In-package pasteurization is the most used method for beer microbiological stabilization. The search for safer and better quality food has created a need to better understand the processes involved in producing it. However, little is known about the temperature and velocity profiles during the thermal processes of liquid foods in commercial packaging, which results in over-dimensioned processes to guarantee safety, decreasing the sensorial and nutritional characteristics of the product and increasing process costs. Simulations using Computational Fluid-Dynamics (CFD) have been used by various authors to evaluate those processes. The objective of the present paper was to evaluate the effect of packaging orientation in the pasteurization of beer in a commercial aluminum can using CFD. A heating process was simulated at 60 ºC up to 15 PUs (a conventional beer process, in which 1 Pasteurization Unit (PU) is equivalent to 1minute at 60 ºC). The temperature profile and convection current velocity along the process and the variation of the PUs were evaluated in relation to time considering the cans in the conventional, inverted, and horizontal positions. The temperature and velocity profiles were similar to those presented in the literature. The package position did not result in process improvement.

O objetivo deste trabalho foi avaliar sensorialmente o mapará in natura e com pré-tratamento osmótico antes da secagem. Para o teste de aceitabilidade do bolinho de músculo de mapará, foram utilizados peixes in natura e desidratados osmoticamente, nas melhores condições de processo, em soluções de NaCl, NaCl + sacarose e em solução de NaCl + xarope de milho e secos. Foram utilizados 25 provadores não treinados, de ambos os sexos, com idade variando de 20 a 60 anos. Os atributos sensoriais avaliados foram aparência, aroma, sabor, textura e impressão global. O aroma e a textura das amostras com e sem pré-tratamento osmótico foram os atributos que obtiveram maior aceitação por parte dos consumidores. Pôde-se concluir que as amostras tratadas com soluções osmóticas, com exceção das tratadas com solução de NaCl + xarope de milho, proporcionaram produtos com textura, sabor e aroma mais agradáveis.

O trabalho avaliou a aceitação de caldos e canjas elaborados com farinhas aromatizadas desenvolvidas a partir de carcaças de peixes defumadas. As carcaças de tilápia do Nilo, carpa e pacu foram lavadas, identificadas, pesadas, imersas em salmoura com ervas aromáticas e defumadas. O produto defumado foi submetido à moagem para obtenção das farinhas, a partir das quais foram elaborados o caldo e a canja. Porções das farinhas, dos caldos e das canjas foram avaliadas por um painel de 40 provadores utilizando-se um método de estímulo simples, sendo avaliados os atributos: aroma, sabor, cor, textura, aparência e aceitação geral. Não houve diferença significativa (P > 0,05) na aceitação geral dos produtos. Os caldos elaborados com estas farinhas tiveram uma excelente aceitação, não diferindo significativamente entre si no que se refere aos atributos avaliados. A canja elaborada a partir da farinha de carcaça de pacu apresentou as menores notas quando comparada às demais canjas. Portanto, as farinhas aromatizadas podem ser empregadas no enriquecimento de produtos para o consumo humano. Esses produtos podem ser aplicados na merenda escolar, melhorando a qualidade nutricional das refeições. Além disso, tal uso daria um destino nobre aos resíduos que podem causar sérios impactos se descartados no meio ambiente.

