The general goal of this study was to analyze the relations between the agents’ social capital and joint actions developed by the Cluster of wine produced at the high altitudes of Santa Catarina. This group is made up of 43 agents: one governing agent, 26 support agents and 16 winemakers. This descriptive and exploratory study uses data from qualitative and quantitative approaches. During the exploratory phase, a documental analysis was carried out, as well as semi-structured interviews. The data collection tool used to gather information concerning the social capital and joint actions was the semi-structured questionnaire, and this data gathering was conducted through field research using a structured interview with the selected agents from November 16 to November 26, 2015. The results of this study show a good social capital, which reflects on the joint actions done by the agents. Among the variables of social capital, trust shows a great level among the Cluster agents, followed by good levels concerning commitment and involvement, information share, rules and sanctions, horizontality and authority and improvement. As a result, it has created a nice level of involvement and effectiveness of joint actions, highlighting events organization, joint participation at fairs and events, marketing campaigns, development of products and processes, and human resources improvement. There is a small group of agents who show a strong social capital and a proper environment to expand this capital throughout the network. However, the evaluation concerning reciprocity and density represents only one third of the possibilities of this group, and it happens especially because of the geographical distance between the agents who are part of the Cluster. The main limitation of this study was the trouble trying to map the whole agent group before applying the questionnaires and identifying the responsible people in each of the support agents to inform everything correctly. It is suggested that these questionnaires be carried out with other Clusters as well as in the future in order to have a temporal assessment of this study.

No mercado têm surgido alternativas aos produtos de colagem de origem animal, nomeadamente as proteínas de origem vegetal e extratos de levedura. O objectivo deste trabalho foi a comparação de um elevado número de produtos de colagem de origem animal (gelatinas) e produtos alternativos de origem vegetal e levuriano. Inicialmente os produtos de colagem foram aplicados ao vinho em diferentes doses. Com base na avaliação sensorial, foram selecionados os produtos e as doses que revelaram melhor desempenho. Os produtos de colagem selecionados foram aplicados ao vinho e avaliado o seu efeito nas características sensoriais e físico-químicas. O parâmetro que apresentou diferenças mais significativas foi a turbidez. A análise estatística apenas revelou diferenças significativas para os atributos qualidade do sabor e nota final; apesar de não evidenciar diferenças significativas, as variações observadas para o atributo extração/secura foram muito importantes do ponto de vista prático. As gelatinas que mostraram melhor desempenho foram as POA 10 e POA 12 e as proteínas vegetais POV 6 (proteína de ervilha) e POV 10 (proteína de batata). Este estudo permitiu a recolha de informação para ser utilizada na seleção do produto de colagem mais apropriado para o perfil de vinho da adega e a alternativa mais apropriada às gelatinas.

The processing of meats at the factory level can trigger the onset of lipid oxidation, which can lead to meat quality deterioration. Warmed over flavor is an off-flavor, which is associated with oxidative deterioration in meat. To avoid or delay the auto-oxidation process in meat products, synthetic and natural antioxidants have been successfully used. Grape (Vitis Vinifera) is of special interest due to its high content of phenolic compounds. Grape seed extract sold commercially as a dietary supplement, has the potential to reduce lipid oxidation and WOF in cooked ground beef when added at 1%. The objective of study 1 was to compare the antioxidant activity of natural antioxidants including grape seed extract and some herbs belonging to the Lamiaciae family: rosemary (Rosmarinus Officinalis), sage (Salvia Officinalis) and oregano (Origanum Vulgare) with commercial synthetic antioxidants like BHT, BHA, propyl gallate and ascorbic acid using the ORAC assay. All sample solutions were prepared to contain 1.8 gm sample/10 ml solvent. The highest antioxidant activity was observed for the grape seed extract sample (359.75 µM TE), while the lowest was observed for BHA, propyl gallate and rosemary also showed higher antioxidant potential with ORAC values above 300 μmol TE/g. ORAC values obtained for ascorbic acid and Sage were between 250-300μ mol TE/g while lowest values were obtained for Butylated Hydroxytoluene (28.50 µM TE). Based on the high ORAC values obtained for grape seed extract, we can conclude that byproducts of the wine/grape industry have antioxidant potential comparable to or better than those present in synthetic counterparts. The objective of study 2 was to compare three levels of grape seed extract (GSE) to commonly used antioxidants in a pre-cooked, frozen, stored beef and pork sausage model system. Antioxidants added for comparison with control included grape seed extract (100, 300, 500 ppm), ascorbic acid (AA, 100 ppm of fat) and propyl gallate (PG, 100 ppm of fat). Product was formed into rolls, frozen, sliced into patties, cooked on a flat griddle to 70C, overwrapped in PVC, and then frozen at –18C for 4 months. GSE- and PG-containing samples retained their fresh cooked beef odor and flavor longer (p<0.05) than controls during storage. Rancid odor and flavor scores of GSE-containing samples were lower (p<0.05) than those of controls after 4 months of storage. The L* value of all samples increased (p<0.05) during storage. Thiobarbituric acid reactive substances (TBARS) of the control and AA-containing samples increased (p<0.05); those of GSE-containing samples did not change significantly (p>0.05) over the storage period.

