Fifty six crossbred kids Parda Alpina x Gurgueia were separeted into four groups of 14 (seven male and seven female) and submited to four treatments with different levels of milk goat substitution by cheese serum. The treatments were : T1=milk goat (testify); T2=15% serum at 23 days and 33% at 55 days; T3=15% serum starting from 16 days, 33% on 23 days and 51% on 72 days of age; and T4=33% on 16 days and 69% of liquid diet in the final fase. At 92 days of age, all animals were slaughtered for carcass evaluation. Pallete were separeted from 20 male animals (five by treatment) and the physical and chemical analysis of the meat were realized using these materials. The studied characteristics were: total weight (TW), meat weight (MW), bone weigth (BW) of the pallete, and percentage of umidity (U), ashes (A), protein (P), fat (F) and pH of the pallete meat. There was significant effect of the treatment over F. Means of PW, A and BW were, respectively 491, 342 and 149.8 g. The meal represented 69,6% of total pallete weight. Means of U, A, P and F were 73, 1.0, 19 and 1.95%, respectively. The pH was 6.7. Results allow to conclude that only the fat percentage of the meat was modified, due to the administration of serun milk on the liquid diet of the kids, during the milking fase.

Rice (Oryza sativa L.) stands out as a staple food of the world population due to important nutritional properties. However, rice physico-chemical parameters vary according to genotype and management, for example, the use of nitrogen fertilizer. The aim of this work was to evaluate physico-chemical parameters of grains from thirteen cultivars of upland rice under supplemental sprinkler irrigation and fertilized with different nitrogen rates by topdressing (0, 40, 80, 120 and 160 kg ha(-1)). Parameters such as milling efficiency, commercial grade, gelatinization temperature, as well as total nitrogen and crude protein contents of grains were evaluated. Nitrogen fertilization positively influences the whole grain yield, especially IAC 25 and BRS Colosso. BRS Aroma, IAC 202, IAC 500, BEST 2000, Curinga and Baldo have a high percentage of broken grains. The cultivars Baldo and Carnaroli (appropriate for Italian cuisine), IAC 25 and Caiapo are classified as long grain and the others, as long-thin. The cultivars, except CIRAD 141, displayed grain gelatinization temperature between intermediate and low, providing quick cooking. The grain content protein varies among cultivars, and it can be increased with nitrogen fertilization.

O objetivo nesta pesquisa foi avaliar o efeito de dois ingredientes protéicos da dieta (farelo de soja e de algodão) e de dois processamentos físicos do concentrado (farelado e extrusado) na terminação de 16 bovinos machos não-castrados da raça Canchim. Avaliaram-se ainda a excreção de nutrientes nos dejetos e o potencial de produção de biogás. Os animais tinham 12 meses de idade e 315 kg PC, em média, e foram confinados em baias individuais durante 147 dias (os primeiros 35 dias foram de adaptação). Como volumoso utilizou-se silagem de milho, em uma relação volumoso:concentrado de 50:50, com base na MS. Os resultados foram analisados em delineamento inteiramente casualizado, em esquema fatorial 2 × 2 (fonte protéica × processamento físico). A fonte protéica influenciou o ganho de peso corporal (1,50 e 1,35 kg/dia para o farelo de soja e de algodão, respectivamente), a conversão alimentar (4,73 e 5,31 kg MS ingerida/kg de ganho de peso, respectivamente) e a eficiência protéica (1,78 e 1,59 kg de ganho de peso/kg PB ingerida, respectivamente). O tratamento físico do concentrado e a fonte protéica não influenciaram a ingestão de MS, a área de olho-de-lombo e a espessura de gordura, estimadas por ultra-som. O balanço de nutrientes foi semelhante entre tratamentos para MS, FDN e FDA, mas a fonte protéica determinou diferenças no balanço de PB. Entre os macro e microminerais quantificados nas fezes, os teores de P e Mg diferiram entre as fontes protéicas e a extrusão aumentou o conteúdo de Ca, com médias de 0,39 e 0,43 g/100 g de MS de dejetos, respectivamente, para os concentrados farelado e extrusado. Os dejetos produziram biogás de maneira efetiva entre o 70º e o 200º dia.

