Vitamin D deficiency during pregnancy, lactation, and early infancy has been widely reported. Current understanding of vitamin D metabolism during pregnancy and lactation is incomplete, and to date, experimental data to support vitamin D requirements for these life stages are scarce. There is a shortage of nationally representative data and appropriate reference ranges for serum 25-hydroxyvitamin D (25OHD) during pregnancy, lactation and infancy, including in umbilical cord blood. This thesis described concentrations of total 25OHD and individual metabolites including 25OHD3, 25OHD2, and 3-epi-25OHD3 at 15 weeks’ gestation in a large seasonally balanced pregnancy cohort study (n 1768), carried out in Cork, Ireland (52oN). The prevalence of low 25OHD concentrations in pregnant women was higher than published reports in other Caucasian women, and was highest among non-users of vitamin D-containing supplements during winter. A longitudinal pregnancy study was included which suggested gestational stages had an impact on the total serum 25OHD concentration. This thesis incorporated a randomized controlled trial carried out among 100 women across 3 intervention groups using 20 μg/day of vitamin D3 with or without 500 mg calcium, or placebo, over 12-weeks of lactation to investigate the vitamin D requirement for lactating mothers and the vitamin D content of human milk. A daily intake of 25 μg/day was suggested to meet the requirement of lactating women to maintain a 25OHD levels above 50 nmol/L in 97.5% of the population at 52oN all year around. However, vitamin D content in human milk did not increase in response to supplementation. Serum 25OHD concentration has been used as a predictor of a number of health outcomes. This thesis reported large differences in serum 25OHD concentrations using different methods in 86 umbilical cord samples. The need for international standardization of serum 25OHD measurements was re-emphasized in this thesis.

There is a general perception that the problem of tooth wear is increasing due to elements of the modern diet and due to increased retention of dentition into older age. Tooth wear encompasses erosion, abrasion and attrition of dental tissues – these often co-exist – yet in general, erosion is of more significance to the young and attrition is of more significance to the older population. Diet plays a significant role in the aetiology of tooth wear and likewise advanced tooth wear in older age may impose dietary restrictions with consequences for dietary intake and nutritional status. There is a need to increase the awareness of the disease of tooth wear and the associated nutritional problems. At present, the aetiology of tooth wear is poorly understood – especially with respect to the role of diet. Clearer information on how best to measure and monitor the incidence and prevalence is needed in order to obtain longitudinal data on trends in tooth wear and to monitor the factors that contribute to this condition. These issues will be addressed in the following presentations: 1) What is tooth wear? Aetiology, measurement and monitoring, 2) The role of diet in the aetiology of dental erosion, 3) Groups at increased risk of tooth wear: Eating disorders, ‘dieters' sportsmen and those with impairments, 4) Tooth wear in older adults: nutritional implications. In summary this symposium seeks to: 1) increase awareness of the disease of tooth wear, and its associated nutritional problems 2) increase understanding of the aetiology of tooth wear, especially the dietary role, 3) provide information on how to measure and monitor tooth wear, 4) highlight future research requirements in the area of tooth wear and diet.

Estudos em humanos e animais têm demonstrado que a nutrição inadequada em fase crítica de desenvolvimento, como na gestação, pode causar alterações da prole na vida adulta. Tais estudos levaram à proposição da hipótese de programação fetal, segundo a qual o risco para desenvolver certas doenças é função não apenas da carga genética ou dos hábitos de vida do indivíduo adulto, como também da atuação de fatores ambientais em períodos críticos. O objetivo deste trabalho foi avaliar o efeito tardio da restrição calórica materna moderada (30%), na gestação e/ou lactação sobre o metabolismo energético da prole. Foram utilizados ratos Wistar, sendo os grupos experimentais divididos da seguinte forma: NN (filhotes nascidos de mães normais e colocados em gaiolas com mães do grupo normal na lactação), NR (filhotes nascidos de mães do grupo normal e colocados em gaiolas com mães restritas na lactação), RN (filhotes nascidos de mães restritas na gestação e colocados em gaiolas com mães normais na lactação) e RR (filhotes nascidos de mães restritas na gestação e colocados em gaiolas com mães restritas na lactação). Foram avaliados o peso corporal, a ingestão de alimentos, os depósitos de gordura, o índice de adiposidade, lipídios plasmáticos, gordura hepática e gordura da carcaça.. A restrição nutricional materna provocou alterações significativas tanto em machos quanto em fêmeas no período do desmame, entretanto no início da idade adulta somente os machos apresentaram mudanças mais expressivas no metabolismo energético e no desenvolvimento corpóreo. Houve uma redução no peso corpóreo dos animais machos dos grupos NR, RN e RR (8,9%, 9,0% e 14,2%, respectivamente). The fishery resources of Lake George and Ugandan waters of Lake Edward are described. The main fish species currently observed in the commercial catches were determined and the reasons of changes in species composition of the catches. that occurred in the recent years, are explained. The fishing activity and some economic and nutritional aspects of four fishing villages, selected among the ten present within the Queen Elizabeth National Park boundaries, are analyzed, In the end some suggestions are given for management of the fishery resources of these lakes.

This article presents information on the nutritional aspects of seaweeds in terms of fiber, mineral content, fats and lipids, vitamin contents, and components that have a confirmed and investigated nutritional effect. The nutrient levels of seaweeds are also shown in comparison to currently applicable reference nutrient intakes or guideline daily amounts of nutrients and are contrasted with terrestrial foodstuffs with respect to selected nutrients. For the purpose of comparison, a sample serving size of 8 g dry weight of seaweed is used to illustrate the potential contribution of seaweeds to the diet.
