There is no information on the effect of sulfuryl fluoride (SF) on durum wheat technological properties and products made from fumigated durum wheat. Durum wheat and semolina were exposed to a range of SF applications under conditions that might be typically encountered in bulk storage facilities used in many countries. SF greatly reduced the germination percentage of fumigated durum wheat, with increasing impact under higher SF concentration, grain moisture content, and fumigation temperature. SF greatly reduced seed germination percentage, impacting more the higher the SF concentration. SF had little to no effect on grain test weight, 1,000-grain weight, hardness, protein content, semolina ash content, and mixograph properties. At the highest SF concentration (31.25 mg/L for 48 h) there was a tendency for pasta cooking loss to be increased but still acceptable, and other pasta properties were largely unaffected. Fumigation with SF did not have any impact on the baking properties of a wholemeal durum flour-commercial flour mix. Therefore, SF is not recommended if the grains are to be used as seeds for agricultural production, but for the production of semolina, pasta, and bread, SF used under typical fumigation conditions has little to no impact on technological properties of durum wheat. © 2016 AACC International, Inc.

Processed meat products are of worldwide importance and, because of their intrinsic factors as well as the processing methods, they are highly prone to fungal and mycotoxin contamination. Ochratoxin A (OTA) is the most significant mycotoxin in processed meat products. Penicillium nordicum is considered to be responsible for OTA contamination of meat products, as it is highly adapted to salt and protein-rich matrices and is moderately psycrotrophic. However, another OTA-producing fungus, Aspergillus westerdijkiae, adapted to carbon-rich matrices such as cereals and coffee beans, has been recently associated with high levels of OTA in meat products. Several Lactic Acid Bacteria (LAB) and yeasts have been tested as biocontrol agents against P. nordicum growth and OTA production in meat products, with promising results, but none of the studies have considered A. westerdijkiae. The aim of this work was to evaluate in vitro the effect of a commercial starter culture used in sausage fermentation and four yeasts isolated from dry-cured sausage on these two OTA-producing fungi, both in terms of fungal growth and of OTA production, using different meat-based culture media as model systems. The mechanisms underlying the observed effect were also studied. For this purpose, C. krusei, C. zeylanoides, R. mucilaginosa, R. glutinis, a mix of these yeasts and the starter culture were co-inoculated with P. nordicum and A. westerdijkiae in industrial sausage, traditional sausage, and ham-based media, under conditions of water activity, salt concentration and temperature that mimic real conditions at beginning and end of sausage curing process. Fungal growth was determined by measuring colony diameter, and OTA production was quantified by HPLC-FLD after extraction with methanol. Yeasts where found to inhibit significantly the growth of both fungi. P. nordicum was unable to produce detectable OTA in both sausage-based media under any condition. In ham, yeasts reduced OTA production, while the starter culture significantly increased it. Unexpectedly, OTA production by A. westerdijkiae was significantly stimulated in all media tested by all microorganisms. Matrix has a significant effect on OTA production by P. nordicum, but not by A. westerdijkiae, for which only temperature showed to have effect. By testing the mechanisms of action by which starter culture and C. zeylanoides influenced fungal responses, we were able to determine that direct contact and simultaneous growth of test organisms were the mechanisms more significantly involved in the responses. In conclusion, ochratoxigenic fungi do not all respond to antagonistic microorganisms in the same way. The use of biocontrol agents with the intent of reducing fungal growth and mycotoxin production by one fungus can have unexpected effects on others, thus leading to unforeseen safety problems. Further experiments are recommended to properly understand the reasons behind the different effects of microorganisms, to ensure their safe as biocontrol agents.

