Nitrogen (N) fertilizer is used routinely in potato (Solanum tuberosum) cultivation to maximize yield. However, it also affects sugar and free amino acid concentrations in potato tubers, and this has potential implications for food quality and safety because free amino acids and reducing sugars participate in the Maillard reaction during high-temperature cooking and processing. This results in the formation of color, aroma, and flavor compounds, but also some undesirable contaminants, including acrylamide, which forms when the amino acid that participates in the final stages of the reaction is asparagine. Another mineral, sulfur (S), also has profound effects on tuber composition. In this study, 13 varieties of potato were grown in a field trial in 2010 and treated with different combinations of N and S. Potatoes were analyzed immediately after harvest to show the effect of N and S fertilization on concentrations of free asparagine, other free amino acids, sugars, and acrylamide-forming potential. The study showed that N application can affect acrylamide-forming potential in potatoes but that the effect is type- (French fry, chipping, and boiling) and variety-dependent, with most varieties showing an increase in acrylamide formation in response to increased N but two showing a decrease. S application reduced glucose concentrations and mitigated the effect of high N application on the acrylamide-forming potential of some of the French fry-type potatoes.

Seed germination and seedling establishment are critical processes for commercial plantation and depend directly on reserve mobilization as a source of cellular fuels and biosynthetic precursors. In this way, we investigated the coordination among reserve mobilization, metabolite partitioning, and mobilizing enzyme activities in Moringa oleifera Lam (moringa) an oil-seeded species employed in biofuel production. Seeds were germinated under controlled conditions and seedlings were grown hydroponically at a greenhouse. Samples were harvested at 0, 4, 8, 10, 12, 16, and 20 days after imbibition (DAI). The contents of dry mass (DM), neutral lipids (NL), soluble proteins (SP), starch, total soluble sugars (TSS), non-reducing sugars (NRS), and total free amino acids (TFAA) as the activity of isocitrate lyase (ICL), acid proteases, and amylases were determined. The mobilization of storage proteins was initiated during seed germination whereas the mobilization of storage lipids and starch was triggered throughout seedling establishment although all reserves have been depleted until 20 DAI. The partitioning of DM and metabolites to the roots and the shoots was uneven during seedling establishment. Low shoot/root ratio on the basis of DM could be related to the natural occurrence of moringa in drought climates. In the roots, TSS, NRS, and TFAA were accumulated from 12 to 16 DAI and then were consumed until the end of the experiment. In the shoots, TSS and TFAA were consumed in parallel with NRS accumulation from 12 to 20 DAI. The activity of ICL, acid proteases, and amylases was coordinated with the mobilization of lipids, proteins and starch respectively. Thus, we propose that the patterns of reserve mobilization and metabolite partitioning verified in moringa seem distinct from those found to other tree species and may be involved in metabolic strategies to enable environment colonization

The growth of maize (Zea mays L.) kernels depends on the availability of carbon (C) and nitrogen (N) assimilates supplied by the mother plant and the capacity of the kernel to use them. Our objectives were to study the effects of N and sucrose supply levels on growth and metabolism of maize kernels. Kernel explants of Pioneer 34RO6 were cultured in vitro with varying combinations of N (5 to 30 mM) and sucrose (117 to 467 mM). Maximum kernel growth was obtained with 10 mM N and 292 mM sucrose in the medium, and a deficiency of one assimilate could not be overcome by a sufficiency of the other. Increasing the N supply led to increases in the kernel sink capacity (number of cells and starch granules in the endosperm), activity of certain enzymes (soluble and bound invertases, sucrose synthase, and aspartate aminotransaminase), starch, and the levels of N compounds (total-N, soluble protein, and free amino acids), and decreased the levels of C metabolites (sucrose and reducing sugars). Conversely, increasing the sucrose supply increased the level of endosperm C metabolites, free amino acids, and ADPG-PPase and alanine transaminase activities, but decreased the activity of soluble invertase and concentrations of soluble protein and total-N. Thus, while C and N are interdependent and essential for accumulation of maximum kernel weight, they appear to regulate growth by different means. Nitrogen supply aids the establishment of kernel sink capacity, and promotes activity of enzymes relating to sucrose and nitrogen uptake, while sucrose regulates the activities df invertase and ADPG-PPase. O presente trabalho foi conduzido com o objetivo de estudar a liberação de amônia pela cama de frangos de corte, bem como o teor de umidade e de compostos glicídicos (carboidratos redutores) e nitrogenados (nitrogênio total, nitrogênio solúvel total e nitrato) presentes na mesma, em função da densidade populacional, tempo de confinamento e sexo das aves. Realizou-se o experimento em delineamento inteiramente casualizado. A cama de frango foi submetida às densidades de 10; 14; 18 e 22 aves/m² de piso, para ambos os sexos, e analisada em três épocas diferentes (24, 38 e 42 dias de idade das aves), utilizando-se de esquema fatorial 4x2x3 (densidades x sexos x épocas). de modo geral, observou-se que o sexo não influenciou o comportamento das variáveis estudadas. O aumento da densidade e o avanço da época de amostragem induziram a aumentos da quantidade de amônia liberada, do teor de umidade e dos teores de nitrogênio total e de nitrogênio solúvel, bem como diminuição do teor de carboidratos redutores. Estes resultados sugerem a necessidade de um controle rigoroso da amônia no ar dos galpões, principalmente em densidades elevadas e no período final de criação.

