É reconhecida a importância da avicultura para o agronegócio e para o desenvolvimento do Brasil. Mas o País tem enfrentado grande concorrência internacional, que se traduz em barreiras sanitárias e exigências cada vez maiores de controle de seu rebanho por parte dos importadores. Neste sentido, o Ministério da Agricultura, Pecuária e Abastecimento (MAPA) publicou uma série de atos legais para viabilizar a organização dos programas de saúde animal, entre eles as Instruções Normativas n° 56/2007, n° 59/2009, n°36/2012 e n°10/2013, para estabelecer os procedimentos para registro e fiscalização de estabelecimentos avícolas comerciais e de reprodução, voltados à biosseguridade do sistema avícola. Como todos os setores produtivos, a avicultura é fortemente influenciada pela sua estrutura de custos, de modo que há um certo sentimento de que a adequação às medidas de biosseguridade, preconizadas pelas normativas, pode impactar a atividade de produção de ovos comerciais de modo a levar, eventualmente, alguns avicultores ao abandono da mesma. O objetivo deste trabalho foi analisar o impacto socioeconômico das políticas sanitárias para estabelecimentos avícolas comerciais de postura da regional agropecuária de Limeira, Estado de São Paulo, analisando o perfil socioeconômico da propriedade e do produtor e, estimando o custo de produção e seu impacto em atendimento às medidas de biosseguridade preconizadas pelas normativas. Para a análise do perfil das propriedades foram utilizados os dados dos 28 estabelecimentos avícolas, levantados por meio de documentação para registro. Para a análise do perfil do produtor e para estimar os custos de produção foram considerados dez estabelecimentos, voluntários à pesquisa, visitados entre os meses de junho e julho de 2013. O resultado do estudo sugere que as adequações à biosseguridade podem ser factíveis de serem realizadas economicamente, sendo o custo relativamente pequeno frente aos possíveis riscos de enfermidades, representando entre 1,61% e 2,09% do custo total de produção. No entanto, as sucessivas alterações nas legislações podem fazer com que o programa de sanidade avícola perca a credibilidade diante da sociedade e dos produtores que demonstram resistência às mudanças nos paradigmas zoosanitários

Este trabalho de pesquisa apresenta a Metodologia para a Homologação dos Equipamentos do Sistema Canal Azul da Carne - MHECAC. Esta proposta de metodologia é complementar ao desenvolvimento do Sistema Canal Azul da Carne e tem o objetivo de apoiar o MAPA (Ministério da Agricultura, Pecuária e Abastecimento) no estabelecimento de um processo de verificação da conformidade de equipamentos, buscando garantir a interoperabilidade, o desempenho e a segurança de seus componentes de hardware. O Sistema Canal Azul é uma realização do MAPA em conjunto com o GAESI da Escola Politécnica da Universidade de São Paulo (EPUSP) e a iniciativa privada, e tem o objetivo de reduzir o tempo empregado nos processos de exportação de carnes no Brasil. A MHECAC baseia-se na estrutura de processo de avaliação de conformidade estabelecida pelo Sistema Brasileiro de Avaliação da Conformidade - SBAC e seus requisitos gerais podem ser aplicados à avaliação de conformidade de produtos em setores variados. No desenvolvimento da MHECAC foram aplicadas as principais referências técnicas e normativas correspondentes aos equipamentos que compõe a arquitetura do sistema Canal Azul. Além disto, foram definidos os modelos de homologação, auditoria e inspeção, os planos de amostragem, os requisitos mínimos e a metodologia de ensaio. A MHECAC subdivide-se em dois segmentos principais. O primeiro apresenta os requisitos gerais para o estabelecimento de sistemas de avaliação da conformidade e certificação de produtos, a aplicação destes requisitos não se limita ao Sistema Canal Azul, e o segundo apresenta requisitos específicos ao sistema estabelecido pelo MAPA. A aplicação da MHECAC favorece o tratamento isonômico de fornecedores e é um importante balizador para a seleção de equipamentos, pois permite a qualificação e a comparação de soluções, por meio de um embasamento técnico, pautado pela qualidade.