Resumen El presente artículo desenmascara la forma en que falazmente las instituciones financieras multilaterales pretenden hacer ver las causas de lo que han dado en llamar “la crisis alimentaria mundial” a partir del incremento de los precios de los alimentos alrededor del mundo. Agrocombustibles, incremento del precio del petróleo, cambio climático en zonas productoras son algunas de las causas que el Banco Mundial pone como justificación al incremento del precio de la mayoría de cereales y granos básicos. La milagrosa solución al hambre en los países pobres: la minería, es lanzada desde este todopoderoso agente financiero, como panacea para la producción de regalías que permitan a muchos países de África y algunos de América Latina y Asia,  para resolver la problemática alimentaria.  ¡Nada más falso! En los siguientes párrafos se describen las verdaderas razones de la crisis del actual modelo económico mundial, y se proponen desde un país en concreto,  propuestas de política pública para su solución.   Abstract The present article unmasks the way in which multilateral financial institutions pretend fallaciously to show the causes of which they have given to call “the world food crisis” since the increasing prices of food around the world. Agrofuels, increase the price of oil, produces climate chance in zones used for production, these are some of the causes that the World Bank uses to justify the increasing prices of the majority of cereals and grains. The miraculous solution for hunger in poor countries: mining, is launched from this all mighty financial agent, as a panacea to produce royalties that will permit many countries in Africa, and in some in Latin American and Asia, to solve their food problematic. Nothing more false than that! In the next paragraphs the true reasons of this crisis of the actual economic world model are described, and from a particular country, proposals of public politics for their solutions.

A Análise conjunta de regressões, ACR, é uma técnica utitilizada para estudar a interação gentipo x ambiente baseada em regressões. Nesta técnica ajusta-se uma regressão linear por cultivar. Nestas regressões a variável controlada é o índice ambiental que mede a produtividade dos vários ambientes. Nas culturas anuais, os ambientes compreendem aos pares (local, ano). Os valores dos índices ambientais e dos coeficientes das regressões são ajustados simultaneamente. Até agora a ACR tem sido aplicada a uma única cultura de cada vez. Neste trabalho vamos procurar ultrapassar essa limitação através da modelação dos logaritmos dos índices ambientais tendo-se desenvolvido um modelo da forma: zi, j  v  l j  j , i  1,...,n, J  1,...,n onde zi , j é o logaritmo do índice ambiental para o i-essimo ambiente na j  essima cultura , v um valor médio geral , li j  essimo cultivar. o efeito do i  essimo local e  j o efeito do Ao utilizar esta modelação, os locais corresponderão a estações experimentais de forma a poder-se ter várias culturas no mesmo local. Ora, as estações experimentais são escolhidas por forma a serem representativas das regiões onde estão implantadas. Assim, os índices ambientais correspondentes às várias estações experimentais e, consequentemente, às respetivas regiões, pudesse ser utilizados para agrupar regiões contíguas com índices semelhantes obtendo-se assim, um elemento interessante para a Zonagem agrícola no que diz respeito às culturas que se trabalha. Pode-se ainda procurar uma Zonagem para grupos de cultivares. Por exemplo, adiante trabalharemos com dados da cevada e trigo os quais são cereais. ABSTRACT: Joint Regression Analysis, JRA, is one of the techniques for the study of genotypeXenvironment interaction based on the use of regressions .In JRA a linear regression of the yields of each cultivar on a controlled variable, the environment index ,is adjusted .The index miss erasures the productivity of each environment .In yearly cultures the environments correspond to the pairs (location ,years) .These indexes and the correlation coefficients are adjusted simultaneously. Up to now JRA has been applied to single crops .Now we try to overcome this restriction through modeling of the logarithms of the environmental indexes .We developed a model τ i , j = v + l j +λ j , i = 1,..., b, J = 1,...J where τ i , j is the logarithm of the environmental index for the i-th environment and the j-th crop , v is the general mean , li is the effect of the i-th environment and λ j is the effect of the j-th crop . When applying this model the location will correspond to experimental situations in order to have several crops in the same locations .Now experimental stations are chosen to be representative of the regions in which they are located .Then the l1 ,..., lb can be used to group contiguous regions with similar location effects .We thus get an useful tool for Agricultural Zoning for the crops we used or, even, for the group to which those crops belong . For instance we worked with barley and wheat that are cereals.

