This report provides an analysis of the cultural, policy and legal implications of ‘mash-ups’. This study provides a short history of mash-ups, explaining how the current ‘remix culture’ builds upon a range of creative antecedents and cultural traditions, which valorised appropriation, quotation, and transformation. It provides modern examples of mash-ups, such as sound recordings, musical works, film and artistic works, focusing on works seen on You Tube and other online applications. In particular, it considers - * Literary mash-ups of canonical texts, including Pride and Prejudice and Zombies, The Wind Done Gone, After the Rain, and 60 Years Later; * Artistic mash-ups, highlighting the Obama Hope poster, the ‘Column’ case, and the competition for extending famous album covers; * Geographical mash-ups, most notably, the Google Australia bushfires map; * Musical mash-ups, such as The Grey Album and the work of Girl Talk; * Cinematic mash-ups, including remixes of There Will Be Blood and The Downfall; and This survey provides an analysis of why mash-up culture is valuable. It highlights the range of aesthetic, political, comic, and commercial impulses behind the creation and the dissemination of mash-ups. This report highlights the tensions between copyright law and mash-ups in particular cultural sectors. Second, this report emphasizes the importance of civil society institutions in promoting and defending mash-ups in both copyright litigation and policy debates. It provides a study of key organisations – including: * The Fair Use Project; * The Organization for Transformative Works; * Public Knowledge; * The Electronic Frontier Foundation; and * The Chilling Effects Clearinghouse This report suggests that much can be learnt from this network of organisations in the United States. There is a dearth of comparable legal clinics, advocacy groups, and creative institutions in Australia. As a result, the public interest values of copyright law have only received weak, incidental support from defendant companies – such as Network Ten and IceTV – with other copyright agendas. Third, this report canvasses a succinct model for legislative reform in respect of copyright law and mash-ups. It highlights: * The extent to which mash-ups are ‘tolerated uses’; * The conflicting judicial precedents on substantiality in Australia and the United States; * The debate over copyright exceptions relating to mash-ups and remixes; * The use of the take-down and notice system under the safe harbours regime by copyright owners in respect of mash-ups; * The impact of technological protection measures on mash-ups and remixes; * The possibility of statutory licensing in respect of mash-ups; * The use of Creative Commons licences; * The impact of moral rights protection upon mash-ups; * The interaction between economic and moral rights under copyright law; and * Questions of copyright law, freedom of expression, and political mash-ups.

Although the majority of people with mental illness are not violent, scientific studies over the last decades show that certain psychiatric disorders increase the risk of violent behavior, including homicide. This thesis examined crime scene behaviors and offender background characteristics among mentally ill Finnish homicide offenders. Previously, homicide crime scene behaviors have been investigated in relation to offender demographic characteristics, whereas this study compares the behaviors of offenders with various mental illnesses. The study design was a retrospective chart review of the forensic psychiatric statements of Finnish homicide offenders. The work consists of four substudies. The aims of the study were as follows: To describe differences in the childhood and family backgrounds as well as in the adolescent and adult adjustment of Finnish homicide offenders belonging to different diagnostic categories (schizophrenia, personality disorder, alcoholism, drug addiction or no diagnosis). Further, the study examined associations between the crime scene behaviors and mental status of these offenders. Also, the distinguishing characteristics between two groups of offenders with schizophrenia were examined: early starters, who present antisocial behavior before the onset of schizophrenia, and late starters, who first offend after the onset of mental disorder. Finally, it was investigated how the use of excessive violence is associated with clinical and circumstantial variables as well as offender background characteristics among homicide offenders with schizophrenia. The main findings of the study can be summarized as follows. First, offenders with personality disorder or drug addiction had experienced multiple difficulties in their early environments: both family and individual problems were typical. Offenders with schizophrenia were relatively well-adjusted in childhood compared to the other groups. However, in adolescence and adulthood, social isolation, withdrawal and other difficulties attributable to these offenders illness became evident. In several aspects, offenders with alcohol dependency resembled offenders with