Grazed pastures are the backbone of the Brazilian livestock industry and grasses of the genus Brachiaria (syn. Urochloa) are some of most used tropical forages in the country. Although the dependence on the forage resource is high, grazing management is often empirical and based on broad and non-specific guidelines. Mulato II brachiariagrass (Convert HD 364, Dow AgroSciences, São Paulo, Brazil) (B. brizantha × B. ruziziensis × B. decumbens), a new Brachiaria hybrid, was released as an option for a broad range of environmental conditions. There is no scientific information on specific management practices for Mulato II under continuous stocking in Brazil. The objectives of this research were to describe and explain variations in carbon assimilation, herbage accumulation (HA), plant-part accumulation, nutritive value, and grazing efficiency (GE) of Mulato II brachiariagrass as affected by canopy height and growth rate, the latter imposed by N fertilization rate, under continuous stocking. An experiment was carried out in Piracicaba, SP, Brazil, during two summer grazing seasons. The experimental design was a randomized complete block, with a 3 x 2 factorial arrangement, corresponding to three steady-state canopy heights (10, 25 and 40 cm) maintained by mimicked continuous stocking and two growth rates (imposed as 50 and 250 kg N ha-1 yr-1), with three replications. There were no height × N rate interactions for most of the responses studied. The HA of Mulato II increased linearly (8640 to 13400 kg DM ha-1 yr-1), the in vitro digestible organic matter (IVDOM) decreased linearly (652 to 586 g kg-1), and the GE decreased (65 to 44%) as canopy height increased. Thus, although GE and IVDOM were greatest at 10 cm height, HA was 36% less for the 10- than for the 40-cm height. The leaf carbon assimilation was greater for the shortest canopy (10 cm), but canopy assimilation was less than in taller canopies, likely a result of less leaf area index (LAI). The reductions in HA, plant-part accumulation, and LAI, were not associated with other signs of stand deterioration. Leaf was the main plant-part accumulated, at a rate that increased from 70 to 100 kg DM ha-1 d-1 as canopy height increased from 10 to 40 cm. Mulato II was less productive (7940 vs. 13380 kg ha-1 yr-1) and had lesser IVDOM (581 vs. 652 g kg-1) at the lower N rate. The increase in N rate affected plant growth, increasing carbon assimilation, LAI, rates of plant-part accumulation (leaf, stem, and dead), and HA. The results indicate that the increase in the rate of dead material accumulation due to more N applied is a result of overall increase in the accumulation rates of all plant-parts. Taller canopies (25 or 40 cm) are advantageous for herbage accumulation of Mulato II, but nutritive value and GE was greater for 25 cm, suggesting that maintaining ∼25-cm canopy height is optimal for continuously stocked Mulato II.

Com o objetivo de comparar em termos de paisagem, a vegetação florestal nativa com os fragmentos da vegetação remanescente na bacia hidrográfica do Rio Canoas, situada na divisa dos Estados de São Paulo (à Nordeste) e Minas Gerais (à Centro-Oeste), busca-se dar subsídios aos atores locais para trabalhar políticas públicas com vistas à sustentabilidade do uso dos recursos naturais na região. Foram mapeados sete tipos de vegetação, com destaque para o cerrado e a floresta estacional semidecidual. O método do estudo é exploratório, realizado em fontes secundárias, pesquisa bibliográfica e documental, baseado no estudo de mapas e suas simulações, dados do IBGE, Embrapa, Ministério do Meio Ambiente e trabalhos de autores, como: Cogo (1987), Coutinho (2000) e Bozini (2005). Observou-se que a bacia hidrográfica objeto em estudo é degradada historicamente pelos diversos usos e ocupações do solo e sua maior parte ainda está sujeita à um elevado nível de perturbação, seja pela pecuária, ou mesmo pelas plantações de laranja, milho, eucalipto, cana-de-açúcar e, principalmente, pela cultura do café.

