The progressive increase in consumption and production of poultry meat in later years comes forth with an increase of the occurrence of foodborne diseases, including salmonellosis. Salmonellosis is caused by the ingestion of contaminated products, mainly by the consumption of poultry meat which processing and preparation for consumption were not effective to eliminate pathogens. Thus, there is a need for the development of faster more sensitive methods of detection of pathogens as a way to ensure the quality of the food offered to consumers. The goal of this essay was to evaluate the effect of enrichment broths on naturally contaminated poultry meat samples. A total of 65 samples was collected, these samples were rinsed with 370 mL of buffered peptone water (BPS) 1% according with the traditional methodology. All of the samples were enriched with both Tetrathionate (TT) and Rappaport-Vassiliadis (RV) and all were analyzed by the convencional identification method and polimerasis chain reaction (PCR). Of the 65 analized samples, 34 (52%) were positive when analized by the conventional method, while 45 (69%) were positive when analized by the PCR. Amongst the 45 positive PCR samples, 44 samples were positive when enriched with TT, while just 32 samples were positive when enriched by RV. Of the 34 positive conventional samples, 29 samples were positive when enriched by TT and 31 were positive when enriched by RV

A Geografia da Saúde é um eixo temático dentro da ciência geográfica preocupada com as questões pertinentes à saúde ambiental e a saúde do coletivo. As contribuições dos geógrafos para o estudo da Saúde tem sido de grande valia, indo para além da análise espacial das práticas em saúde como também investigando e analisando os fatores determinantes ao risco a saúde e, inversamente, ao bem estar-estar do social e ambiental. Dentro deste contexto, esta monografia se propõe a uma investigação confirmatória a cerca de uma contaminação ao meio ambiente por metais pesados, neste caso, a contaminação por chumbo por uma extinta fábrica de lingotes de chumbo situada no município de Caçapava, SP. O chumbo é um metal que não possui função fisiológica conhecida ao corpo humano. Devido a características físicas e químicas favoráveis, esse metal foi largamente explorado pelo setor industrial e hoje, no mundo todo, temos exemplos de casos de contaminação tanto da população e do ambientel, por ser altamente tóxico. Caçapava possui mais um infeliz exemplo de contaminação ambiental por metais pesados, decorrente de uma fábrica que produzia o chumbo secundário e que atualmente está fechada por ordem judicial, abandonada e com toneladas de escória de chumbo armazenada de modo irregular, fato que está colaborando para uma contaminação residual naquele ambiente... Groundwater in the Rio Claro district is predominantly extracted from low productivity wells on the Itararé Aquifer, from depths greater than 150 m. These factors in conjunction with increasing demand for water supply have stimulated many industries to exploit the Rio Claro Aquifer, constituted by Cenozoic sediments of the Rio Claro Formation, where hydraulic properties are poorly known. For this reason, it is necessary to study the possible vulnerable to contamination punctual locations of the aquifer, in order to enable proper management of these groundwater reserves and to allow continuity of supply. Thus, this study aims to assess the vulnerability to groundwater on contamination Rio Claro Aquifer, punctually in Mandu mining site area, located in the District of Ajapi, Rio Claro - SP, the company which operates and sells industrial sand. The risk of groundwater contamination depends on the relationship between the hydrogeological characteristics of the aquifer layer (vulnerability to contamination) and the pollutant load. To evaluate the susceptibility to contamination it was applied the method GOD (FOSTER and HIRATA, 1987; FOSTER et. al., 2002) and, in addition, field and laboratory tests were performed to chacacterize the granulometry of the strata, hydraulic conductivity and some physical indices to make the evaluation more assertive and detailed. Punctual contamination vulnerability found in the aquifer Rio Claro, was moderate, which means that the aquifer is vulnerable to some contaminants, but when continuously discharged or leached. The decreasing availability of drinking water is a problem that has existed for a long time and continues to be aggravated, especially by the increase in population and pollution of water resources. Due to the need to find alternatives in order to ensure water supplies in sufficient quantity and quality for consumption by populations, rainwater collection arises as an alternative. The present study was developed in Ipeúna-SP, consisting of an experimental system of collection and storage of rainwater on the roofs of buildings. Samples of the same precipitation, differentiated through the initial disposal and treatment of the collected water, were stored during a period of six months and monitored through physical, chemical and microbiological analyses. With the results, the qualitative characteristics of the stored precipitation were found, the main differences among the samples were identified and the needs of treatment were studied.