no diagnosis in that these offenders had less problematic backgrounds compared to other groups. Second, the results showed that crime scene behaviors, victim gender and the victim-offender relationship differ between the groups. In particular, offenders with a diagnosis of schizophrenia or drug addiction have some unique features in their crime scene behaviors and choice of victims. Offenders with schizophrenia were more likely to kill a blood relative, to use a sharp weapon and to injure the victim s face. Drug addiction was associated with stealing from the victim and trying to cover up the body. Third, the results suggest that the offense characteristics of early- and late-start offenders with schizophrenia differ only modestly. However, several significant differences between the groups were found in characteristics of offenders: early starters had experienced a multitude of problems in their childhood surroundings and also later in life. Fourth, violent acts where the offender did not commit the offense alone or had previous homicidal history were predictive of excessive violence among offenders with schizophrenia. Positive psychotic symptoms did not predict the use of excessive violence. Nearly one third of the cases in the sample involved multiple and severe violence, including features such as sadism, mutilation, sexual components or extreme stabbing. In sum, mentally disordered homicide offenders are heterogeneous in their offense characteristics as well as their background characteristics. Empirically based information on how the offender s mental state is associated with specific crime scene behaviors can be utilized within the police force in developing methods of prioritizing suspects in unsolved homicide cases. Also, these results emphasise the importance of early interventions for problem families and children at risk of antisocial behavior. They may also contribute to the development of effective treatment for violent offenders.

Muscle glycogen exists in two forms: low molecular weight pro-glycogen and high molecular weight macro-glycogen. The degradation of glycogen to glucose 1 phosphate and free glucose is catalysed by glycogen phosphorylase together with glycogen debranching enzyme (GDE). The process in which glycogen is broken down via anaerobic pathways to lactate, results in the acidification of the muscles and has a great influence on meat quality. Thus, the overall aim of this thesis was to characterise the post mortem action of GDE in muscles of meat production animals (pigs, cattle and chickens). Interest was focused on the differences in GDE activity between fast twitch glycolytic muscles and slow twitch oxidative muscles. The effects of pH, temperature, RN genotype (PRKAG3 gene), and of time post mortem on GDE activity were also investigated. This thesis showed that there are differences in GDE activity between animal species and between different muscles of an animal. It was shown that in pigs and cattle, higher GDE activity and phosphorylase activity exists in the fast twitch glycolytic muscles than in slow twitch oxidative muscles of the same animal. Thus, the high activity of these enzymes enables a faster rate of glycogenolysis in glycolytic M. longissimus dorsi compared to oxidative M. masseter. In chicken muscles, the GDE activity was low compared to pig or cattle muscles. Furthermore, the GDE activity in the glycolytic M. pectoralis superficialis was lower than in more oxidative M. quadriceps femoris despite the high phosphorylase activity in the former. The relative ratios between phosphorylase and GDE activity were higher in fast twitch glycolytic muscles than in slow twitch oxidative muscles of all studied animals. This suggests that the relatively low GDE activity compared to the phosphorylase activity in fast twitch glycolytic muscles may be a protection mechanism in living muscle against a very fast pH decrease. Chilling significantly decreased GDE activity and below 15 C porcine GDE was almost inactive. The effect of pH on GDE activity was only minor at the range normally found in post mortem muscles (pH 7.4 to 5.0). The GDE activity remained level for several hours after slaughter. During the first hours post mortem, GDE activity was similar in RN- carrier pigs and in wild type pigs. However, the GDE activity declined faster in M. longissimus dorsi from wild type pigs than in the RN carrier pigs, the difference between genotypes was significant after 24 h post mortem. Pro-glycogen and macro-glycogen contents were higher, pH decrease was faster and ultimate pH was lower in RN- carrier pigs than in wild type pigs. In the RN- carriers, the prolonged high GDE activity level may enable an extended pH decrease and lower ultimate pH in their muscles. In conclusion, GDE is not the main factor determining the rate or the extent of post mortem glycogenolysis, but under certain conditions, such as in very fast chilling, the inhibition of GDE activity in meat may reduce the rate of pH decrease and result in higher ultimate pH. The rate and extent of pH decrease affects several meat quality traits.

