Na oitava sessão do comité intergovernamental da UNESCO, decorrida no dia 4 de Dezembro de 2013 em Baku, capital do Azerbaijão e a propósito de uma candidatura plurinacional envolvendo 7 países (Portugal, Espanha, Marrocos, Itália, Grécia, Chipre e Croácia), a dieta mediterrânica (DM) foi considerada Património Imaterial da Humanidade. Um dos sinais da descaracterização da DM é o consumo excessivo de alimentos fritos. Para além da recorrência familiar a esta técnica culinária não descuremos a oferta de uma multiplicidade de produtos alimentares tipo snack (fritos) que aumentam o aporte lipídico na dieta (gorduras degradadas) e são veículo de substâncias potencialmente tóxicas como é o caso da acrilamida. As doenças cardiometabólicas (DCM ) afetam a qualidade de vida das populações. A funcionalidade do padrão mediterrânico na reabilitação da saúde mostra-nos o antídoto a estilos de vida nefastos (fast food, sedentarismo) numa sociedade de consumo. Num contexto de nutriprevenção, a slow food mediterrânica poderá ser a solução para atenuar o risco de doença e reduzir os custos em saúde. Constituiu objetivo principal do presente trabalho fundamentar a importância que a DM apresenta para a saúde cardiometabólica e avaliar os prejuízos decorrentes do consumo de alimentos submetidos a fritura, mais concretamente à batata frita (incaracterística da referida dieta). O desenvolvimento desta dissertação mostra que o balanço entre os efeitos benéficos da DM na saúde e as consequências nefastas de um produto de grande consumo (batata frita) apela à utilização esporádica do processo de fritura e à implementação de metodologias tecnológicas que diminuam o teor de acrilamida, apontando para a importância da educação/reeducação alimentar, estruturada a partir de conhecimentos ponderados da antropologia da alimentação.

The contamination of water bodies with toxic substances causes a decrease in water quality, representing a risk to public health. In this context, human activities are generally seen as the main sources of water degradation. However, elements found naturally in the environment can also compromise water quality. Thus, the Boqueirão‘s dam, located in the municipality of Parelhas (RN, Brazil), was chosen as area for the development of this study, as its geological region is rich in the emission of natural ionizing radiation that produces byproducts like lead and Radon. Moreover, the area has a strong human influence that enhances the risks of pollutant discharge in this body of water.Thus, the objectives of this study were centered (i) in the analysis of risk perception in the city of Parelhas (RN/Brasil) due to the use of the water from the Boqueirão Dam; and (ii) in the assessment of water quality in the Dam using methods that quantify, mainly, heavy metals and radiation levels, as well as these toxics potential of inducing mutations on genetic material. The analysis of risk perception showed that the population in the city of Parelhas can perceive a risk in using the water from the dam and that they can recognize factors that influence the water quality. Regarding the second objective, the set of data point to the contamination of the Dam by heavy metals, as well as levels of radioactive parcicles and Radon – also present in high concentrations in outdoor air and on soil. Thus, it is possible to infer that the population residing in this area is subjected to injuries caused by exposure to natural and anthropogenic contamination. Our findings corroborate with the perception of the population regarding the risks associated with the use of the Dam for several types of activities. It is expected that the information gathered in this study can substantiate activities and future researches in this semiarid region in the Rio Grande do Norte/Brazil. Also, that the set of data can enable a better understanding of the specific toxicological scenario of risk found for the population and the effect of the contamination for the biota, which aids the development of a future risk assessment and a consequent management of this local issue.

Droughts are climatic phenomena whose frequency has increased in the last decades and also compromised drinkable water supplies in semiarid regions. The lack of rain combined with high evaporation rates promotes a significant reduction of the volume of reservoirs in these regions. Shallower conditions favors nutrients concentration and phytoplankton overgrowth, including potentially toxic cyanobacteria blooming. Therefore, there is a tendency to the intensification of eutrophication in those reservoirs during drought periods. Phytoplankton can respond quickly to environmental conditions related to light and nutrient availability by changes in algal biomass and composition, therefore it is considered a good predictor of environmental variables. Two functional approaches - Reynolds’s Functional Groups (FG) and Kruk’s Morphologically Based Functional Groups (MBFG) - were used to assess which environmental variables were responsible for phytoplankton dynamics, in addition to compare which functional approach explains environmental changes better. This study highlights that the reduction of 90% in the volume of a tropical reservoir of Brazilian semi-arid region, as well as light limitation and nutrient increase, can promote phytoplankton overgrowth. Multivariate analyses using both functional approaches indicated a clear separation between high volumes and low volumes conditions, showing that light and nutrient availability were the main variables that better explained the combination of functional groups. The composition of phytoplankton assemblage changed from species of meso-eutrophic habitats (FG: F and J; MBFG: VI), to organisms of eutrophic and turbid environments (FG: SN and M; MBFG: VIII and VII) during shallower conditions. Both ecological approaches described properly the phytoplankton dynamics according to light and trophic state alterations related to the water volume reduction, therefore they can be considered as equivalent approaches for using in similar environments.

