Diante da expectativa de aumentar as exportações de carne bovina para a União Européia, entrou em análise a sistemática da rastreabilidade na carne bovina implementada pelo Brasil, em especial, pelo estado do Rio Grande do Sul. O presente trabalho de pesquisa objetivou identificar, na cadeia produtiva da carne bovina, pontos críticos para a adoção dos procedimentos ao rastreamento bovino com vistas ao provimento de carne de origem certificada ao Mercado Europeu. Foram entrevistados os produtores rurais, os empresários das indústrias exportadoras de carne bovina, agente exportador individual e as empresas certificadoras, abordando os aspectos negociais da cadeia produtiva bovina, as exigências do mercado europeu, os procedimentos adotados pelas empresas de sistemas de rastreabilidade e o posicionamento dos agentes. Os modelos teóricos utilizados para analisar os reflexos do ferramental na cadeia produtiva da carne bovina foram Filière, Supply Chain Management associados à Rastreabilidade, aplicada a produtos alimentícios. Para a análise qualitativa, aplicou-se a técnica de análise de conteúdo das respostas. As análises das questões abrangentes aplicadas aos elos, apresentadas nos resultados e discussões, permitiram identificar elementos de relevância aos atores, resultando na comparação das percepções de cada segmento em relação ao processo de rastreabilidade e certificação da carne bovina. As respostas colaboraram para a visualização do cenário sobre o impacto provocado pelo processo de rastreabilidade e certificação. Os resultados obtidos demonstraram que a rastreabilidade, até o presente momento, não contribuiu com os segmentos da cadeia produtiva bovina no que se refere aos processos negociais entre os elos na gestão, no fluxo de informações na cadeia e no aumento de preço do bovino e da carne rastreada. Existe dúvida quanto à contribuição do sistema de rastreabilidade no efeito da fluidez da informação entre os setores da cadeia bovina. Observase que a rastreabilidade pode significar uma tendência futura, demonstrando, no momento, serem indiferentes seus efeitos às variáveis identificadas como relevantes.

The objective of this study is to evaluate the effect of the daily consumption of ostrich meat (lliofemuralis internus) and bovine meat (Psoas major) on the lipid metabolism in adult mice. The analyses of the centesimal composition of the meats and preparation of the diets were accomplished following the recommendations of the American Institute of Nutrition-AIN-93. Three groups of 150 day-old animals: group I (diet I, with casein), group II (diet II, with ostrich meat), and group III (diet III with bovine meat) were fed for 13 weeks with the respective diets and weight gain, food efficiency coefficient, total cholesterol, lipoprotein fractions, hepatic, transaminases and body fat percentage and hepatic fat content were evaluated. No difference (p < 0.05) it was found for weight gain and coefficients for feed efficiency among the groups. Total cholesterol, HDL-cholesterol, LDL-cholesterol, relationship of total cholesterol/HDL-cholesterol, VLDL, triglycerides and hepatic transaminases were also not different among the groups (p < 0.05). This research suggests that the consumption of ostrich meat or thin bovine meat on a daily basis does not raise concerns about weight gain, and an increase in the plasma concentrations of lipoprotein and levels of hepatic transaminase.