Este projecto teve como principal objectivo desenvolver um estudo à escala real e laboratorial com o intuito de testar a viabilidade da suspensão biológica comercial JASS para minorar o problema da ocorrência de elevadas concentrações de amoníaco atmosférico no interior dos aviários. Pretendeu-se, assim, estudar a vantagem da utilização de microrganismos com capacidade de degradar o amoníaco ou inibir a sua formação, fixando os compostos azotados na cama de aviário e reduzindo a sua emissão atmosférica. Para o efeito, realizaram-se diversos ensaios à escala laboratorial e real numa instalação industrial, de forma a testar a eficácia da suspensão biológica. Os ensaios laboratoriais consistiram na determinação da influência da aplicação da suspensão biológica na libertação de amoníaco em cama de aviário colocada em reactor fechado ou aberto e numa coluna que permitiu a quantificação do fluxo de amoníaco libertado a diferentes cotas. Noutro conjunto de experiências, procurou-se estudar a caracterização da suspensão biológica essencialmente por técnicas de coloração e de ensaios bioquímicos. Finalmente, avaliou-se a eficácia da suspensão na inibição da transformação da ureia pela enzima urease produzida pelo microrganismo Proteus vulgaris. Os ensaios à escala real decorreram nas instalações de Leiria da Ovopor - Agro-Pecuária dos Milagres, S.A., com uma área de 12500m2. Realizaram-se ensaios em dois ciclos de criação, um com 30970 pintos em que não foi aplicada a suspensão em estudo e outro com 28470 pintos onde foi feita a aplicação da suspensão, como forma de validar as vantagens de aplicação do produto desenvolvido. Durante estes ensaios foi feita a monitorização das condições ambientais, da concentração e do caudal mássico de amoníaco amostrado, bem como de alguns parâmetros caracterizadores da produtividade, como sejam o peso dos animais e a mortalidade. Apesar de não ter sido possível tirar conclusões esclarecedoras quanto à eficiência da suspensão nos estudos comparativos à escala laboratorial, quer nos ensaios em reactor fechado, quer com circulação de ar, observou-se uma redução da emissão de amoníaco de cerca de 13% no estudo da determinação do fluxo de amoníaco a diferentes cotas nas experiências em que se usou a mesma cama de aviário (redução do fluxo mássico total de 32,67 mgNH3/ (m2.h) para 30,68 mgNH3/ (m2.h). Relativamente ao ensaio de campo na recria da Ovopor verificou-se uma clara redução na emissão de amoníaco na segunda campanha, redução essa que foi particularmente relevante nas primeiras quatro semanas de criação, que correspondem ao período em que as condições de ambas as campanhas são praticamente iguais, uma vez que não se promove a ventilação da sala de recria. Constatou-se ainda que os valores mais elevados de amoníaco atmosférico registados foram de 8,2 e 4,8 ppm na 1ª e 2ª campanhas, respectivamente, que correspondem a valores claramente abaixo do valor máximo admissível previsto na legislação nacional (20ppm). Quanto à composição da suspensão biológica JASS verificou-se que é essencialmente composta por esporos de Bacillus sp. e que a germinação destes esporos é favorecida quando a suspensão é diluída. Por fim, através do estudo em meio de cultura com composição controlada, em que foi feita a avaliação da capacidade da suspensão biológica estudada inibir o processo de formação de amoníaco, confirmou-se que esta inibiu a actividade da enzima urease produzida pelo microorganismo Proteus vulgaris e, consequentemente, houve uma redução de cerca de 47% na capacidade de formação de amoníaco comparando o desempenho dos dois reactores aos quais foram adicionados este microrganismo. Em suma, pode-se pois concluir que, com excepção dos resultados dos estudos de determinação do amoníaco libertado realizados à escala laboratorial, todas as restantes experiências indiciam que a suspensão JASS estudada tem capacidade para inibir a formação de amoníaco e, consequentemente, a sua libertação, provando a utilidade do produto na melhoria das condições ambientais dos aviários.

Tourism is configured as an activity that presents constant movement could boost local development in the economic, sociocultural and human in locations with potential for structuring and such. Because it is a dynamic activity, tourism allows changes in its flow, extending the periods of seasonality. To this end, in view of the aforementioned dynamics, it becomes relevant to the presence of tourism planning, initially starting from the government so that it create laws and standards and develop projects for the management of activities in an orderly way, seeking citizen participation, making essential the presence of actors and agents in local tourism, expanding democracy and knowledge of their place of origin. In this scenario, the Ministry of Tourism is emerging with the National Tourism Plan which incorporates among its actions, the Regionalization Program Guide, adopting a model of regional local management, a participatory manner, through the bodies of governance imposed at the poles, and the shares of public policy in their various departments most responsible for promoting tourism in pole Seridó. This scientific work aims to analyze the pole Seridó, under the theory of tourism area life cycle (TALC) proposed by BUTLER (1980), locating actions for tourism and chronology of the locality applied the proposed process activity. For both the methodology is descriptive and exploratory, qualitative approach, historical, descriptive and narrative level, non-probability sampling, using secondary sources, through documents and other records occurred during the planning processes in the region, in order to have access to information related to the planning process of tourism in Seridó, using as a way to research the data collected the technique of content analysis. As a conclusion of this study it is observed that from the survey in relation to the history of tourism in the region, economic activities of livestock, cotton industry, mining and ceramics industry were responsible for the initiation of tourism in the locality through the flow directed to the same, the insertion of the first hotels and performing traditional events, giving rise to the demand for public policies that aided in directing the activity being, therefore, inserted into the engagement phase, the second phase proposed by BUTLER (1980) model, and the study was terminated with suggestions for the continuation of tourism in the region.

