Complete plants were regenerated from in vitro cultured immature cotyledon segments of groundnut (Arachis hypogaea L. cv. TMV-7) by organogenesis. Callus cultures were best Initiated from immature cotyledon segments on MS (Murashige and Skoog) salts containing B5 vitamins supplemented with indole-3-acetic acid (IAA) and alpha -naphthalene acetic acid (NAA; 4.0 mg L-1) and kinetin (KIN; 0.5 L-1). Calluses were transferred to a medium containing KIN (2.0 mg L-1) and IAA and NAA (0.5 mg L-1) for shoot Initiation. The regenerated shoots were transferred to a medium containing Indole-3-butyric acid (IBA; 2.0 mg L-1) and KIN (0.2 mg L-1) for developing roots. In vitro produced plantlets developed sucessfully, matured, and set seed. The protein profiles [sodium dodecyl sulphate - polyacrylamide gel electrophoresis (SDS-PAGE)] of callus, callus with shoot, and callus with shoot and root showed differences.

Coenzyme Q (ubiquinone), a fully substituted benzoquinone with polyprenyl side chain, participates in many cellular redox activities. Paradoxically it was discovered only in 1957, albeit being ubiquitous. It required a person, F. L. Crane, a place, Enzyme Institute, Madison, USA, and a time when D. E. Green was directing vigorous research on mitochondria. Located at the transition of 2-electron flavoproteins and 1-electron cytochrome carriers, it facilitates electron transfer through the elegant Q-cycle in mitochondria to reduce O-2 to H2O, and to H2O2, now a significant signal-transducing agent, as a minor activity in shunt pathway (animals) and alternative oxidase (plants). The ability to form Q-radical by losing an electron and a proton was ingeniously used by Mitchell to explain the formation of the proton gradient, considered the core of energy transduction, and also in acidification in vacuoles. Known to be a mobile membrane constituent (microsomes, plasma membrane and Golgi apparatus), allowing it to reach multiple sites, coenzyme Q is expected to have other activities. Coenzyme Q protects circulating lipoproteins being a better lipid antioxidant than even vitamin E. Binding to proteins such as QPS, QPN, QPC and uncoupling protein in mitochondria, QA and QB in the reaction centre in R. sphaeroides, and disulfide bond-forming protein in E. coli (possibly also in Golgi), coenzyme Q acquires selective functions. A characteristic of orally dosed coenzyme Q is its exclusive absorption into the liver, but not the other tissues. This enrichment of Q is accompanied by significant decrease of blood pressure and of serum cholesterol. Inhibition of formation of mevalonate, the common precursor in the branched isoprene pathway, by the minor product, coenzyme Q, decreases the major product, cholesterol. Relaxation of contracted arterial smooth muscle by a side-chain truncated product of coenzyme Q explains its effect of decreasing blood pressure. Extensive clinical studies carried out on oral supplements of coenzyine Q, initially by K. Folkers and Y. Yamamura and followed many others, revealed a large number of beneficial effects, significantly in cardiovascular diseases. Such a variety of effects by this lipid quinone cannot depend on redox activity alone. The fat-soluble vitamins (A, D, E and K) that bear structural relationship with coenzyme Q are known to be active in their polar forms. A vignette of modified forms of coenzyme Q taking active role in its multiple effects is emerging.

Tuberculosis is continuing as a problem of mankind. With evolution, MDR and XDR forms of tuberculosis have emerged from drug sensitive strain. MDR and XDR strains are resistant to most of the antibiotics, making the management more difficult. BCG vaccine is not providing complete protection against tuberculosis. Therefore new infections are spreading at a tremendous rate. At the present moment there is experimental evidence to believe that Vitamin A and Vitamin D has anti-mycobacterial property. It is in this context, we have hypothesized a host based approach using the above vitamins that can cause possible prevention and cure of tuberculosis with minimal chance of resistance or toxicity. Vitamins are organic substances which are present in minute amounts in natural foodstuffs and which are essential for normal physiological functions. The short review gives an overview on the vitamin content in fish and discusses the influence of industrial production and household cooking. The vitamin contents in fish depend on the species and vary considerably. Fish is a rich source of vitamin D and B12. Some species contain also considerable amounts of niacin, vitamin B6 and vitamin E.