Bovine meat and bone meal (MBM) was widely used in animal diets until outbreaks of Bovine Spongiform Encefalopathy (BSE) occurred in some countries. It has not been confirmed yet whether or not BSE may be transmitted to man through chicken meat originated from poultry that had been fed diets containing MBM. Therefore, consumers nowadays express preference for meat originated from birds fed exclusively vegetable diets. This study analyzed samples of major breast muscle (Pectoralis major) using mass spectrometry of stable isotopes (carbon and nitrogen) as a means to assess the presence of MBM in broiler diets, a technique that might be used in the certification of poultry quality. A total of 150 day-old chicks were reared in five randomized treatments with increasing MBM dietary inclusion levels (0, 1, 2, 4 and 8%). on day 42, breast muscle samples were collected from three birds per treatment and used in the determination of 13C/12C and 15N/14N isotope ratios. The breast muscle isotope values were expressed as delta in parts per thousand (delta ). The following carbon isotope values (13C) were found: 18.74 ±0.11, 18.51 ±0.19, 18.24 ±0.10, -17.79 ±0.12, and -17.15 ±0.15 for 0, 1, 2, 4 and 8% MBM dietary levels, respectively. Nitrogen isotope values (15N) were 1.65 ±0.14, 1.65 ±0.28, 1.72 ±0.08, 1.95 ±0.16, and 2.52 ± 0.09 for 0, 1, 2, 4 and 8% MBM dietary levels, respectively. This study showed important differences in delta13C and delta15N values in breast meat, evidencing a simultaneous enrichment of this isotopic pair, which allowed tracing MBM in bird diets. Analysis of carbon and nitrogen stable isotopes may be used to ensure feeding with exclusively vegetable diets, and might also be used as a reliable evaluation tool in broiler meat certification. The diet with 1% inclusion level of MBM and the exclusively vegetable diet showed similar results.

Neonatal calf diarrhea is a multi-etiology syndrome of cattle and direct detection of the two major agents of the syndrome, group A rotavirus and Bovine coronavirus (BCoV) is hampered by their fastidious growth in cell culture. This study aimed at developing a multiplex semi-nested RT-PCR for simultaneous detection of BCoV (N gene) and group A rotavirus (VP1 gene) with the addition of an internal control (mRNA ND5). The assay was tested in 75 bovine feces samples tested previously for rotavirus using PAGE and for BCoV using nested RT-PCR targeted to RdRp gene. Agreement with reference tests was optimal for BCoV (kappa = 0.833) and substantial for rotavirus detection (kappa = 0.648). the internal control, ND5 mRNA, was detected successfully in all reactions. Results demonstrated that this multiplex semi-nested RT-PCR was effective in the detection of BCoV and rotavirus, with high sensitivity and specificity for simultaneous detection of both viruses at a lower cost, providing an important tool for studies on the etiology of diarrhea in cattle. En este trabajo se pretende calcular la productividad del sector ganadero bovino especializado en la producción de carne en Colombia para el periodo comprendido entre el año 2000 y el 2009. Se hace una revisión teórica sobre la productividad y cómo aplica para el sector objeto de estudio. Así mismo, se definen un conjunto de indicadores entre los que se encuentra la tasa de extracción, peso y edad al sacrificio, peso y rendimiento de la canal, capacidad de carga y productividad animal, con el fin de hacer la medición. Al tiempo que se calculan para Colombia, se hace para Argentina y Uruguay, países seleccionados por su liderazgo ganadero a nivel mundial, con el objetivo de hacer un benchmarking de la productividad. Los resultados que se obtuvieron señalan que Argentina es el país más productivo, seguido de Uruguay y Colombia. Sin embargo, los únicos que presentan mejoría en el nivel de productividad son Argentina y Colombia, estando este último muy distante de los demás. Las razones que determinan esta situación son múltiples, y en el trabajo se explican detenidamente. Por último, se presenta una visión de FEDEGAN sobre cómo se puede mejorar la productividad en el país, de tal manera que se puedan alcanzar los objetivos planteados al 2019.

Objetivou-se, nesta pesquisa, o desenvolvimento de uma metodologia que permitisse a sexagem de carne bovina pronta para comercialização. Para tanto, utilizou-se primers seqüência macho-específica e posterior análise do produto amplificado. O método proposto mostrou-se eficiente para verificar o sexo, bem como sua utilização prática, a fim de evitar fraudes na comercialização de carne bovina.

