R,3'R. The distribution of the isomers in natural astaxanthin differs from that of the synthetic product. This latter is a racemic mixture, with a typical ratio of 1:2:1 (3S,3'S:3R,3'S:3R,3'R), while astaxanthin from natural sources has a variable distribution of the isomers deriving from the different biological organism that synthesized it. The high-performance liquid chromatographic (HPLC) analysis of all-trans isomers of astaxanthin was performed in different pigment sources, such as red yeast Phaffia rhodozyma, alga meal Haematococcus pluvialis, krill meal and oil, and shrimp meal. With the aim to investigate astaxanthin isomer ratios in flesh of fish fed different carotenoid sources, three groups of rainbow trout were fed for 60 days diets containing astaxanthin from synthetic source, H. pluvialis algae meal and P. rhodozyma red yeast. Moreover, the distribution of optical isomers of astaxanthin in trout purchased on the Italian market was investigated. A characteristic distribution of astaxanthin stereoisomers was detected for each pigment sources and such distribution was reproduced in the flesh of trout fed with that source. Colour values measured in different sites of fillet of rainbow trout fed with different pigment sources showed no significant differences. Similarly, different sources of pigment (natural or synthetic) produced colour values of fresh fillet with no relevant or significant differences. The coefficient of distance computed amongst the feed ingredient and the trout fillet astaxanthin stereoisomers was a useful tool to identify the origin of the pigment used on farm.

A 12-week feeding trial was undertaken to evaluate the effects of partial replacement of marine raw materials in the diet with soybean meal and beef tallow on growth and product quality of European eel (Anguilla anguilla ). Based on growth, feed efficiency and chemical composition, soybean meal was found to be an unsuitable ingredient for eel diets as a substitute for fishmeal (25% on a protein basis), probably because of the low digestibility of its carbohydrate content. However, beef tallow can be used to replace 50% of fish oil without reduction in growth, provided that digestible carbohydrates are present in the diet. No major effects of protein and lipid sources in the diet were found on fillet chemical composition. Sensory analysis revealed no significant differences between fish fed the control and the experimental diets, with the exception of salty taste which was significantly higher in fish fed combined soybean meal and beef tallow compared with fish fed the control diet.

The present study was conducted to characterize caviar obtained from farmed white sturgeons (Acipenser transmontanus) subjected to different dietary treatments. Twenty caviar samples from fish fed two experimental diets containing different dietary lipid sources have been analysed for chemical composition, fatty acids and flavour volatile compounds. Fatty acid make up of caviar was only minimally influenced by dietary fatty acid composition. Irrespective of dietary treatments, palmitic acid (16:0) and oleic acid (OA, 18:1 n-9) were the most abundant fatty acid followed by docosahexaenoic acid (DHA, 22:6 n-3) and eicopentaenoic (EPA, 20:5 n-3).

Thirty-three volatile compounds were isolated using simultaneous distillation–extraction (SDE) and identified by GC–MS. The largest group of volatiles were represented by aldehydes with 20 compounds, representing the 60% of the total volatiles. n-Alkanals, 2-alkenals and 2,4-alkadienals are largely the main responsible for a wide range of flavours in caviar from farmed white surgeon

A period of purging before harvesting is common practice in intensive aquaculture to eliminate any possible off flavours from the fish. The present study was conducted to evaluate the biometrical, nutritional and sensory changes in intensively farmed Murray cod (Maccullochella peelii peelii) after 0, 2 and 4 weeks of purging. After the main biometric parameters were recorded, fish were analysed for proximate, fatty acid composition and flavour volatile compounds. A consumer preference test (triangle test) was also conducted to identify sensorial differences that may affect the consumer acceptability of the product.

Fish purged for 2 and 4 weeks had a significant weight loss of 4.1% and 9.1%, respectively, compared to unpurged fish, whilst perivisceral fat content did not change. The concentration of saturated (SFA), monounsaturated (MUFA) and highly unsaturated (HUFA) fatty acids were not significantly affected by purging time, while polyunsaturated fatty acids (PUFA), n − 3 and n − 3 HUFA were significantly higher (P < 0.05) in purged fish compared to unpurged fish. Consumers were able to detect differences between the purged and unpurged fish (P < 0.05) preferring the taste of the purged fish. However, consumers were unable to distinguish between fish purged for 2 and 4 weeks.

This study showed that a 2 weeks purging period was necessary and sufficient to ameliorate the final organoleptic quality of farmed Murray cod. With such a strategy the nutritional qualities of edible flesh are improved while the unavoidable body weight loss is limited.