The estimated potential of Nigerian fish resources is 1,830,994 tonnes(t) whereas the demand based on per capita consumption of 12.0kg and a population of 88.5 million is 1.085 million tonnes. Supply is presently less than 500,000 tons. The gap between demand and supply have to be met through improved utilization and increased availability of fish and fishery products. The role of fish in nutrition is recognized, since it supplies a good balance of protein, vitamins and minerals and a relatively low caloric content. This paper appraises the consumption and utilisation pattern of fish in Nigeria, the spoilage of fish and prevention of losses as a means of increasing the availability of fish for human consumption and consequent control of aggravated animal protein deficiency - induced malnutrition. The paper further highlights the point that without increased landings, increased supply of fish can be achieved through reduction of postharvest loss of what is presently caught. The use of newly designed smoke - drying equipment to achieve such goal is highlighted. The paper also emphasises the need to put into human food chain those non-conventional fishery resources and by-catch of shrimp and demersal trawl fishes by conversion into high value protein products like fish cakes, fish pies and salted dried cakes

The urge to develop a standard practical diet for farmed fish in Nigeria has been on the increase since the last decade. Since ages diets has ever represent the largest single cost item of most fish farm operations. This is the reason why careful selection of feed ingredients for use in aqafeed plays a vital role in the resultant nutritional and economic success of farmed fish. In an attempt to meet the objectives of culturing fish two main sources of fish feed have been identified for meeting the nutritional requirements of fish. These include 'on-farm feeds' and 'commercial feeds'. However, 'on-farm feed' takes the lion share out of the total annual national aquafeed product which amounts to about 70% of the estimated total of 3,570 tones of fish feed produced in year 2000. This paper takes a look at the important of non-conventional feed resource in 'on-farm feed', the place of vitamins in 'on-farm feed', the need to develop and encourage on-farm feed production and feeding strategies if aquaculture will grow further to meet the projected million metric tones production within this decade

O amendoim A. hypogaea L. é a quarta oleaginosa mais consumida no mundo e suas sementes são altamente energéticas, com grandes quantidades de lipídios, proteínas, vitaminas e carboidratos. Diversas atividades farmacológicas já foram observadas em extratos de raízes, folhas e sementes, sendo a principal delas a atividade antioxidante. Neste trabalho, foi realizada a comparação entre duas metodologias (por maceração e assistida por micro-ondas) para a extração de compostos antioxidantes, incluindo o resveratrol. Também foi realizada a comparação entre extratos de diferentes órgãos de cultivares brasileiras (IAC 886, IAC Caiapó, IAC Tatu ST, IAC 8112 e IAC 99-1) quanto à atividade antioxidante, por DPPH, ao teor de compostos fenólicos, por Folin-Ciocalteu, e ao teor de resveratrol, por HPLC. Por fim, foram estabelecidos protocolos de cultura de tecidos para explantes de sementes, visando à produção de calos e plantas in vitro para posterior dosagem de compostos de interesse, tendo em vista a possibilidade de modulação das condições in vitro. As melhores condições determinadas para a extração por maceração de antioxidantes de A. hypogaea foram 80% de etanol em água como solvente, trituração com almofariz e pistilo, 50 mL solvente por grama de material vegetal seco, 120 minutos de incubação e dois estágios de extração. As melhores condições para a extração de resveratrol assistida por micro-ondas foram o uso de 37 mL de solvente/g material vegetal seco, com agitação de 1200 rpm por 15 minutos, a 37C. De uma maneira geral, os extratos de raízes e oriundos de micro-ondas apresentaram maior atividade antioxidante (até 92,36 2,71%), teor de compostos fenólicos (até 54,15 1,39 mg EAG/g extrato) e teor de resveratrol (até 1,614 0,356 mg/g extrato). Dentre as cultivares estudadas, IAC Tatu e IAC 99-1 foram as que apresentaram os teores mais elevados. Brotos e calos friáveis foram obtidos a partir de cotilédones, eixos embrionários e folíolos embrionários cultivados em meios suplementados com BAP e picloram, respectivamente.

