O suco de laranja é um alimento rico em substâncias antioxidantes, como os flavonoides cítricos, vitamina C e carotenoides, que podem reduzir o estresse oxidativo que está relacionado à gênese das doenças cardiovasculares, diabetes e câncer. No entanto, o processamento da laranja para obtenção do suco interfere no tipo e quantidade dos compostos antioxidantes, podendo comprometer as ações esperadas. O objetivo deste trabalho foi avaliar a atividade antioxidante do suco de laranja, comparando os resultados após a ingestão aguda do suco de laranja fresco e do suco de laranja pasteurizado comercialmente em indivíduos adultos saudáveis. Cada voluntário foi submetido a dois tratamentos: ingestão aguda de suco de laranja fresco e, após intervalo de 30 dias, ingestão aguda de suco de laranja pasteurizado. Nos dois tratamentos foram colhidas amostras de sangue dos indivíduos antes e após a ingestão do suco de laranja. O efeito antioxidante total foi mensurado pelo ensaio do radical ABTS+ (2,2'azinobis (3-etilbenzenotiazolina 6-sulfônico) e pelo ensaio de TBARS (substâncias reativas ao ácido tiobarbitúrico) nas amostras de sangue. Observou-se um aumento de 2,2% na capacidade antioxidante do sangue a partir de 4 horas após a ingestão do suco de laranja fresco e que se manteve estável até 24 horas do consumo (p<0.05). Já com a ingestão do suco de laranja pasteurizado, a capacidade antioxidante se manteve estável e equivalente ao suco de laranja fresco nas primeiras 4 horas, mas aumentou 1,4% após 8 horas, permanecendo neste nível até as 24 horas seguintes (p<0.05). Após a ingestão do suco fresco, os níveis de peroxidação lipídica, diminuíram 27% nas primeiras 4 horas. Porém, a partir das 8 h retornaram ao valor inicial. Os resultados após o consumo do suco pasteurizado mostraram uma redução da peroxidação lipídica em 18% a partir das 4 horas e 8 h (p<0.05), e esta redução se acentuou (27%) às 24 h ...

In this work evaluated the content of vitamin C and total carotenoid in tomatoes fresh and dehydrated for conserve, with posterior immersion in sauce, verifying its sensorial acceptability. Dehydration was performed in dryer with airflow at 70 °C to obtain a product with final moisture of 45%. Determinations were carried out ascorbic acid, soluble solids, acidity, sugars and carotenoid before and after the dehydration process. The dehydrated tomatoes had been immersed in three types of sauces (pepper sauce, oregano with parrot leaves sauce and garlic sauce) per 25 days. After this period, the dry tomatoes in conserve had been submitted to the sensorial analysis in the pate form, applying themselves preference test. The results had been showed that retention of vitamin C and total carotenoid in the dehydrated product showed retention of 14.0% and 44.3%, respectively, in tomatoes after the dehydration process. The dulce de leche or milk candy is a food widely consumed in Brazil, which shows typical characteristics of taste, color, flavor and texture. The lady-finger red pepper is regularly present on the Brazilian people table as this product contains a pungent flavor favoring various spices; and it is also rich in ascorbic acid (vitamin C) which is an excellent antioxidant. This study aimed at developing a dulce de leche containing lady-finger red pepper, and to determine the composition of the product. Also, the ascorbic acid contents were quantified in products stored for different periods (0, 30 and 60 days). The product acceptance by consumers on the sensory characteristics was evaluated by means of hedonic scale for color, aroma, flavor and texture attributes. The composition of the product was in accordance with the legislation in force, and the ascorbic acid contents were practically stable during the storage, and the sensory analyses indicated that the red pepper-containing dulce de leche was well accepted.

The tangerine 'Sunki' are highly relevant for the Brazilian citrus industry by presenting important traits for genetic improvement and to be considered a great portaenxento. In this context, the objective of the present work to study the characterization of the fruits of citrus rootstock 'Sunki', depending on the position on the plan and also the germination of their seeds. The physical characteristics evaluated were fruit weight, longitudinal and equatorial diameters of the fruit longitudinal diameter / equatorial diameter, number of buds per fruit, weight of buds and bark and number of viable seeds per fruit. As for the chemical characterization was evaluated titratable, acidity, soluble solid, "Ratio", pH and vitamin C. For the evaluation of these variables, the fruits were obtained from the northeast, southwest, northwest and southeast quadrants. Regarding the evaluation of seed germination, different doses of gibberellic acid and Stimulate were used. The seeds extracted from ripe fruit, washed, dried in the shade and stored in BOD. Immediately after, they were treated for 24 hours with plant growth regulators. After soaking, the seeds were placed in a germinator in germitest paper. After initiation of the germination process, the evaluations were performed daily until the thirty- fourth day. Fruits of 'Sunki'mandarin with uneven as the fruit position within the canopy, the use of gibberellic acid and growth promoter is promising for commercial use on seed germination of this rootstock.

Infection with hepatitis C virus is a worldwide public health problem it affects about 170 to 250 million people worldwide may lead to complications such as cirrhosis and hepatocellular carcinoma. Patients with chronic hepatitis C most often is inadequate nutrient intake, macro and micronutrients, which induces changes in nutritional status and lipid profi le. Supplementation with vitamin C has shown benefi t. Limited information is available on levels of vitamin C in this type of illness. The study aimed to evaluate the effect of regular intake of orange juice on the nutritional and dietetic of patients with chronic hepatitis C infection. The study enrolled 23 patients volunteers, 13 men and 10 women treated at the Special Health Service of Araraquara (SESA). They consumed for 8 weeks 500 mL.d-1 of pasteurized orange juice. At baseline and after 8 weeks of juice intake the patients were evaluated for anthropometric parameters. The dietary intervention with 500 mL.d-1 with orange juice during the 8 weeks did not alter the nutritional status of patients.