The conservation of raw milk for long periods of time under refrigeration can result in the lost of its quality. This happens because bacterias, capable of developing in low temperatures, as psichrotrophics, in milk, associates with its enzymatic activities, are capable to degradate it. Although the pasteurization of milk sufficiently diminishes the transmission of the illnesses, that generally eliminates such microorganisms, is not a total efficient process because many enzymes produced for such bacterias are termostable, being able to resist the treatment and to remain active, leading to the loss of the quality of milk and its derivatives. The Normative Instruction 51 of 2002 established that milk must be cooled and stored in the production property, what resulted increasing the incidence of such bacteria in population destined milk. In some parts of the world contaminated milk is causing serious risks to the health of the population, assuming great importance in Public Health, mainly in relation to the hygienic-sanitary conditions of the product. ANVISA establishes, thus, maximum bacteriological concentration that must be evidenced before commercializing the product, guaranteeing the quality of milk as proper for consumption. Based on these aspects, the objective of this work is the microbiological analysis of 30 milk samples type C, collected in bakeries of the city Botucatu, in the state of São Paulo. Analysis were made to determinate the most likely number of termotolerants coliforms, as well the number of colony units of psichrotrophics bacterias, the presence of Salmonella and the enumeration of positive Staphylococcus aureus, at the moment of purchase and validity of the products

Since its discovery, radioactivity has brought numerous benefits to human societies. It has many applications in medicine, serving as a tool for non-invasive methods for diagnosis and therapies against diseases such as cancer. It also applies to technologies for energy in nuclear power plants with relatively low impacts on terms of perfect security. All applications, however, have risks, requiring maximum caution to drive processes and operations involving radioactive elements because, once released into the environment, they have extremely harmful effects on organisms affected. This paper presents fundamental concepts and principles of nuclear physics in order to understand the effects of radioactive elements released into the environment, culminating on the issue of radioactive contamination. Literature review allowed us to understand the radioactive contamination problem on living beings. Three major nuclear accidents have happened in the last thirty years, two of them in consecutive years. The nuclear accident at Chernobyl, Ukraine, in 1986, polluted large areas, condemning hundreds of thousands of people to live with consequences of the accident and effects of radiation, killing thousands of people throughout the years. In 1987, a major radiological accident occurred in Goiania (GO) when a source of radioactive cesium was violated, leading to the death of those who had direct or indirect contact with cesium. The most recent accident, in March, 2011, was located at the nuclear power plant in Fukushima Prefecture, Japan, after an earthquake and tsunami hit the region. There is no extensive and accurate knowledge about the consequences of the contamination entailed in that accident, although it is possible to verify signals on a global scale. An analysis of reports of contamination of large areas generated by nuclear plants with release of hazardous wastes suggests it is necessary to rethink the energy matrix of the various countries...

Salmonella is the etiological agent responsible for one of the most important Food Borne Disease (FBD), Salmonellosis, which generates significant economic consequences in several countries, including Brazil. Poultry meat is one of the most important disseminators of the pathogen. Accordingly, several countries have developed programs trying to reduce the prevalence of Salmonella in poultry meat. Such programs are based on the research of the pathogen in the carcasses, establishing a maximum limit of positive samples at each set of analysis. The Salmonella scans are usually made using the conventional microbiological methods, which tend to be expensive and time consuming. In recent years were developed rapid methods such as polymerase chain reaction (PCR), which can greatly shorten the results time, showing greater sensitivity and specificity than conventional methodology

