A study on the occurrence of defective pieces of prawns at three different stages of processing of headless shell on and peeled and deveined varieties was undertaken, each in one freezing factory. The average percentages of the defective prawns together with the standard deviation observed over a period of one year at the three stages are mentioned. Correlation is indicated between the occurrence of the defective pieces at the pre-freezing stage and those of earlier stages.

Probable sources of contamination of raw, blanched and processed meat at various stages of handling and methods for their rectification have been described in the paper. Inter-relationship between absolute sterility and commercial sterility with particular reference to the sanitation of the factory has been discussed.

The last major pearl fishery in the Gulf of Mannar was held in February-March, 1958, when about 4.5 million oysters were collected from the south-west Cheval Paar by dredging. (Sivalingam 1961). Subsequently, two smaller fisheries, one in 1960 and another in 1961 took place. In these two fisheries one million oysters and four hundred thousand oysters respectively were collected from the Cheval paar by dredging. (De Fonselm 1953). Inspections of the Banks were carried out in 1962, 1963, 1964 and 1965. (Balasuriya 1964 and Silva 1965 and 66). Since then inspections were not possible due to one of two reasons or both the non-availability of operational dredges and a suitable vessel for this type of work.The "Pesalai" a 235-ton stern trawler was made available by the Ceylon Fisheries Corporation management for the 1970 inspection. Two new 6-foot dredges turned out by the Government Factory were also available for this work. However, the survey was limited to 3 days-the period for which the vessel had been released. It was further limited to those areas of the banks over 6 fathoms in depth because of the risk in operating a large vessel in shallower depths.

Spoilage characteristics of different types of bacteria isolated from bacteriologically defective cans and processing factory environs were studied by inoculating pure cultures into sterile prawn meat. The pattern of spoilage, namely, production of off odour, bulging of the cans and disintegration of meat were observed. Data on spoilage under aerobic as well as anaerobic conditions are presented. Most of the cultures produced some kind of spoilage, though differences were observed in the extent of spoilage produced by different types of bacteria. Gram positive spore formers were found to be the major spoilers and the extent of spoilage was more with mixed cultures.

Control chart is a statistical tool which can be employed with advantage to learn the situation in the process (whether it is under control or not). There are different kinds of control charts but one which is most commonly used is the control chart for variables, known as X-R chart. This chart can be used for measurable characteristics in food industry like appearance, colour, sizes and dimensions for chemical properties such as moisture, fat and many other analytical counts and measurements. Since construction and maintenance of such charts involve a recognizable amount of time and effort, they should not be used indiscriminately but only where it can be definitely shown that their use improves the overall operation. Since one control chart can be used for only one quality attribute, those for which the charts are used should be selected with care (Kramer and Twigg, 1962). In this article, the procedure of setting up a variable control chart is described with observations taken on filling operation of cans in a shrimp canning factory.

A detailed bacteriological survey of the prawn canneries of Cochin area was carried out to study the nature and type of micro-organisms present in the factory environs and their role in causing contamination of the canned products. About 26% of the total of 1030 strains isolated was found to be gram positive spore-formers of the Bacillus type, the cooling water being their major source. Similar types of organisms formed the major group often met with in defective canned prawn samples picked up from the factories for examination, thus establishing a correlation between bacterial characteristics and load of cooling water and can contamination.

Over the past 15 years of its development, the fish processing industry in India has shown considerable improvement in maintenance of hygiene during handling of the raw material, processing and marketing of the finished product. This is best manifested in the lowering of upper limits of bacterial loads in factory environs and in processed products (Pillai, 1971). More care and attention is given by the processors in recent years in the scientific cleaning and sanitizing of utensils and equipment, chlorination of water supplies and personnel hygiene. An example of sanitation score form is given to help scientists and technologists to evaluate the hygienic status of the processing units.

Prawn processing factories of the three major fish processing centres of the West Coast of India, viz., Cochin, Mangalore and Calicut were surveyed to determine the occurrence of Clostridium perfringens in processing areas, and in processed products. Direct plating on Sulphite-polymyxin- sulphadiazine Agar and enrichment techniques were used. Samples of prawn, prawn guts, frozen prawns, canned prawns, water, ice, swab from utensils and soil from the factory premises were examined. Among a total of 461 samples examined, only 32 (6.9%) gave positive results. The incidence of C. perfringens was more in prawn guts (80%), followed by soil (50%), prawn (38%), ice (33.3%), frozen prawns (11%), swab (5.0%) and water (1.1%). No C. perfringens was isolated from canned prawns.

Details are given of the morphological, biochemical and serological characteristics of a specimen of Salmonella agona isolated from a sample of frozen boiled clam meat (Villorita cyprinoides) processed in a factory at Cochin. Possible association of this serotype with human salmonellosis is considered briefly.

Responses to mailed questionnaires from 31 fish processing factories revealed that for 55 recommended practices in quality control, the percentage of adopters varied from 21.43 to 100.The adoption index was not correlated to any of five variables studied. The mean adoption index did not differ significantly between five other criteria related to fish processing. Rate of rejection or reprocessing at the factory itself was highly correlated with the amount of water used per tonne of processed material.