Objetivou-se avaliar o valor nutritivo de três espécies forrageiras tropicais: capim-tanzânia (Panicum maximum Jacq.), capim-marandu (Brachiaria brizantha) e capim-tifton 85 (Cynodon spp), em duas épocas do ano (janeiro-março e abril-junho) e em três idades de rebrota (28, 35 e 42 dias), por meio da composição química, do fracionamento de proteínas e carboidratos e da digestibilidade in vitro da matéria seca (DIVMS) e da matéria orgânica (DIVMO). O capim-marandu destacou-se no período de janeiro-março, com menores conteúdos de parede celular e fração B2 dos carboidratos e maiores valores de proteína bruta, fração A + B1, DIVMS e DIVMO, em comparação aos capins tanzânia e tifton 85, independentemente da idade de corte. O aumento da concentração de parede celular em detrimento ao conteúdo celular com o avanço da maturidade das plantas foi evidente no capim-marandu no período de janeiro-março, quando foram observados maior valor da fração B2, maior conteúdo de fibra em detergente neutro (FDN) e menor concentração da fração carboidratos não-fibrosos. No período de abril-junho, a composição em parede celular não apresentou diferenças evidentes com aumento da idade, devido às condições ambientais observadas. O capim-tanzânia apresenta, de modo geral, baixos valores de parede celular e altos valores de carboidratos não-fibrosos, DIVMS e DIVMO nesse período, seguido pelos capins marandu e tifton 85, respectivamente.

O presente trabalho teve como objetivo avaliar a qualidade pós-colheita de jabuticabas submetidas a diferentes temperaturas de armazenamento refrigerado (AR). Após a colheita, os frutos fisiologicamente maduros foram acondicionados em bandejas de poliestireno expandido (EPS), revestidas por filme plástico de polietileno de baixa densidade (PEBD) e armazenados sob refrigeração a 0; 3; 6; 9 e 12 ± 1ºC e U.R. 87 ± 2%, sendo avaliados a cada 5 dias. Os frutos foram avaliados quanto à perda de massa, atividade respiratória, pH, acidez titulável, sólidos solúveis, ácido ascórbico, textura, pectina total e solúvel, atividade da enzima polifenoloxidase (PFO), compostos fenólicos e atividade antioxidante. Para frutos refrigerados a 9 e 12ºC, o pico respiratório atrasou em relação aos demais tratamentos, além de apresentarem as menores taxas respiratórias. O teor de sólidos solúveis aumentou com o tempo de armazenamento para todas as temperaturas, contudo, em 9 e 12ºC, esse aumento foi em menor proporção. A firmeza e o teor de ácido ascórbico também foram superiores nos frutos armazenados a 9 e 12ºC, enquanto os contéudos de pectina solúvel foram menores. Observou-se a diminuição da atividade da enzima PFO ao longo dos 30 dias do AR, independentemente da temperatura utilizada; entretanto, os menores valores foram encontrados nos frutos mantidos a 9 e 12ºC. Os frutos armazenados a 12ºC apresentaram os maiores conteúdos de compostos fenólicos totais e a maior atividade antioxidante ao final do experimento. Nesse sentido, a temperatura de 12ºC foi a mais efetiva na manutenção da qualidade pós-colheita das jabuticabas.

The objective of this work was evaluating the influence of weekly pluviometrics precipitations accumulated in physical and chemical characteristics of fruits of guava tree 'Paluma', in different ripening stadiums. The following attributes were analyzed: fresh weight, equatorial and longitudinal diameters, firmness, pH, titratable acidity, soluble solids, vitamin C, reductor sugars and total reductor sugars in three ripening stadiums defined by the color of the peel (dark green, light green and yellow green). Among the physical and chemical attributes, only the firmness diminished with the increase of the levels of weekly precipitations for the same ripening stadium and also presented decreases between the ripening stadiums. The physical and chemical attributes, with exception of the pH, decreased with the increase of the weekly precipitations accumulated and in bigger intensities for the biggest ripening stadiums.

