An analytical procedure for the separation and quantification of 20 amino acids in cachacas has been developed involving C18 solid phase cleanup, derivatization with o-phthalaldehyde/2-mercaptoethanol, and reverse phase liquid chromatography with fluorescence detection. The detection limit was between 0.0050 (Cys) and 0.25 (Ser) mg L-1, whereas the recovery index varies from 69.5 (Lys) to 100 (Tyr)%. Relative standard deviations vary from 1.39 (Trp) to 13.4 (Glu)% and from 3.08 (Glu) to 13.5 (His) for the repeatability and intermediate precision, respectively. From the quantitative profile of amino acids in 41 cachacas, 5 turns, and 12 whisky samples, the following order of amino acids in significant quantities is observed: Gly = Ser < Cys < Ile < His < Pro = Asp < Asn < Tyr for cachaca; Phe < Glu = Gln = Val = Ala < His = Gly Thr = Arg = Tyr < Asn Ser = Lys = Pro < Cys = Asp for rum; and Ala = Asn < Trp < Gln = His = Met = Ile = Cys < Thr < Asp Leu < Phe = Lys < Ser = Gly = Tyr = Val < Glu = Pro < Arg for whisky samples. A dynamic headspace solid-phase microextraction (HS-SPME) and gas chromatography coupled to ion trap mass spectrometry (GC–ITMS) method was developed and applied for the qualitative determination of the volatile compounds present in commercial whisky samples which alcoholic content was previously adjusted to 13% (v/v). Headspace SPME experimental conditions, such as fibre coating, extraction temperature and extraction time, were optimized in order to improve the extraction process. Five different SPME fibres were used in this study, namely, poly(dimethylsiloxane)(PDMS),poly(acrylate)(PA),Carboxen-poly(dimethylsiloxane)(CAR/PDMS),Carbowax-divinylbenzene(CW/DVB)and Carboxen-poly(dimethylsiloxane)-divinylbenzene (CAR/PDMS/DVB). The best results were obtained using a 75 m CAR/PDMS fibre during headspace extraction at 40◦C with stirring at 750rpm for 60min, after saturating the samples with salt. The optimised methodology was then appliedtoinvestigatethevolatilecompositionprofileofthreeScotchwhiskysamples—BlackLabel,BallantinesandHighlandClan.Approximately seventy volatile compounds were identified in the these samples, pertaining at several chemical groups, mainly fatty acids ethyl esters, higher alcohols, fatty acids, carbonyl compounds, monoterpenols, C13 norisoprenoids and some volatile phenols. The ethyl esters form an essential group of aroma components in whisky, to which they confer a pleasant aroma, with “fruity” odours. Qualitatively, the isoamyl acetate, with “banana” aroma,wasthemostinteresting.Quantitatively,significantcomponentsareethylestersofcaprilic,capricandlauricacids.Thehighestconcentration of fatty acids, were observed for caprilic and capric acids. From the higher alcohols the fusel oils (3-methylbutan-1-ol and 2.phenyletanol) are the most important ones.

