El crecimiento de empresas procesadoras de lácteos en El Salvador incrementó después de verse afectado el sector ganadero por la guerra civil y por la reforma agraria en los 80’s. En la actualidad ya existen muchas empresas dedicadas al procesamiento de la leche, aunque no así de quesos gourmet. Específicamente en éste estudio se hará referencia a tres tipos: el queso mozzarella, gorgonzola y parmesano. El presente trabajo de graduación es un estudio de factibilidad, cuyos objetivos inician desde la creación de un diagnóstico para establecer la demanda potencial de una empresa procesadora de quesos gourmet, hasta establecer la competencia dentro la delimitación especifica del área de estudio, también conocer acerca de la competencia a la que se puede enfrentar. El método de investigación que se ha utilizado es el científico, de tipo exploratoria a través de encuestas y entrevistas. Es un diseño de investigación no experimental y de tipo transaccional descriptiva. Como parte de los resultados se puede mencionar que los quesos gourmet en El Salvador se consumen en un mercado estratificado. También que estos tipos de lácteos no tienen mucha publicidad. Algunas de las conclusiones más importantes son: el 80% de las PYMES realizan la distribución de comestibles especialmente de los productos perecederos, a través de grandes compañías. Así también algunas recomendaciones hechas son: la comercialización de los lácteos en las áreas urbanas de los municipios de San Miguel, Santa Ana, san Vicente y la zona metropolitana de San Salvador.

The main purpose of this study is to assess the relationship between four bioclimatic indices for cattle (environmental stress, heat load, modified heat load, and respiratory rate predictor indices) and three main milk components (fat, protein, and milk yield) considering uncertainty. The climate parameters used to calculate the climate indices were taken from the NASA-Modern Era Retrospective-Analysis for Research and Applications (NASA-MERRA) reanalysis from 2002 to 2010. Cow milk data were considered for the same period from April to September when the cows use the natural pasture. The study is based on a linear regression analysis using correlations as a summarizing diagnostic. Bootstrapping is used to represent uncertainty information in the confidence intervals. The main results identify an interesting relationship between the milk compounds and climate indices under all climate conditions. During spring, there are reasonably high correlations between the fat and protein concentrations vs. the climate indices, whereas there are insignificant dependencies between the milk yield and climate indices. During summer, the correlation between the fat and protein concentrations with the climate indices decreased in comparison with the spring results, whereas the correlation for the milk yield increased. This methodology is suggested for studies investigating the impacts of climate variability/change on food and agriculture using short term data considering uncertainty.

The aims of this thesis were to determine the animal health status in organic dairy farms in Europe and to identify drivers for improving the current situation by means of a systemic approach. Prevalences of production diseases were determined in 192 herds in Germany, France, Spain, and Sweden (Paper I), and stakeholder consultations were performed to investigate potential drivers to improve animal health on the sector level (ibid.). Interactions between farm variables were assessed through impact analysis and evaluated to identify general system behaviour and classify components according to their outgoing and incoming impacts (Paper II-III). The mean values and variances of prevalences indicate that the common rules of organic dairy farming in Europe do not result in consistently low levels of production diseases. Stakeholders deemed it necessary to improve the current status and were generally in favour of establishing thresholds for the prevalence of production diseases in organic dairy herds as well as taking actions to improve farms below that threshold. In order to close the gap between the organic principle of health and the organic farming practice, there is the need to formulate a common objective of good animal health and to install instruments to ensure and prove that the aim is followed by all dairy farmers in Europe who sell their products under the organic label. Regular monitoring and evaluation of herd health performance based on reference values are considered preconditions for identifying farms not reaching the target and thus in need of improvement. Graph-based impact analysis was shown to be a suitable method for modeling and evaluating the manifold interactions between farm factors and for identifying the most influential components on the farm level taking into account direct and indirect impacts as well as impact strengths. Variables likely to affect the system as a whole, and the prevalence of production diseases in particular, varied largely between farms despite some general tendencies. This finding reflects the diversity of farm systems and underlines the importance of applying systemic approaches in health management. Reducing the complexity of farm systems and indicating farm-specific drivers, i.e. areas in a farm, where changes will have a large impact, the presented approach has the potential to complement and enrich current advisory practice and to support farmers’ decision-making in terms of animal health.

El Aprisco JAM busca entrar en el mercado de lácteos y derivados con un producto que posee atributos nutricionales importantes al igual que provee la facilidad de ser consumido por cualquier persona, principalmente aquellas que no toleran la leche vacuna encontrando en nuestros productos una alternativa para el disfrute de estos sin comprometer su salud y bienestar. Encontramos así pues una demanda existente en donde ofrecemos como solución a las necesidades un producto nutritivamente saludable siendo recordados y diferenciados por este aspecto. Todo ello en base a una producción limpia y sostenible que permita un aprovechamiento y uso eficiente de los recursos naturales. Para lograr dicho objetivo es necesario una inversión inicial de $24.742.036 COP, proyectado a 3 años dicha inversión se recuperará a partir del 5 mes con un interés esperado de 35,6% EA que representa beneficios en valor actual de $90´628.858. Por otro lado genera una relación beneficio-costo de 4,66, esto quiere decir que por cada peso invertido se generan beneficios de 3,66 pesos.