Introduction: There are few studies assessing overall diet and food patterns of the oldest population. Objectives: To examine food groups consumption (grams and servings) and their compliance with the dietary guidelines in community-dwelling very old Spanish adults. The relationship with the risk of malnutrition was also studied. Methods: Within the cross-sectional health study of elderly people of Villanueva de la Cañada (Madrid, Spain), in 98 non-institutionalized elders aged ≥ 80 years (66% women) food consumption was calculated from a 24-hour dietary recall and nutritional risk was assessed by Mini Nutritional Assessment (MNA). Statistical significance was evaluated at 95% confidence level (p < 0.05). Results: Men consumed significantly higher amounts of snacks/pickles and alcoholic beverages. The consumption of cereals/grain products (2 servings/day), vegetables (1.5 servings/day) and meat, fish, eggs (1.4 servings/day), was below desirable levels. As nutritional status got worse, fruit consumption was significantly smaller (p = 0.039). Relatively weak but highly significant correlations were found between MNA and oils/fats, fruits and alcoholic beverages. After adjustment for energy intake, oils and fats and fruits associations disappeared whereas a negative association between milk/dairy products and MNA was found. Conclusions: Dietary patterns of the elderly population of Villanueva are departing from the traditional Mediterranean diet and though adequate consumption of fruits, milk/dairy products, oils/fats and sugar/confectionery has been achieved, cereals/grain products, vegetables and the meat,fish,eggs group consumption was below the desirable levels. Deterioration of the nutritional status coincided with a reduction in the consumption of all food groups except for ready meals and milk/dairy products whose consumption increased. Further research on the influence of fruit, milk/dairy products, wine and olive oil consumption on nutritional status is required.

Purpose: To determine acrylamide (AA) levels in different brands of commercial and traditional foodstuffs available in Syria by ultra-performance liquid chromatography-mass spectrometery (UPLCMS). Methods: A total of 63 samples were analyzed. Food samples were defatted by hexane and then extracted with methanol 98 % in a vortex mixer. Thereafter, Carrez I and Carrez II were added to precipitate proteins from the co-extractives and then centrifuged to obtain a clear aqueous extract that was evaporated to dryness. The extract was dissolved in 1 mL of water, eluted through a preconditioned Oasis HLB cartridge and then filtered. The filtrate was analyzed by UPLC-MS/MS to determine AA content. Results: Among the commercial foods tested, the highest acrylamide quantity was found in potato products (396 ± 3.59 – 1844 ± 5.29 μg kg−1) and the lowest in corn products (183 ± 2.64 – 366 ± 4.58 μg kg−1). This was followed by biscuits (57 ± 2.64 – 1433 ± 2.51 μg kg−1), breakfast cereals (121 ± 8.73 – 245 ± 3.60 μg kg−1), bread (119 ± 1.73 – 263 ± 3.60 μg kg−1) and then coffee (113 ± 2.64 - 64 ± 3.05 μg kg−1). Regarding traditional foods, the highest level of AA was found in AL- Mshabak (481 ± 2.08 μg kg−1) and AL-Awamat (421 ± 2.64 μg kg−1) followed by AL-Namora (282 ± 4.35 μg kg−1) and AL-Kenafa (242 ± 2.64 μg kg−1). It was also observed that the lowest amount of AA was in fried bread (230 μg kg−1), AL-Fatayer (192 ± 3.51 μg kg−1) and AL-Baqlawa (172 ± 4.35 μg kg−1) while Eid Aqras (130 ± 4.58 μg kg−1) and AL-Brazeq (167 ± 3.78 μg kg−1) contained the least amount of AA. Conclusion: The results indicate that the highest levels of AA are found in the most commonly consumed foods. There was significant difference (p < 0.05) in AA levels among different food items and within different brands of the same product.