Cactus pear is an important forage for livestock in semi-arid region of Brazil, due to its adaptation to climate conditions in this region, high productivity and nutritional value. The yield of this cactus has positively responded to techniques such as planting density, fertilization and cutting managements, however, in Rio Grande do Norte State, only certain areas have favorable climate conditions to the development of this crop. Drip irrigation, with a small amount of water, has proven to be an alternative to the viability of cactus pear cultivation in these areas. The research aimed to evaluate the effects of different levels of saline water and manure organic fertilization on the morphological characteristics and production of fresh and dry matter of the prickly-pear cactus cv. Miúda (Nopalea cochenillifera Salm Dick) in a dense planting system. The experiment was conducted at the Experimental Station of Terras Secas (EMPARN), Pedro Avelino, latitude 5°31'21" South and longitude 36°23'14" West. The soil was classified as Typical Cambisol Haplicum Carbonate and the water used in irrigation, C4S1T3 (5,25 dS.m-1), with planting spacing of 2.0 x 0.25 m (20,000 plants ha-1). A completely randomized design in a split plot was used, where water levels (0, 7.5, 15.0 and 30.0 mm month-1) with 10 days intervals, were the main plots and organic fertilization (0 , 25 and 50 Mg ha-1 yr-1) the subplots, with four replicates. The measured morphological characteristics were number of cladodes, height and volume of the plant; length, width, perimeter, thickness, area and cladodes area index, fresh and dry matter production, dry matter content, water use efficiency (WUE) and damage promoted by cochineal pest (Diaspis echinocacti) and soft rot (Erwinia carotovora). There was no influence (P>0.05) of organic fertilization on most variables, particularly in relation to the production of fresh and dry matter. The water levels had a significant influence (P<0.05) on most variables, promoting higher height and volume of the plants, larger and thicker cladodes, and increase on fresh and dry matter production (13.55 Mg DM ha-1 yr-1). The absence of irrigation caused a significant expansion in plant damage caused by the cochineal pest and when irrigated with different water levels there was an increase in damage and stand loss, caused by soft rot, been more intense at the higher water level.

Reservoirs are artificial ecosystems intermediate between rivers and lakes widely used in the Brazilian semiarid region as a way to provide water supply due to the said region’s water scarcity. The use of water from these supply sources for multiple uses, along with occupation and utilization of its riparian zone without proper management, directly influences the increased nutrient flow into aquatic environments, there with contributing to the acceleration of eutrophication. The semi-arid region is characterized by peculiar weather conditions, such as severe evaporation, high temperatures with little variation throughout the year and long water residence time, making it susceptible to prolonged drought occurrence, which tends to concentrate the nutrients in reservoirs, which favors the development of eutrophic conditions. Moreover, it is common soil use and occupation by carrying out activities with potential environmental impact on natural resources such as agriculture, livestock farming and lack of sanitation. The aim of this study is both to evaluate the water quality of the Cruzeta Reservoir, located in the semiarid region of Rio Grande do Norte, during a prolonged drought period, and assess the quality of its riparian zone soil under different uses, by monitoring physical-chemical variables. Along the prolonged drought, high levels of turbidity, suspended solids, nutrients and chlorophyll a were verified as present, therefore featuring low water quality. In the riparian zone of Cruzeta Reservoir, the areas under use of agriculture and livestock farming appeared as one of the main diffuse sources of nutrients to the said reservoir, featuring the highest levels of phosphorus and nitrogen in the soil, originated from decomposition of animal excreta and from the use of fertilizers, creating a tendency to increased eutrophication of such water supply source. The indicators of water and soil quality are useful for monitoring and evaluating the conservation status of natural resources, allowing the control and mitigation of the reservoir eutrophication process. This study confirmed the hypothesis that the reduction of water level, resulting from prolonged drought event, aggravates the symptoms of eutrophication; and also that using the soil under severalways modifies the physic chemical properties of the soil, having livestock farming and agriculture as the usages with greatest potential towards yielding P and N to the aquatic environment.

