Foods are susceptible to be contaminated with several etiologic agents, which can lead to the development of illnesses, triggered by pathogenic microorganisms or their toxins. Food prepared and improperly stored can be the diseases vehicle. This study aimed at evaluating the sanitary conditions in preparing free school meals in the nursery schools, located in a city of the state of São Paulo. This study was conducted by performing microbiological analyses of samples collected from hands of workers responsible for preparing food, and of the water samples used for cleansing and preparing foods. The kitchen physical, structural and cleaning conditions were assessed by means of a checklist. This study analyzed 31 samples from worker hands swab, and 21 samples of water collected from three school kitchens. This study pointed out that the food handlers training should be improved, and a peremptory control of the water used for food preparation purpose should be established. Also, this study showed that the evaluated schools maintain the respective kitchens in a good standard of conservation and cleanliness.

INTRODUÇÃO: O meio ambiente hospitalar guarda uma íntima relação com as infecções hospitalares, podendo proporcionar focos de contato e de transmissão. Como a higiene representa uma das formas de controlar a contaminação ambiental, realizou-se estudo para avaliar as condições microbiológicas dos colchões hospitalares antes e depois de sua limpeza. MÉTODOS: Utilizaram-se, para a colheita dos espécimes, placas de contato -- Rodac-plate ¾ preparadas com meio de cultura ágar-sangue. Selecionaram-se os leitos de acordo com critérios previamente estabelecidos, e os locais de colheita sob o colchão foram escolhidos por sorteio aleatório. Aplicou-se o teste estatístico de Goodman para o estudo das alterações numéricas quanto a positividade das placas. RESULTADOS: Foram investigados 52 colchões, totalizando 520 placas, das quais 514 (98,8%) resultaram em culturas positivas, sendo que 259 corresponderam ao período anterior à limpeza e 255 ao período posterior ao procedimento. Houve redução de culturas positivas em apenas 4 placas. CONCLUSÕES: Os resultados obtidos sugerem que a limpeza, da forma como vem sendo conduzida, provoca o deslocamento da carga microbiana para outros pontos do colchão em vez de diminuí-la, resultando na manutenção da quantidade de microorganismos que existia anteriormente à limpeza.

A qualidade do ar é um importante indicador de saúde ambiental, sendo o seu monitoramento contínuo necessário. Apesar da relevância do tema, há muitos países em que os limites de exposição para agentes biológicos ainda não foram estabelecidos ou foram definidos de forma inadequada, podendo comprometer a qualidade ambiental. Os ambientes hospitalares, assim como as salas de necropsia podem apresentar problemas de contaminação do ar por agentes microbiológicos, necessitando de monitoramento contínuo a fim de evitar a ocorrência de doenças nos trabalhadores e na população em geral. Este estudo realizou a avaliação microbiológica do ar em hospitais públicos e IMLs da região metropolitana do Rio de Janeiro em salas cirúrgicas e de necropsia. A pesquisa exploratória e descritiva baseou-se em levantamento bibliográfico e investigação de campo, através de estudos de casos. Os dados foram obtidos por meio de entrevistas e observação direta nos locais de trabalho, onde foram realizadas as avaliações microbiológicas do ar. As variações em salas cirúrgicas para bactérias e fungos foram respectivamente de 14,99 ufc/m3 88,29 ufc/m3 e de 45,93 ufc/m3 - 742,09 ufc/m3. Já nas salas de necropsia os valores para bactérias e fungos variaram respectivamente de 18,96 ufc/m3 54,9 ufc/m3 e de 144,87 ufc/m3 - 1152,01 ufc/m3. Foram identificados tanto no ambiente cirúrgico como nas salas de necropsia a presença dos seguintes fungos: Aspergillus sp., Neurospora sp., Penicillium sp., Fusarium sp., Cladosporium sp., Curvularia sp., e Trichoderma sp. Já em relação às bactérias foram identificadas as presenças de Staphilococcus sp., Streptococcus sp. e Micrococcus sp. Foram traçadas recomendações para melhoria da qualidade ambiental e do ar. Os resultados indicaram que os valores são elevados quando comparados com as recomendações das normas internacionais. Foram encontrados valores inferiores aos sugeridos pela CP n. 109 da ANVISA. A presença de microrganismos patogênicos sugere adoção de medidas de controle ambiental. O estudo apontou a necessidade urgente do estabelecimento de valores de referência para ambientes hospitalares no Brasil a fim de garantir condições seguras que não venham a comprometer a saúde dos pacientes e profissionais de saúde envolvidos.

