Shark livers are considered as an important raw material providing a quality fish oil. It has been reported to aid white — blood-cell production and act as an active ingredient in hemorrhoid treatments. It is also reported that liver oil as a good supplement of vitamin A and poly-unsaturated fatty acids which are important to the development of brain cells in human. Freshness of livers is very important to extract better quality oil. In Sri Lanka, the annual shark production amounts to 8000t, however the quality of livers collected from landing sites has not being measured yet. Present study was conducted to evaluate the quality of silky (Charcarninus fakiformis) shark livers available in Negombo and Beruwala landing sites in the West Coast of Sri Lanka and also to study the relationship between organoleptic and bio-chemical correlation on freshness of shark livers. Liver samples which were collected from landing sites in the West coast of Sri Lanka, were evaluated for external and internal colour, texture and odour. Total volatile nitrogen (TVN), pH value, free fatty acid (FFA%) and peroxide (PV) values of livers were also determined to assess quality. According to the organoleptic scoring system 4.3% of liver samples were categorized as best in quality while 30.4%, 56.5% and 8.7% rated as good, medium and poor in quality respectively at the Negombo and Beruwala landing sites. Bio-chemical analysis showed that the better quality livers had the highest score for sensory evaluation and low values for TVN, FFA and peroxide value while low quality livers gave low score for sensory evaluation and high TVN, FFA, peroxide values. Correlation coefficient of organoleptic scores against total volatile nitrogen value, pH value, free fatty acid % and peroxide value of shark livers were determined by statistical analysis. Organoleptic score of shark livers was found to be highly.

Dehydroacetic acid and ammonia were found to be very effective in checking the growth of all the cultures at all concentrations tried. The two nitrofuran derivatives namely, semicarbazone and AF-2 were fairly effective, semicarbazone being more effective than AF-2. Sodium nitrite was found to be totally ineffective against the cultures at all concentrations tried.

The purpose of this communication is to bring out the influence of season on the chemical composition of crab, covering a period of 2 years. Changes in moisture, protein, water extractable nitrogen, non-protein nitrogen, glycogen, lactic acid, fat and free amino acid composition of crab meat have been reported on a monthly basis.

The chemical constituents of Sepia orientalis and Loligo vulgaris weighing between 200-300g have been studied. It has been found that these species could be classed as high protein and low fat food and that these are good sources of calcium, phosphorus, iron and moderate amounts of B-group vitamins.

The effect of certain chemical agents on dopa oxidation by phenolases has been examined. Sulphur containing amino carboxylic acids are inhibitory agents for dopa oxidation. Tyrosine, a substrate for the enzyme also acts as an inhibitor for dopa oxidation by the enzyme. The possible mode of action has been discussed. The function of diethyl dithiocarbamate in suppressing the display of enzyme activity has been detailed and its behaviour has been compared to the other chemical agents studied.

Seasonal variation in the proximate composition of different body regions of Pampus argenteus is reported. The fat content of the fish is high during winter whereas during summer the fish becomes lean. A comparison of average values of proximate composition and energy values of silver pomfret and black pomfret (Parastromateus niger) is given.

Making use of the streak plate technique and low temperature incubation, 28 cultures belonging to six genera namely, Achromobacter, Flavobacterium, Pseudomonas, Micrococcus, Vibrio and Alcaligenes were isolated from different varieties of marine fish. The growth studies indicated that all of them were able to grow between -5 and +5°C within a week's time and none of them showed growth at 37°C. The optimum temperature of growth for all these cultures was in the range 25-28°C. Among these only one, i.e., a Vibrio sp., was found to be an obligate psychrophile.

Results of a preliminary investigation on the overall chemical nature of fish skin mucin in lung fish, Clarias batrachus, with special reference to water soluble low molecular weight compounds, are presented. Changes observed during room temperature spoilage have been studied with a view to present a new approach towards the assessment of freshness in fish inspection. pH of the mucin was distinctly alkaline (8.2) and remained unchanged during spoilage. Much of the nitrogen was found to be present in the glycoprotein fraction. Free amino acids and purine bases were present in appreciable quantities in the aqueous extracts which registered a significant increase after 10 hrs. Post-mortem increase in total solids was accompanied by a slight rise in protein nitrogen which may indicate tissue breakdown. Increase in TVN was also observed to occur earlier in the outside mucin as compared to the inside muscle. Presence of free sugars or sialic acid could not be confirmed nor was there any indication of cholesterol and lipoid material as stated in earlier literature.