Devido à importância das etapas de fermentação e secagem das sementes de cacau para as características sensoriais dos produtos finais obtidos, bem como para os teores de compostos fenólicos presentes, objetivou-se avaliar a influência do tempo de fermentação e do tipo de secagem de sementes de cacaueiro nos teores de compostos fenólicos, bem como nas características físicas, físico-químicas e sensoriais dos produtos obtidos. Os tempos de fermentação avaliados foram 3 e 7 dias e a secagem foi realizada naturalmente (ao sol) e artificialmente (estufa com circulação de ar a 35 °C). Os teores de compostos fenólicos totais, flavan-3-óis e procianidinas foram quantificados durante a fermentação e ao término da secagem. Constatou-se que grande parte dos compostos fenólicos foi perdida durante a fermentação, sendo que as amêndoas fermentadas por 3 dias apresentaram teores maiores dos compostos fenólicos avaliados. Contudo, observou-se nessa condição uma significativa perda na qualidade sensorial. A secagem natural das amêndoas fermentadas permitiu maior retenção de polifenóis e também melhores resultados sensoriais em relação à secagem artificial. A avaliação sensorial realizada com uma bebida formulada com o liquor obtido dos diferentes tratamentos demonstrou que a amostra fermentada durante 7 dias apresentou as melhores notas sensoriais, sendo que o produto seco naturalmente foi o mais bem avaliado em relação aos demais.

Este trabalho determinou aspectos da composição química e aceitação sensorial da aguardente de cana-de-açúcar envelhecida por 3 anos em tonéis de diferentes madeiras (amendoim, araruva, cabreúva, carvalho, cerejeira, grápia, ipê-roxo, jequitibá e pereira). O destilado alcoólico simples que originou a aguardente foi produzido na Destilaria Piloto da ESALQ/USP. Após envelhecimento, as aguardentes foram avaliadas quanto ao grau alcoólico, acidez volátil, furfural, aldeídos, ésteres, álcoois superiores, álcool metílico, cobre, compostos fenólicos totais, cor e aceitação sensorial. Independentemente da madeira com que o tonel foi construído, a aguardente envelhecida apresentou coloração mais escura e maior concentração de acidez volátil, de furfural, de ésteres, de álcoois superiores, de congêneres e de compostos fenólicos totais que o destilado alcoólico simples. Por outro lado, a aguardente envelhecida apresentou menor concentração de aldeídos, de metanol e de cobre que o destilado alcoólico simples. A análise estatística geral, considerando a composição físico-química global das aguardentes envelhecidas nos tonéis das diferentes madeiras indicou similaridades entre as aguardentes envelhecidas nos tonéis de amendoim, araruva e jequitibá; entre as aguardentes envelhecidas nos tonéis de cabreúva e pereira; e entre as aguardentes envelhecidas nos tonéis de carvalho, cerejeira, grápia e ipê-roxo. A aguardente envelhecida nos tonéis das diferentes madeiras manteve-se dentro de todos os padrões de qualidade estabelecidos pela legislação nacional em vigor. A aguardente envelhecida na madeira carvalho foi a que apresentou a melhor aceitação sensorial. Dentre as madeiras nacionais, ipê-roxo, amendoim, cabreúva, cerejeira e pereira foram aquelas que propiciaram as melhores qualidades sensoriais à aguardente.

A soja tem importância para a saúde e seu consumo tem aumentado devido principalmente aos diversos produtos presentes no mercado. Prevenindo a ação das enzimas lipoxigenases há melhora na aceitação dos produtos derivados da soja. Vários processos tecnológicos podem evitar a ação da enzima lipoxigenase, a qual pode causar atributos sensoriais que causam rejeição no consumo de grãos de soja. A pesquisa teve por objetivo verificar a aceitabilidade dos grãos de soja tostados por diferentes tratamentos. Em grãos de soja previamente macerados, com as cascas retiradas, foram realizados cinco tratamentos: T1 e T2 - com secagem prévia + 10 e 15 minutos de forno, respectivamente; T3, T4 e T5 - sem secagem prévia + 45, 50 e 60 minutos de forno. O T6, controle, recebeu o mesmo tratamento, foi seco em estufa (55 °C) durante 31 horas. O comportamento dos provadores em relação ao consumo da soja não condiz com o conhecimento da importância para a saúde e a facilidade de aquisição do hábito de consumo, não havendo diferença para idade ou sexo. O tratamento que promoveu a maior aceitabilidade dos grãos de soja tostados foi o que recebeu o tempo intermediário de 50 minutos, sem secagem prévia.

