A general formula for the prediction of drained weight of canned prawn processed under laboratory condition has been worked out earlier (Chaudhuri et al., 1978). Attempts were made in this communication to modify the general formula to predict the drained weight under commercial conditions of processing particularly blanching, as the moisture content of meat depends on the quantum of heat received during blanching (Govindan, 1975).

Blue discolouration met with in the canned body meat of crab (Scylla serrata) was due to copper content exceeding 1.8 to 2.0 mg/100g on dry weight basis. Bleeding the cleaned carcasses of crab thoroughly in running water brought down the copper content below this level and blue discolouration prevented. Addition of copper ions to the thoroughly bled crab meat to raise the copper content above this level caused discolouration. The incidence of blue discolouration was independent of the freshness of the animals used. Citric acid in high concentration prevented blueing to some extent, but is not advisable as texture and flavour were adversely affected.

A process for canning sardine in two different curry media is presented. One curry medium yields a product with medium pungency while the second one has a low pungency. Sardine canned in curry medium having medium pungency developed signs of internal corrosion as well as slight bitter taste at the end of 15 months storage at ambient temperature. Similar phenomenon took place in the other product only at the end of 18 months storage. Being a ready to serve product it needs no further preparation for the table.

A large part of western Manatee County is devoted to the growing of winter vegetables and citrus fruits. As in most of peninsular Florida, rainfall in the county during the growing season is not sufficient for crop production and large quantites of artesian water are used for irrigation. The large withdrawals of artesian water for irrigation result in a considerable decline of the artesian head in the western part of the county. This seasonal decline of the artesian head has become larger as the withdrawal of artesian water has increased. The lowering of the fresh-water head in some coastal areas in the State has resulted in an infiltration of sea water into the water-bearing formations. The presence of salty water in the artesian aquifer in parts of the coastal area of Manatee County indicates that sea water may also have entered the waterbearing formations in this area as a result of the decline of artesian pressure during the growing season. The purpose of the investigation is to make a detailed study of the geology and ground-water resources of the county, primarily to determine whether salt-water encroachment has occurred or is likely to occur in the coastal area. Recent reports associating aluminium with several skeletal (osteomalacia) and neurological disorders (encephalopathy and Alzheimer’s disease) in humans suggest that exposure to aluminium may pose a hazard to health. This requires the examination of aluminiumcontent in different foodstuffs. Therefore, an analytical method for the determination of aluminium in fish and fishery products, especially in fishery products packaged in aluminium cans, was developed using graphite furnace atomic absorption spectrometry. Fillets of lean and fatty fish showed aluminium levels lower than 1mg/kg wet weight, muscle of crustacean, molluscan and shellfish had apparently higher aluminium levels (up to 20 mg/kg wet weight). The aluminium content in some aluminum-canned herring was much higher than the content found in herring caught in the North Sea. These results indicate that aluminium is taken up by the herring fillets in aluminium cans, presumably through the slight and slow dissolution of aluminium from the can wall, due to some defects in the protective lacquer layer. A comparison of the aluminium levels measured in canned herring with the average aluminium-intake (normally between 3 and 5 mg/day) or with the provisional tolerable daily intake of 1mg/kg body weight per day (WHO 1989) indicated, that the aluminium content of the edible part of aquatic food does not play a significant role. High consumption of fish fillets does not pose any health risk.

The annual catches of big eye are exceeded by those of only two other species of tuna, skipjack, Katsuwonus pelamis, and yellowfin, Thunnus albacares. However, because most of the bigeye caught are consumed fresh, whereas most of the skipjack and yellowfin caught are canned, the economic value of big eye exceeds that of any other species of tuna. Despite its importance, less is known of the biology of bigeye than of the biology of any of the other principal market species of tunas. Historically, bigeye have been harvested mostly by longlines, which take only medium to large fish. During recent years, however, greater amounts of small bigeye have been caught by purse seines and other surface gear. This is a matter of concern for several reasons. First, long line fishermen are concerned that the harvesting of small bigeye will decrease the amounts of medium to large bigeye available to them. Second, since small bigeye are canned, rather than eaten fresh, consumers are concerned about the possible decrease in the supply of high-quality fresh fish. Third, economists are concerned about the possible economic loss associated with harvesting fish at less than their maximum economic value. Fourth, biologists are concerned about the possibility that harvesting of small bigeye could decrease the overall catches of that species. These concerns cannot be properly addressed until more knowledge of the biology of big eye is available. The purposes of the meeting were to review and discuss the information available and to make recommendations for further research.

Environmental changes due to 2 decades of drought have modified the ecosystem of the Basse Casamance, Senegal thus forcing farmers to change their practices. They have built fish ponds and diversified into crops such as peanut, millet, sorghum, cassava and vegetables. The ponds have 2 purposes - to protect ricefields against inflow of brackishwater and to raise fish. The fish complements rice, which is the main diet, adding animal protein and serving as a source of income. Although this integrated farming system is little developed at present, it has good potential to rationalize use of the resources available to farmers and to promote interactions between farm enterprises.

The integration of agriculture and aquaculture as a means of intensifying resource use and improving the productivity of many current farming practices in Southeast Asian and African countries is discussed. A brief account is given of work undertaken by ICLARM in Malawi and India regarding the improved use of marginal lands to integrate crops, vegetables, trees, livestock and fish, outlining also the various problems involved in the extension of such integrated fish farming systems.

