En el presente artículo nos proponemos realizar una reconstrucción de la trayectoria de la Estación Enológica de Mendoza, anexa a la Escuela Nacional de Vitivinicultura, desde 1904 a 1920. El mismo cobra vital importancia en tanto la consideramos un centro pionero en la realización de estudios científicos y técnicos que sirvieron de base a la consolidación de una vitivinicultura de calidad -y que por entonces contaba con múltiples deficiencias- y un impulsor de cambios técnicos en la agroindustria local. A su vez, su importancia radicaría en que fue un espacio aglutinador de las experiencias e inquietudes de los enólogos graduados de la mencionada Escuela. Por último, nos referiremos a las posibilidades de recepción y divulgación de los estudios entre los vitivinicultores.

Family agroindustry has been considered by several authors as an important reproduction alternative for family-based agriculture. However, this production process, which includes primary (production of raw-materials) and secondary (industrialization of production) activities, is generating a general concern. Can agroindustry, by promoting non-agricultural income for farmers, cause a reduction or, in extreme cases, an extinction of agricultural production in farm estates developing industrialization activities for selling in markets (family agroindustries)? In this sense, the purpose of this research was to analyse whether agroindustry can promote specialisation in family-based farm estates, or whether it is a form of economic diversification, being merely an activity similar to those developed in farm estates before the emergence of this process. The empirical study was conducted in 45 family agroindustries of sugarcane derivatives located in the Northeast of Rio Grande do Sul (Brazil).

Los biocombustibles introducen espacios agrícolas en la producción energética. Luego modifican la gobernanza de las redes energéticas y de los territorios productivos. Las principales críticas a los biocombustibles se dirigen a su producción a partir de cultivos tradicionales, pero interesa preguntarse también sobre la sostenibilidad de su producción a partir de cultivos alternativos, que no competirían con los cultivos alimentarios, puesto que se ubicarían en regiones agrícolas marginales. El texto trata sobre las producciones de biocombustibles de los países de América del Sur, en sus contextos internacionales, nacionales y locales. Se profundiza la mirada sobre Argentina, Brasil y Colombia, líderes continentales en el sector. Se analizan la evolución del mercado energético, los actores involucrados y las políticas implementadas. A otra escala, se plantea la puesta en marcha de las cadenas de biocombustibles alternativos.

En este documento se presentan, en una primera instancia, las restricciones detectadas a lo largo de la cadena de valor del snack nutritivo elaborado a partir de fruta deshidratada en El Salvador. El diagnóstico que se elaboró fue presentado en una mesa de diálogo para validar dichas restricciones y consensuar perspectivas entre los actores relevantes de la cadena de valor. En una segunda instancia, con los resultados de la discusión sobre el diagnóstico, la CEPAL propuso cinco programas con un total de 14 estrategias que igualmente fueron validadas por medio de un proceso participativo público y privado en otra mesa de diálogo. Los cinco programas propuestos y que se describen con detalle en este documento fueron: a) Gobernanza de la cadena de fruta deshidratada; b) Capacitación y entrenamiento del recurso humano; c) Inclusión de pequeños productores de fruta; d) Innovación y calidad en frutales y deshidratados; y, e) Comercialización para la consolidación del mercado interno y de exportación.

Citrus are a group of fruit species, quite heterogeneous in many aspects, including chemical composition of the fruit. Since ancient times, some citrus fruits were used to prevent and cure human diseases. In the recent decades, it has been demonstrated that fruits can actually help prevent and cure some diseases and above all, they are essential in a balanced diet. Citrus fruits, as one of the groups of fruit species, with greater importance in the world, have been studied for their effects on human health. Some species of citrus were referred as potential antioxidant based therapy for heart disease, cancer and inflammation. Fruit peels and seeds have also high antioxidant activity. The health benefits of citrus fruit have mainly been attributed to the high level of bioactive compounds, such as phenols (e.g., flavanone glycosides, hydroxycinnamic acids), carotenoids and vitamin C. These compounds are present in the fruit pulp and hence in the juice. But some bioactive compounds can be found in parts of the fruit which usually are not used for human food. The content of bioactive compounds depends on the species and cultivar, but also depends on the production system followed in the orchard. Citrus fruits, their derivatives and their by-products (peel, pulp and oil) are reach in different bioactive compounds and its maturity, postharvest and agroindustry processes influence their composition and concentration. The aim of this chapter was to review the main bioactive compounds of the different components of citrus and their relationship to health.