The present study was done in collaboration with J. Faria e Filhos company, a Madeira wine producer, and its main goal was to fully characterize three wines produced during 2014 harvest and identify possible improving points in the winemaking process. The winemaking process was followed during 4 weeks, being registered the amounts of grapes received, the fermentation temperatures, the time at which fermentation was stopped and evolution of must densities until the fortification time. The characterization of musts and wines was done in terms of density, total and volatile acidity, alcohol content, pH, total of polyphenol, organic acids composition, sugars concentration and the volatile profile. Also, it was developed and validated an analytical methodology to quantify the volatile fatty acids, namely using SPME-GC-MS. Briefly, the following key features were obtained for the latter methodology: linearity (R2=0.999) e high sensitivity (LOD =0.026-0.068 mg/L), suitable precision (repeatability and reproducibility lower than 8,5%) and good recoveries (103,11-119,46%). The results reveal that fermentation temperatures should be controlled in a more strictly manner, in order to ensure a better balance in proportion of some volatile compounds, namely the esters and higher alcohols and to minimize the concentration of some volatiles, namely hexanoic, octanoic and decanoic acids, that when above their odours threshold are not positive for the wine aroma. Also, regarding the moment to stop the fermentation, it was verified that it can be introduced changes which can also be benefit to guarantee the tipicity of Madeira wine bouquet.

Este trabalho propõe o desenvolvimento de métodos de preparo de amostra empregando a microextração líquido-líquido dispersiva (DLLME) para a extração e pré- concentração de Fe e Cu em vinho, seguido da determinação espectrofotométrica na região do ultravioleta-visível (UV-Vis). Nas extrações por DLLME, a complexação de Fe e Cu foi feita com pirrolidina ditiocarbamato de amônio (APDC) e dietilditiocarbamato de sódio (DDTC), respectivamente. Para a DLLME, foi usada uma mistura apropriada de pequenos volumes de dois solventes, um extrator e outro dispersor, a qual foi rapidamente injetada na amostra aquosa, ocorrendo à formação de uma dispersão e a extração praticamente instantânea dos analitos. Na otimização da DLLME para extração de Fe foram avaliados alguns parâmetros como, tipo de solvente extrator (C2Cl4, 80 µL) e dispersor (acetonitrila, 1300 µL) e seus volumes, pH (3,0), concentração do APDC (1%, m/v), adição de NaCl (0,02 mol L -1 ) e tempo de extração. Para extração de Cu foi aplicado um planejamento fatorial completo 25 para avaliar a influência de cinco variáveis independentes: volume dos solventes dispersor (acetonitrila, 1600 µL) e extrator (CCl4, 60 µL), concentração de DDTC (2%, m/v), pH (3,0) e concentração de NaCl. Após a otimização das condições para Fe, a curva de calibração com adição de analito foi linear entre 0,2 e 2,5 mg L-1 para vinho branco (R2 = 0,9985) e para vinho tinto (R2 = 0,9988). Para Cu, a curva de calibração com adição de analito foi linear entre 0,05 e 1,0 mg L-1 para vinho branco (R2 = 0,9995) e para vinho tinto (R2 = 0,9986). Os limites de quantificação foram de 0,75 e 0,37 mg L-1 para Fe e Cu, respectivamente. A exatidão foi avaliada utilizando ensaio de recuperação, as quais variaram entre 96% e 112%, com desvio padrão relativo inferior a 8%. Os métodos foram aplicados para 5 amostras de vinho branco e 5 amostras de vinho tinto, obtendo-se concentrações entre 1,3 e 5,3 e entre 2,5 e 4,4 mg L-1 para Fe e entre 0,4 e 1,5 e entre 0,9 e 2,5 mg L-1 para Cu, respectivamente. Os métodos desenvolvidos para a extração e pré-concentração de Fe e Cu em vinhos por DLLME e quantificação por UV-Vis mostraram-se adequados, em termos de linearidade, exatidão e precisão.

