The purpose of the thesis is to examine the relationship between tourism and the local culture expressed in culinary experiences offered in the traditional, nostalgic-themed markets that have arisen as popular attractions in the 21 st century. Central to the thesis is an examination of how the traditional cultural values are articulated in the production, promotion and consumption of culinary experiences in order to understand the value of culture when embedded in the process of commodification, as well as to understand influential socio-cultural factors. The thesis investigates the potential of traditional markets to promote food as the main attraction in the market. Field studies were conducted from December 2012–March 2014 in eight traditional markets in the central region of Thailand. Based on the ethnographic approach in studying the narratives in the markets, a variety of methods were implemented in the process of data collection. Besides observational analysis of the venue, semi-structured interviews and the self-administered questionnaires were used to collect data from actors who engage in food experiences, including management team members, food traders and visitors. Data was also collected from interviews with officers working for Tourism Authority of Thailand (TAT).  Keys findings of the thesis reveal that the cultural expressions of food experience in each market is an outcome of both the interactions of worldviews expressed by actors involved in the traditional market and the socio-cultural condition of Thailand. The relationships between stakeholders’ attitudes towards food experiences and the commercial potentials and limitations of food were analysed. The analysis of the cultural value of culinary experiences demonstrates that the existing academic discussions of the authenticity of tourism are insightful in explaining the character of food experiences offered in this tourism scenario. Most importantly, authenticity in tourism experiences, being a desirable element in culinary experiences, is a reflection of the how the pre-modern aspect of Thai society is embraced in a contemporary context. In addition, the commodification of culinary culture generates multidimensional consequences on the value of traditional culture and local lives. Moreover, the performance of culinary experiences can be viewed from the perspective of how Thai society interacts with globalization. The thesis also points out that it is possible to compare the situation of the traditional markets with the marketing positioning of food in Thai tourism marketing policy.

The use of natural areas for underwater coastal marine activities such as snorkelling is growing, but the amount of ecological and socioeconomic data on these activities is scarce and relates mainly to coral reef areas. Three underwater self-guided routes were designed at Marinha Beach (Algarve, Portugal), based on scientific information, with in situ interpretation and guidance, as a way to enhance biodiversity awareness and, hence, reduce the probability of human impacts. The routes were implemented in two consecutive summer seasons and after each season, visual census techniques were used to describe flora composition and cover area (seaweeds and seagrasses) in order to understand patterns and evaluate human impacts. Snorkelers' opinions and perceptions about several issues related to the routes' environmental education role (e.g. role in enhancing biocliversity awareness) were investigated by questionnaire after the snorkelling activity. An inter-annual difference inflora assemblages was found, probably associated to natural variability, rather than snorkelers' impacts. Results indicate that, in fact, in situ education and interpretation can raise environmental awareness if properly addressed, resulting in a satisfactory way of engaging snorkelers in the protection and in the conservation of the visited environments, thereby preventing negative ecological impacts. The work analyses the tourist water demand in Benidorm, a sun-and-sand destination ranked fourth in Spain by number of visitors, where tourism competes with local residents, nature, agriculture and industrial sectors for scarce water resources. In particular, we have studied the correlation between the water consumption of 83 hotels in Benidorm and their characteristics and services which can impact water use. For this purpose, we have examined the water consumption billed, by the water utility company HIDRAQUA in the period January 2010 - October 2022, to the tourist structures in the municipality of Benidorm, and we have explored the hotels’ features, thanks to the collaboration of the tourism and hotels association HOSBEC. To give a better understanding and contextualization of our analysis we first described explained the of the complex water supply system and the efforts that have been made to reduce the threat posed by the peculiar climate conditions of the region. We saw that the water consumption per guest has slightly decreased in the recent years and that the tourist flux has increased: the global pandemic posed a stop to travels for more than one year, but now both the tourist flux and the tourist water consumption are reaching pre-pandemic level. We found that larger hotels, and in particular the ones opened all the year, that probably tend to offer more water-demanding service with respect to the seasonal ones, have higher water consumption per bed. From the analysis of the role of the different hotel characteristics over the water demand patterns, we found that water use increases with the increase in the hotel category and in the ratio between the surface area of the swimming pool and hotel size (number of beds). Other factors impacting the consumption are the presence of an on-site laundry for washing the hotel linen, the garden, and the implementation of environmental policies for water-saving.

Este artigo objetiva discutir o processo de significação da cidade histórica turística de Ouro Preto. Desenvolve-se por meio de uma pesquisa em psicologia social baseada na fenomenologia e no estudo micro-histórico da percepção. O trabalho foi baseado em extensa pesquisa de artigos, livros e outras fontes sobre a cidade de Ouro Preto. Ao final, mostram-se os diferentes discursos concernentes a quatro campos perceptivos criados durante o século XX.

This paper will examine attitudes to eclectic stylistic borrowing in Japan in the twentieth century in light of the concept of authenticity. I am particularly interested in how an earlier claim correlating European modernist and traditional Japanese architecture continues to colour conceptions about what is an 'authentic' response for Japanese architects to make to contemporary conditions. Non-Western and vernacular architectures generally have been the repository for touristic desires for regional authenticity and difference. Yet Japan's unique role in the development of modernist architecture has given a peculiar intensity to the demand for its architecture to resist a perceived postmodern decadence.