Protein extract prepared from squilla (Grato squilla nepa), a commercially unexploited crustacean, was analysed for crude protein and essential amino acids. All the essential amino acids except tryptophan and threonine were present in nutritionally adequate amounts. The protein was evaluated for its nutritional quality in respect of growth rate, protein efficiency ratio (PER) and liver nitrogen content by feeding on rats. Growth rates and protein efficiency ratios were similar in rats fed on casein, squilla protein and a combination of squilla protein and casein (1:1) diet. The weight of liver and kidneys were normal.

The culture of Penaeus monodon has explicitly defined the need for diet formulations or supplementary feeds that would promote optimum growth and survival of the animal. A total of 28 feed combinations were developed for P. monodon. Fish meal, shrimp head meal, squid head meal, Ascetes spp. rice bran, and soybean cake were used as primary ingredients in these feeds. The commercial vitamin mix No. 22 was added to the dry ingredients. Gelatinized corn starch and wheat flour were used as binders. The pellets were extruded using a portable kitchen grinder with a diameter of 4 mm. The products were either sun-dried for 8 hours or oven-dried overnight at 50 degree C to stabilize moisture at 8-10%. The pellets were then kept in covered glass bottles and stored in the laboratory at room temperature. The cost of the feeds excluding labour were also computed. The pellets were analyzed for protein, fat, carbohydrate, crude fiber, ash, and moisture contents using standard procedures. They were also analyzed for water stability. To test the stability of pellets in water, 2-g samples were placed in plankton nets (mesh #40) and suspended in water for two, and six hours. The undissolved samples were then vacuum-dried and the moisture determined. Cost of the feeds ranged from P1.10 to P2.60 per kg depending on the feed ingredient. Squid and Ascetes spp. were rather expensive for use as basic ingredients. Proximate analysis of dry weight showed percentage protein content ranged from 20-63 g; fat, 8-20 g; carbohydrate (by difference), 11-36 g; ash, 8-28 g; moisture, 6-11 g; and crude fiber, 5 . 13 g. Stability tests showed that after two hours, 35-88% of solids remained intact and after 6 hours, 20-55% of the pellets remained undissolved. When a pellet disintegrates easily, pollution of the water occurs. Chances for the shrimp to feed on the pellet is minimized when the pellet is unstable. Thus, the search for a more compact feed pellet has to be continued.

Growth and survival rates of P. monodon postlarvae were examined at different temperatures, salinities, and nitrite and ammonia concentrations, using one feed level. Condition of postlarvae greatly affected the experimental results shown in some instances where very low survival rates were obtained, even for the controls. Results indicated that postlarvae from PSUB-10 and up can tolerate salinity changes of 10 to 20 ppt without prior acclimation. Survival generally appears the same for temperatures between 24 and 36 C. It appears that P. monodon postlarvae have higher temperature tolerance. Tolerance of postlarvae at the early postlarval stage is between 30 and 50 ppm of nitrate. They were more tolerant from PSUB-10 upwards. Although survival was high in runs containing nitrite, growing appears to have been affected. Postlarvae could tolerate ammonia concentrations up to about 50 ppm. At 100 ppm higher mortality rates were observed. Whether or not there was any permanent effect by nitrate and ammonia at high but apparently tolerable levels is not known.

Protein powders were prepared from processing waste of prawns either by mechanically squeezing the shell and freeze drying the resultant aqueous extract or by treating the shell with 0.5% sodium hydroxide, filtering it and freeze drying the filtrate. Comparative studies on the proximate composition, amino acid profile, consumer acceptability and nutritional quality of the protein powders showed that the product prepared by freeze drying of the press liquor obtained by passing the waste through a hand operated expeller is better in all aspects studied than the product prepared by mild alkali extraction.

An experiment was conducted with five treatments i.e. rice combined with fish having regular urea fertilization (T1), rice combined with prawn having regular urea fertilization (T2), rice combined with fish with supplementary feeding (T3), rice combined with prawn with supplementary feeding (T4) and without fish and prawn (T5) was kept as control. The dissolved oxygen values obtained in treatments with fish both in morning and afternoon were lower than the values of prawn containing treatments and control. The values of nitrate-N, ammonia-N, phosphate-P and chlorophyll-a were higher in fish containing treatments than the prawn containing treatments and control. Between the two fish containing treatments the higher gross (539.44 kg/ha) and net (440.14 kg/ha) yield were obtained in T3 with supplementary feeding and the lower gross (424.88 kg/ha) and net (314.32 kg/ha) yield were recorded in T1 without supplementary feeding. Again, between two prawn containing treatments the higher gross (108.69 kg/ha) and net (81.92 kg/ha) yield were obtained in T4 with supplementary feeding and lower gross (64.32 kg/ha) and net (30.98 kg/ha) yield were recorded in T2 without supplementary feeding. The highest yield of rice grain (3.45 mt/ha) and straw (6.37 mt/ha) were obtained in T1 with fish having urea fertilization without feeding.