El diseño de un sistema de empaques con doble función para cereales nacionales, es un estudio que evidencia el problema que existe en la producción de empaques para este tipo de alimentos (cereales) en el medio, que se han convertido en productos de consumo masivo, y por ende en generadores de gran cantidad de desechos por su función de envase secundario y por el volumen que ocupan. Propone una solución a través de procesos creativos de diseño que podrían incorporarse al empaque, promoviendo la reutilización y alargar la vida útil de un empaque. Evidencia la relación existente entre los campos de diseño y ecología a través de la producción de uno de los elementos de comunicación visual más importante hoy en día como es el diseño de packaging

Objective: To assess the epidemiological evidence on dietary fiber intake and chronic diseases and make public health recommendations for the population in Romania based on their consumption. Populations that consume more dietary fiber from cereals, fruits and vegetables have less chronic disease. Dietary Reference Intakes recommend consumption of 14 g dietary fiber per 1,000 kcal, or 25 g for adult women and 38 g for adult men, based on epidemiologic studies showing protection against cardiovascular disease, stroke, hypertension, diabetes, obesity, metabolic syndrome, gastrointestinal disorders, colorectal -, breast -, gastric -, endometrial -, ovarian - and prostate cancer. Furthermore, increased consumption of dietary fiber improves serum lipid concentrations, lowers blood pressure, blood glucose leads to low glycemic index, aids in weight loss, improve immune function, reduce inflammatory marker levels, reduce indicators of inflammation. Dietary fibers contain an unique blend of bioactive components including resistant starches, vitamins, minerals, phytochemicals and antioxidants. Dietary fiber components have important physiological effects on glucose, lipid, protein metabolism and mineral bioavailability needed to prevent chronic diseases. Materials and methods: Data regarding diet was collected based on questionnaires. We used mathematical formulas to calculate the mean dietary fiber intake of Romanian adult population and compared the results with international public health recommendations. Results: Based on the intakes of vegetables, fruits and whole cereals we calculated the Mean Dietary Fiber Intake/day/person (MDFI). Our research shows that the national average MDFI was 9.8 g fiber/day/person, meaning 38% of Dietary Requirements, and the rest of 62% representing a “fiber gap” that we have to take into account. This deficiency predisposes to chronic diseases. Conclusions and recommendations:The poor control of relationship between dietary fiber intake and chronic diseases is a major issue that can result in adverse clinical and economic outcomes. The population in Romania is at risk to develop such diseases due to the deficient fiber consumption. A model of chronic diseases costs is needed to aid attempts to reduce them while permitting optimal management of the chronic diseases. This paper presents a discussion of the burden of chronical disease and its socio-economic implications and proposes a model to predict the costs reduction by adequate intake of dietary fiber.

Dietary fiber was classified according to its solubility in an attempt to relate physiological effects to chemical types of fiber. Soluble fibers (B-glucans, gums, wheat dextrin, psyllium, pectin, inulin) were considered to have benefits on serum lipids, while insoluble fibers (cellulose, lignin, pectins, hemicelluloses) were linked with laxation benefits. More important characteristics of fiber in terms of physiological benefits are viscosity and fermentability. Viscous fibers (pectins, B-glucans, gums, psyllium) are those that have gel-forming properties in the intestinal tract, and fermentable fibers (wheat dextrin, pectins, B-glucans, gum, inulin) are those that can be metabolized by colonic bacteria. Objective: To summarize the beneficial effects of dietary fiber, as nutraceuticals, in order to maintain a healthy gastrointestinal system. Methods: Our study is a systematic review. Electronic databases, including PubMed, Medline, with supplement of relevant websites, were searched. We included randomized and non-randomized clinical trials, epidemiological studies (cohort and case-control). We excluded case series, case reports, in vitro and animal studies. Results: The WHO, the U.S. Food and Drug Administration (FDA), the Heart Foundation and the Romanian Dietary Guidelines recommends that adults should aim to consume approximately 25–30 g fiber daily. Dietary fiber is found in the indigestible parts of cereals, fruits and vegetables. There are countries where people don’t eat enough food fibers, these people need to take some kind of fiber supplement. Evidence has been found that dietary fiber from whole foods or supplements may (1) reduce the risk of cardiovascular disease by improving serum lipids and reducing serum total and low-density lipoprotein (LDL) cholesterol concentrations, (2) decreases the glycaemic index of foods, which leads to an improvement in glycemic response, positive impact on diabetes, (3) protect against development of obesity by increasing satiety hormone leptin concentrations, (4) reduced risk of developing colorectal cancer by normalizes bowel movements, improve the integrity of the epithelial layer of the intestines, increase the resistance against pathogenic colonization, have favorable effects on the gut microbiome, wich is the second genomes of the microorganisms, (5) have a positive impact on the endocrine system by gastrointestinal polypeptide hormonal regulation of digestion, (6) have prebiotic effect by short-chain fatty acids (SCFA) production; butyrate acid is the preferred energy source for colonic epithelial cells, promotes normal cell differentiation and proliferation, and also help regulate sodium and water absorption, and can enhance absorption of calcium and other minerals. Although all prebiotics are fiber, not all fiber is prebiotic. This generally refers to the ability of a fiber to increase the growth of bifidobacteria and lactobacilli, which are beneficial to human health, and (7) play a role in improving immune function via production of SCFAs by increases T helper cells, macrophages, neutrophils, and increased cytotoxic activity of natural killer cells. Conclusion: Fiber consumption is associated with high nutritional value and antioxidant status of the diet, enhancing the effects on human health. Fibers with prebiotic properties can also be recommended as part of fiber intake. Due to the variability of fiber’s effects in the body, it is important to consume fiber from a variety of sources. Increasing fiber consumption for health promotion and disease prevention is a critical public health goal.

