The beef burger is a common food on both the kitchen and restaurant table since the 1800s and is one of the most common choices on fast food menus. The main reason for this is because it is tasty, easily accessible, customisable, affordable and portable. In ROI, composite foods (i.e. foods made up of more than one ingredient) are an important source of meat, especially burgers, with the majority of burgers either being fried or grilled, and many eaten from takeaway outlets. With such easy access and with limited nutritional information available to consumers at point of sale, many people may not be aware of the nutritional content of what they are consuming or of the healthier options that may be available to them. Given the diversity of products available, this survey was designed to provide an insight into the energy (calorie), total fat, saturated fat, protein and salt content of a range of burgers from various takeaway outlets.

Adapted from the Irish Heart Foundation We all know that too much salt is bad for our hearts. But what can you do to cut down? Between 65% and 70% of the salt we eat comes from processed food, fast food, and canteen and restaurant food – so as well as reducing the amount of salt that you add to food, it’s especially important to cut down on the amount of salt you get from processed food. Getting to know your way around nutrition labels will go a long way to help you do this.

Assessment of eating habits in young children from multicultural backgrounds has seldom been conducted. Our objectives were to study the reproducibility and the results of a food frequency questionnaire (FFQ) developed to assess changes in eating habits of preschool children with a high migrant population, in the context of a multidisciplinary multilevel lifestyle intervention. Three kindergarten classes (53% from migrant backgrounds) in French-speaking Switzerland were randomly selected and included 16 girls and 28 boys (mean age +/- SD, 5.4 +/- 0.7 years). The FFQ was filled out twice within a 4-week interval by the parents. Spearman rank correlations between the first and the second FFQ for the 39 items of the food questions were as follows: low (r < 0.50) for 8 (7 P < .05 and 1 nonsignificant), moderate (0.50 <or= r < 0.70) for 22 (all P < .01), and high (r >or= 0.70) for 9 (all P < .01). In addition, 28 of 39 intraclass correlation coefficients were high (>0.50, all P < .01). Eighty-six percent of the children ate breakfast at home daily, but only 67% had lunch at home. The percentages of children eating at least once a week in front of the TV were as follows: 50% for breakfast, 33% for lunch, 38% for dinner, and 48% for snacks. Forty percent of children asked their parents to buy food previously seen in advertisements and ate fast food between once a week and once a month. Children generally consumed foods with a high-energy content. The FFQ yielded good test-retest reproducibility for most items of the food questions and gave relevant findings about the eating habits of preschool children in areas with a high migrant population.

By means of a literature review this paper aims at shedding more light on the potentialities of unhealthy food/drink taxation in changing eating patterns and life styles and hence combating the obesity epidemic. One remarkable point that emerges when assessing the set of selected papers is the existence of a wide diversity of objectives, methodologies, settings and datasets, policies implemented and results achieved by all these studies, which undoubtedly adds complexity to any attempt to draw a general conclusion on fast food taxation. Most of the examined studies predict a rather modest fiscal impact on unhealthy food and drinks consumption and/or nutrition intake and consequently a poor result on weight loss and obesity, by the interplay of several factors among them the effects of cross-price elasticities.

The consumption of Brazilian cassava has been reduced due to a lack of adjustment to the modern lifestyle. To reverse this trend, new products could be developed specifically targeted to high-value niche markets. Cereal bars stand out as fast food high in nutritional value. A bar formula mimicking cereal bars was prepared using a mixture of Brazilian cassava flour, hydrogenated vegetable fat, dried bananas, ground cashew nuts, and glucose syrup. After being pressed, the bars were dried for 1 hour at 65 °C, packaged in films, and stored under ambient conditions. Its stability was continuously monitored for 210 days in order to ensure its safety and enable its introduction to the market. Texture loss was observed in the packed bars after 90 days of storage, but the sensory characteristics allowed the testers to perceive this tendency after only 30 days of storage. However, chemical, physical, and microbial analyses confirmed that the bars were safe for consumption for 180 days. The results showed that a 45 g cassava flour-based bar enriched with nuts and dried fruits can meet 6% of the recommended daily fiber intake with a caloric value between that of the common cereal bar and that of an energy bar. Adapting the formula with ingredients (fruits, nuts) from different regions of Brazil may add value to this traditional product as a fast food.

El sector de comida rápida es un sector que está presentando un crecimiento acelerado a nivel mundial debido a los cambios en el día a día de los consumidores, en donde la prioridad es el tiempo y este genera unos acelerados ritmos de vida (Sirgado & Lamas, 2011). Este crecimiento, es un elemento que se quiere mostrar a lo largo de esta investigación, a través de cifras que corroboran la expansión del sector de comida rápida a nivel mundial, latinoamericano y a nivel nacional; información que será útil para que empresarios puedan extraer un análisis del escenario en el que se encuentran las marcas pertenecientes al sector. La expansión del sector ha generado un incremento en los puntos de venta de comida rápida, lo cual se ha facilitado con la implementación del modelo de franquicia como una estrategia de crecimiento en las compañías debido a las ventajas que ofrece y a la posibilidad de diversificar la oferta e invertir en nuevos mercados (Portafolio, 2006). De este modo, se presentan los conceptos fundamentales a entender de este tipo de negocio, así como las ventajas que posee y las clases de franquicia que se pueden encontrar; para quienes desean implementar el modelo en su compañía o para quienes piensan en adquirir una. Para ejemplificar lo mencionado anteriormente, se toma una organización nacional, la cual ha introducido el modelo de franquicia y es perteneciente al sector de comida rápida, caso que puede servir como referencia para otras marcas del sector.

Lo propuesto en este plan de negocio, es el diseño de un restaurante de comida oriental, recibiendo como nombre de POR TI: COME SALUDABLE, COME RICO, COME POR TI., ubicado en la ciudad de Bogotá D.C, específicamente en el barrio de chico de la localidad de Chapinero, dirigido al 1% de la población flotante y habitantes del sector entre estratos 4 a 6. POR TI nace bajo una propuesta que busca entregar al consumidor salud y cuidado personal. Brindando un producto de excelente calidad, preparado con ingredientes frescos, naturales y basados en recetas caseras, a través del concepto slow food y take away, arraigados en la cocina oriental, buscando crear colores, texturas y sabores que cautiven al consumidor. Se implementaran estrategias claras y concisas que permitan penetrar el mercado de la forma se ajuste a las necesidades del mismo. Se espera y aspira iniciar operaciones para Mayo del 2016, con un incremento de las ventas prometedor superando así el punto de equilibrio para el segundo año.

Food advertising and promotion to children has been identified as one possible contributing factor to the childhood obesity pandemic. Food marketing to children in "western" society consists mainly of foods that are high in fat, sugar and salt (HFSS), such as pre-sugared breakfast cereals; sugar sweetened beverages (SSBs); confectionary; savory snacks; and fast food. Of these heavily marketed items consumption of, SSBs, savory snacks and fast foods have been found to contribute to the childhood obesity pandemic. A systematic review was conducted to determine what types of products are being promoted and what types of techniques food marketers are using to promote these foods throughout the Asia-Pacific region. The review of current literature, while not abundant, clearly showed marketing styles and content similar to those in western countries were being employed in the Asia-Pacific. Advertisements in this geographic region often took on a local flair to make them more identifiable to children and adolescents in their respective regions and countries, due to the numerous cultural and traditional differences. Children in these developing parts of the world may be just as, if not more, susceptible to these advertising techniques than their counterparts in the west.^