The National School Nutrition Program is the oldest program in the country directed at food and nutrition safety. Its aims are to offer nutritional food as a supplement to students of public and philanthropic schools. Studying school nutrition transcends the investigation as a purely social program, given that it reaches the fields of public health, nutrition and food, using a wide variety of approaches. Thus, it is characterized by a multidisciplinary study, where the disciplines work side by side in distinct aspects of a single problem. Aim: This study aims to assess hygiene practices during the preparation of meat-based meals in public schools in the city of Natal, Brazil. Methods: A list was applied at 27 schools to identify the procedures of good food preparation practices. In addition, cooking and meal distribution temperature were measured and a microbiological analysis of the final preparation and of the water used in preparing it was performed. For microbiological analyses of the food, we analyzed coliforms at 45°C, coliforms at 35°C and Enterococcus, and for the water, we analyzed thermotolerant coliforms and total coliforms, using the methods recommended by APHA, 1995. Results: Most of the schools did not meet the required standards in all the variables related to good food preparation practices, except for the time spent preparing the meat, in which 89% were within the norm. Cooking temperature of the meals was within the standard; however, the temperature at distribution and the time spent dispensing the meals were inadequate. Of the 27 schools, 22 (81.5%) showed the presence of coliforms at 35° C in at least one meal sample and 18 (66.7%) had values above the recommended limit for coliforms at 45°C. The presence of E. coli was identified in 6.1% of the samples analyzed. The presence of Enterococcus was not found at any of the schools. With respect to the water, the North district of the city was the only one that did not meet the standards for the two indicators evaluated. The contamination found was not associated with the hygiene or food storage problems observed. Conclusions: The results show that the hygiene-sanitary conditions of meat-based public school meals were unsatisfactory, demonstrating the need for improvements in the production process to preserve the health of the student population. In Brazil school food is constitutionally guaranteed to public school students at the preschool and elementary level. This food must be nutritious, hygienic and sanitary. The aim of the present study was to assess the hygienic/sanitary conditions of food and table utensil handlers in municipal public schools in Natal, Brazil. In total, 27 public schools were assessed, using a checklist and microbiological analysis of the hands and table utensils. For the microbiological analyses of the hands, coliforms were analyzed at 45ºC and for the utensils aerobic mesophilic bacteria, using methods recognized by AOAC, 2002 and APHA, 1992, respectively. Most of the schools studied did not exhibit good food and utensil handling practice procedures in any of the variables analyzed. It was shown that 74.1% of the handlers received no periodic training, 51.9% did not undergo annual health examinations and 100% did not practice proper hand hygiene, which reflected significantly (p < 0.05) in hand contamination, where fecal coliforms were detected on 55.6% of the hands analyzed. With respect to the utensils, it was found that 100% of the schools studied did not follow correct hygiene practices and most were classified as very bad ; that is, aerobic mesophilic bacteria values above the limits established by PAHO (Pan American Health Organization), with schools in the north and south districts recording the highest percentages. The results show that the hygienic-sanitary conditions of the food and utensil handlers in the schools studied were inadequate, demonstrating the need for implanting good handling practices aimed at protecting the health of children that take part in the program and offering safer foods. Introduction: The chronic immunosuppression promotes the development of changes in the oral cavity of the kidney transplant recipients (KTR), however with the exception of gingival overgrowth, little is known regarding the prevalence of oral lesions in this population. Objective: To evaluate the prevalence of clinical and microbiological conditions of the oral cavity of the recipients of kidney transplantation and the associated factors. Methods: This was a cross-sectional study which examined 96 clinical KTR and experimental where collected saliva stimulated them to identify Candida sp. Data collection consisted of evaluation stomatologic, socio-demographic, clinical aspects of transplantation, condition of oral hygiene and dental caries, yonder to questions about knowledge of oral alteration after transplantation. Results: Of the total, 66.7% of KTR had some type of oral manifestation. The most common was saburral tongue, followed by gingival overgrowth, with both oral manifestations related to gender and concomitant use of cyclosporine and nifedipine (p <0.05). Tacrolimus showed a protective effect for gingival overgrowth (OR = 0.13). The oral hygiene was associated with saburral tongue(p = 0.03) and severity of gingival overgrowth (p = 0.0001). Oral candidiasis was diagnosed in 17.7% of patients and Candida albicans was isolated most frequently in the saliva of RTR with a colonization of 58.3%. The average DMF-T increased with age. The method of oral hygiene was most used brush and toothpaste to 61.5%. Changes in the oral cavity was seen in 54.2% of KTR, citing as the main growth and gingival ulcers. Instructions for oral hygiene after transplantation were neglected for 61.5% of RTR. Dry mouth and halitosis were reported in 30.2% and 36.5% respectively. Conclusions: More the half of the KTR had at least one injury of the mouth, the immunosuppressive drugs and oral hygiene are associated with these alterations. Prospective cohort studies are needed to elucidate the relationship between oral manifestations and levels of drug and risk of oral manifestations occur over time. The kidney transplant recipients showed to be aware of oral alterations occurred after transplantation and uninformed about the oral hygiene instructions. With regard to hygiene, the incidence of caries was considered high, conditions of risk were identified and improvements in primary attention should be encouraged and reflected in the monitoring of renal transplant