The purpose of this research was to combine the use of the component blend design to the response surface methodology, in order to foresee the effect of ternary apple juice blends (Catarina, Granny Smith and Pink Lady cultivars) on the physical-chemical characteristics of musts appointed to sparkling drink elaboration. Twelve mixes were made (three individual samples, three binary mixes and six ternary mixes), analyzed on the content of total reducing sugars, total titratable acidity and phenolic compounds; and adjusted, respectively, to the linear, quadratic and special cubic models. The results were organized in ternary charts of surface response and, from the overlap of these charts, it was determined a viable region which delimited the range of apple juice compositions that make musts physically and chemically suitable to sparkling drink elaboration. To represent the various possible combinations, the central point of the triangular area of the viable region was calculated and, this point, which represents the proportions of 23.22% of Catarina, 66.23% of Granny Smith and 10.55% of Pink Lady cultivars, was chosen to constitute the formulation of the must to be used in the elaboration of apple sparkling drinks.

Cajá-manga (Spondias cytherea) is a fruit with intense aroma and a sweet sour taste, thus being very appreciated. Its peel, in spite of being more fibrous, is tender and many times consumed with the pulp. The peel is a part of foods normally discarded, but many times, it is rich in taste and fibers, representing an option at the elaboration of new foods. Since there are no reports in the literature on the use of cajá-manga peel for jelly making, this work had the purpose of developing and evaluating this product. Based on the results, it was noted that the peels presented higher contents of protein, lipids, ashes, food fiber, total carbohydrates and pectin, and lower content of moisture, when compared to the pulp. The peel and the pulp (control) jellies presented the following physical-chemical characteristics: moisture, 29.5 and 34.2%; proteins, 0.19 and 0.27%; lipids, 0.11 and 0.16%; total sugars, 56.5 and 65.5%; and total soluble solids, 69 and 66 ºBrix, respectively. The sensory analysis indicated that the product elaborated from the peel presented satisfactory acceptance for all the assessed attributes: appearance, color, odor, texture, taste and global evaluation. It is concluded that the total substitution of the pulp by the peel in the formulation, results in a product with good nutritional value with no sensory damages.

Lactic beverages containing probiotics were prepared with whole UHT milk, whey of Mozzarella cheese, soybean hydrosoluble extract and sugar. Three formulations were studied, each one containing a different combination of probiotic/starter bacteria, fermented at two different temperatures (37 and 45 °C). The aim of this work was to verify the influence of these variables on the viability of probiotic microorganisms and on the physicochemical stability of lactic beverages during storage under refrigeration (21 days at 7 °C). The results indicated that the fermentation temperature had a significant effect on the viability of probiotic bacteria. Counts for Lactobacillus acidophilus were affected by storage time, resulting appropriate after 21 days only for the beverage fermented at 37 °C. Physicochemical parameters did not exhibit drastic variations - proving the stability of formulations during storage. Cells of Bifidobacterium spp. showed high survival ability, probably due to the presence of growth promoters from soybean and cheese whey. The fermentation temperature of 37 °C allowed counts above the minimum limit for all the studied microorganisms, being preferred to the temperature of 45 °C. The inclusion of soybean hydrosoluble extract, a prebiotics source, resulted in a symbiotic product with more benefits to the health of consumers.

This research was carried out to evaluate the physicochemical composition of organic honey in Paraná River islands, in Porto Brasílio, State of Paraná. Honey was harvested directly from super of the colonies in three apiaries spread in the Floresta and Laranjeira Islands, from August 2005 to August 2006. Twenty-four samples of organic honey produced by Africanized honeybees were evaluated. The following parameters were analyzed: pH, acidity, formol index, hydroxymethylfurfural, ashes, color, electric conductivity and moisture. Three replications per sample were performed for laboratorial analysis, giving the means and standard deviation. Most honey samples were in conformity with the Normative Instruction 11 from October 20, 2000. However, 4.17% were not in accordance with the moisture standards, 8.33% showed high concentrations of hydroxymethylfurfural, thus, totalizing 12.50% of non-complying samples. Nevertheless, 87.50% of the analyzed honey samples are within the standards, being characterized as an organic product of excellent quality, with good commercialization perspectives in the market.