Neste trabalho fez-se o estudo do conteúdo de polifenóis totais (PT) por reação de Folin-Ciocalteau e das características colorimétricas por espetrofotometria e colorimetria de dois tipos de vinho: branco (Vb) e tinto (Vt) e o estudo evolutivo das mesmas características em soluções hidroalcoólicas (SH), miméticas ao vinho em teor alcoólico e pH. Tanto os vinhos como as soluções estiveram em contacto com vários tipos de espécies botânicas com potencial interesse enológico: Acácia (AC), Cerejeira (CJ), Castanheiro (CT) e Carvalho (CN) em concentrações de 50 g/L, 2 g/L e 6 g/L para as SH, Vb e Vt respetivamente todas elas com quatro graus de queima e duas morfologias: aparas e dominós (apenas SH). As SH-aparas estiveram 11 dias em contacto com as madeiras onde ao final do dia 9 se registou um teor de PT de 1128 (AC), 321 (CJ), 2346 (CT) e 1815 (CN) mg GEA/L para todos com queima ligeira, à exceção de castanheiro, que obteve o máximo na madeira sem queima. Nas SH-dominós o máximo de PT registou-se em carvalho sem queima com 1897 mg GAE/L, quando em contacto com a madeira num período superior a 9 meses. O estudo dos PT nos vinhos mostrou que as madeiras são capazes de os enriquecer com este tipo de compostos registando-se um aumento máximo de 74,44 mg GAE/L e de 979,93 mg GAE/L para os Vb e Vt respetivamente. No estudo colorimétrico por espetrofotometria foram avaliados os parâmetros CIELab de todas as SH e observou-se que L* (luminosidade) tende a diminuir com o grau de queima e com o tempo para todas as madeiras. O parâmetro a* (verde/vermelho) em AC e CJ diminui com os dias e com o grau de queima representando uma diminuição da componente vermelha. O inverso é observado em CT e CN. Por fim, b* (azul/amarelo) tende a aumentar em todas as SH com os dias e a queima tornando a solução mais amarela. Comparando os vinhos com as suas testemunhas, em Vb L* e b* aumentam refletindo-se num aumento da cor amarela e a* é mantido. Nos Vt, L* diminui quando na presença das madeiras e a* e b* aumentam acrescendo a sua componente vermelha. Fez-se a avaliação de alguns voláteis das SH por GC/MS onde foram encontrados compostos com interesses organoléticos como é o caso da lactona do whisky nalgumas graus de queima para as espécies botânicas de cerejeira e carvalho.

This thesis seeks to provide an understanding of contemporary Irish social drinking patterns by conducting a detailed analysis of the evolving sociological theories of alcohol consumption in Ireland. ‘Alcohol is a social drug which, to this day, evokes the divisive moral qualities that originated, or at least were solidified, in the last century with the birth of temperance movements’ (Cassidy, 1997:175). The temperance movement in Ireland under Father Mathew, a legacy which still reverberates in Irish society, served to further ingrain the ‘image of the whisky drinking Irishman’ (Ibid: 17). This is seen in such work as Stivers (1976) who uses sociological labelling theory to provide verification of a deviant Irish status, biologically, socially and culturally predisposed to alcohol. The author argues that these temperance movements sought to remove the linkages of alcohol and “Irishness” but this quasi-stigmatisation process created a “self-fulfilling prophecy”, which further abetted the legitimisation of alcohol within cultural spheres. The tourism industry, in connection with drink manufacturers, has had a monumental role in alcohol’s contemporary position within the upper echelons of Irish culture and heritage. Their hand in the commodification of “Stage Irishy”, seen as “craic”, has further entrenched the links between consumption of alcohol and the consumption of Irish Identity “McGovern, 2002). Furthermore, commercial interests are keen to cash in and maintain the dominance of alcohol in Irish society. This thesis concludes that this factor, in connection with the accelerated modernisation that Ireland has experienced since the mid-nineties, has malleable consequences for Irish society. As Keohane and Kuhling (2007) assert, post-modern consumption patterns of excess and ‘insatiability’ have been introduced into contemporary Irish drinking patterns and are affecting the nature of alcohol consumption in Ireland.This resource was contributed by The National Documentation Centre on Drug Use.

The aim of this study was to evaluate the chemical composition of sugar cane spirits, fermented by different commercial Saccharomyces cerevisiae yeast strains and double distilled by pot still. Sugar cane juices were separately fermented by yeasts CA-11, Y-904, BG-1, PE-2, SA-1 and CAT-1 and distilled by pot still according to the methodology used for whisky production. The alcoholic liquids from first and second distillations were analyzed for concentrations of ethanol, volatile acidity, aldehydes, esters, furfural, higher alcohols and methanol. The sugar cane spirits derived from fermentation by the different yeast strains presented distinct chemical compositions.