Introdução: A fibra dietética (FD) tem feito parte da dieta humana desde há milénios, embora os seus benefícios tenham sido reconhecidos, principalmente, nas últimas décadas. Objetivos: Porque a FD é um componente importante de uma dieta saudável, o objetivo deste trabalho foi avaliar os hábitos de consumo dos Portugueses, bem como o seu conhecimento sobre os alimentos ricos em fibras e as suas atitudes em relação à rotulagem dos alimentos. Métodos: Foi realizado um estudo descritivo transversal usando uma amostra não-probabilística de 382 participantes. Resultados: Os resultados mostraram que a ingestão de alimentos ricos em fibras, como frutas, vegetais e cereais, foi muito menor do que a ingestão recomendada. Os resultados também indicaram que a maioria das pessoas não presta a atenção desejada à rotulagem de alimentos ou à informação nutricional. Conclusões: O nível geral de conhecimento sobre FD foi considerado insatisfatório, e, portanto, é necessário mais educação nutricional e desenvolver esforços para informar as pessoas acerca da importância da FD como parte da sua dieta diária.

The market for plant-based dairy-type products is growing as consumers replace bovine milk in their diet, for medical reasons or as a lifestyle choice. A screening of 17 different commercial plant-based milk substitutes based on different cereals, nuts and legumes was performed, including the evaluation of physicochemical and glycaemic properties. Half of the analysed samples had low or no protein contents (<0.5 %). Only samples based on soya showed considerable high protein contents, matching the value of cow’s milk (3.7 %). An in-vitro method was used to predict the glycaemic index. In general, the glycaemic index values ranged from 47 for bovine milk to 64 (almond-based) and up to 100 for rice-based samples. Most of the plant-based milk substitutes were highly unstable with separation rates up to 54.39 %/h. This study demonstrated that nutritional and physicochemical properties of plant-based milk substitutes are strongly dependent on the plant source, processing and fortification. Most products showed low nutritional qualities. Therefore, consumer awareness is important when plant-based milk substitutes are used as an alternative to cow’s milk in the diet.