Foram analisadas 40 amostras de salmouras empregadas na salga por submersão de queijos tipo mussarela, em uma indústria de laticínios do Estado de São Paulo, Brasil, com o objetivo de se conhecer a variação das características físico-químicas e microbiológicas durante o período de sua utilização. Os valores médios do pH, concentração de cloreto de sódio e de proteínas solúveis, desde o preparo da salmoura até o 21° dia de utilização, variaram de 7,21 a 5,76, 27,1 a 24,5 e de zero a 0,126 mg/ml, respectivamente. Por outro lado, os valores médios das contagens de microrganismos mesófilos e do número mais provável de coliformes totais e de origem fecal variaram de 5,8 x 10 UFC/ml a 6,9 x 10(4) UFC/ml, zero a 1,6 x 10(5)/100ml e zero a 1,1 x 10(5)/100ml, respectivamente. Além disso, os valores médios das contagens de bolores e leveduras e de Staphylococcus coagulase positiva, variaram de 0,4 x 10 UFC/ml a 2,0 x 10³ UFC/ml e de zero a 1,3 x 10 UFC/ml, respectivamente. Os resultados encontrados sugerem a existência de condições higiênicas inadequadas durante o preparo e utilização das salmouras, de modo a representar uma importante fonte de contaminação para os queijos. em decorrência deste fato, existe a possibilidade do comprometimento da qualidade dos queijos, de modo a representar risco potencial à população consumidora.

The dried beef is a food traditionally eaten by Northeastern and has an extensive trade in the city of Natal-RN. It is usually produced in an empirical manner, without any standardization in production. Characterized as partially dehydrated meat product, so that the activity of water present is not sufficient to prevent microbial growth, degradation or the production of microbial toxins. The guarantee that the market dried beef is to provide a quality product hygienic, microbiological, physicochemical and sensory stable and adequate for the safety and consumer satisfaction, which has been increasingly attracted to food with natural preservatives. Thus, the meat industries are replacing the current seasonings and natural preservatives for similar, with it without affecting the shelf life of products. Lactic acid has been used to meet these requirements. In this sense, this study aimed to evaluate the effect of lactic acid on the physico-chemical, microbiological and sensory, besides knowing the consumer profile of dried meat of the City of Natal / RN. The results demonstrated that the use of lactic acid in concentrations of 1% and 2% during the processing of dried meat, had statistically significant effect (p < 0.05) on the physico-chemical (pH and water activity) and consequently reduced the microbial count does not alter the taste of the new product developed. Regarding the results on the consumer profile, it was found that the majority of respondents (71.75%) did not observe the presence of the stamp of the Federal Inspection Service (SIF) to buy this meat food that 81.55% of consumers check the hygiene conditions of the site and handlers, however, a large proportion of respondents not concerned with the guarantee of origin of typical regional products featuring a hazard to food safety for consumers of the city of Natal-RN

Este estudo é uma proposta de contribuição científica ao entendimento das inter-relações entre densidade de populações de microorganismos de solo, associadas à variabilidade microclimática sazonal em floresta tropical úmida, considerando também estudo de caso de evento extremo. Alguns organismos vivos, especialmente microorganismos de solo, são muito sensíveis às pequenas variações microclimáticas (luminosidade, temperatura, umidade do solo, vento, calor sensível, calor latente, etc. Seguramente estes fatores condicionantes são importantes para o entendimento da distribuição espacial destes seres vivos em ecossistemas naturais, habitados por uma enorme variedade de microorganismos (fungos e bactérias). Estes foram estudados quanto sua distribuição e densidade, utilizando a técnica "Pour Plate" de contagem em placas de "Petri" seguindo a metodologia utilizada por De-Polli e Guerra, descrita por Clark. O estudo foi realizado em duas áreas experimentais, PPBio (área de floresta densa natural) e ESECAFLOR (área de um hectare coberta para simulação de seca prolongada) em Caxiuanã-PA, com medidas contínuas de variáveis microclimáticas térmicas, úmidas e precipitações, além da avaliação de padrões de distribuição espacial e temporal da abundância e riqueza das espécies, para estabelecer um sistema de monitoramento de fungos e bactérias de solo associado à variabilidade climática na floresta nacional de Caxiuanã. As áreas experimentais são predominantemente de Yellow Latossolo. As análises microbiológicas mostraram que fungos desenvolveram-se melhor em época seca e bactérias na época chuvosa. Suas populações diminuem com a profundidade, exceto em ambiente alterado. As correlações de variações sazonais entre populações de fungos e bactérias e as variáveis temperatura e umidade do solo, se estabeleceram satisfatoriamente para qualquer época do ano em ambos os sítios estudados.
