Tres miembros del Seminario Interdisciplinario Permanente de Literatura, Estética y Teología entrevistaron a Juan Carlos Scannone en búsqueda de una conversación que abra nuevas perspectivas. Los temas principales fueron: el inicio de Scannone en el diálogo entre literatura y teología, la formación humanística de los jesuitas, los precursores en la Argentina, la mediación simbólica, los aportes de Paul Ricoeur, el método interdisciplinario y la mediación filosófica, la novela latinoamericana.

[ES] Este trabajo propone una lectura de los seis primeros cuadernos del diario que Alejandra Pizarnik escribió a lo largo de toda su vida, desde los 18 años y hasta que murió a la edad de 36. El análisis de estos cuadernos, escritos entre 1954 y 1958, nos permite recorrer el itinerario que Alejandra Pizarnik realiza por la cuestión genérica, la cuestión nacional y la cuestión sexual. Desde su experiencia en cuanto sujeto, la escritura registra esta primera fase en la construcción del yo que Pizarnik desea para su diario. Esta fase, que se puede denominar etapa-derribo, está dominada por el desafío a las ideas del discurso hegemónico. Una vez haya resuelto este escollo en la construcción del yo de su diario, la escritura de Pizarnik no volverá sobre estos temas. Sin embargo, la búsqueda el “verdadero” yo se registra como proceso en el que a un movimiento de construcción del yo, le sigue un movimiento de destrucción de lo que las palabras han conformado, en secuencias en las que la apelación a la mentira de lo escrito o la desconfi anza en la capacidad del lenguaje para expresarlo, son la pauta de dicha escritura.

Las proteínas son biopolímeros con potenciales propiedades para aplicaciones en el campo de envases por su capacidad para formar films con buenas propiedades barrera en condiciones secas. Además, al ser biodegradables y provenir de recursos renovables, ofrecen importantes ventajas desde el punto de vista medioambiental y económico. Sin embargo, los films basados en proteínas son frágiles y presentan una baja resistencia a la humedad, por lo que se requiere su modificación para fabricar materiales útiles en las condiciones de servicio.El objetivo de esta tesis es reducir la absorción de humedad y simultáneamente mejorar las propiedades mecánicas de los materiales fabricados con proteína de soja. Para ello es necesaria la adición de sustancias que puedan interaccionar con los grupos polares de la proteína, reduciendo así su carácter hidrofílico y la absorción de humedad, y que a la vez puedan actuar como plastificantes, reduciendo la fragilidad del material fabricado. Además, las condiciones de procesado también influyen en las propiedades del material, por tanto, la optimización del procesado es otro de los objetivos de la tesis.Para poder conseguir la mejora de las propiedades del material y, en concreto, aquellas requeridas por el sector del envase, como son las propiedades mecánicas y la resistencia a la humedad, la tesis se ha centrado en tres áreas: plastificación por adición de glicerol; mezclado con sustancias naturales como gelatinas, ácidos, aceites y azúcares; y procesado por los métodos húmedo y seco.

Raw soybeans were subjected to three different processing methods viz Parboiling, Toasting and Extrusion with an Intra Pro Extruder. The processed soybean meals were thereafter incorporated at equal levels into the diets of genetically improved mudfish Heterobranchus longifilis juveniles. The fish were fed the experimental diets in triplicate at 5% of their body weight for eight weeks. The growth performance and food utilization indices, namely Mean Weight Gain (MWG), Food Conversion Ratio (FCR), Specific Growth Rate (SGR%) and Protein Efficient Ratio (PER), were monitored bi-weekly. The results show that fish fed the control fishmeal diets were highest in growth performance, which was significantly different (P>0.05) from others. Among the fish fed the test diets, those fed toasted soybean had higher MWG, SGR, FCR and PER than juveniles fed the parboiled soybean diet. The juveniles fed the extruded soybean diet recorded the least growth performance. The implication of these results in diet formulation is discussed