The evaluation of soil permeability throughout the weathering profile is one of the most important features to be considered in environmental studies. This study, developed from field testing and analysis of data obtained by geostatistical methods, aims at mapping the permeability around the Ribeirão Claro river. The intent is to simulate an accident with toxic liquids where soil permeability is of fundamental importance. Another purpose of the research was to determine the minimum time that, in the event of an accident, a possible contaminant to reach the water table level and be routed to the nearest drain, in this case, the Ribeirao V Claro river constitutes fundamental information. The studied area of approximately 4 km² is located within the UNESP-Rio Claro campus, consisting of colluvial soil from Fm. Rio Claro superimposed on residual soil of Fm. Corumbataí. The method used to determine the permeability is the concentric cylinders performed on a sampling grid with 64 points containing spacing of 5 meters EW and 10 meters NS. In the places of permeability tests were collected samples for laboratory determination of the percentage of fines. From particle size analysis was performed and analysis statistical and geostatistical on this data. The histogram was based on the statistical studies, and the semivariograms were based on geostatistical estimation methods. Based on the comparison between the maps and the data obtained, it was determined that the percentage of fines in colluvial surface soil has little influence on permeability, which the proximity to the Ribeirao Claro river, the eastern portion, a factor that influences the distribution of permeability values

Geophysics studies in areas impacted by petroleum derivatives describe abnormalities of both low and high electrical resistivity (the opposite of electrical conductivity), confirmed as contaminant phase by chemical analysis: this contradiction can be explained by degrading processes that naturally occur and create sub products that can change the environment conductivity. Monitoring the variation of the parameters mentioned serves as a comparative basis to the variation in geoelectrical parameters, which identified the correlation between the same contaminant parameters and the difference between their behavior studied apart, as well as its relations with the biodegradation process. The results are applied to the fuel distribution and storage sectors, leading to the diagnosis and monitoring of possible groundwater contamination scenarios, and the knowledge of the area exposure time to the contaminant, besides the better remediation alternative and impacts control. Among some conclusions, the most significant are the decrease in conductivity over time, so as the increase in Eh value in the gasoline contaminated tank, as well as the decrease in the pH value in the second tank with ethanol, which can be attributed to its degradation. Comparing the variations in both tanks, it is evident that Eh, pH and electrical conductivity do not behave temporally in a similar way, although some correlations between Eh and pH can be related.

Foods are susceptible to be contaminated with several etiologic agents, which can lead to the development of illnesses, triggered by pathogenic microorganisms or their toxins. Food prepared and improperly stored can be the diseases vehicle. This study aimed at evaluating the sanitary conditions in preparing free school meals in the nursery schools, located in a city of the state of São Paulo. This study was conducted by performing microbiological analyses of samples collected from hands of workers responsible for preparing food, and of the water samples used for cleansing and preparing foods. The kitchen physical, structural and cleaning conditions were assessed by means of a checklist. This study analyzed 31 samples from worker hands swab, and 21 samples of water collected from three school kitchens. This study pointed out that the food handlers training should be improved, and a peremptory control of the water used for food preparation purpose should be established. Also, this study showed that the evaluated schools maintain the respective kitchens in a good standard of conservation and cleanliness.

Lately, the acceptability of fermented dairy beverages has been increased, due to the nutritional benefits, the practical consumption and the low cost of product for the manufacturers, and consequently for final market price to the consumers. During the manufacturing process, these products can be susceptible to microbiological contamination. The present study investigated the contaminant microbiota in fermented dairy beverages produced by small- and medium-sized companies, by means of analyses on moulds and yeasts counting, determination of the Most Probable Number (MPN) of total and thermo tolerant coliforms, Escherichia coli and Salmonella spp. detection, and determination of pH value. In spite of the absence of Salmonella spp., a high counts of yeasts and moulds were found, and E. coli was detected in five samples (16.67 %); and the sample were classified as “products in poor sanitary conditions”, because they showed thermo-tolerant coliforms counting higher than the standard established by the legislation in force. Therefore, quality programs such as Good Manufacturing Practices (GMP) and Hazard Analysis and Critical Control Points (HACCP) should be employed to prevent any contamination risk, in order to provide safe products to consumers.