The biodiesel use has become important due to its renewable character and to reduce environmental impacts during the fuel burning. Theses benefit will be valid if the fuel shows good performance, chemistry stability and compatibility with engines. Biodiesel is a good fuel to diesel engines due to its lubricity. Then, the aimed of this study was to verify the physicalchemistry properties of biodiesel and their correlations with possible elastomers damage after biodiesel be used as fuel in an injection system. The methodology was divided in three steps: biodiesels synthesis by transesterification of three vegetable oil (soybean, palm and sunflower) and their physical-chemistry characterization (viscosity, oxidative stability, flash point, acidity, humidity and density); pressurized test of compatibility between elastomers (NBR and VITON) and biodiesel, and the last one, analyze of biodiesels lubricity by tribological test ball-plan( HFRR). Also, the effect of mixture of biodiesel and diesel in different concentrations was evaluated. The results showed that VITON showed better compatibility with all biodiesel blends in relation to NBR, however when VITON had contact with sunflower biodiesel and its blends the swelling degree suffer higher influences due to biodiesel humidity. For others biodiesels and theirs blends, this elastomer kept its mechanical properties constant. The better tribological performance was observed for blends with high biodiesel concentration, lower friction coefficient was obtained when palm biodiesel was used. The development of new fuels is an important field of scientific and technological activities, since much of the energy consumed in the world is obtained from oil, coal and natural gas, and these sources are limited and not renewable. Recently it has assessed the employment of microemulsions as an alternative for obtaining fuel isotropic between phases originally not miscible. Among many advantages, emphasizes the application of substances that provide the reduction of levels of emissions compared to fossil fuels. Thus, this work was a study of various microemulsified systems, aiming to check the performance of the winsor regions front of the use of surfactants: RENEX 18 → 150, UNITOL L-60 → L-100 and AMIDA 60, together with structure of esters from soybean and castor bean oils. From the results it were chosen four systems to physico-chemical analyzes: System I RENEX 60, Soil bean oil, methylic ester (EMOS) and water; System II RENEX 60/AMIDA 60, EMOS and water; System III RENEX 70, mamona oil methylic ester (EMOM) and water and System IV RENEX 95, EMOM and water. The tests of physico-chemical characterization and study of temperature increase were done with nine points with different compositions in a way to include the interest area (microemulsion W/O). After this study, was conducted a modeling to predict the viscosity, the property is more varied as function of compositions systems changes. The best results were the systems II and IV with a temperature stability above 60°C. The system I had its physico-chemical characterization very similar to a fossil fuel. The system II was the best one due to its corrosivity be stable. In the modeling the four systems had shown good, with an error that varied between 5 and 18%, showing to be possible the viscosity prediction from the composition of the system. The effects the microemulsion and the engine´s performance with the microemulsion were also avaliated. The tests were performed in a cycle-diesel engine. The potency and consumption were analysed. Results show a slight increase the rendiment fuel compared with the conventional as well as a decrease in specific consumption

Milk from different animals can be used for dairy production. Yoghurt is a popular fermented milk product and considered to be one of the greatest importance in terms of consumer acceptance and consumption. The present research deals with the production of strawberry set-type yoghurt by mixing goat and buffalo s milk and it has the objective of taking advantage of the intrinsic characteristics of each milk to produce a final product with desirable attributes. It was conducted by analyzing five experimental groups with different proportions of goat and buffalo s milk: C 100% goat s milk; 7C3B - 70% goat s milk and 30% buffalo s milk, 5C5B - 50% goat s milk and 50% buffalo s milk, 3C7B 30% goat s milk and 70% buffalo s milk; B - 100% buffalo s milk. Each group was evaluated for total solids content and the acidification profile was monitored every 30 minutes by pH analysis. The yoghurt samples were analyzed for physical-chemical (pH, acidity, protein, fat, total and reducing sugars, ash and total solids), rheological (syneresis and viscosity) and sensory characteristics (appearance, odor, consistency and flavour). Samples with higher percentual of bubaline milk reached Vm faster, but the time necessary for pH 4.6 (Te) were similar between groups. Statistical differences (p<0.05) were observed for fat and total solids content of yoghurt, with superior values for groups higher proportions of buffalo s milk. The parameters of behavior reached by the model of Ostwald of Waale pointed yoghurt samples as non-Newtonian and pseudoplastic fluids. Yoghurt made only with goat s milk (C) had higher values (p<0.05) for syneresis, which can be explained by its fragile coagulum. Additionally, this group also had the lowest sensory scores for the attributes consistence and taste, while bubaline yoghurt (B) obtained the best acceptance indexes for all of the appraised parameters