O artigo pretende discutir questões relacionadas às possibilidades de utilização dos métodos da história oral nas pesquisas empíricas em Comunicação. Também se propõe a discutir os atributos que tais pesquisas devem apresentar para que sejam pertinentes para o uso dessa metodologia. Uma das principais questões abordadas é sobre quais objetos ou fenômenos da Comunicação podem ser estudados tendo em vista a metodologia da História Oral. A partir dessa discussão,apontam-se quais as pesquisas de Comunicação que se abrem a essa possibilidade: aquelas que tenham preocupações relacionadas aos universos multiculturais, às identidades locais, às comunidades e às relações existentes entre as pessoas e os processos de comunicação, bem como usos e consumos midiáticos.

O texto discute as possibilidades de relacionamento entre a metodologia das narrativas orais e as histórias de vida na ação cotidiana do fazer jornalístico. A indagação que se faz é sobre as possibilidades de aprimoramento da produção jornalística, que permitam uma reconfiguração desse processo na Era da Informação. A proposta é refletir principalmente sobre o processo de entrevistas no Jornalismo, com a proposição de transformar alguns paradigmas metodológicos: realizar um percurso que re-signifique o papel do entrevistado/fonte, tornando-o colaborador/narrador. Diante dos novos recursos tecnológicos que dominam grande parte da discussão sobre jornalismo hoje, não se pode deixar de pensar que é necessário rever o próprio fazer jornalístico, principalmente no jornalismo impresso, que se vê em crise face à configuração do mundo midiático do século XXI.

O consumo do leite caprino e derivados vêm apresentando um incremento no Rio Grande do Sul. A produção de caprinos de leite ocorre na maioria das vezes em pequenas propriedades de associados a cooperativas. Estudos que contribuam para incremento da produção dos animais e melhoria da qualidade do leite produzido são importantes para a viabilidade desta atividade econômica. Desta forma, o objetivo deste estudo foi investigar a ocorrência de mastites e os padrões higiênicos do leite de mistura produzido pelas oito propriedades de associados de uma cooperativa na região do Vale do Taquari-RS. Foram realizadas duas visitas em todas as propriedades durante o período de maior produção de leite. Todos os animais em produção foram examinados clinicamente, sendo a seguir submetidos ao Califórnia Mastite Teste (CMT). De todas as metades mamárias foram coletadas amostras de leite, submetidas, posteriormente a contagem de Células Somáticas (CCS) e exame bacteriológico. Uma amostra de leite de mistura foi coletada em cada visita realizada, sendo avaliada quanto à contagem de coliformes fecais e totais e contagem de estafilococos coagulase-positivos. Ainda foram coletadas amostras de água para realização de colimetria em todas as propriedades visitadas. Verificou-se que 30,8% das metades mamárias apresentaram resultados no exame bacteriológico compatível com a ocorrência de mastite subclínica. A maior percentagem (41%) deste grupo era representada por animais na fase de maior produção (8-60 dias de lactação). A bactéria mais isolada nas amostras de leite foi o Staphylococcus coagulase-negativo. Houve correlação entre os resultados do CMT e CCS, bem como do CMT com a contagem de Unidades Formadoras de Colônia de bactérias (UFC). Não houve correlação entre o CCS e UFC. Entretanto, observou-se que o escore zero do CMT e a CCS >106 e ≤ 5 x106 predominaram em todos os períodos de lactação, e apresentaram resultados muitas vezes discrepantes com os resultados obtidos nos demais testes. Estes resultados estão de acordo com relatos anteriores e indicam a necessidade de adaptação dos testes utilizados para o diagnóstico indireto de mastite subclínica na espécie caprina. Da mesma forma, observou-se a necessidade de associar o resultado destes testes com o exame bacteriológico para alcançar uma maior exatidão do diagnóstico. O leite de mistura analisado apresentou contagens de coliformes que variaram de zero até 1,4 x 106 UFC/mL. Apenas duas propriedades apresentaram coliformes fecais e estafilococos coagulase-positiva não foram encontrados no leite de mistura. As amostras de água coletadas estavam dentro dos limites propostos pela legislação vigente. As contagens de coliformes totais encontradas no leite de mistura e o elevado índice de animais com mastite foram associadas a algumas práticas de manejo inadequados dos animais durante a ordenha e a problemas no sistema de armazenamento do leite encontradas em algumas propriedades.