The unbridled consumption of electronic equipment associated with fast immersion of new technologies on the market leads to the accelerated growth of electronic waste. Such waste mostly contains printed circuit boards in its structure. Printed circuit boards have many metals, including heavy metals, being highly toxic. Electronic waste is discarded improperly and indiscriminately, usually without any previous treatment and with other municipal waste, contaminating the environment and causing serious problems to human health. Beyond these metals, there are also precious metals and high value-added basis, that can be recovered and recycled, reducing the exploration of natural resources. Thus, due to the high growth potential and reuse of these waste treatment processes, characterization and separation were applied to the printed circuit boards. The printed circuit boards were subjected to physical treatments such as dismantling, crushing, sizing separation, magnetic separation and chemical treatments such as pyrolysis and leaching. Through characterization process (pyrolysis and leaching) the proportions of the components of the granulometric range were determined: 46,08% of metals; 23,32% of polymers and 30,60% of ceramics. It was also observed by particle size separation that metal components tend to concentrate in coarse fractions, while polymeric and ceramic components in fine fractions. From the magnetic separation process was obtained 12,08% of magnetic material and 82,33% of non-magnetic material.

Glucans are polysaccharides with different pharmacological and biological activities described. However, there are some reports about the activities of the glucan type α (alpha). In this context, a group of α-D-glucans called dextrans extracted from Leuconostoc mesenteroides bacteria, with molecular weights of 10 (D10), 40 (D40) and 147 (D147) kDa and their phosphorylated derivatives P10, P40 and P147, were evaluated as for their antioxidant, anticoagulant and immunomodulatory potential for the first time, in order to elucidate compounds with potent activities and low toxicity. Infrared spectroscopy analysis, monosaccharide composition and chemical dosages showed that these dextrans are the same polysaccharide, but with different molecular weights, besides confirming the success of phosphorylation. None presented with anticoagulant features. The reducing power test showed that D147 was twice as potent as other dextrans. On the other hand, all six samples showed similar activity (50%) when it came to scavenging the OH radical. To the superoxide ion scavenging, only D10 had a pronounced activity (50%). D40 was the single native dextran that presented with immunomodulatory features since it double stimulated the proliferation of murine macrophages (RAW 264.7) and double the release of nitric oxide by the cells, both in the absence and presence of lipopolysaccharides (LPS). In addition, D40 showed a greater scavenging activity (50%) for the hydrogen peroxide, which caused it to also be the more potent dextran when it came to inhibiting lipid peroxidation (70%). On other hand, P147 showed the highest iron and copper ion chelation activity (~85%). P10 proved be the most effective compound to macrophage proliferation. The results point toward dextrans with a 40 kDa weight as being ideal for antioxidant and immunomodulatory use, could be supplemented with phosphorylated derivatives. However, future studies with the D40 and other similarly dextrans are to confirm this hypothesis.

