Licuri is a palm tree from the semiarid regions of Bahia State, Brazil. It is an important source of food and feed in that region, since their nuts are commonly eaten by humans and used as maize substitute for poultry feeding. The aim of this dissertation is to study the feasibility for use of natural convection solar dryers and forced being compared with the traditional drying outdoors for drying coconut licuri Syagrus coronate. The study led to the construction of two prototype solar dryer for carrying out experiments proving: model Solar Drying System Direct Exposure to Natural Convection built with wood, has a drying chamber with direct cover transparent glass laminates 4 mm, using techniques for proper isolation of the drying chamber. The two prototypes were comparatively analyzed for performance and drying efficiency with traditional extractive use by the community. Were evaluated the variables: time and drying rates and quality of the final samples of coconut licuri. The fruits were harvested and brought the town of Ouricuri, in the city of Caldeirão Grande, BA for the experiments comparing the three methods of drying was used a standard load of 4.0 kg The quantitative analysis for the result of the drying rate was found in 74% yield and 44% for natural and forced convection respectively compared with the traditional drying. These drying rates represent variation 3-5 times lower. Drying using forced convection licuri showed better quality, was found in a reddish pulp, representing the quantities that were kept of the nutrient beta carotene, and not notice the flavor change from the previous system, the final cost of construction of this system were higher . The prototypes built competitive advantage and had testified fully to resolve the technical difficulties previously encountered in the production of products made of coconut licuri. The present work has as objective the knowledge of the process of drying of the cephalothorax of shrimp to give support the industry to make possible the use of this byproduct. In this sense, the process conditions in this tray dryer and spouted bed were analyzed. With these results, it was projected and constructs a dryer with specific characteristics for the drying of the cephalothorax. The desorption isotherms were obtained by the dynamic method in the temperatures of 20, 35 and 50º C and in the interval of 10-90% of relative humidity. It was observed that the product in form of powder can be conserved with larger stability for lower relative humidity to 40%. The curves of drying of the dryer of fixed bed were adjusted for the models: single exponential, biparametric exponential and Page. The model biparametric exponential more adequately described all the drying conditions studied. The tests carry out in spouted bed showed high drying rate for the material in the paste form in beds active dynamicly-fluid, provely the necessity of a feeding in shorter intervals of time to increase the thermal efficiency of the process. The projected dryer, be considered the obtained results, it was a rotary dryer with inert bed, feed co-current, discharge in cyclone to take place the separation gas-solid, and feed carry out in intervals of 2 minutes. The optimization of the equipment projected it was accomplished used the complete factorial experimental design 24, this had as independent variables temperature velocity of the air, feed flow rate and encapsulated concentration (albumin), as variables answers the thermal efficiency, the moisture content of obtained powder, total time of test and the efficiency of production of powder in several points of processing. The results showed that the rotary dryer with inert bed can present, also, good results if applied industrially

O tomate é um fruto muito perecível por causa do seu conteúdo de umidade. A secagem é uma das práticas industriais mais utilizadas em alimentos para manter a qualidade do produto final. A pesquisa foi desenvolvida para estudo dos parâmetros de secagem de tomate (Lycopersicon esculentum Mill), cv Carmen, com relação ao tipo de corte (meio e um quarto) e à temperatura de processo (60 e 70 ºC), bem como à escolha do tempo de secagem para a obtenção de um produto com umidade de 45% (base úmida). As cinéticas de secagem foram determinadas experimentalmente por convecção forçada e ajustadas ao modelo de Page. Os resultados obtidos mostraram que a geometria de corte influenciou na taxa de secagem e no tempo de desidratação. Os tomates cortados em quatro partes e desidratados a 70 ºC alcançaram umidade de 45% em menor tempo (10 horas), quando comparados aos tomates com o corte em metades. O modelo de Page forneceu bom ajuste nas cinéticas de secagem