Campylobacter is an important food borne pathogen, mainly associated with poultry. A lack of through-chain quantitative Campylobacter data has been highlighted within quantitative risk assessments. The aim of this study was to quantitatively and qualitatively measure Campylobacter and Escherichia coli concentration on chicken carcasses through poultry slaughter. Chickens (n = 240) were sampled from each of four flocks along the processing chain, before scald, after scald, before chill, after chill, after packaging and from individual caeca. The overall prevalence of Campylobacter after packaging was 83% with a median concentration of 0.8 log10 CFU/mL. The processing points of scalding and chilling had significant mean reductions of both Campylobacter (1.8 and 2.9 log10 CFU/carcase) and E. coli (1.3 and 2.5 log10 CFU/carcase). The concentration of E. coli and Campylobacter was significantly correlated throughout processing indicating that E. coli may be a useful indicator organism for reductions in Campylobacter concentration. The carriage of species varied between flocks, with two flocks dominated by Campylobacter coli and two flocks dominated by Campylobacter jejuni. Current processing practices can lead to significant reductions in the concentration of Campylobacter on carcasses. Further understanding of the variable effect of processing on Campylobacter and the survival of specific genotypes may enable more targeted interventions to reduce the concentration of this poultry associated pathogen.

Poultry are considered a major source for campylobacteriosis in humans. A total of 1866 Campylobacter spp. isolates collected through the poultry processing chain were typed using flaA-restriction fragment length polymorphism to measure the impact of processing on the genotypes present. Temporally related human clinical isolates (n = 497) were also typed. Isolates were obtained from whole chicken carcass rinses of chickens collected before scalding, after scalding, before immersion chilling, after immersion chilling and after packaging as well as from individual caecal samples. A total of 32 genotypes comprising at least four isolates each were recognised. Simpson's Index of Diversity (D) was calculated for each sampling site within each flock, for each flock as a whole and for the clinical isolates. From caecal collection to after packaging samples the D value did not change in two flocks, decreased in one flock and increased in the fourth flock. Dominant genotypes occurred in each flock but their constitutive percentages changed through processing. There were 23 overlapping genotypes between clinical and chicken isolates. The diversity of Campylobacter is flock dependant and may alter through processing. This study confirms that poultry are a source of campylobacteriosis in the Australian population although other sources may contribute.

Radiant frost is a significant production constraint to wheat (Triticum aestivum) and barley (Hordeum vulgare), particularly in regions where spring-habit cereals are grown through winter, maturing in spring. However, damage to winter-habit cereals in reproductive stages is also reported. Crops are particularly susceptible to frost once awns or spikes emerge from the protection of the flag leaf sheath. Post-head-emergence frost (PHEF) is a problem distinct from other cold-mediated production constraints. To date, useful increased PHEF resistance in cereals has not been identified. Given the renewed interest in reproductive frost damage in cereals, it is timely to review the problem. Here we update the extent and impacts of PHEF and document current management options to combat this challenge. We clarify terminology useful for discussing PHEF in relation to chilling and other freezing stresses. We discuss problems characterizing radiant frost, the environmental conditions leading to PHEF damage, and the effects of frost at different growth stages. PHEF resistant cultivars would be highly desirable, to both reduce the incidence of direct frost damage and to allow the timing of crop maturity to be managed to maximize yield potential. A framework of potential adaptation mechanisms is outlined. Clarification of these critical issues will sharpen research focus, improving opportunities to identify genetic sources for improved PHEF resistance.