Human activities alter soil features, causing the deterioration of its quality. Land use and occupation in drainage basins of water supply reservoirs can change the environmental soil quality and, thus, lead to the expansion of the soil potential of being a diffuse pollution source. In the Brazilian semiarid region, the soils are generally shallow with high susceptibility to erosion, favoring the sediment and nutrients input into the superficial waterbodies, contributing to the eutrophication process. Moreover, this region has high temperatures and high evapotranspiration rates, that are generally higher than the precipitation rates, causing a negative hydric balance and big volume losses by evaporation. The water volume reduction increases the nutrients’ concentration and, therefore, exacerbates the eutrophication process, deteriorating the water quality. Thereby, we hypothesized that the eutrophication process of semiarid reservoirs is intensified both by the extreme climatic events of prolonged drought, and by the diffuse pollution due to the basin land use and occupation. The study aimed to test whether the land use and occupation activities of the basin and the severe drought events intensify the eutrophication process of a semiarid tropical reservoir. To verify the influence of human activities carried out in the water supply of drainage basin on the soil quality and the eutrophication process, we conducted the mapping of the kind of use and occupation, as well the calculation of erosion for each activity and the soil quality evaluation of the riparian zone and water quality of the water supply. For the water analyses, the samplings were carried out monthly in the deeper point, near dam. For the soil, deformed composite samples were taken for the physical and chemical attributes analysis, according to the identified land use and occupation classes. The results showed that extreme droughts drastically reduces the water volume and elevates the nutrients concentration, contributing, thus, to a bigger degradation of water quality. Furthermore, we verified that human activities in the drainage basin promote the diffuse pollution, by increasing the soil susceptibility to erosion and nutrients contents. Summarizing, our results support the investigated hypothesis that activities of land use and occupation and extreme drought generate a combined effect that provide the intensification of eutrophication process of semiarid reservoirs.

The Benzylpenicillin (PENG) have been as the active ingredient in veterinary medicinal products, to increase productivity, due to its therapeutic properties. However, one of unfortunate quality and used indiscriminately, resulting in residues in foods exposed to human consumption, especially in milk that is essential to the diet of children and the ageing. Thus, it is indispensable to develop new methods able to detect this waste food, at levels that are toxic to human health, in order to contribute to the food security of consumers and collaborate with regulatory agencies in an efficient inspection. In this work, were developed methods for the quality control of veterinary drugs based on Benzylpenicillin (PENG) that are used in livestock production. Additionally, were validated methodologies for identifying and quantifying the antibiotic residues in milk bovine and caprine. For this, the analytical control was performed two steps. At first, the groups of samples of medicinal products I, II, III, IV and V, individually, were characterized by medium infrared spectroscopy (4000 – 600 cm-1). Besides, 37 samples, distributed in these groups, were analyzed by spectroscopy in the ultraviolet and near infrared region (UV VIS NIR) and Ultra Fast Liquid Chromatograph coupled to linear arrangement photodiodes (UFLC-DAD). The results of the characterization indicated similarities, between PENG and reference standard samples, primarily in regions of 1818 to 1724 cm-1 of ν C=O that shows primary amides features of PENG. The method by UFLC-DAD presented R on 0.9991. LOD of 7.384 × 10-4 μg mL-1. LOQ of 2.049 × 10-3 μg mL-1. The analysis shows that 62.16% the samples presented purity ≥ 81.21%. The method by spectroscopy in the UV VIS NIR presented medium error ≤ 8 – 12% between the reference and experimental criteria, indicating is a secure choice for rapid determination of PENG. In the second stage, was acquiring a method for the extraction and isolation of PENG by the addition of buffer McIlvaine, used for precipitation of proteins total, at pH 4.0. The results showed excellent recovery values PENG, being close to 92.05% of samples of bovine milk (method 1). While samples of milk goats (method 2) the recovery of PENG were 95.83%. The methods for UFLC-DAD have been validated in accordance with the maximum residue limit (LMR) of 4 μg Kg-1 standardized by CAC/GL16. Validation of the method 1 indicated R by 0.9975. LOD of 7.246 × 10-4 μg mL-1. LOQ de 2.196 × 10-3 μg mL-1. The application of the method 1 showed that 12% the samples presented concentration of residues of PENG > LMR. The method 2 indicated R by 0.9995. LOD 8.251 × 10-4 μg mL-1. LOQ de 2.5270 × 10-3 μg mL-1. The application of the method showed that 15% of the samples were above the tolerable. The comparative analysis between the methods pointed better validation for LCP samples, because the reduction of the matrix effect, on this account the tcalculs < ttable, caused by the increase of recovery of the PENG. In this mode, all the operations developed to deliver simplicity, speed, selectivity, reduced analysis time and reagent use and toxic solvents, particularly if compared to the established methodologies.