The soursop (A. muricata) is a fruit rich in minerals especially the potassium content. The commercialization of soursop in natura and processed has increased greatly in recent years. Drying fruit pulp in order to obtain the powdered pulp has been studied, seeking alternatives to ensure the quality of dehydrated products at a low cost of production. The high concentration of sugars reducing present in fruits causes problems of agglomeration and retention during fruit pulp drying in spouted bed dryers. On the other hand in relation to drying of milk and fruit pulp with added milk in spouted bed, promising results are reported in the literature. Based on these results was studied in this work drying of the pulp soursop with added milk in spouted bed with inert particles. The tests were based on a 24 factorial design were evaluated for the effects of milk concentration (30 to 50% m/m), drying air temperature (70 to 90 °C), intermittency time (10 to 14 min), and ratio of air velocity in relation to the minimum spout (1.2 to 1.5) on the rate of production, of powder moisture, yield, rate of drying and thermal efficiency of the process. There were physical and chemical analysis of mixtures, of powders and of mixtures reconstituted by rehydration powders. Were adjusted statistical models of first order to data the rate of production, yield and thermal efficiency, that were statistically significant and predictive. An efficiency greater than 40% under the conditions of 50% milk mixture, at 70 ° C the drying air temperature and 1.5 for the ratio between the air velocity and the minimum spout has been reached. The intermittency time showed no significant effect on the analyzed variables. The final product had moisture in the range of 4.18% to 9.99% and water activity between 0.274 to 0.375. The mixtures reconstituted by rehydration powders maintained the same characteristics of natural blends.

In this work, a pneumatic dryer has been designed and assembled in laboratory scale in order to study and evaluate configurations more efficient for application in drying of important materials of Northeast region in Brazil. The equipment was tested with drying of corn and rice grains, in conditions of temperature and air velocity at 80 oC and 35 m/s, respectively. For this type of dryer, it is recommended to work at temperatures above 200 °C and air velocity with higher dynamic pressure. However, even under operating conditions below what it is recommended, the results obtained with the pneumatic dryer were satisfactory. In addition, experiments of drying were performed by using a cabinet dryer (batch dryer) under the same conditions used in the pneumatic dryer. Flash one curves for the corn were fitted satisfactorily by applying of the Lewis model, while a better agreement was found for rice by using the Page model. The data obtained with both drying processes allowed to compare the performance between pneumatic and batch dryers. In respect to drying rate, the pneumatic dryer presented a similar performance to the batch dryer during processing with corn and a superior performance to the last one during processing with rice. Therefore, it was possible to verify that the pneumatic dryer assembled in this preliminar study can be applied for different materials and under different operating conditions

Unripe banana flour (UBF) production employs bananas not submitted to maturation process, is an interesting alternative to minimize the fruit loss reduction related to inappropriate handling or fast ripening. The UBF is considered as a functional ingredient improving glycemic and plasma insulin levels in blood, have also shown efficacy on the control of satiety, insulin resistance. The aim of this work was to study the drying process of unripe banana slabs (Musa cavendishii, Nanicão) developing a transient drying model through mathematical modeling with simultaneous moisture and heat transfer. The raw material characterization was performed and afterwards the drying process was conducted at 40 ºC, 50 ºC e 60 ºC, the product temperature was recorded using thermocouples, the air velocity inside the chamber was 4 m·s-1. With the experimental data was possible to validate the diffusion model based on the Fick\'s second law and Fourier. For this purpose, the sorption isotherms were measured and fitted to the GAB model estimating the equilibrium moisture content (Xe), 1.76 [g H2O/100g d.b.] at 60 ºC and 10 % of relative humidity (RH), the thermophysical properties (k, Cp, ?) were also measured to be used in the model. Five cases were contemplated: i) Constant thermophysical properties; ii) Variable properties; iii) Mass (hm), heat transfer (h) coefficient and effective diffusivity (De) estimation 134 W·m-2·K-1, 4.91x10-5 m-2·s-1 and 3.278?10-10 m·s-2 at 60 ºC, respectively; iv) Variable De, it presented a third order polynomial behavior as function of moisture content; v) The shrinkage had an effect on the mathematical model, especially in the 3 first hours of process, the thickness experienced a contraction of about (30.34 ± 1.29) % out of the initial thickness, finding two decreasing drying rate periods (DDR I and DDR II), 3.28x10-10 m·s-2 and 1.77x10-10 m·s-2, respectively. COMSOL Multiphysics simulations were possible to perform through the heat and mass transfer coefficient estimated by the mathematical modeling.