Campylobacter, mainly Campylobacter jejuni and C. coli, are worldwide recognized as a major cause of bacterial food-borne gastroenteritis. Epidemiological studies have shown handling or eating of poultry to be significant risk factors for human infections. Campylobacter contamination can occur at all stages of a poultry meat production cycle. The aim of this thesis was to study the occurrence and diversity of Campylobacter in broiler and turkey production in Finland. In summer 1999, 2.9 % of slaughtered broiler flocks were Campylobacter-positive. From the isolated strains 94 % were C. jejuni and 6% were C. coli. During years 2005-2006 one turkey parent flock, the hatchery, six different commercial turkey farms and different stages of the slaughterhouse were monitored during one and the half year. No Campylobacter were detected in either of the samples from the turkey parent flock or from the hatchery using the culture method. Instead PCR detected DNA of Campylobacter from the turkey parent flock and samples from the hatchery. Six out of 12 commercial turkey flocks were found negative at the farm level but only two of those were negative at slaughter. Campylobacter-positive samples within the flock at slaughter were detected between 0% and 94% with evisceration and chilling water being the most critical stages for contamination. All of Campylobacter isolates were shown to be C. jejuni. Campylobacter-positive turkey flocks were colonized by a limited number of Campylobacter genotypes both at the farm and slaughter level. In conclusion, in our first study in 1999 a low prevalence of Campylobacter in Finnish broiler flocks was detected and it has remained at a low level during the study period until the present. In the turkey meat production, we found that flocks which were negative at the farm became contaminated with Campylobacter at the slaughter process. These results suggest that proper and efficient cleaning and disinfection of slaughter and processing premises are needed to avoid cross-contamination. Prevention of colonization at the farm by a high level of biosecurity control and hygiene may be one of the most efficient ways to reduce the amount of Campylobacter-positive poultry meat in Finland. With a persistent low level of Campylobacter-positive flocks, it could be speculated that the use of logistic slaughtering, according to Campylobacter status at farm, might have be advantageous in reducing Campylobacter contamination of retail poultry products. However, the significance of the domestic poultry meat for human campylobacteriosis in Finland should be evaluated.

Campylobacter, mainly Campylobacter jejuni and C. coli, are worldwide recognized as a major cause of bacterial food-borne gastroenteritis (World Health Organization 2010). Epidemiological studies have shown handling or eating of poultry to be significant risk factors for human infections. Campylobacter contamination can occur at all stages of a poultry meat production cycle. In summer 1999, every broiler flock from all three major Finnish poultry slaughterhouses was studied during a five month period. Caecal samples were taken in the slaughterhouses from five birds per flock. A total of 1 132 broiler flocks were tested and 33 (2.9%) of those were Campylobacter-positive. Thirty-one isolates were identified as C. jejuni and two isolates were C. coli. The isolates were serotyped for heat-stable antigens (HS) and genotyped by pulsed-field gel electrophoresis (PFGE). The most common serotypes found were HS 6,7, 12 and 4-complex. Using a combination of SmaI and KpnI patterns, 18 different PFGE types were identified. Thirty-five Finnish C. jejuni strains with five SmaI/SacII PFGE types selected among human and chicken isolates from 1997 and 1998 were used for comparison of their PFGE patterns, amplified fragment length polymorphism (AFLP) patterns, HaeIII ribotypes, and HS serotypes. The discriminatory power of PFGE, AFLP and ribotyping with HaeIII were shown to be at the same level for this selected set of strains, and these methods assigned the strains into the same