LOD of 7.246 × 10-4 μg mL-1. LOQ de 2.196 × 10-3 μg mL-1. The application of the method 1 showed that 12% the samples presented concentration of residues of PENG > LMR. The method 2 indicated R by 0.9995. LOD 8.251 × 10-4 μg mL-1. LOQ de 2.5270 × 10-3 μg mL-1. The application of the method showed that 15% of the samples were above the tolerable. The comparative analysis between the methods pointed better validation for LCP samples, because the reduction of the matrix effect, on this account the tcalculs < ttable, caused by the increase of recovery of the PENG. In this mode, all the operations developed to deliver simplicity, speed, selectivity, reduced analysis time and reagent use and toxic solvents, particularly if compared to the established methodologies.

This thesis aimed to contribute to the discussion about the relationship between agricultural production structure, occupation and poverty in Brazil, specifically in the state of Minas Gerais, in 2010. The issue of employment is becoming increasingly challenging in the face of ongoing modernization process in agriculture, capital intensive and labor saver looking levels ever higher production and productivity. The productive inclusion can be an effective way to exit from poverty (the work is often the only asset of the poor). In this sense, we sought to investigate what activities or groups of activities occupied a larger number of people and generated higher yields and can potentially have contributed to a lower incidence of poverty. The basis for primary data was the 2010 Population Census (microdata). To achieve the objectives we used descriptive analysis, Pearson correlation coefficients and quantile regressions. Among the main findings highlight that agriculture occupied more and generated higher overall income than ranching presented more precarious, despite having lower average incomes and income percentile values, greater heterogeneity and instability, as well as higher proportions of poor. Overall, commodities showed greater formalization and lower poor proportions. In the case of agriculture, commodities activities occupied less, generated lower mass income and middle-income (although income percentiles slightly larger and more informality) and had lower poverty indicators than non-commodity (more heterogeneous rents). In livestock, commodities had higher percentages of occupation, income (although middle-income values and percentiles slightly smaller), and smaller proportions of poor than non-commodity (more heterogenous). In terms of occupation and income stood out the farming activities unspecified (non-commodity), the coffee growing and cattle (commodities). The cultivation of coffee and cattle had the lowest poverty indicators. agricultural production diversification indicators showed positive correlations with the occupation in activities not commodities (only), but also with the proportion of poor, indigent and concentration of income. In addition, the occupation in not commodities showed positive correlations with poverty indicators. It is noteworthy that the occupations in soybeans, coffee and fruit showed negative correlation coefficients with the indicators of poverty, indigence and gini. Finally, among the agricultural activities, there was to go to occupied in agricultural activities not commodities for commodity would be 'more equalizer' (decreasing coefficients over the distribution of income) than for cattle. The occupation in livestock (mostly non-commodity) would generate greater impact on the lower income deciles, but their coefficients grow back in the last deciles, which shows its most perverse character. Among the activities that would affect more strongly the lower deciles and less the higher deciles stand out pig farming, poultry, citrus cultivation, coffee and sugar cane. The cattle and the cultivation of soy, had the highest rates, but they grow back in the last deciles, which shows a more wicked character.

An effective hygiene and sanitation inspection of meat and meat products is essential for its production and commercialization. For this reason, the national and international standards responsible for these products quality control employs microbiological analyses methods as quality control tools. In December of 2012, it was included in the Ministério da Agricultura Pecuária e Abastecimento (MAPA) website, a Microbiological Scope of food and water, which presents the replacement of some methods proposed by the Normative Instruction 62. Some of these methodologies are considered rapid, practical and convenient. However, other methodologies were still replaced by conventional ones, which presents disadvantages as incorrect interpretations of the microorganism phenotypical and biochemical characteristics, leading to the misinterpretation of test results. Therefore, the objective of this study is to develop a comprehensive, practical and illustrative guidebook of microbiological analysis for in natura poultry cuts. The methods addressed in this guide are the official standards analysis required by the poultry cuts legislation, which are the Escherichia coli count, the thermotolerant coliforms count, the aerobic plate count and the detection of Salmonella spp. The approached methodologies for these analysis will be the AOAC 998.08, the Normative Instruction 62 and the ISO 4833-1:2013 and ISO 6579:2002, respectively. In these events, it is expected to obtain an enlightening and approved guidebook evaluated by laboratory technicians, which will help reduce the analytical subjectivity leading to a more reliable interpretation of the test results.