The objective of this study was to develop soy protein fortified fish sticks from Tilapia. Two preliminary studies were conducted to select the best fish-soy protein-spice mixture combination with four treatments to develop breaded fish sticks. Developed products were organoleptically assessed using 30 untrained panellists with 7-point hedonic scale. The product developed with new combination was compared with market product. Sixty percent of Tilapia fish mince, 12% of Defatted Textured Soy protein (DTSP), 1.6% of salt and 26.4% of ice water (<5°C) and Spice mixture containing 3g of garlic, 2g of pepper 2g of onion and 1.6g of cinnamon were selected as the best formula to manufacture the product. There was no significant difference when compared with market samples in relation to the organoleptic attributes. Proximate composition of the product was 25.76% of crude protein, 2.38% of crude fat, 60.35% of moisture and2.75% of ash. Products were packaged in Poly Vinyl Chloride clear package (12 gauge) and were stored at -1°C and changes in moisture content, peroxide value, pH value and microbiological parameters were assessed during five weeks of storage. Organoleptic acceptability was not changed significantly in all parameters tested (p>0.05). Total aerobic count and yeast and mould count were in acceptable ranges in frozen storage for 5 weeks. Data were analyzed using AN OVA and Friedman non-parametric test.

High-performance liquid chromatography-tandem mass spectrometry has been used to identify isoflavone aglycones and glycosides in kudzu root. Fourteen isoflavones were detected. Among these, six were identified by comparison with authentic standards. Tentative identifications of the other isoflavones are based on UV spectra, mass spectra of protonated and deprotonated molecules, and MS-MS data. Several are reported for the first time in kudzu root. The bioactivity and bioavailability of isoflavone aglycones are usually greater than those of their glycosides. To improve the bioavailability of kudzu root isoflavones, crude beta-glycosidases prepared from microbes were used to hydrolyze the isoflavone glycosides. Several MS modes are combined not only to identify the isoflavones in kudzu root, but also to describe the biotransformation of kudzu root isoflavone glycosides. It is also proved that crude beta-glycosidases have high selectivity toward the O-glycosides of isoflavones.

The presence of savory peptides in moromi has been investigated. Moromi was prepared by fermenting yellow soybean using Aspergillus oryzae as the starter at the first step (mold fermentation) and 20% brine solution at the next step (brine fermentation). The moromi was then ultrafiltered stepwise using membranes with MW cut-offs of 10,000, 3,000, and 500 Da, respectively. The fraction with MW <500 Da was chromatographed using Sephadex G-25 SF to yield four fractions, 1-4. Analysis of soluble peptides, NaCl content, alpha-amino nitrogen, amino acid composition, peptide profile using CE coupled with DAD, taste profile and free glutamic acid content, were performed for each fraction. Fraction 2 contained a relatively high total glutamic acid content, but a relatively low free glutamic acid content and had the highest umami taste. This fraction also had more peptides containing non-aromatic amino acids than the other fractions. The peptides present in fraction 2 may play a role, at least in part, in its intense umami taste.

Phytoestrogens are plant compounds that have been proposed to have a variety of health benefits. The aim of this study was to assess the effects of these compounds on a number of physiological endpoints. Subjects were given a single intake of a phytoestrogen-rich (80 mg total phytoestrogens) supplement containing soy, rye and linseed (Phase 1), followed by a week-long intervention using the same supplement (Phase 2) (80 mg total phytoestrogens daily). A number of biochemical endpoints were assessed including urinary phytoestrogen metabolites, lipids, antioxidant status, DNA damage and insulin-like growth factor-1 (IGF-1) and IGF binding protein-1 (IGFBP-1) and -3 (IGFBP-3). Ten healthy female subjects took part in the study. Excretion of the isoflavones genistein, daidzein and equol in urine increased in both phases of the study. No other endpoint was altered in Phase 1. Consumers nowadays are playing an active role in their health-care. A special case is the increasing number of women, who are reluctant to use exogenous hormone therapy for the treatment of menopausal symptoms and are looking for complementary therapies. However, food supplements are not clearly regulated in Europe. The EFSA has only recently begun to address the issues of botanical safety and purity regulation, leading to a variability of content, standardization, dosage, and purity of available products. In this study, isoflavones (puerarin, daidzin, genistin, daidzein, glycitein, genistein, formononetin, prunetin, and biochanin A) from food supplements (n = 15) for menopausal symptoms relief are evaluated and compared with the labelled information. Only four supplements complied with the recommendations made by the EC on the tolerable thresholds. The intestinal bioavailability of these compounds was investigated using Caco-2 cells. The apparent permeability coefficients of the selected isoflavonoids across the Caco-2 cells were affected by the isoflavone concentration and product matrix.