Eutrophication is the most common cause of water quality degradation in the world. This process occurs by excessive nutrients inputs, nitrogen and phosphorus, to the aquatic systems resulting in algal and cyanobacterial blooms. In shallow lakes these effects are pronounced due to the higher interaction of the lake with watershed, air and sediment. There are innumerous restoration techniques of eutrophied lakes with a range of successful results but there is only one case of successful lake restoration in Brazil: Paranoá Lake in Brasília city. The Brazilian semiarid region has many artificial lakes, named açudes, which are mostly eutrophic and shallow lakes. The eutrophication in these lakes is reported and the phytoplankton community is dominated by potentially toxic cyanobacteria species, mainly Cylindrospermopsis raciborskii. The aim of this thesis is to test techniques for water quality management which can be easily applied in Brazilian semiarid lakes. Results from a laboratory experiment suggest that the addition of a phosphorus sorbent clay associated with an aluminium based coagulant is an effective technique in removing soluble reactive phosphorus and reducing C. raciborskii growth rate – cyanobacteria potentially toxic dominant in reservoirs of Brazilian semiarid – but this effect is dependent on the biomass in the application moment. Results from a field experiment in mesocosm in a eutrophied lake showed that the addition of aluminium based coagulant and removal of benthivorous fish is more efficient in removing total phosphorus and chlorophyll-a from water column than the isolated application of one of the techniques. Lastly, laboratory tests showed that aluminium based coagulant exhibited good performance in removing turbidity and total phosphorus from water of six reservoirs but the efficiency was reduced by algal biomass and pH. The results of this study showed that the improvement in water quality of eutrophied reservoirs in semiarid region is possible through internal loading control by phosphorus precipitation and inactivation in sediments or inhibition of phosphorus release by benthivorous fishes, and also that these results show are additives in water quality improvement.

La etapa infantil tiene una gran importancia desde el punto de vista nutricional, para el presente y futuro de los individuos. La alimentación equilibrada desempeña un papel fundamental en el crecimiento y desarrollo del niño, permitiendo mantener un estado de salud óptimo y mejorando su calidad de vida. Además, en la edad infantil se establecen gran parte de los hábitos y estilos de vida que persistirán a lo largo de toda la vida, entre ellos se establecen y conforman los hábitos alimentarios y las bases de la educación nutricional. En un metabolismo aeróbico, como el que caracteriza al cuerpo humano, se precisa del oxígeno para la mayoría de los procesos biológicos cuyo fin último es obtener energía, es decir, se produce la oxidación de los diferentes sustratos para obtener dicha energía a través de diferentes rutas metabólicas. Esta utilización de oxígeno en los procesos metabólicos, implica inevitablemente la formación de especies reactivas de oxígeno (ERO) o radicales libres, que favorecen los procesos de oxidación. Para compensar estos procesos, existen en el cuerpo humano una serie de sistemas de protección antioxidante que permiten la eliminación o transformación de las ERO en moléculas estables. Los sistemas biológicos están, por lo tanto, en un estado de equilibrio entre sustancias prooxidantes y su capacidad antioxidante. El desequilibrio a favor de la acción prooxidante es lo que se conoce como "estrés oxidativo", que puede conducir al daño celular y tisular, y finalmente al desarrollo de diferentes enfermedades: cáncer, arteriosclerosis, infarto de miocardio, procesos de isquemia/reperfusión, diabetes mellitus, asfixia neonatal, enfermedades inflamatorias, trastornos del sistema nervioso central, envejecimiento, ... Dentro de la alimentación encontramos nutrientes que median en este equilibrio oxidante-antioxidante, habiendo nutrientes que participan en el sistema de defensa antioxidante (vitamina C y E, carotenoides, flavonoides, melanoidinas, selenio, zinc..) y también sustancias que pueden actuar como prooxidantes (exceso de lípidos, proteínas, hierro o cobre)...

El engorde animal constituye, desde el principio de los tiempos, una de las grandes preocupaciones y necesidades de la humanidad, a las que se ha intentado poner solución de muy diversas maneras a lo largo de toda la historia. Los vacíos de conocimiento y de documentación escrita, relativos a la evolución histórica de aspectos referentes a las técnicas de engorde animal utilizados en ciertas épocas antiguas y, los relativos a la prohibición y posteriores usos de los promotores del crecimiento farmacológicos, son importantes. Esto otorga un valor añadido a nuestro estudio como resultado de una amplia recopilación documental de la que no se han encontrado precedentes. El objetivo principal de esta Tesis Doctoral, es realizar un estudio histórico lo más detallado posible, en el que se describe el conjunto de técnicas y productos de los que se ha valido el hombre para ver incrementadas sus producciones animales a lo largo de toda la historia. Centrándonos, de modo particular, en el impacto de estas sustancias en la ganadería española y cómo las políticas de uso y restricción se han visto fuertemente influenciadas por las medidas propuestas por Europa. Del mismo modo, se describen las diferentes categorías de sustancias químicas que se han ido presentando en el mercado para el engorde animal a lo largo de la época de máximo esplendor de los promotores del crecimiento, es decir, la segunda mitad del siglo XX, las condiciones de uso, los beneficios que reportaron y, de modo fundamental, las causas que desencadenaron su prohibición y las repercusiones a estas medidas legales. Se expone de modo cronológico, un tema de difícil abordaje por su carácter controvertido, porque enfrenta intereses de muchos sectores e implica en un mismo asunto, aspectos de gran relevancia social y económica, como la seguridad alimentaria, la salud de los consumidores, los intercambios comerciales globalizados, la economía agroganadera mundial y la protección medioambiental...

