An assessment is given of the post-harvest losses in the Lake Kainji fisheries of Nigeria. The study focussed on quantifiable information on post-harvest technology and post-harvest losses from fisherfolk, fish processors and fish traders operating within the Kainji Lake basin. The information was obtained from questionnaires sent to a total of 665 respondents, comprising 317 fishermen, 115 fish processors, 125 fish buyers, and 111 fish sellers in 45 fishing villages and collection centres within the lake basin. Considering the total catch from gillnets, longlines, traps and cast nets estimated at 14,000 in 1995 about 1,000 t of fish was either discarded or lost value due to spoilage during handling by fisherfolk. Assuming an average prices of 80 Naira/kg of fish, the loss to the economy amounted to 80 million Naira annually. Appropriate recommendations are made to significantly reduce post-harvest losses in the Kainji Lake fishery. (PDF contains 91 pages)

Three particular geometrical shapes of foods were prepared from food materials. Cuboidal (aspect ratio = 1:1, 2:1, 3:1) , cylindrical (length: dameter = 1:1, 2:1, 3:1) and spheres were selected from potato, beans and peas respectively. Internal porosity was determined from solid density (theoretical)and particle density (experimental) during fluidised bed drying at different moisture contents. Solid density was calculated using formulae (conservation of mass and volume) already published in the literature by previous researchers. Determined porosity values were correlated with moisture ratio for different geometrical shapes.

Drying is a key processing techniques used in food engineering which demands continual developments on advanced analysis techniques in order to optimize the product and the process. In this regard, plant based materials are a frequent subject of interest where microstructural studies can provide a clearer understanding on the fundamental physical mechanisms involved. In this context, considering numerous challenges of using conventional numerical grid-based modelling techniques, a meshfree particle based model was developed to simulate extreme deformations of plant microstructure during drying. The proposed technique is based on a particle based meshfree method: Smoothed Particle Hydrodynamics (SPH) and a Discrete Element Method (DEM). A tissue model was developed by aggrading individual cells modelled with SPH-DEM coupled approach by initializing the cells as hexagons and aggregating them to form a tissue. The model also involves a middle lamella resembling real tissues. Using the model, different dried tissue states were simulated with different moisture content, the turgor pressure, and cell wall contraction effects. Compared to the state of the art grid-based microscale plant tissue drying models, the proposed model is capable of simulating plant tissues at lower moisture contents which results in excessive shrinkage and cell wall wrinkling. Model predictions were compared with experimental findings and a fairly good agreement was observed both qualitatively and quantitatively.

The paper examines the pattern of utilization of freshwater fish species in Nigeria. It was observed that although fishermen have a preference for fresh fish sales only 30% of fresh fish captured actually get to the consumers. The rest are preserved by smoke curing (60-65%), salting and sundrying (less than 5%), deep frying and fermentation (about 1%). Constraints to fish utilization were identified which include poor infrastructure, losses of fish and fish products as a result of traditional post harvest technology and socio economic factors. The need for the development of appropriate research to solve the problems of traditional post harvest technology was emphasised

A study on the different aspects of spiny lobster fishery of south west coast of India with respect to the factors relevant to production, including conservation and management measures for putting this fishery on sound basis needs no emphasis. There are some aspects of this fishery which have not been sufficiently inquired into and some others which have been touched upon intermittantly and in a languid way. The attempt here is to throw light on these aspects from a production point of view. Emphasis is on harvest technology and the conservation and management measures and it is proposed to make a critical review of such measures in vogue in other lobster fishing countries and discuss about suitable methods for this fishery

Objetivou-se no presente trabalho verificar a qualidade do café natural e despolpado durante a secagem em terreiro e secagem com ar aquecido a 40º e 60ºC. O trabalho foi realizado no Departamento de Engenharia e no Pólo de Tecnologia em Pós-Colheita do Café da Universidade Federal de Lavras (UFLA). A colheita do café, cultivar Topázio, foi seletiva. Parte do café foi despolpado e outra parte processado de forma natural. Uma parcela de cada tipo de café foi conduzida para a secagem em terreiro e outra parcela para secagem com temperaturas de 40ºC e 60ºC. Para avaliação da qualidade, foram feitos teste de condutividade elétrica e lixiviação de potássio; determinação de acidez titulável total; teste de acidez graxa; açúcares totais e redutores. Os resultados obtidos permitem concluir que: o tempo para secagem é afetado pelos diferentes tipos de secagem e processamentos; a condutividade elétrica, a lixiviação de potássio, a acidez titulável total e a acidez graxa aumentam com a elevação da temperatura de secagem, independente do tipo de processamento; os açúcares redutores e os açúcares totais diminuem com o aumento da tem peratura de secagem independente do tipo de processamento; a secagem com temperatura de 60ºC afetou negativamente a qualidade do café.

O estudo descreve os metodos atualmente utilizados na colheita de sementes de alface e apresenta-se um metodo alternativo de colheita, que consiste no corte manual das inflorescencias, associado a irrigacao e adubacao nitrogenada de cobertura. Este metodo, alem de reduzir as perdas de sementes, permite a utilizacao das reservas da planta para uma segunda colheita.

Strips within commercial crops of Stylosanthes guyanensis in the Mareeba district of north Queensland were sprayed with diquat 4, 6 and 10 days before harvest and compared with unsprayed strips. Pre-harvest desiccation made combine harvesting easier, but did not increase harvest yield. Where seed formation and maturation was still possible, desiccation prevented this without substantially increasing the loss of seed to the ground; increased harvest efficiency was thus offset by a diminished quantity of standing seed. However, where there was little or no further potential for seed development, diquat had virtually no effect on the quantity of standing seed or harvest efficiency. It was concluded that the results warranted neither recommendation nor further evaluation of preharvest desiccation of S. guyanensis seed crops.

A commercial issue currently facing native plant food producers and food processors, and identified by the industry itself, is that of delivering quality products consistently and at reasonable cost to end users based on a sound food technology and nutrition platform. A literature survey carried out in July 2001 by the DPI&F’s Centre for Food Technology, Brisbane in collaboration with the University of Queensland to collect the latest information at that time on the functional food market as it pertained to native food plants, indicated that little or no work had been published on this topic. This project addresses two key RIRDC sub program strategies: to identify and evaluate processes or products with prospects of commercial viability and to assist in the development of integrated production, harvesting, processing and marketing systems. This project proposal also reflects a key RIRDC R&D issue for 2002-2003; that of linking with prospective members of the value chain. The purpose of this project was to obtain chemical data on the post harvest stability of functional nutritional components (bio actives) in commercially available, hand harvested bush tomato and Kakadu plum. The project concentrated on evaluating bioactive stability as a measure of ingredient quality.

The study examined the sustainability of various indigenous technologies in post-harvest fishery operation in Edo and Delta States (Nigeria). A total of seventy processors were interviewed during the survey through a random selection. The data obtained were analysed by descriptive statistics. The results obtained revealed that the majority of the fish processors within the study areas were married with women who were not educated beyond the first Leaving School Certificate. Most of the fish processed were bought fresh, while the commonest method of preservation/processing practiced was smoking. The type of processing equipment used was the Chorkor smoking kiln and the drum smoker while the commonest source of energy is firewood. The processing activities within the communities were found to be profitable. However it was observed that due to the high cost of processing materials and equipment, the economic growth and the living standard is quite low. Some recommendations were made to improve the traditional method of fish preservation and processing