Background: New challenges are rising in the animal protein market, and one of the main world challenges is to produce more in shorter time, with better quality and in a sustainable way. Brazil is the largest beef exporter in volume hence the factors affecting the beef meat chain are of major concern in countrýs economy. An emerging class of biotechnological approaches, the molecular markers, is bringing new perspectives to face these challenges, particularly after the publication of the first complete livestock genome (bovine), which has triggered a massive initiative to put in practice the benefits of the so called the Post-Genomic Era. Review: This article aimed at showing the directions and insights in the application of molecular markers on livestock genetic improvement and reproduction as well at organizing the progress so far, pointing some perspectives of these emerging technologies in Brazilian ruminant production context. An overview on the nature of the main molecular markers explored in ruminant production is provided, which describes the molecular bases and detection approaches available for microsatellites (STR) and single nucleotide polymorphisms (SNP). A topic is dedicated to review the history of association studies between markers and important trait variation in livestock, showing the timeline starting on quantitative trait loci (QTL) identification using STR markers and ending in high resolution SNP panels to proceed whole genome scans for phenotype/genotype association. Also the article organizes this information to reveal how QTL prospection using STR could open ground to the feasibility of marker-assisted selection and why this approach is quickly being replaced by studies involving the application of genome-wide association using SNP research in a new concept called genomic selection. Conclusion: The world's scientific community is dedicating effort and resources to apply SNP information in livestock selection through the development of high density panels for genomic association studies, connecting molecular genetic data with phenotypes of economic interest. Once generated, this information can be used to take decisions in genetic improvement programs by selecting animals with the assistance of molecular markers.

Analisaram-se os efeitos da média de peso vivo de 1.880 lotes de bezerros comercializados em 13 leilões, no Rio Grande do Sul, sobre o valor de venda final por unidade de peso, e caracterizou-se a frequência dos lotes conforme a classe de peso durante as estações de outono e primavera, no período de 2004 a 2006. Os dados foram corrigidos pelo índice geral de preços - disponibilidade interna e analisados por meio de histogramas de frequência e análises de regressão e correlação. O peso vivo influenciou o preço dos bezerros, e a magnitude do efeito foi maior nos anos de grande demanda. Observou-se correlação negativa entre preço e peso dos bezerros na primavera, reflexo da oferta de animais mais pesados, devido aos efeitos de estação do ano ou à maior idade dos bezerros, comparados aos ofertados no outono. Não se observou maior liquidez dos bezerros comercializados no outono em relação aos da primavera. A conjuntura da cadeia da carne bovina e os preços de outras categorias têm grande relação com os preços pagos. A aquisição de animais de menor ou maior peso na ocasião da transação comercial pode auxiliar na redução dos custos que a reposição representa na produção.

The knowledge of the meat production from different buffalo breeds and their crossings in different feeding systems becomes necessary for the supply of subsidies to whole productive meat chain. Some quantitative carcass traits of Mediterranean buffaloes bulls, finished in feedlot, with initial age of fourteen months and 330 kg live weight, slaughtered with 450, 480, 510 and 540 kg, were evaluated. The diet contained 13% crude protein, 2.68 Mcal digestible energy/kg DM and a roughage : concentrate ratio of 25:75. Regression equations for prediction weight and yield of primal cuts of carcass as a function of slaughter weight were obtained. Carcass dressing percent increased as the slaughter weight increased (49.2; 49.5; 49.7; and 49.9%). The Pistola Style cut weight although increasing linearly in weight (108.2; 117.6; 124.0 and 130.7 kg) as the slaughter weight increased, declined linearly when expressed in relation to cold carcass weight (49.5; 49.0; 48.6 and 48.2%). In this experimental conditions Mediterranean young bulls slaughtered between 450 to 540 kg of live weight showed increasing yields of cold carcass, forequarter and thin flank.

Twenty-two Triceps brachii muscle obtained from 11 cows aged 3 and 4 years , killed in an experimental slaughter plant, were submitted to mechanical tenderization, injection with acetic acid 0,1M and lactic acid 0,2M, ageing for 9 and 14 days and electrical stimulation (250v - 60Hz - 90s), some of them were reserved as a control group, without treatment. The 14 days ageing time presented 21% of increase in subjective tenderness and 12% of reduction in shear force, these values were similar to the electrical stimulated meat. However the injection with acids and the ageing time 9 days did not present significant effect in the texture. Although the shear force values of mechanical tenderized meat was the shortest among all treatments, suspect of superestimation because of the fractures plan created by this process. Another analyses were carried out: pH reduction curve, R value; colour analysis; weight losses by cooking and by treatment; and microbiological analysis.