Passion fruit is widely consumed due to its pleasant flavour and aroma acidity, and it is considered very important a source of minerals and vitamins. It is used in many products such as ice-cream, mousses and, especially, juices. However, the processing of passion fruit juice may modify the composition and biodisponibility of the bioactive compounds. Investigations of the effects of processing on nutritional components in tropical juices are scarce. Frequently, only losses of vitamin C are evaluated. The objective of this paper is to investigate how some operations of passion fruit juice processing (formulation/homogeneization/thermal treatment) affect this product's chemical and physicochemical characteristics. The results showed that the chemical and physicochemical characteristics are little affected by the processing although a reduction in vitamin C contents and anthocyanin, large quantities of carotenoids was verified even after the pasteurization stage.

Blends of fiber from sugar cane bagasse, corn starch, and whey protein concentrate were extruded. A single screw extruder, equipped with a screw at a constant compression ratio of 1:1 and a die diameter of 3 mm, was used. The best processing conditions were determined according to a central composite rotatable design (α = 1.41) with 5 central points, which gives a total of 13 tests. During the extrusion process the content of insoluble fiber decreased and that of soluble fiber increased. An increase in the contents of fiber and in the barrel temperature resulted in a decrease in the expansion index values and an increase in the water absorption index values; whereas in blends with intermediate fiber contents the effects in these parameters were found to be the opposite. High fiber contents increased penetration force but decreased luminosity, water solubility index values and the adhesive force in gels. The extrusion process improved the functional properties of sugarcane fiber bagasse enabling its addition to diverse alimentary systems.

Reverse osmosis has been used for the concentration of fruit juices with promising considering the quality of the obtained products. The objective of this study was to concentrate single strength pineapple juice by reverse osmosis. The concentration was carried out with polyamide composite membranes in a 0.65 m² plate and frame module at 60 bar transmembrane pressure at 20 °C. The permeate flux was 17 L.hm-2. The total soluble solid content of the juice increased from 11 to 31 °Brix corresponding to a Volumetric Concentration Factor (VCF) of 2.9. The concentration of soluble solids, total solids, and total acidity increased proportionally to FCV. The concentrated juice and three commercial concentrated pineapple juices were evaluated regarding preference and purchase intention by 79 pineapple juice consumers. The concentrated juice by reverse osmosis was the preferred among consumers. It can be concluded that this process may be considered an alternative to the pre-concentration of fruit juices.

Seventy-eight kids of both sexes and five genotypes were used: Alpine, ½ Boer + ½ Alpine (½ BA), ¾ Boer + ¼ Alpine, ½ Anglo-nubian + ½ Alpine and "tricross" (½ Anglo-nubian + ¼ Boer + ¼ Alpine) with initial average weight of 14.1 ± 2.5. The objective was to evaluate the effect of genotype, finishing system, and sex on the physiochemical characteristics of goat meat. Finishing systems were: ST1 - kid + dam in pasture and ST2 - weaned kid and feedlot. Kids in ST1 were kept in an area with Panicum maximum cv. Tanzania, and after grazing, water and mineral salt/mix were fed ad libitum to the animals. The animals in ST2 were confined in collective pens distributed according to genotypes and received diet with 16% CP and 73% TDN. The values of pH, a* (red content), Cooking Loss (CL), and Ether Extract (EE) percentage were influenced by genotype. Values for red content (a*) and L* (brightness), CL and percentages of moisture, protein, EE, and ash were influenced by the finishing system. Longissimus dorsi muscle from animals ½ BA exhibited better physiochemical characteristics. For greater tenderness and higher percentages of fat, consumers should choose female kid goat meat.