This article extends earlier research regarding the relationships between senior travelers’ participation in activities while on vacation, their overall satisfaction with their travel experiences, and their psychological well-being. A path model was developed to depict the direct and indirect relationships between these variables by using a sample of senior tourists traveling on North American escorted tour itineraries. Whereas the direct effect accounted for 98% of the relationships between the senior tourists’ levels of participation in activities and their psychological well-being, the indirect effect was negligible. The study concluded that senior tourists’activity levels were significantly related to their psychological well-being, but their satisfaction with the tours was not.

Atreladas a uma estética própria e “efeitos de verdade” (PELLEJERO, 2008), as videografias turísticas acabam por compor linguagens fartamente informativas sobre aquilo que se quer dizer sobre os lugares. Suas cenas são as apontadas para propagandear uma imagem a ser consumida, delas esperam-se o melhor ângulo a ser fotografado, experiências únicas e roteiros alternativos e naturais para se conhecer o lugar. Sendo assim, são as imagens turísticas, na atualidade, linguagens potentes para se entender as narrativas sobre os lugares, suas imaginações espaciais, bem como as construções de ficções sobre determinada realidade. Uma vez envolvidas as produções de ficções hegemônicas, os vídeos turísticos e as imaginações espaciais que temos deles podem promover modos cristalizados de se pensar o espaço; distanciando-se dos propósitos de entender o espaço a partir das suas conexões-desconexões e multiplicidade de trajetórias (MASSEY, 2008). Nesse contexto, essa pesquisa tem como objetivo principal discutir como os vídeos turísticos, em especial dois vídeos da atual campanha da Secretaria de Turismo do Espírito Santo, “Descubra o Espírito Santo”, apresentam uma imaginação espacial. Também seguem como interesse: refletir e analisar a política visual e a estética das videografias turísticas; entender e analisar a produção de uma ficção para construção e mobilização de uma imaginação espacial e estudar autores e produções videográficas que se dedicaram a pensar possibilidades outras de mobilizar e desterritorializar uma imaginação espacial e as estéticas videográficas.

A dissertação problematiza as relações entre movimentos sociais e Estado no Brasil contemporâneo, dando enfoque à entrada de lideranças de movimentos para órgãos públicos, por meio da ocupação de cargos de confiança e comissionados. Esta mudança no local de atuação, que pode ser compreendida como “trânsito” (da sociedade civil para o Estado) ou do ponto de vista da transformação de papéis (de desafiantes a membros da polity), repercute sobre o campo do ativismo em questão, sobre as decisões e políticas dos órgãos públicos envolvidos, assim como sobre o próprio ativista. Tendo em vista essa discussão, estabelecemos como objeto de atenção os impactos promovidos no nível individual, tendo como objetivo investigar e analisar as transformações processadas nas dimensões objetivas e subjetivas de carreiras de lideranças ativistas que adentraram o Estado por meio da ocupação de cargos. Assim, foi realizado um estudo das carreiras ativistas de seis lideranças reconhecidas por terem atuado em um campo específico de militância no Espírito Santo – o campo ambiental – e que ocuparam cargos em órgãos públicos. A metodologia utilizada foi qualitativa, e os dados foram coletados em entrevistas semiestruturadas e em profundidade com as lideranças e em pesquisa em outras fontes, como páginas de internet e materiais cedidos pelos próprios entrevistados. As análises foram instrumentalizadas teoricamente pela sociologia das carreiras militantes, por meio da qual buscamos reconstruir itinerários objetivos e aspectos subjetivos da atuação política das lideranças. Os resultados revelam que, na maioria dos casos estudados, a entrada para o Estado não foi acompanhada do desengajamento em relação ao ativismo desenvolvido em organizações e lutas ambientalistas; e que é recorrente a conciliação (e por vezes a articulação) de ambos. Todavia, a dupla atuação no movimento e no Estado foi permeada por tensões, levando algumas vezes a conflitos e rupturas. O trabalho permite concluir que, mesmo para os que se mantiveram ativistas em movimentos ambientais, houve impactos decorrentes da atuação em órgãos públicos sobre suas carreiras objetivas e subjetivas, sendo notável uma mudança na visão e na relação com o Estado, compreendido como lugar onde é possível “gerar contribuições”.

In administering their territories, most local municipalities aim to preserve their natural, historical and ethnographical resources while simultaneously using them to increase revenue and employment. In order to efficiently promote the products and services available and attract tourists, decision makers, private and public, need to know and incorporate tourists’ preferences in their marketing strategies. In this chapter we illustrate the use of stated preferences as an instrument to identify national and foreign tourists’ preferences regarding the products and services that the touristic destination of the Minho-Lima region (Northwest Portugal) should offer. As a starting point, we have taken the three general groups of touristic resources mentioned above as attributes. We take Ponte de Lima, a municipality in this region that has a strong cultural tourism potential as an example to identify possible future tourism scenarios for this territory. We believe the previously identified methodology can be a valuable instrument in the identification of the strengths and weaknesses of the selected territory and, thus, support the decision making process behind its future tourist development and marketing strategies.