El deseo de lograr la victoria con el menor esfuerzo o la garantía de la derrota segura del rival, es un sentimiento tan antiguo como la historia del deporte, para conseguirlo a lo largo del tiempo los métodos, las formas, las sustancias para alterar el rendimiento físico han evolucionado, aunque la intención se mantiene de forma invariable. En nuestros días el doping está presente en la mayoría de los deportes y las carreras de caballos no son una excepción. Por esta razón con el fin de salvaguardar el bienestar animal, la limpieza del deporte y la protección del juego en los hipódromos españoles se realiza “el control del doping”, se practica a los caballos PSI de carreras, hasta ahora, siguiendo las directrices del “Código de la Sociedad Fomento de la Cría Caballar en España” (SFCCE), de esta forma tratamos de impedir el uso fraudulento de sustancias dopantes o el abuso de las sustancias medicamentosas. El control del doping en los hipódromos españoles empezó en 1960, gracias a un acuerdo entre la SFCCE y la Cátedra de Farmacología y Toxicología de la Facultad de Veterinaria de la Universidad Complutense, de lo sucedido en estos primeros años incluimos en nuestro trabajo un estudio crítico. En 1983 la SFCCE se modernizó y delegó la responsabilidad de los análisis de orina y sangre a un laboratorio homologado por la International Federation of Horseracing Authorities (IFHA). Por esta razón, en nuestro trabajo aportamos los datos correspondientes al control del doping de los caballos de carreras en España desde 1983 y hasta diciembre de 2014...

La Violencia Filio-Parental (VFP) es un fenómeno que permanece oculto dentro del ámbito familiar, lo que ha producido que no se haya podido dimensionar ni investigar adecuadamente. Es en los últimos años cuando se ha empezado a presentar interés en clínicos e investigadores por el creciente número de casos y denuncias que se han producido. La VFP es aquella violencia ejercida por un menor o un adulto joven, que no está madurando adecuadamente, contra sus padres o las personas que ejercen dicha función, a través de agresiones verbales, daño material o económico, amenazas, agresiones físicas y psicológicas para obtener el poder del ambiente familiar, donde la víctima siente desesperanza e impotencia y donde el agresor se encuentra en un permanente estado de insatisfacción, se siente incomprendido e intenta pasar el menor tiempo posible con sus víctimas a las que considera responsables de la situación. La VFP tiene diferentes manifestaciones además de la violencia física, también están presentes la violencia verbal, psicológica, material y económica. En el presente trabajo se recogen la evolución producida en el estudio de la VFP, los estudios epidemiológicos que se han ido realizando y los modelos teóricos propios y que se pueden utilizar para explicar el origen y mantenimiento de la misma. La víctima principal de este tipo de violencia suele ser la madre aunque no se puede calificar como un tipo de violencia de género. El agresor es el hijo varón, especialmente en el caso de la violencia física, pero no existen diferencias significativas entre chicos y chicas a la hora de ejercer VFP. Los adolescentes que ejercen VFP viven en una sociedad que justifica el uso de la violencia como un recurso válido a la hora de solucionar los conflictos, presentan problemas de salud mental, consumo de drogas y otras conductas disruptivas, además pueden haber sido víctimas de abusos por parte de sus progenitores o iguales (Bullying) e incluso haber sido testigos y víctimas de violencia doméstica. Ninguna de estas situaciones justifica totalmente el origen y el mantenimiento de la VFP. Los progenitores padecen un elevado sufrimiento por la situación y por la incomprensión social de la misma; tienen dificultades en sus relaciones de pareja, les cuesta imponer la autoridad de formas razonables, pueden presentar estilos educativos dispares e inadecuados; además pueden presentar problemas de salud mental y consumo de sustancias...