Pela importância atual – e crescente – que o vinho tem na economia portuguesa, pela margem existente para a apresentação de temas de reflexão que acrescentem valor ao posicionamento do setor, pela experiência pessoal e paixão pela área, decidi elaborar a minha dissertação numa temática enquadrável no setor do vinho, em particular no vinho Alvarinho proveniente do terroir que representa a Denominação de Origem Vinho Verde Sub-região de Monção e Melgaço. A estrutura deste estudo assenta em duas dimensões: a primeira, numa perspetiva local, assente na recente decisão de alargar a Denominação Origem Vinho Verde Alvarinho a todas as sub-regiões que integram a Região dos Vinhos Verdes, com efeitos em 2021. Pelo que se procurará mostrar a importância da relação desta casta com o seu terroir de origem e, perante esta interligação, qual o fator mais importante a utilizar na comunicação do vinho. A segunda prende-se com a dimensão internacional que se pretende para o Alvarinho no mercado dos grandes vinhos brancos mundiais, onde encontramos castas brancas de renome como a Chardonnay e a Riesling, face a esta exposição e à crescente aposta na casta a nível mundial, como agir perante a potencial ameaça que representa a entrada dos países do “Novo Mundo”. Posto isto, é neste contexto que se coloca a questão que está na génese desta dissertação: de que forma o terroir contribui como fator de diferenciação e de vantagem competitiva do Alvarinho produzido na Denominação de Origem Vinho Verde Sub-região Monção e Melgaço no mercado dos grandes vinhos brancos mundiais? Cuja resposta poderá em grande parte estar, no meu entendimento, na análise de um caso de sucesso, que nesta dissertação é representada pelo trabalho realizado em torno do Rieseling produzido no Vale de Mosel e que contribuiu para que este tivesse conquistado a sua reputação.

O objetivo desta dissertação é examinar problemas terminológicos e a importância da preparação e pesquisa terminológica na tradução especializada. O tema escolhido é a tradução de documentação sobre as Denominações de Origem e Indicações Geográficas dos vinhos portugueses, nomeadamente dos vinhos da Região do Dão. Começa-se por apresentar no Capítulo I uma introdução às Denominações de Origem e as classificações utilizadas para vinhos portugueses. No Capítulo II estudamos os problemas mais comuns dos recursos tradutológicos, contemplando a preparação e a pesquisa terminológica que devem anteceder o processo de tradução, discutindo a bibliografia relevante e caraterizando o corpus de análise. No Capítulo III discutimos os recursos para a tradução vitivinícola. No Capítulo IV contemplamos os problemas de tradução nos documentos escolhidos para a tradução e as suas soluções. Finalmente, apresentamos as conclusões e sugerimos vias para investigações posteriores; Designations of Origin and Geographical Indications in Translating Wine- Related Documents: Terminological Problems ABSTRACT: The purpose of this dissertation is to examine terminological problems and the importance of preparation and terminology work in the field of specialized translation. The chosen topic is the translation of documents containing terminology about Designations of Origin and Geographical Indications of Portuguese wines, namely wines from the Dão region. Chapter I provides an introduction to Designations of Origin in general and then specifically for Portuguese wines. Chapter II examines common translation resource problems and the importance of documentation and terminology work prior to the translation process; then, it discusses the relevant bibliography. Chapter III provides a translation of two documents about Designations of Origin, namely Labelling Regulations and Guide for Technical Procedures of Management and Control for the wines of the Dão. Chapter IV discusses the difficulties and solutions for the translation problems encountered during the process. Finally, the conclusions are shown and suggestions for future research are given.

As leveduras Dekkera/Brettanomyces são responsáveis pela formação de fenóis voláteis em vinhos tintos, tornando-se numa grande preocupação para a produção enológica a nível mundial, devido à dificuldade em controlá-las. Os fenóis voláteis são responsáveis por aromas desagradáveis nos vinhos tintos, diminuindo a sua qualidade e resultando em grandes perdas económicas. Este trabalho teve como principal objectivo estudar um método de preparação de amostra e um método cromatográfico para analisar e quantificar os principais fenóis voláteis (4-etilfenol, 4-etilguaiacol, 4-etilcatecol, 4-vinilfenol e o 4-vinilguaiacol), em meio sintético e em vinhos tintos comerciais. A preparação de amostras foi efectuada através do método de extracção líquido-líquido e a separação dos compostos foi efectuada por cromatografia gasosa com detector de ionização de chama (GC-FID). Os resultados obtidos permitem concluir que é possível detectar e quantificar os fenóis voláteis com este método, incluindo o 4-etilcatecol. O 4-etilfenol foi o composto mais abundante nos vinhos tintos comerciais estudados. ABSTRACT: The yeasts Dekkera I Brettanomyces are responsible for the formation of volatile phenols in red wine, becoming a major concern for the enological production worldwide because of the difficulty in controlling them. The volatile phenols are responsible for unpleasant aromas in red wines, reducing its quality and resulting in great economic lasses. The main objective of this work was to study a sample preparation and a chromatographic method to analyze main volatile phenols (4-ethylphenol, 4-ethylguaiacol, 4-ethylcatechol, 4-vinylphenol and 4-vinylguaiacol) in synthetic wine and red wines. Sample preparation was done by liquid-liquid extraction and compounds separation was achieved by gas chromatography with flame ionization detector (GC­ FID) Results showed that it is possible to detect and quantified volatile phenols with the methodology proposed, including 4-ethylcatechol. 4-ethylphenol was the main compound found in commercial red wines.