A tese descreve a ingestão de nutrientes segundo variáveis demográficas e socioeconômicas em adultos brasileiros, com base nos dados da primeira avaliação nacional do consumo alimentar individual, o Inquérito Nacional de Alimentação (INA), realizado entre 2008 e 2009. Um total de 34.003 indivíduos com pelo menos 10 anos de idade participaram do estudo. O presente estudo incluiu 21.003 indivíduos adultos, de 20 a 59 anos de idade, com exceção das mulheres gestantes e lactantes (n=1.065). O consumo alimentar individual foi estimado utilizando dois dias de registros alimentares não consecutivos. O consumo usual de nutrientes foi estimado pelo método do National Cancer Institute que permitiu a correção da variabilidade intraindividual. As prevalências de ingestão inadequada de nutrientes foram estimadas segundo o sexo e faixas etárias utilizando o método da necessidade média estimada como ponte de corte. A inadequação de sódio foi avaliada pelo consumo acima do nível de ingestão máximo tolerável. Os resultados são apresentados na forma de dois artigos. No primeiro artigo, estimaram-se as prevalências de inadequação segundo as cinco grandes regiões (Norte, Nordeste, Sudeste, Sul e Centro-Oeste) e a situação do domicílio (urbano e rural). Observaram-se prevalências de inadequação maiores ou iguais a 70% para cálcio entre os homens e magnésio, vitamina A, sódio em ambos os sexos. Prevalências maiores ou iguais a 90% foram encontradas para cálcio entre as mulheres e vitaminas D e E em ambos os sexos. No geral, os grupos com maior risco de inadequação de micronutrientes foram as mulheres e os que residem na área rural e na região Nordeste. No segundo artigo, estimaram-se as prevalências de inadequação do consumo segundo renda e escolaridade. A renda foi caracterizada pela renda mensal familiar per capita e a escolaridade definida pelo número de anos completos de estudo. Ambas variáveis foram categorizadas em quartis. Modelos de regressão linear simples e mutuamente ajustados foram estimados para verificar a associação independente entre o consumo de nutrientes e as variáveis socioeconômicas. Foram testadas as interações entre renda e escolaridade. Verificou-se que a inadequação da maioria dos nutrientes diminuiu com o aumento da renda e escolaridade; porém, o consumo excessivo de gordura saturada e o baixo consumo de fibra aumentaram com ambas variáveis. Grande parte dos nutrientes foi independentemente associada à renda e escolaridade, contudo, o consumo de ferro, vitamina B12 e sódio entre mulheres foi associado somente com a educação. Observou-se interação entre renda e escolaridade na associação com o consumo de sódio em homens, fósforo em mulheres e cálcio em ambos os sexos. Os achados indicam que melhorar a educação é um passo importante na melhoria do consumo de nutrientes no Brasil, além da necessidade de formulação de estratégias econômicas que permitam que indivíduos de baixa renda adotem uma dieta saudável. Nossos resultados mostram também um grande desafio das ações de saúde pública na área de nutrição, com importantes inadequações de consumo em toda população adulta brasileira e particularmente em grupos populacionais e regiões mais vulneráveis do país.

Purpose. To review the proposed pathogenic mechanisms of age macular degeneration (AMD), as well as the role of antioxidants (AOX) and omega-3 fatty acids (omega-3) supplements in AMD prevention. Materials and Methods. Current knowledge on the cellular/molecular mechanisms of AMD and the epidemiologic/experimental studies on the effects of AOX and omega-3 were addressed all together with the scientific evidence and the personal opinion of professionals involved in the Retina Group of the OFTARED (Spain). Results. High dietary intakes of omega-3 and macular pigments lutein/zeaxanthin are associated with lower risk of prevalence and incidence in AMD. The Age-Related Eye Disease study (AREDS) showed a beneficial effect of high doses of vitamins C, E, beta-carotene, and zinc/copper in reducing the rate of progression to advanced AMD in patients with intermediate AMD or with one-sided late AMD. The AREDS-2 study has shown that lutein and zeaxanthin may substitute beta-carotene because of its potential relationship with increased lung cancer incidence. Conclusion. Research has proved that elder people with poor diets, especially with low AOX and omega-3 micronutrients intake and subsequently having low plasmatic levels, are more prone to developing AMD. Micronutrient supplementation enhances antioxidant defense and healthy eyes and might prevent/retard/modify AMD.

In Bangladesh, only 6% of the daily food intake is animal food of which fish accounts for 50%. Rice is the mainstay, making up 60% of the daily food intake. However, many nutrients such as vitamins A and C, iron, calcium, zinc and iodine are not found in rice and have to be obtained from other sources. Small indigenous fish are a vital contribution to the diet of the rural poor in Bangladesh, where more than 30,000 children go blind every year from vitamin A deficiency and 70% of women and children are iron-deficient. Small fish, which are less than 10 cm in length and usually eaten whole with the organs and bones, contain large amount of calcium and possibly iron and zinc. The largest fish promoted in aquaculture do not contribute significantly to calcium intake. Some species also contain large amount of vitamin A. Much of the small indigenous fish (SIS) of Bangladesh are caught in floodplains and natural waterbodies. Small fish are eaten frequently in small amounts and are more equally distributed among family members than big fish of which men get the larger share. Unfortunately, overfishing and the deterioration of natural habitats have resulted in a decline in SIS. When measures are taken to improve food and nutrition security, there should be a focus on production of small fish so that greater quantities are accessible for consumption by the rural poor.