In this research, the drying process of acerola waste was investigated by using a spouted bed drier. The process was conducted using high density polyethylene inert particles with the objective of producing an ascorbic acid-rich final product. The fruit waste was ground and used to prepare different water-maltodextrin suspensions. Initially, fluidynamical experiments were conducted in order to evaluate the feeding effect on the spouted bed drier fluidynamics behavior. The experimental planning 23 + 3 was used to investigate the effect of the following variables: solids concentration, drying air temperature, intermittence time, production efficiency, solids retention and product losses by elutriation of fine particles on drier walls. The effect of selected independent variables on the drier stability was also evaluated based on a parameter defined as the ratio between the feed suspension volume and the total inert particles volume. Finally, the powder quality was verified in experiments with fixed feed flow and varying air drying temperature, drying air velocity and intermittence time. It was observed that the suspension interferes in the spouted bed drier fluidynamics behavior, and higher air flow is necessary to stabilize the drier. The suspension also promotes the expansion of the spouted bed diameter, decreases the solid circulation and favors the air distribution at the flush area. All variables interfere in the spouted bed performance, and the solids concentration has a major effect on the material retention and losses. The intermittence time also has great effect on the stability and material retention. When it comes to production efficiency, the main effect observed was the drying air temperature. First order models were well adjusted to retention and losses data. The acerola powder presented ascorbic acid levels around 600 to 700 mg/100g. Similar moisture and ascorbic acid levels were obtained for powders obtained by spouted bed and spray drier. However, the powder production efficiency of the spray drier was lower when compared to spouted bed drier. When it comes to energetic analysis, the spray drier process was superior. The results obtained for spouted bed drier are promising and highly dependent on the operational parameters chosen, but in general, it is inferred that this drying process is adequate for paste and suspension drying

This work studies the development, implementation and improvement of a macroscopic model to describe the behavior of the spouted bed dryer with continuous feeding for pastes and suspensions drying. This model is based on the CST model (Freire et al., 2009) and the model of Fernandes (2005), whose theoretical foundation is based on macroscopic mass and heat balances for the three phases involved in the process: gas, liquid and solid. Because this technique is quite relevant, the studies of modeling and simulation of spouted bed drying are essential in the analysis of the process as a whole, because through them it is possible to predict and understand the behavior of the process, which contributes significantly to more efficient project and operation. The development and understanding of the phenomena involved in the drying process can be obtained by comparing the experimental data with those from computer simulations. Such knowledge is critical for choosing properly the process conditions in order to obtain a good drying efficiency. Over the past few years, researches and development of works in the field of pastes and suspensions drying in spouted bed has been gaining ground in Brazil. The Particulate Systems Laboratory at Universidade Federal do Rio Grande do Norte, has been developing several researches and generating a huge collection of experimental data concerning the drying of fruit pulps, vegetables pastes, goat milk and suspensions of agro-industrial residues. From this collection, some data of goat milk and residue from acerola (Malpighia glabra L.) drying were collected. For the first time, these data were used for the development and validation of a model that can describe the behavior of spouted bed dryer. Thus, it was possible to model the dryer and to evaluate the influence of process variables (paste feeding, temperature and flow rate of the drying air) in the drying dynamics. We also performed water evaporation experiments in order to understand and to study the behavior of the dryer wall temperature and the evaporation rate. All these analysis will contribute to future works involving the implementation of control strategies in the pastes and suspensions drying. The results obtained in transient analysis were compared with experimental data indicating that this model well represents the process

O objetivo deste trabalho foi avaliar a cinética de secagem e os parâmetros de qualidade - conteúdo de vitamina C, reidratação e textura - de fatias de abacaxi liofilizadas em função da espessura e da temperatura de congelamento. Abacaxis do tipo Havaí, variedade Smooth Cayenne, foram fatiados transversalmente em espessuras de 0,5, 1,0 e 1,5 cm. As fatias foram congeladas nas temperaturas de -14, -24 e -34 °C, sendo, em seguida, conduzidas ao liofilizador. Uma parcela das amostras era destinada ao estudo da cinética de secagem pela pesagem periódica das mesmas, enquanto outra foi reservada para os testes de qualidade. O teor de vitamina C foi quantificado por adição de ácido oxálico na amostra e titulado com 2,6-diclorofenolindofenol. O parâmetro de textura avaliado foi a dureza, por testes de compressão em texturômetro, enquanto a reidratação foi obtida pela pesagem das amostras antes e após a imersão em água destilada por 5 min. Os resultados do presente trabalho mostraram que existe uma forte dependência da cinética de secagem e dos atributos de qualidade de fatias de abacaxi liofilizadas em função das condições utilizadas durante a etapa de congelamento, mesmo sendo este classificado como congelamento lento. Por outro lado, a taxa de congelamento não é a única variável que tem influência sobre a cinética de secagem e os atributos de qualidade. A combinação de temperatura e umidade, tanto durante a liofilização propriamente dita, quanto durante a etapa de reidratação, tem influência sobre a transição vítrea do material que, por sua vez, afeta a extensão do colapso estrutural sofrido pelo produto.