groups. The PFGE and AFLP patterns within a genotype were highly similar, indicating genetic relatedness. An HS serotype was distributed among different genotypes, and different serotypes were identified within one genotype. From one turkey parent flock, the hatchery, six different commercial turkey farms (together 12 flocks) and from 11 stages at the slaughterhouse a total of 456 samples were collected during one and the half year. For the detection of Campylobacter both conventional culture and a PCR method were used. No Campylobacter were detected in either of the samples from the turkey parent flock or from the hatchery samples using the culture method. Instead PCR detected DNA of Campylobacter in five faecal samples from the turkey parent flock and in one fluff and an eggshell sample. Six out of 12 commercial turkey flocks were found negative at the farm level but only two of those were negative at slaughter. Campylobacter-positive samples within the flock at slaughter were detected between 0% and 94%, with evisceration and chilling water being the most critical stages for contamination. All of a total of 121 Campylobacter isolates were shown to be C. jejuni using a multiplex PCR assay. PFGE analysis of all isolates with KpnI restriction enzyme resulted in 11 PFGE types (I-XI) and flaA-SVR typing yielded nine flaA-SVR alleles. Three Campylobacter-positive turkey flocks were colonized by a limited number of Campylobacter genotypes both at the farm and slaughter level.In conclusion, in our first study in 1999 a low prevalence of Campylobacter in Finnish broiler flocks was detected and it has remained at a low level during the study period until the present. Practically all water for municipal and industrial use in the Fernandina area is supplied by artesian wells. In recent years, the use of artesian water in the area has increased to meet the needs of expanding industry and increasing population. The total industrial and municipal pumpage has increased from approximately 35 million gallons per day in 1941 to approximately 50 million gallons per day in 1959. Correlated with the increase in water use is the constant decline in the artesian pressure in the area. In many other areas in Florida, such a decline in artesian pressure has resulted in salt-water intrusion into the fresh-water supply.An intrusion of salt water in the Fernandina area would contaminate the existing fresh-water supply and would result in a hardship for the population and seriously injure the economy. Recognizing the threat to the fresh-water supplies of this area, the U. S. Geological Survey in cooperation with the Florida Geological Surveymade a reconnaissance to determineif there has been any intrusion of salt water into the fresh-water supply or if there is any danger of future intrusion. Effects of chilled and frozen storage on specific enthalpy (ΔH) and transition temperature (Td) of protein denaturation as well as on selected functional properties of muscle tissue of rainbow trout and herring were investigated. The Td of myosin shifted from 39 to 33 °C during chilling of trout post mortem, but was also influenced by pH. Toughening during frozen storage of trout fillet was characterized by an increased storage modulus of a gel made from the raw fillet. Differences between long term and short term frozen stored, cooked trout fillet were identified by a compression test and a consumer panel. These changes did not affect the Td and ΔH of heat denaturation during one year of frozen storage at –20 °C. In contrast the Td of two myosin peaks of herring shifted during frozen storage at –20 °C to a significant lower value and overlaid finally. Myosin was aggregated by hydrophobic protein-protein interactions. Both thermal properties of myosin and chemical composition were sample specific for wild herring, but were relative constant for farmed trout samples over one year. Determination of Td was very precise (standard deviation <2 %) at a low scanning rate (≤ 0.25 K·min-1) and is useful for monitoring the quality of chilled and frozen stored trout and herring.