An outline is given of procedures to take in order to adopt an integrated rice-fish-vegetable farming system in India. Vegetables, which are cultivated in the dikes of the system, may include Luffa acutangula, Vigna unguiculata and Phaseolus vulgaris . When the water depth of the field rises to 30-40 cm, fish fingerlings (Puntius javanicus, Cyprinus carpio and Labeo rohita ) and prawn juveniles (Macrobranchium rosenbergii ) may be stocked. The advantages of such a system are listed and include year round employment opportunities for the farm family and improved farm family income and nutrition.

Although menhaden, Brevoortia spp., represent 23.5 percent of United States commercial fishery landings, they represent only about 2.6 percent of the total landed value of fishery products. New food products and markets are needed to increase the economic value of the menhaden resource. This paper describes investigations of menhaden as a raw material for both traditional and new forms of food products. Canned menhaden is a logical food product, but the production of a menhaden surimi with good functionality has recently been demonstrated. The U.S. Food and Drug Administration has placed partially hydrogenated menhaden oil on the GRAS list of ingredients for food products, but a decision on the status of nutritionally beneficial refined menhaden oil is not yet available. Refined menhaden oil is currently the raw material for biomedical test materials being used in research approved by the National Institutes of Health to determine the health benefits of fish oils and omega-3 fatty acids. The test materials are being produced, with strict quality controls, at the NMFS Charleston Laboratory.

U.S. tuna fleet activity, canned tuna processing, ex-vessel, wholesale and retail prices and imports in 1987 are described and compared to their counterparts in previous years. Industry statistics gathered from government agencies and industry contacts are presented in 14 figures and 8 tables. In 1987, U.S. tuna fisheries delivered 253,136 short tons (tons) of tuna to U.S. canneries. Domestic deliveries of albacore (white-meat) tuna were 2,836 tons, down 20 percent from 1986 levels. Domestic deliveries of tropical (light-meat) tuna (bigeye, blackfin, bluefin, skipjack, and yellowfin) were 251,000 tons, up 12 percent. Contract prices for tuna delivered by U. S. vessels to U. S. canneries increased dramatically in 1987. Depending on the size of fish in the delivery, ex-vessel prices of white-meat tuna increased as much as 27 percent, and prices of light-meat tuna increased as much as 47 percent. U. S. cannery receipts of imported and domestically caught raw frozen tuna for canning totaled 532,704 tons in 1987, up 2 percent from 1986 levels. U.S. cannery receipts of white-meat tuna were 104,197 tons, down 10 percent from 1986. Imports made up 97 percent of the total cannery supply. Total 1987 U. S. cannery receipts of raw, frozen light meat tuna were 428,507 tons, up 5 percent from 1986 levels. Imports made up 41 percent of the total cannery supply. The 1987 U.S. pack of canned tuna was 33.6 million standard cases, up 3 percent from 1986. The pack of white-meat tuna was 7.2 million standard cases, down 11 percent from 1986; the pack of light-meat tuna was 26.4 million standard cases, up 7 percent. U. S. imports of canned tuna in 1987 were 10.8 million standard cases, down 11 percent from 1986 levels, the first time in recent years that imports have declined. Per capita consumption of canned tuna in the United States was 3.5 pounds in 1987, down slightly from 1986. The retail composite price was $2.26 per pound, unchanged from 1986.

Kurzfassung Zahlreiche Fischereierzeugnisse aus dem Deutschen Handel wurden auf ihren Gehalt an Cholesterol hin analysiert. Zur Analyse gelangten 38 verschiedene Dauerkonserven von acht Fischarten, 4 Produkte kalt geräucherter Atlantischer Zuchtlachs in Scheiben, 10 Garnelenarten und 25 Fischstäbchenerzeugnisse von 5 Tierarten in Verbraucherpackungen. Bei den Dauerkonserven lagen die Gehalte zwischen 24 und 40 mg/100 g. Zwei Ausnahmen bildeten Sprottenkonserven mit durchschnittlich 107 mg/100 g und Oktopuskonserven mit 196 mg/100 g. Die Garnelenarten variierten zwischen 84 und 161 mg/100g. Die kalt geräucherten Lachsscheiben wiesen nur eine kleine Bandbreite im Cholesterolgehalt zwischen 38 und 43 mg/100 g auf. Alle Fischstäbchen aus Magerfischen enthielten niedrige Gehalte an Cholesterol (Pangasius hypophthalmus 25, Seehecht 19, Seelachs 31 und Alaska Seehecht 28 mg/100 g), während die zwei Proben aus Tintenfischen über 100 mg/100 g lagen. Abstract Numerous fishery products from the German market have been analysed for their content of cholesterol. In total 38 different canned fishery products produced from 8 species, 4 products of sliced cold smoked Atlantic salmon, 10 species of crustacean shellfish and 25 different brands of consumer packages of fish fingers (produced from 5 species) were investigated. Canned fishery products contained amounts of cholesterol ranging from 24 to 40 mg/100 g. However, canned sprats exhibit cholesterol content as high as 107 mg/100g and canned octopus 196 mg/100 g. Crustacean shellfish was found to contain cholesterol content between 84 and 161 mg/100 g depending of species. Sliced cold smoked salmon in 200 g consumer packages showed only a little variation in cholesterol content (38-43 mg/100 g). In all fish fingers produced from lean fish species low cholesterol content (pangasius or sutchi catfish 25, hake 19, saithe 31, and Alaska Pollack 28 mg/100 g, respectively) was found, whereas two products produced from squid exceeded 100 mg/100 g.