En el marco del desarrollo del sector primario en Colombia, se observa la existencia de una serie de situaciones o factores adversos que le impiden alcanzar su productividad y competitividad, entre los cuales destacan los altos costos de la materia prima e insumos utilizados en los procesos productivos de siembra y cosecha, la inexistencia de políticas públicas que garanticen un verdadero apoyo al campesinado colombiano, como los subsidios y/o estrategias de protección a la producción nacional, estas últimas, como barrera a la entrada en grandes volúmenes de productos importados, resultantes de los acuerdos internacionales donde se les da mayor participación a los productos importados, como ha sido en los últimos años, los provenientes de Canadá y Estados Unidos, este último, con la firma del TLC. Lo anterior ha coadyuvando a una reducción en las áreas de cultivo, así como en el rendimiento por hectáreas; como es el caso de la agrocadena de cereales, entre los que destaca el maíz amarillo, el cual ha experimentado un alto incremento en su volumen de importación, resultado de los excedentes exportables dados en la producción agrícola norteamericana, siendo los subsidios que a través de la ley Farm Bill, el gobierno norteamericano le otorga a los productores agropecuarios, un incentivo importante para tal fin. Con base en esto, los precios internacionales de comercialización del maíz amarillo han presentado una tendencia de decrecimiento, imposibilitando a los productores colombianos afrontar esta situación. Por medio de esta investigación se busca evaluar y esclarecer los posibles efectos del TLC de Colombia con Estados Unidos sobre los productores de maíz, y así mismo porporcionar alternativas de solución tanto para los campesinos como para el gobierno, identificando las principales variables que afectan la producción del cereal

A prevalência da obesidade está a aumentar nos países desenvolvidos e Portugal não é excepção. O presente trabalho teve como principal objectivo caracterizar a situação relativamente aos parâmetros antropométricos e hábitos alimentares de várias categorias profissionais do sector da saúde de uma instituição hospitalar do distrito de Lisboa. Com efeito, verificou-se que existem diferenças ao nível do Índice de Massa Corporal (IMC), da massa gorda e muscular e do perímetro de cintura entre as profissões estudadas (assistentes operacionais, enfermeiros, médicos e técnicos de diagnóstico e terapêutica). De acordo com a classificação do IMC, o grupo estudado situou-se no cut-off superior do ‘peso normal’ (IMC de 24,9 kg/m2). A obesidade esteve presente em 29% dos assistentes operacionais, 9% nos médicos e 5% nos enfermeiros e técnicos de diagnóstico e terapêutica. Também se observaram diferenças entre os géneros feminino e masculino, já que neste último o IMC foi de 26,5 kg/m2 e no primeiro foi de 24,6 kg/m2. Quanto aos hábitos alimentares, através do questionário de frequência alimentar (QFA) e após comparar com as recomendações da pirâmide dos alimentos mediterrânica e com a roda dos alimentos, foi notório o desvio do padrão alimentar face ao que é preconizado por estas representações. Assim, a maioria dos indivíduos não ingere produtos lácteos, pão, cereais e derivados com a frequência que seria adequada. Também se observaram diferenças no reporte de ingestão dos mesmos alimentos entre as categorias profissionais, salientando que todas estas apresentam padrões de ingestão desviantes das recomendações defendidas pela pirâmide dos alimentos mediterrânica e pela roda dos alimentos. Na sociedade actual, o local de trabalho é cada vez mais obesogénico devido quer à mudança na natureza do trabalho, quer às condições em que este decorre. Face aos resultados obtidos foi elaborado um plano de intervenção sócio- organizacional que visa promover hábitos alimentares e estilos de vida saudáveis. /ABSTRACT: Obesity prevalence is increasing all over developed countries, and Portugal is no exception. The present study had as major objective to describe the situation relative to anthropometric measures and dietary habits of several job strains operating in the health sector of a Lisbon district’s central hospital. Indeed, it has been verified that there are differences as concern to Body Mass Index (BMI), fat and muscle mass and waist circumference among the job strains studied (operational assistants, nurses, physicians and diagnostic and therapeutic technicians). According to BMI classification, the sample showed to be lined up with the superior BMI cut-off value for “normal weight” (BMI of 24,9 kg/m2). Obesity was present in 29% of operational assistants, 9% in physicians, 5% in nurses and diagnostic and therapeutic technicians. There were differences in both feminine and masculine genders, as in the latter the BMI was 26,5 kg/m2 and in the first, 24,6 kg/m2. As concern to dietary habits, through the application of the food frequency questionnaire (FFQ), after comparing with mediterranean food pyramid and wheel of foods it was notorious the deviation of dietary habits from these representations. Thus, most individuals do not consume dairy products, bread, cereals and derivates with an appropriate eating frequency. There were also differences in eating reporting of the same foods between job strains, focusing that all of these show eating patterns that deviates from the recommendations argued by mediterranean food pyramid and wheel of foods. In the present societies, workplace appears to be obesogenic due to the changes in labour’s nature and to the conditions that this one takes place. Towards the results obtained, it was developed a social and organizational intervention which entails to promote healthy eating habits and lifestyles.