Most of the fish marketed throughout Nigeria are in either smoked or dried form. The technological requirement for other forms of preservation like chilling and freezing cannot be afforded by the small scale fisher folk. Considerable quantities of fish processed for distant consumer markets are lost at handling, processing, storage and marketing stages. Significant losses occur through infestation by mites, insects, fungal infestation and fragmentation during transportation. This paper attempts to describe the effect of these losses on fish quality and suggests methods of protecting fish from agents of deterioration

低温贮藏是延缓园艺产品采后成熟、抑制病原菌生长和保持品质的常规方法。然而,许多园艺产品对低温(一般低于10 ºC~12 ºC)相当敏感,如果贮藏温度过低,就易产生冷害,降低其商业价值。所以研究采后园艺产品的冷害机制及如何提高其抗冷性是具有潜在经济价值的科学问题。水杨酸甲酯和茉莉酸甲酯是植物产生的信号物质,有研究表明这两种物质能够缓解低温贮藏下果实的冷害程度或提高果实的抗冷性,但是相关的作用机理并不清晰。本论文以芒果、桃和黄瓜为材料,研究水杨酸甲酯或茉莉酸甲酯处理的果实在冷害或非冷害贮藏条件下的抗氧化代谢、酚类物质代谢、细胞膜完整性以及细胞壁成分和结构等方面的变化,进一步证实了水杨酸甲酯和茉莉酸甲酯能够缓解果实的冷害,同时还探讨了提高抗冷性的机制。   本论文采用扫描电子显微镜研究果实表皮蜡层的变化,用光学显微镜、透射电子显微镜和傅里叶变换红外光谱仪研究果实细胞壁结构和成分的变化,用原子吸收分光光度计测定细胞壁钙离子的变化,用电导率仪检测果实细胞的完整性。同时测定了果实酚类物质含量、多酚氧化酶(EC 1.10.3.1)活性、过氧化物酶(EC 1.11.1.7)活性,并分析了果实硬度、糖和酸含量等品质指标。试验结果表明:适宜浓度的水杨酸甲酯和茉莉酸甲酯均能缓解果实的冷害症状,提高果实的抗冷性。其中,水杨酸甲酯处理能够改变果实表皮蜡层结构;降低表皮脂类物质和细胞壁酚类物质积累;抑制细胞壁纤维物质的降解,调节果胶物质的溶解,保护细胞壁结构。茉莉酸甲酯处理可以保护细胞膜的完整性;调节果实的酚类物质代谢,缓解果实的酶促褐变;抑制细胞壁果胶物质和纤维物质的降解,维持细胞壁结构和果实的硬度,有利于提高果实的抗冷性和缓解果实冷害。   虽然不同的果实表现的冷害症状不完全相同,但是低温胁迫对植物组织结构(膜系统和细胞壁结构)的破坏是造成果实冷害的根本原因。提高果实抗冷性的各种调节机制归根结底是通过保护细胞正常结构而发挥作用的。水杨酸甲酯与茉莉酸甲酯处理保护了果实的组织结构,缓解了低温胁迫对果实的伤害,提高了果实的抗冷性。然而,果实自身物质成分的差异是造成冷害症状表现不同的主要原因。