Agricultural crops can be damaged by funguses, insects, worms and other organisms that cause diseases and decrease the yield of production. The effect of these damaging agents can be reduced using pesticides. Among them, triazole compounds are effective substances against fungus; for example, Oidium. Nevertheless, it has been detected that the residues of these fungicides in foods as well as in derivate products can affect the health of the consumers. Therefore, the European Union has established several regulations fixing the maximum residue of pesticide levels in a wide range of foods trying to assure the consumer safety. Hence, it is very important to develop adequate methods to determine these pesticide compounds. In most cases, gas or liquid chromatographic (GC, LC) separations are used in the analysis of the samples. But firstly, it is necessary to use proper sample treatments in order to preconcentrate and isolate the target analytes. To reach this aim, microextraction techniques are very effective tools; because allow to do both preconcentration and extraction of the analytes in one simple step that considerably reduces the source of errors. With these objectives, two remarkable techniques have been widely used during the last years: solid phase microextraction (SPME) and liquid phase microextraction (LPME) with its different options. Both techniques that avoid the use or reduce the amount of toxic solvents are convenient coupled to chromatographic equipments providing good quantitative results in a wide number of matrices and compounds. In this work simple and reliable methods have been developed using SPME and ultrasound assisted emulsification microextraction (USAEME) coupled to GC or LC for triazole fungicides determination. The proposed methods allow confidently determine triazole concentrations of μg L‐1 order in different fruit samples. Chemometric tools have been used to accomplish successful determinations. Firstly, in the selection and optimization of the variables involved in the microextraction processes; and secondly, to overcome the problems related to the overlapping peaks. Different fractional factorial designs have been used for the screening of the experimental variables; and central composite designs have been carried out to get the best experimental conditions. Trying to solve the overlapping peak problems multivariate calibration methods have been used. Parallel Factor Analysis 2 (PARAFAC2), Multivariate Curve Resolution (MCR) and Parallel Factor Analysis with Linear Dependencies (PARALIND) have been proposed, the adequate algorithms have been used according to data characteristics, and the results have been compared. Because its occurrence in Basque Country and its relevance in the production of cider and txakoli regional wines the grape and apple samples were selected. These crops are often treated with triazole compounds trying to solve the problems caused by the funguses. The peel and pulp from grape and apple, their juices and some commercial products such as musts, juice and cider have been analysed showing the adequacy of the developed methods for the triazole determination in this kind of fruit samples.

abuticaba (Myrciaria cauliflora. Mart) is a highly perishable fruit native to Brazil, which is consumed both fresh and industrially processed in the form of juices, jams, wines and distilled liqueurs. This processing generates a large amount of waste by-products, which represent approximately 50% of the fruit weight. The by-products are of interest for obtaining valuable bioactive compounds that could be used as nutraceuticals or functional ingredients. In this study, fermented and non-fermented jabuticaba pomaces were studied regarding their hydrophilic and lipophilic compounds, as well as their antioxidant properties, including: soluble sugars, organic acids and tocopherols (using high performance liquid chromatography coupled to refraction index, diode array and fluorescence detector, respectively); phenolics and anthocyanins, (using liquid chromatography coupled to diode array detection, and mass spectrometry with electrospray ionization); and fatty acids (using gas-liquid chromatography with flame ionization detection). The analytical data demonstrated that jabuticaba pomaces are a rich source of bioactive compounds such as tocopherols, polyunsaturated fatty acids and phenolic compounds (namely hydrolyzable tannins and anthocyanins) with antioxidant potential. Therefore, jabuticaba pomace may have good potential as a functional ingredient in the fabrication of human foods and animal feed.