O gergelim (Sesamum indicum L.) é considerado uma das principais oleaginosas cultivadas mundialmente, fonte de lipídios, proteínas, minerais e vitaminas e antioxidantes importantes para a saúde humana. São poucos os estudos que analisaram as características químicas do gergelim. O objetivo deste trabalho foi caracterizar a composição química das diferentes marcas comerciais de sementes de gergelim (branco e negro), da farinha de gergelim, óleo de gergelim bruto e leite de gergelim negro. Este estudo foi realizado em laboratórios do Instituto de Nutrição e do Instituto de Química da UERJ e em laboratório na cidade de Campinas, em São Paulo. Foram realizadas análises, na farinha e nas sementes, de composição centesimal, fibras, cálcio, magnésio, zinco, cobre, potássio, manganês, vitamina E, betacaroteno e ácidos graxos. No óleo e no leite, foram analisados minerais, exceto cálcio e magnésio, e vitaminas E, betacaroteno, ácidos graxos e, no óleo, índices de acidez e peróxido. Avaliações microbiológicas também foram realizadas nas sementes de gergelim branco e negro e na farinha. Os resultados foram submetidos à análise de variância (ANOVA), com pós teste de Tukey para comparação das médias entre os grupos e para comparar dois grupos foi utilizado o teste t. O intervalo de confiança foi de 95%. Foi utilizado o software GraphPad Prism 5. Foram observadas diferenças significativas entre as diferentes marcas das sementes, assim como diferenças entre a farinha e as sementes de gergelim negro e branco, em relação à grande maioria das análises realizadas. O óleo de gergelim apresentou excelente padrão de identidade e qualidade, além de ótimo perfil de ácidos graxos, dentro das recomendações da legislação, apresentando-se como a melhor fonte de vitamina E dentro os produtos analisados. O gergelim foi considerado rico em cálcio, tendo o gergelim negro como a principal fonte (983,25 mg/100g) com grande diferença significativa em relação ao gergelim branco (p<0,0001), além de ser a principal fonte de fibras insolúveis (27,71%), o que faz com que o gergelim negro possa ter alegações de propriedades funcionais. A farinha de gergelim foi considerada a principal fonte de cobre (2,18 mg/100g) e magnésio (388,00 mg/100g), apresentando diferença significativa com a semente negra (p<0,05). O óleo de gergelim foi a principal fonte de potássio (16%) e vitamina E (28,34 mg/100g). Além disso, foi considerado fonte de ácido graxo monoinsaturado oleico e poli-insaturado linoleico, com 47,62 % e 35,32 %, respectivamente, com diferenças significativas em relação aos outros produtos (p<0,0001) e baixa quantidade de ômega 3. Em relação às avaliações microbiológicas na farinha e sementes, todos os resultados mostraram que os produtos encontram-se dentro dos critérios microbiológicos estabelecidos pela legislação e, portanto, próprios para o consumo humano. Nosso estudo caracterizou a composição nutricional de diferentes produtos de gergelim que apresentaram características físicas, químicas e microbiológicas importantes e adequadas à saúde humana, com boas quantidades de cálcio, magnésio, cobre, fibras alimentares e ácidos graxos insaturados, podendo contribuir para a aplicabilidade clínica

Small indigenous fish species (SIS) are an important source of essential macro- and micronutrients that can play an important role in the elimination of malnutrition and micronutrient deficiencies in the populations of many South and Southeast Asian countries. Of the 260 freshwater fish species in Bangladesh, more than 140 are classified as SIS and are an integral part of the rural Bangladeshi diet. As many SIS are eaten whole, with organs and bones, they contain high amounts of vitamins and minerals, including calcium, and iron and zinc. Some SIS, such as mola, are also rich in vitamin A. SIS are often cooked with vegetables and a little oil, so they contribute to the food diversity of the rural poor.SIS are recognized as a major animal-source food group, contributing to improved food and nutrition security and livelihoods of the people of South and Southeast Asia. The purpose of this workshop is to bring together policy makers, extension agents, researchers, non-governmental and development organizations to share knowledge about small fish, their contribution to better nutrition, production technologies, and strategies for wider dissemination of pond culture and wetland based-production and conservation technologies. The workshop is expected to generate ideas for further research and development of sustainable technologies for production, management and conservation of SIS for the benefit of the people of Bangladesh as well as the South and Southeast Asian region.

The food value of marine algae lies mainly in their minerals and vitamins content (Chapman and Chapman, 1980). They are good source of vitamins like A,D,E,B series and C. Pakistan has a rich marine flora, so far more than 200 species of seaweeds have been reported (Shameel and Tanaka, 1992).

The object of this study was to determine the value of physical, bacteriological and chemical tests used to find out and compare the indices of quality of prawns stored at 0°C and at 18°C. pH value, nature of drip, the total bacterial count, presence or absence of tryptophan, trimethylamine content, glycogen, lactic acid, vitamins such as thiamin, riboflavin and niacin were estimated periodically to evaluate the quality of prawns stored at 0°C, whereas in addition to organoleptic changes, pH, bacterial count, nature of growth in peptone water, soluble protein in salt solution and loss of moisture, glycogen, lactic acid, and changes in vitamin B contents were noted periodically for prawns stored at -l8°C. Riboflavin and niacin were not affected appreciably but the retention of thiamin in prawns was very low.