对于双子叶模式植物拟南芥在逆境应答中的机理研究已取得了很大的进展,但在单子叶植物中的相关研究相对滞后。在单子叶植物水稻中仅仅报道了一些转录因子类基因以及与代谢有关的酶类基因,但与低温有关的分子伴侣、离子通道和载体等类基因的研究少见报道。 受低温诱导的水稻基因OsCOIN(AK104280)来自水稻10K cDNA芯片,它的cDNA全长有1593bp,开放阅读框内为1089bp,编码363个氨基酸,蛋白质的计算分子量42kDa,等电点5.25。在基因组序列中有7个外显子,6个内含子。生物信息分析显示,OsCOIN在第72—106氨基酸间形成一个指环结构域。OsCOIN蛋白没有跨膜区,定位于细胞质和细胞核。通过酵母双杂交实验证明了指环蛋白OsCOIN没有转录活性,故不是转录因子。RT-PCR结果表明,OsCOIN在所选的11种水稻组织中都有不同程度的表达,4C处理0.5h时OsCOIN基因开始较强地表达,持续较强地表达到4C处理48小时,72h时OsCOIN的表达量下降到起始的水平。另外,该基因表达还受ABA和盐诱导。 利用农杆菌介导的转化手段,得到三个OsCOIN超表达株系和六个RNAi株系。RNAi株系分蘖增多、植株矮化。为了分析OsCOIN与逆境胁迫的关系,实验中分析了超表达植株对低温等胁迫的耐性。结果表明,4C处理60h、72h、84h后,所有植株都出现萎蔫,恢复生长两周后超表达植株的存活率(分别为76.2%、71.4%和50%)明显高于野生型的存活率(分别为52.4%、22.2%和14.8%)。超表达OsCOIN水稻中,OsLti6b、OsNAC6和OsP5CS的表达量明显增加,而OsDhn1和OsDREB1a的表达量明显地降低,OsCDPK7和OsLti6a表达水平未受影响。 上述结果表明OsCOIN基因的过量表达抑制了OsDhn1和OsDREB1a的表达,促进了OsLti6b、OsNAC6和OsP5CS的表达。OsCOIN基因参与的低温响应途径与ABA相关,OsCOIN超表达植株不仅能耐低温,而且对盐和干旱胁迫有一定的抗性。

衰老和冷害是果实采后极易发生的两种重要的生理性失调,严重影响了果实的商品质量和市场价值。本论文选用在采后贮藏期间容易衰老和出现冷害的枇杷、杧果和桃果实作为研究材料,比较深入系统地研究了这些果实采后衰老或冷害的机理和调控。主要的研究内容包括:(1)枇杷果实在不同贮藏条件下(低温、气调)的生理代谢、品质变化、衰老进程和贮藏性;(2)杧果果实采后生理特性及外源草酸和水杨酸处理对杧果冷害、品质和活性氧代谢的影响;(3)桃果实在低温贮藏下冷害发生特征,并从氧化还原平衡和蛋白质组表达方面探讨了桃果实采后冷害的发生机理。 试验结果表明:(1)与自发气调包装(MAP)相比,气调(CA, 10% O2+1%CO2)能更有效的抑制枇杷果实的腐烂、延缓衰老、保持品质,以及控制多聚半乳糖醛酸酶(PG)和多酚氧化酶(PPO)的活性。枇杷果实在1 ºC气调下贮藏50天,腐烂指数低于7%,并保持固有的风味品质。短时间的高氧处理对果实腐烂和品质影响不大,促进了贮藏后期果实内乙醇的积累;(2)外源草酸和水杨酸处理显著减轻了杧果果实在贮藏期间的冷害程度,但对果实的硬度、可溶性固型物和可滴定酸含量影响不大。外源草酸和水杨酸提高了果实内抗坏血酸和谷胱甘肽的还原状态、提高了H2O2含量、降低了O2-含量和脂氧合酶活性,并提高了超氧化物岐化酶、过氧化氢酶、过氧化物酶、抗坏血酸氧化酶和谷胱甘肽还原酶的活性;(3)与非冷害桃果实相比,冷害桃果实呈现较低的H2O2含量、较高的膜透性、较高的酚类物质含量以及较高的抗坏血酸和谷胱甘肽还原状态。水杨酸对果实内H2O2含量、膜透性、酚类物质含量有显著的影响。冷害桃果实与非冷害桃果实的蛋白质表达也有明显的区别,32个差异表达蛋白依其功能分为8类,分别为能量产生、代谢、次生代谢、抗性、蛋白质的分布、基因转录、细胞结构和细胞生长。水杨酸对其中20个蛋白质的表达有显著影响。烯醇化酶、脂质运载蛋白、脱水蛋白、分支酸变位酶以及桂醇脱氢酶等与桃冷害发生有密切关系。 通过对上述结果的分析,得出如下结论:(1)与MAP相比,CA(10% O2 + 1% CO2)可显著延缓枇杷果实的衰老、腐烂和品质下降,CA延缓枇杷衰老的作用机理可能与其减轻果实内氧胁迫、降低PG和PPO活性有关;(2)用外源草酸或水杨酸处理杧果,可减轻贮藏期间果实的冷害程度,其调控机制可能与提高果实抗坏血酸和谷胱甘肽的还原状态、抑制O2-含量和提高H2O2含量有关;(3)在低温贮藏下,桃冷害发生与果实内较低的H2O2含量、生物膜完整性的破坏以及酚类物质含量增加密切相关,果实生物膜完整性的破坏与烯醇化酶、脂质运载蛋白、过敏蛋白以及脱水蛋白的下调表达有关,而酚类物质含量的增加与分支酸变位酶、桂醇脱氢酶的上调表达有关。