Este trabalho teve como objetivo verificar a autenticidade de bebidas alcoólicas (whisky, vodka, conhaque de gengibre, etc.) enviadas para análise ao Instituto Adolfo Lutz no período de 1993 a agosto de 1999. Devido à presença no mercado nacional de bebidas alcoólicas clandestinas, principalmente aquelas com alto valor agregado, foi realizado o monitoramento através da análise de composição química destas bebidas. Normalmente estes produtos são elaborados com álcool, água, aroma e corante caramelo e que por falta de controle dessas matérias-primas, podem oferecer risco potencial à saúde humana pela presença de metanol. A técnica empregada na análise dos componentes secundários e metanol das amostras foi realizada através da cromatografia em fase gasosa com detector de ionização de chama. Observou-se que em 608 amostras de bebidas alcoólicas analisadas, 391 eram falsificadas e dentre estas 2 apresentaram teores de metanol acima do limite tolerado (200mg/100mL de álcool anidro) pela legislação em vigor. Os resultados obtidos sugerem uma grande persistência em se produzir bebidas alcoólicas falsificadas. Desta forma, é muito importante estar sempre monitorando estes produtos e identificando os diferentes tipos de falsificações existentes no país.

The objective of this study was to determine the chemical profile of sugarcane spirits produced by different double distillation methodologies in rectifying still. Fermented sugarcane juice was distilled in rectifying still according to three double distillation methodologies: the methodology used for cognac production; the methodology used for whisky production; and the 10-80-10 percentage composition methodology, referring to the volumes of head, heart and tail of the distillate fractions from the second distillation. For comparison purposes, a simple distilled spirit was also produced. The distillates were analyzed for concentrations of ethanol, copper, volatile acidity, furfural and hydroxymethylfurfural, aldehydes, esters, methanol and higher alcohols. The spirits were also evaluated on the sensory attributes of aroma, taste and preference. Compared to simple distillation, double distillation improved the chemical quality of the spirits, since it has reduced the concentrations of acids, aldehydes, esters, methanol, higher alcohols and, consequently, their coefficient of congeners. Regardless of the methodology employed, the double distillation improved the sensory quality of the spirits since they obtained higher sensory acceptance in relation to spirits produced by simple distillation. Among double distilled spirits, the one produced according to whisky methodology obtained the best scores from appraisers on the aroma and flavor parameters and it was also the most preferred.

Diageo es la multinacional líder en producción y comercialización de bebidas espirituosas Premium y cuenta con presencia en más de 80 países incluyendo Colombia, donde la industria de licores presenta una tendencia creciente consecuente con el crecimiento económico del país. Dentro de este contexto, la categoría de bebidas espirituosas juega el papel principal con productos como ron, whisky y aguardiente, con la mayoría de la participación en el mercado nacional. Sin embargo, existe en esta industria un sistema tributario que se presenta como una barrera para la expansión del mercado que tienen los bienes importados. Bajo este marco, se presenta con gran importancia la firma de un Tratado de Libre Comercio con la Unión Europea, el cual a la fecha se encuentra en una etapa avanzada después de haber sido aprobado por el Congreso en Colombia y por la Unión Europea aunque todavía no ha entrado en vigencia. Este tratado podría beneficiar a las compañías productoras y comercializadoras de bebidas europeas, facilitando su ingreso a los mercados departamentales y logrando con esta negociación un mayor control por parte del gobierno nacional a las prácticas anticompetitivas que se llevan a cabo por parte de algunos departamentos. A lo largo de este trabajo se estudia particularmente a la empresa británica Diageo, teniendo en cuenta que su portafolio mayoritariamente proviene de Europa y que existe una tendencia creciente en el consumo de este tipo de bebidas. Asimismo, se estudiará la situación actual del sector de bebidas alcohólicas en Colombia, con lo cual se conocerá más de cerca la posición estratégica de Diageo dentro de la industria y se verá como es el comportamiento de las empresas que participan en esta para las cuales el Tratado traería consigo oportunidades y retos importantes que deben afrontar y aprovechar.

A low-cost method is proposed to classify wine and whisky samples using a disposable voltammetric electronic tongue that was fabricated using gold and copper substrates and a pattern recognition technique (Principal Component Analysis). The proposed device was successfully used to discriminate between expensive and cheap whisky samples and to detect adulteration processes using only a copper electrode. For wines, the electronic tongue was composed of copper and gold working electrodes and was able to classify three different brands of wine and to make distinctions regarding the wine type, i.e., dry red, soft red, dry white and soft white brands.