The supply side of the food security engine is the way we farm. The current engine of conventional tillage farming is faltering and needs to be replaced. This presentation will address supply side issues of agriculture to meet future agricultural demands for food and industry using the alternate no-till Conservation Agriculture (CA) paradigm (involving no-till farming with mulch soil cover and diversified cropping) that is able to raise productivity sustainably and efficiently, reduce inputs, regenerate degraded land, minimise soil erosion, and harness the flow of ecosystem services. CA is an ecosystems approach to farming capable of enhancing not only the economic and environmental performance of crop production and land management, but also promotes a mindset change for producing ‘more from less’, the key attitude towards sustainable production intensification. CA is now spreading globally in all continents at an annual rate of 10 Mha and covers some 157 Mha of cropland. Today global agriculture produces enough food to feed three times the current population of 7.21 billion. In 1976, when the world population was 4.15 billion, world food production far exceeded the amount necessary to feed that population. However, our urban and industrialised lifestyle leads to wastage of food of some 30%-40%, as well as waste of enormous amount of energy and protein while transforming crop-based food into animal-derived food; we have a higher proportion of people than ever before who are obese; we continue to degrade our ecosystems including much of our agricultural land of which some 400 Mha is reported to be abandoned due to severe soil and land degradation; and yields of staple cereals appear to have stagnated. These are signs of unsustainability at the structural level in the society, and it is at the structural level, for both supply side and demand side, that we need transformed mind sets about production, consumption and distribution. CA not only provides the possibility of increased crop yields for the low input smallholder farmer, it also provides a pro-poor rural and agricultural development model to support agricultural intensification in an affordable manner. For the high output farmer, it offers greater efficiency (productivity) and profit, resilience and stewardship. For farming anywhere, it addresses the root causes of agricultural land degradation, sub-optimal ecological crop and land potentials or yield ceilings, and poor crop phenotypic expressions or yield gaps. As national economies expand and diversify, more people become integrated into the economy and are able to access food. However, for those whose livelihoods continue to depend on agriculture to feed themselves and the rest of the world population, the challenge is for agriculture to produce the needed food and raw material for industry with minimum harm to the environment and the society, and to produce it with maximum efficiency and resilience against abiotic and biotic stresses, including those arising from climate change. There is growing empirical and scientific evidence worldwide that the future global supplies of food and agricultural raw materials can be assured sustainably at much lower environmental and economic cost by shifting away from conventional tillage-based food and agriculture systems to no-till CA-based food and agriculture systems. To achieve this goal will require effective national and global policy and institutional support (including research and education).

Polyphenols are widely present in fruits, vegetables, cereals and beverages. Their study gained scientific interest because of their beneficial effects on health. Although there is currently no official dietary recommendation for polyphenol intake, health professionals recommend the consumption of 5-8 daily portions of fruits and vegetables. This is not always achieved and, despite possible causes associated to practical schedule difficulties, the aversive bitter and astringent sensations associated to polyphenols may also lead to avoidance. As such, a better understanding on mechanisms responsible for differences among people, in polyphenol oral perception, is needed for promoting healthier choices. Saliva has been linked to polyphenol consumption. We have previously observed, in animal models, changes in salivary proteome induced by tannin-enriched diets. Moreover, differences in astringency perception were attributed to differences in salivary protein composition. In a recent experiment, we observed differences among individuals with dissimilar tannic-acid perception: people with high sensitivity for the oral sensations elicited by tannins have higher amounts of salivary cystatins and lower capacity to maintain their levels after tannic-acid ingestion. Additionally, and similarly to previous studies, salivary amylase was observed to be involved in tannin perception. In this presentation, oral cavity characteristics influencing the perception of polyphenol-containing foods will be discussed.