Algaroba (Prosopis juliflora) is a typical legume from arid and semi arid regions, which is composed by sugar-rich pods and high protein seeds. Phenolic compounds are secondary metabolites recognized as potent bioactive compounds, found in several vegetables.Therefore, the objective of this work is to characterize the algaroba flour in terms of its physicalchemical composition, total phenolic content, antioxidant activity by DPPH and ABTS methods, a-amylase and a-glycosidase inhibition, as well as to analyze its organic compounds by high performance liquid chromatography (HPLC). Three experimental groups were investigated (seeds, seeds and pod together and only pod), which were prepared by oven drying and posterior grinding. Water and ethanol extracts (70, 80, 100% v/v) were prepared and used for functional studies. Organic compounds were detected by using HPLC equipment coupled to mass spectrometer. Results show important physical-chemical differences among the experimental groups, seeds, seeds and pod together and only pod. The algarroba seed flour is high in protein (49.49%) and fat (3.10%), while the pod flour is especially rich in sugar (60.3% to 67.9%). Algaroba phenolics are concentrated in pod flour, mainly in water extracts (1.30 mg GAEQ/100g sample). All seed extracts showed high DPPH activity and maximum antioxidant activity was registered for ethanol 80% extracts (19.81 μM Trolox/g sample). The ABTS activity ranged from 9.73 to 12.74 μM Trolox/g sample. Nearly all the extracts were able to inhibit α-amylase activity mildly (30.50% to 48.80%), while the maximum α-glycosidase inhibition was observed for pod water extracts (81.03%). Algaroba water extracts proven to be especially rich in organic compounds, observed by the high number of chromatographic peaks. Results demonstrate that algaroba is a potential candidate for further investigations concerning its possible functional applications

Fruits are rich sources of bioactive compounds, including phenolic compounds. Tropical fruit cultivation is an important productive segment in Brazilian Northeast. Its industrialization generates solid wastes as co-products, with potential environmental impact. Considering the recognized bioactive content of fruit and its derivatives, this research has the objective of investigating acerola (Malpighia glabra L.), cajá-umbu (Spondia ssp), jambolan (Syzygium cumini) and pitanga (Eugenia uniflora) dried wastes obtained by spouted bed drier. It was analyzed the physical-chemical composition, solubility and microphotographic aspect of these dried wastes. Besides this, it was also evaluated the bioactive content, antioxidant activity and inhibitory activity against aamylase and a-glycosidase enzymes of water and ethanol (70%, 80% e 100% v/v) extracts prepared from fruit dried wastes, as well as their possible correlations. The dried fruit wastes showed high phenolic (606.04 to 3074.6 mg GAE eq/100 g sample), anthocyanin (478.7 mg/100 g for jambolan) and ascorbic acid (2748.03 mg/100 g for acerola) contents, as well as high antioxidant DPPH activity (14.27 a 36.30 mg Trolox eq/g sample). The extracts exhibited moderate to high a-amylase inhibition (23.97% a 76.58%) and high α-glycosidase inhibition, which 99.32% peak was reached for ethanol 70% pitanga extracts. It was also observed great positive correlation between phenolic content and DPPH activity (0.97 for acerola), anthocyanin (0.95 for jambolan) and α- glycosidase inhibition (0.98 for acerola). The α-glycosidase inhibition also correlated well with the antioxidant activity for all fruit extracts. The results show that these dried fruit wastes are valuable material for further applications as functional ingredients