A les Valls d’Àneu la producció ramadera de boví ecològic és molt important, ja que, actualment, el 22% de les explotacions són ecològiques i es preveu que aquest percentatge augmenti fins al 50% en els propers dos anys. Malgrat això, la motivació principal per a convertir les explotacions convencionals en ecològiques és el factor econòmic, no la consciència ambiental. En l’anàlisi del cicle productiu carni del boví ecològic procedent de les Valls d’Àneu s’ha observat que no hi ha diferències substancials entre la producció ecològica i la convencional. Tot i així, el producte carni de boví ecològic no té gran sortida al mercat, ja que aquest és incipient i, a més, el preu del producte ecològic és molt més elevat que el del convencional. Un aspecte crític de la producció ramadera ecològica és que la seva normativa no considera els impactes ambientals que genera, com són els derivats del transport, la generació de residus d’envasos, etc. En aquest estudi es presenta una aproximació quantitativa dels impactes generats en el cicle productiu carni de boví ecològic de les Valls d’Àneu.

Post-embryonic Development of Ophyra aenescens (Wiedemann, 1830) (Diptera: Muscidae), in Different Diets, under Laboratory Conditions - The performance of various diets (bovine meat, fish- sardine, shrimp, dog faeces, and banana) in Ophyra aenescens development was evaluated. The biology was studied in an incubator (BOD) at 27±1oC and 80±10% of RH. The developmental time from larvae to adult, the developmental time and viability of larvae and pupae, the weight of pupae as well as the sex ratio of the emerging adults were also determined. Beef and shrimp were the more efficient diets for rearing O. aenescens.

The prevalence of Mycobacterium bovis and other mycobacterial species in livestock specimens and milk was evaluated. An emphasis was placed upon the distribution of these organisms in milk that is readily available to the public that was either untreated, pasteurized, or treated using ultra high temperature. Twenty-two pathologic specimens from livestock (bovine, swine and bubaline) in five Brazilian states and 128 bovine milk samples from retail markets in the State of São Paulo were examined for mycobacteria. Identification was made by classical biochemical tests, thin layer chromatography of mycolic acids and polymerase chain reaction-restriction fragment length polymorphism (PCR-RFLP) analysis. Mycobacteria were isolated from 15 (68.2%) caseous lesions and from 23 (18%) milk samples. Eleven isolates were identified as M. bovis, and the remaining 27 nontuberculous mycobacterial isolates were represented by five species and six unidentified rapidly growing mycobacterial strains. The data demonstrate that animal products in Brazil are frequent reservoirs of mycobacteria and may pose a risk to the public.

Under natural environmental conditions, blowflies utilize discrete and ephemeral feeding resources such as decaying carcasses. Competition for food on such feeding substrates is usually very severe, and only the individuals that are capable of attaining the critical larval weight for pupation will be able to survive. This critical weight is hitherto unknown for several blowfly species; therefore, the current work is aimed at obtaining such a critical value for four blowfly species of the genera Chrysomya and Lucilia, deploying two types of feeding substrate, namely, artificial diet and macerated bovine meat. On the whole, the critical weights ranged from 30 to 35 mg. The lowest larval weight which permitted pupation was 30.0 mg for Chrysomya megacephala reared on macerated bovine meat. This species was also the best adapted to pupation at low larval weights in relation to the maximum larval weight for males. Regarding the pupation of females, the best-adapted individual was a C. albiceps specimen exhibiting a critical weight that was equal to 39.20 % of the maximum value obtained. Concerning all the species and diet types, the female individuals exhibited the lowest critical weights that produced viable pupae, probably representing an evolutionary strategy that favoured the survival of females, responsible for the egg formation, contributing to the establishment of future generations. Regarding the loss (in percentage) of adult biomass in relation to the third instar larvae, the females of C. megacephala lost less weight than males in both feeding substrates. On the other hand, such a loss of weight occurred in males of C. albiceps and L. cuprina.
