Resumo:
A method to estimate the sand content in mussel products is described. It is based on the § 35 method for measuring the hydrochloric acid-insoluble portion of tomato purée, modified by freeze-drying of the sample during the preparation. By increasing of the volume of the sample it is also possible to minimise the standard deviation and the coefficient of variation.

Die 26. Jahrestagung der WEFTA fand vom 22. bis 26. September 1996 erstmalig in Polen statt. Gastgeber war P. Bykowski vom Institut für Seefischerei (MIR) in Gdynia, das im Jahre 1996 sein 75jähriges Jubiläum feiern konnte . Die Tagung wurde von etwa 70 Delegierten aus den 16 WEFTA Mitgliedsstaaten und Gästen aus den USA, Rußland, Israel und Litauen besucht. Die Konferenz wurde von Z. Polanski, dem Direktor des Institutes und von M. Brzeski, dem Zweiten Bürgermeister der Stadt Gdynia eröffnet. In 10 Vortragssektionen und einer Postersektion wurden den Teilnehmern insgesamt 38 Vorträge und 24 Poster geboten.

Die Krebstiere erfreuen sich sowohl national als auch international wachsender Beliebtheit bei den Verbrauchern. Mit der Intensivierung von Aufzucht- und Fangmethoden sowie mit der Anpassung der Verarbeitungstechnologien an die Erfordernisse des Exports und der dafür notwendigen Sicherung einer gleichmäßigen, möglichst hohen Qualität der Krebstiererzeugnisse gelangen in verstärktem Umfang Zusatzstoffe zum Einsatz, denen die Überwachungsorgane, Verbraucher und ihre Schutzorganisationen immer häufiger kritisch begegnen (Hermes 1995). Im folgenden soll versucht werden, in einem kurzen Überblick den gegenwärtigen Sachstand darzustellen.

Minced fish is a significant component of a number of frozen fishery products like fish fingers, cakes and patties. Predominately minced fish is produced from gadoid species (Alaska pollack, cod, saithe, hake and others) possessing the enzyme trimethylamine oxide demethylase (TMAOase, E.C. 4.1.2.32) (Rehbein and Schreiber 1984). TMAOase catalyses the degradation of trimethylamine oxide (TMAO) to formaldehyde (FA) and dimethylamine (DMA), preferentially during frozen storage of products (Hultin 1992). In most gadoid species light muscle contains only low activity of TMAOase, the activity of red muscle and bellyflaps being somewhat higher. In contrast, the TMAOase activity in blood, kidney and other tissues, residues of which may contaminate minced fish flesh, may be higher for several orders of magnitude (Rehbein and Schreiber 1984).

Commercially processed and for industrial purpose destined minces of several fish species were characterised with regard to their texture using texture profile analysis (TPA) of boiled specimen and by measuring the penetration force on raw minces as well as with regard to their colour by instrumental measurements of CIELab values. Concerning the parameters investigated the minces were in most cases significantly different. It was evident that the fish species is responsible for the functional properties of these intermediate products. For the TPA the influence of the measurement conditions was demonstrated and an appropriate method derived. IEF of proteins was used to verify the declared fish species. Unfortunately, this was not possible in all cases due to the lack of comparable pattern. Both the DMA and FA content were found to be in the normal range except those for saithe.

27 Jahre nach Durchführung der ersten Internationalen Konferenz über Fischinspektion, die von der FAO in Halifax, Kanada, 1969 veranstaltet wurde, war das Nationale Fischerei Institut der USA in Kooperation mit anderen Institutionen Sponsor und Organisator einer zweiten Konferenz über Fischinspektion und Qualitätskontrolle. Diese Konferenz fand vom 19. - 24. Mai 1996 in Arlington, Virginia, statt. An 3 Tagen war die Konferenz durch eine Ausstellung begleitet, auf der 26 Aussteller, Consulting-Firmen, Handelslaboratorien und Universitätsinstitute, ihr know how und ihre Dienste auf dem Gebiet der Fischinspektion und Qualitätskontrolle offerierten. Die Konferenzteilnehmer hatten während der Konferenzpausen auf diese Weise die Möglichkeit, sich über Neuheiten und Leistungsangebote zu informieren.

The evaluation of heated mussels by protein analysis makes clear that the methods used allow a differentiation between mussel tissues which had experienced different degrees of heating. It could be verifiyed by both, the analysis of enzyme activities and differential scanning calorimetry that the investigated trade products were only blanched and not completely well done cooked.

The 25th annual meeting of WEFTA was held in Noordwijkerhout, The Netherlands, in November 1995 as an "International Seafood Conference". In 12 sessions 40 oral presentations and 60 posters were presented. The topics included among others: Quality assurance, consumer demands and behaviour, processing, packaging, distribution, nutrition, storage, analytical methodology. The conference was attended by 210 participants from 33 countries.

Colour measurements were performed on smoked Norwegian salmon sides using an objective method based on the CIELab-system. The influence of a freeze/thaw cycle was evaluated. Already after a short frozen storage of 8 hours a signiticant colour difference could be noticed. This was manifested by an increase in lightness as well as in redness and yellowness as result of the freeze/thaw cycle. These colour changes were observable by eyes too.

The colour based on a CIELab system of both, breaded deep frozen and fried fish products, was measured using a Chroma-Meter Type 300 (Minolta). Remarkable differences especially with the deep frozen fish fillets were recognized. Due to prefrying the colour differences of the fish fingers were moderate. After frying to make the products ready to eat the colour differences between the fillets and the fingers were largely equalized. In general, the frying process was connected with a decrease of lightness L* and with strong to very strong total colour differences ΔE.

The techno1ogy of processing surimi and surimi-based products is described in detail from the German point of view. The most important definitions of both, intermediate and final products, are given. The quality aspects of surimi and final products derived from surimi are mentioned. Possibly further developments on the field of engineered seafoods are discussed shortly.

During the winter of 1982-1983, a combination of high tides, higher than normal sea level and storm-induced waves were devastating to the coast of California. Damage estimates for public and private property destruction in the coastal counties of California totaled over $100,000,000. Much higher than average sea levels played a very important contributory role in the flooding damage. These unusually high sea levels were due to a combination of higher than normal mixed layer temperature associated with a strong, 2-year El Nino, storm surge due to low atmospheric pressure and persistent winds, and the cumulative effect of steady, "global" rise in relative sea level. Higher than average high tides coincided to an unusual extent with the peak sea levels reached during the numerous storms between November 1982 and March 1983. Important cyclical variations occur in California's mixed tide regime and the consequences of these on extreme tides have not been properly considered previously. In fact, erroneous "predictions" of much higher tides in the 1990's appearing in the popular press during the 1982-83 flooding, caused much public apprehension.