Los efectos positivos y negativos de la globalización sobre  el desarrollo de la agroindustria rural (AIR) obligan a un cuidadoso análisis sobre su situación actual y su evolución teniendo en cuenta los cambios del entorno económico, político y social. A partir de dos estudios de casos (queserías rurales de Perú y las parafinadoras de yuca en Costa Rica) realizamos una reflexión sobre el debate actual del rol que debe cumplir un sistema agroalimentario localizado (SIAL): permitir acceder a mercados globalizados o re-localizar actividades para aprovechar ventajas territoriales. Esta investigación muestra la importancia del desarrollo de una concentración de AIR para valoriza un producto tradicional con saber-hacer local y el éxito cuando se siguen dos etapas sucesivas: una re-localización de actividades y posteriormente la búsqueda de acceso en mercados globales.   ABSTRACT The positive and negative effects of globalization on the development of rural agroindustry (AIR) force an exhaustive analysis about their present situation and its evolution considering changes in economic, politic and social environment. From two cases of study (rural cheesemaker in Peru and the cassava “parafinadoras” in Costa Rica) we made an analysis of the discussion about the contribution of localized agrifood systems : to allow access to globalized markets or re-locate activities to take profit of territorial advantages. This article shows the importance of the development of AIR´s concentration for the valorizing of a traditional product with kwon-how and the success when two successive stages are followed: a re-location of activities and later, the search of access in global markets.

La multifuncionalidad (MF) de la agricultura tradicionalmente ha sido abordada desde la perspectiva de países desarrollados y muy pocas veces se ha analizado en el contexto de países en desarrollo. El presente estudio, mediante un trabajo de campo que consulta a varios actores sociales, identifica la presencia de múltiples funciones sociales, económicas y ambientales relevantes que van mas allá de la función productiva en el caso de la agroindustria de la panela (Azúcar no centrifugado) en Colombia y establece características diferenciales en la relevancia y ámbito de estas funciones en tres sistemas agroalimentarios locales (SIAL) de la panela. Finalmente, a partir de estos hallazgos plantea nuevos retos de investigación para la mediación de la MF y para el diseño de políticas basadas en la MF que permitan activar y fortalecer los SIAL de países en desarrollo.   ABSTRACT The multifunctionality (MF) of the agriculture traditionally has been approached from the perspective of developed countries and very few times it has been analyzed in the context of countries in development. The present study, by means of a field work that consults several social actor, identifies the presence of multiple social, economic and environmental functions that they go beyond the productive function in the case of the agroindustry of the panela (not centrifuged sugar) in Colombia and it establishes differential characteristics  in the relevance and environment of these function in three local agrifood systems (LAS) of the panela. Finally, starting from these discoveries it outlines new research challenges to measure the MF and for the design of policies based on the MF that allow to activate and strengthen LAS of undeveloped countries.

TESLA project (Transfering Energy Save Laid on Agroindustry) financed by the European Commission, had the main goals of evaluating the energy consumption and to identify the best available practices to improve energy efficiency in key agro-food sectors, such as the olive oil mills. A general analysis of energy consumptions allowed identifying the partition between electrical and thermal energy (approximately 50%) and the production processes responsible for the higher energy consumptions, as being the in the mill and paste preparation and the phases separation. Some measures for reducing energy waste and for improving energy efficiency were identified and the impact was evaluated by using the TESLA tool developed by Circe and available at the TESLA website.

The objective of this research is to produce alternative food sources of protein by optimizing the potential of jatropha curcas which is agroindustry waste. This study is planned in two years and is a series of jatropha seed exploration through fermentation using Lactobacillus acidophilus. Specific targets in the first year of study were to assess the optimization of the fermentation process by supplementing the source of N soybean meal and fish meal. Experiments using Completely Randomized Design (RAL) factorial pattern with first factor was supplementation (F) and second factor was incubation time (W), fermentation optimization consisted of: F1 (F0 + 2.5% soybean meal flour), F2 (F0 + 2.5% fish meal), F3 (F1 + 0.45% Dicalsium Phosphat) and F4 (F2 + 0.45% Dicalsium Phosphat). The incubation time is differentiated W1: 3 days, W2: 5 days and W3: 7 days. It can be concluded that: dry matter, gross energy, calcium and phospor are influenced by interaction between type of supplementation of source of N + DCP with fermentation time, whereas fat content is only influenced by fermentation time with optimal time decrease of fat content is 5,92 days. Total protein and amino acid levels are only influenced by different types of supplementation. Phorbolester antinutrition levels are influenced by the duration of the fermentation.  Based on antinutritive as a limiting factor. F4W5 is the best treatment and can used as a feed ingredient.