A Spirulina apresenta propriedades antioxidantes o que favorece seu uso como alimento funcional, fato que tem motivado a sua comercialização para a formulação de alimentos diversos e com finalidades terapêuticas. A secagem ganha importância durante produção de Spirulina, uma vez que a umidade necessária, para garantir que não ocorra degradação da biomassa desidratada durante o armazenamento, é alcançada através do conhecimento dos parâmetros que caracterizam a operação. Neste estudo foi utilizada a secagem com bomba de calor, um método alternativo, pois viabiliza a operação com temperaturas inferiores as tradicionalmente utilizadas, além de seu funcionamento ser independente das condições meteorológicas do ambiente. O trabalho experimental da secagem de Spirulina sp. foi iniciado com um estudo comparativo entre a secagem com bomba de calor (SBC) e a secagem tradicional (ST). O efeito dos diferentes métodos utilizados sob a amostra foi comparado em relação à cinética da operação e as características da microalga desidratada (cor, ficocianina, compostos fenólicos totais e atividade antioxidante total). As temperaturas do ar foram de 50 e 60ºC e a umidade absoluta da SBC foi dez vezes inferior a utilizada durante a ST. Os parâmetros que caracterizam a secagem foram influenciados pela temperatura do ar, bem como, pela baixa umidade absoluta na SBC. Os valores do tempo total da SBC foram 40% inferiores aos encontrados para a secagem ST, em ambas as temperaturas do ar. A maior preservação das características da Spirulina foi obtida na SBC e temperatura do ar de 50°C, e nesta condição os valores foram 14% (ficocianina), 60% (compostos fenólicos) e 10% (atividade antioxidante) superiores aos encontrados na mesma condição para a ST. Isto evidencia que o método de secagem é determinante na qualidade do produto desidratado. Posteriormente, foi realizado o estudo da cinética da SBC, bem como a otimização da operação de secagem e a reidratação das amostras desidratadas nas diferentes condições de secagem. O estudo foi realizado através de um planejamento fatorial 32, tendo como fatores de estudo a temperatura do ar (30, 40 e 50ºC) e a espessura da bandeja (1, 3 e 5 mm). As respostas utilizadas foram ficocianina, compostos fenólicos, atividade antioxidante total e cor da microalga desidratadas. Também foram realizadas a microscopia eletrônica de varredura (MEV) e as curvas termogravimétricas (DSC) das amostras desidratadas. A secagem apresentou um curto período de taxa constante, delimitado pela umidade crítica, sendo que, seus valores foram influenciados apenas pela temperatura do ar de secagem. O modelo Logarítmico forneceu elevados valores de R2ajust e os menores valores de soma dos erros quadráticos (SSE) e de critério informativo de Akaike (AIC). Os valores das energias de ativação para as espessuras de 1, 3 e 5 mm, foram na faixa de 20-23 kJ mol-1. A condição de operação mais adequada, para a secagem de Spirulina sp. com bomba de calor, foi obtida na temperatura do ar de 50°C e espessura da bandeja de 5 mm, com valores de ficocianina, compostos fenólicos, atividade antioxidante total e diferença de cor de 19,60 mg g-1, 1508 µgEAG g-1, 52,6% e 5,71, respectivamente. Os termogramas (DSC) evidenciaram que em 50 ºC e espessura de 5 mm, o produto apresentou maior estabilidade térmica. As amostras de Spirulina sp. desidratadas apresentaram estrutura morfológica (MEV), aparentemente, rígida e heterogênea, e os seus percentuais de reidratação corresponderam a 85-91% da umidade da microalga in natura.

The new model of North Island Cenozoic palaeogeography developed by Kamp et al. has a range of important implications for the evolution of New Zealand terrestrial taxa over the past 30 Ma. Key aspects include the prolonged isolation of the biota on the North Island landmass from the larger and more diverse greater South Island, and the founding of North Island taxa from the potentially unusual ecosystem of a small island around Northland. The prolonged period of isolation is expected to have generated deep phylogenetic splits within taxa present on both islands, and an important current aim should be to identify such signals in surviving endemics to start building a picture of the historical phylogeography, and inferred ecology of both islands through the Cenozoic. Given the potential differences in founding terrestrial species and climatic conditions, it seems likely that the ecology may have been very diferent between the North and South Islands. New genetic data from the 10 or so species of extinct moa suggest that the radiation of moa was much more recent than previously suggested, and reveals a complex pattern that is inferred to result from the interplay of the Cenozoic biogeography, marine barriers, and glacial cycles.