This research investigates the quality of sonbolrood river by using Hylsenhof HFBI indicators and identified Macroinvertebrates invertebrates community in the family level. This study took place during 1388-1389 with four sampling season in four stations respectively in the forests of Kalyj kheyl village in Savadkuh (first station), industrial area of Islamabad (second Station), earth dam of Sonbolrood (third station) and the Place crosses Sonbolrood with Babolrood river (fourth Station). Macroinvertebrates invertebrates collected by quantitative sampler of Sorbr and they were isolated in laboratory by loop and they were identified in the family level. Generally, Macroinvertebrates of Sonbolrood river were formed three branches: Arthropods and flat worms and mollusks, including 3 tiers, 6 orders and 14 families that showed the maximum diversity and density in autumn and the least diversity and density in summer at all stations, also the third and fourth stations respectively were highest and lowest diversity and density. The water quality of Sonbolrood river based on the water quality Guide(Hylsenhof) is evaluated with excellent condition for all stations except third station. Sonbolrood river with having high slope, rocky and sandy bed, with self-refining act, completely is a proper ecosystem for aquatic organisms, but it is done due to increased organic matter and sewage factory located in industrial zone in the third station and then the increased water pollution caused by nurturing the water warm fish in the earth dam of Sonbolrood. (because of this, the water quality at third station based on the water quality Guide(Hylsenhof) are evaluated in a fairly good condition) and adding domestic sewages of adjacent villages like Seyedkola village and Shirdarkola caused increased pollution and increased trophy of Macroinvertebrates that are resistant to pollution and affect upon Macroinvertebrates community.

There are a lot of evidence that show hvdrocarbones cause some defect in reproduction and growth of bivalves. Bivalves are filter-feeder, thus accumulate more hydrocarbones in their tissue. In this study adult pearl producing oysters (Pinctada fucata) are used for all experimens. Samples of oysters, water and sediment from four natural beds; Nakhiloo (clean), Hendurabi (semipolluted), Lavan 1 (semipolluted) and Lavan 2 (polluted) were gatherd for 13 succesive months. Temperature, salinity, pH, oxygen and turbidity were recorded in each sampling. Oysters were kept in laboratory for adapation and then their length (DVM) were measured. Hemolymph samples were collected by insuline syring. Sediments and soft tissues of oysters were dissolved in carbon tetrachloride and when heated to extract oil hydrocarbones. Ecological study on Kolahy and 'flab estuaries were carried out during 1996-1997. Water and sediment sampling was done seasonally. In order to study the physical and chemical characteristic of the water, various animal fauna from different material niches including planktons and fish from water, benthousi from the sediment , and surface living animal such as Arthropod (Crabs) and Waterbirds were identified. I he result shoved, that water salinity of both estuaries was the same as the general salinity existing its the Persian Gulf water, and its variation is same IN those waters Minimum water salinity in both estuaries are seen during Bahairdan or early winter mooth(Jaa.), which is about 31ppt and Maximum is during .rirldlun.) or summer mouth at about 19 ppt. Dissolved otygen and pH are slime as the general Persian Gulf waters., Dissolve Oxygen being directly associated to temperature and its fluctuation is between 7- Sing/I and pH between 7.5-LS. The animals of both estuaries are almost similar having a sal factory species diversity . The birds of the region are often seasonal migrants , the maximum population of which occurs in winter season and the minimum during summer month. Nam coverage is richer in Tiab than Kolahy estuary, where in Kolahy a signal Mangrove tree is in exigence. 'Ile total coverage of Mangrove forest in Tiab is estimated about -29 hec.Both estuaries are included with in the international Ramsar Convention sites in 1971. Due to national importance of these estuaries inproviding refugee for various birds species and also hinting grounds and access traffic for local fishing vehicles, Actiog as an important access for various inhabitancy living with these area of the Persian Gulf. Due to importance or prawn aquacultur for the economical well being of local inhabitance, these areas provide a suitable grandees for prawn production. I-test statistics show, there are no significant difference among various invertebrate and vertebrate animals. In over all out look 21) phytoplankton genera, 21) zeoplankton genera 17 miafauna and 32 roaerofauna genera , 11 different species Carcineacearions and 119 species of walerbirds were identified with in the Tiab and Kolahy estuariesregioos. The X statistic show that the animal density is directly associated to season. Where density of miofauna and maerofauna in both estuaries are in maiticrourn during summer and the minimums existing during the winter season. In addition the bentic invertebrate population density in closlly association to birds population density since , the later, feeds on the former animals. Where the increasing in bird population density during the winter season, the bentic invertebrate animal population density decreases. The over all trend of animal population density in winter tend to increased towards the summer seasons, which this is due to climatic conditions of the region. The bird population on the contrary to other animals of both estuaries tend to increase from summer towards the winter seasons and which this bird population density is in maximum in winter with in the region.

The Ugandan fishery, heavily influenced by the emergence of global markets, is extremely dynamic. In recent years a major export trade, principally in Nile perch fillets from Lake Victoria, has expanded markedly. The growth of this factory based processing industry has had a marked impact on the pre-existing artisanal fishery, which has become increasingly dependent on supplying the export market instead of its traditional local small-scale markets. The industrial fishery developed as a response to the liberalisation of the management of the Ugandan economy and the consequent opening up of the export markets in North America and Europe. The emergence of the export industry has resulted in the creation of a dual structure in the fisheries sector, with the Nile perch catching and processing chain operating to European standards, whilst the artisanal sub-sector still utilises traditional methods. This dual structure is a potential source of disadvantage to the artisanal fishery which has command over fewer financial assets than the export fishery.