Among the sugar cane potential uses include those related to the extraction of products and byproducts from the stalk. The sugarcane flowering causes morphological and physiological changes in plant and in the presence of pith, promotes changes in the stalk, reducing the raw matter quality. Most of the areas planted with sugarcane in the South-Central region of Brazil are subject to flowering, however, this feature varies depending on the variety used. There are different pith diameters related to the flowered or induced stalks, and damage to the raw matter quality are still controversial. The objective of this experiment was to evaluate the response of cane sugar varieties in relation to the flowering, pith and chemical and technological parameters, and their relationship with the pith degree. The experimental design was a completely randomized with sis treatments (varieties: IAC91-1099-4004IAC94, IAC95-5000, SP81-3250, CTC and RB855536 15) and three replications. Were evaluated the flowering, based on morphological changes in the apical bud, the pith intensity by the percentage determination of internodes occupied by whitish and spongy tissues and and pith diameter, by measuring the diameters of the changes in the internodes, expressed in percentage, in addition to chemical (juice total acidity) and technological (fiber, reducing sugars and sugar cane Pol) parameters. The flowering occurrences were accompanied by higher pith intensity. The flowering induction contributed to the lower raw matter quality, although the pith volume was lower. The pith and flowering did not affected the sugarcane sucrose content. Increases in levels of fiber, sugars and acidity were observed only in cases where the diameter of the area spongeous exceeded 50% of stalk diameter. The variety that had the best and worse response was RB855536 and CTC 15, respectively.

O objetivo deste trabalho foi avaliar, física e quimicamente, produtos minimamente processados de abacaxi-'Pérola', rodelas e metades, armazenados sob diferentes temperaturas (3ºC, 6ºC e 9ºC). Frutos selecionados, quanto ao grau de maturação e ausência de danos, foram lavados, desinfeccionados com cloro (200 mg.L-1) e armazenados a 10ºC, por 12 horas, antes do processamento. O produto minimamente processado foi embalado em bandejas de isopor recobertas com filme de PVC esticável (metades) ou bandejas de tereftalato de polietileno (rodelas) e armazenado sob refrigeraç ;ão, com avaliação a cada 3 dias, quanto à textura, coloração, pH, e conteúdos de sólidos solúveis totais, acidez total titulável, ácido ascórbico e de açúcares, solúveis e redutores. Durante o armazenamento, o produto tornou-se menos firme, e sua polpa apresentou escurecimento. Os conteúdos de açúcares solúveis e redutores e de sólidos solúveis totais não foram afetados pelo tipo de preparo, temperatura ou embalagem. Os teores de acidez total titulável aumentaram e foram influenciados pela temperatura, sendo que os mantidos a 9ºC apresentaram os maiores teores, havendo, como conseqüência, decréscimo no pH. Os produtos armazenados a 9ºC também apresentaram evolução mais rápida no escurecimento, na redução do teor de ácido ascórbico e menor vida útil (6 dias), enquanto, para os armazenados a 3ºC e 6ºC, este período foi de 9 dias. Os resultados obtidos permitiram concluir que a temperatura de armazenamento foi o fator limitante para a vida útil destes produtos.

This work had the aim of evaluating the effect of different temperatures and pre-drying periods on yard on the chemical composition and quality of the beverage of peeled cherry coffee. Temperatures of 40 degrees C, 50 degrees C and 60 degrees C were used in the mass with air flow of 20m(3)m(-1)m(2). After drying, the visible defects of the coffee samples were removed. For evaluation of quality, the following analyses were performed: sensorial analyses, total sugars, reducing sugars and non-reducing sugars, electrical conductivity, potassium leaching and fatty acidity. One verified that lower drying temperature and greater pre-drying period had contributed for the attainment of a better quality drink. The increase of temperature and pre-drying periods decreased the non-reducing sugars content while the values of reducing sugars increased. The electrical conductivity, potassium leaching and fatty acidity increased significantly with the rise of temperature and potassium leaching reduced with increasing of the pre-drying period. The fatty acidity test showed to be sensible to the drying temperature.

A acerola é um fruto de grande potencial econômico e nutricional devido ao seu alto teor de vitamina C, destacando-se como alimento funcional. É comercializada principalmente na forma de polpa congelada e fruto in natura. O objetivo deste estudo foi avaliar a qualidade dos frutos da aceroleira cv. Olivier em dois estádios de maturação. Para tanto, foram colhidas amostras de frutos em um pomar comercial no município de Junqueirópolis-SP. Foram realizadas a determinação da cor externa dos frutos e análises das características químicas de teor de sólidos solúveis, pH, acidez titulável, açúcares redutores, 'ratio' e ácido ascórbico de frutos semi-maduros e maduros. Os resultados obtidos permitiram concluir que os frutos semimaduros apresentaram maior acidez total, menor teor de sólidos solúveis e menor concentração de açúcares; no entanto, estes frutos apresentaram maiores teores de vitamina C, expressa em ácido ascórbico. Portanto, quando se buscam altos índices de vitamina C, os frutos devem ser colhidos num estádio de maturação menos avançado, com coloração alaranjada. O estudo demonstrou também que a cv Olivier produz frutos com características adequadas tanto para o mercado in natura quanto para a indústria, apresentando boa coloração e características químicas dentro dos padrões para esta fruta.

Plantas de aguapé foram cultivadas em solução nutritiva de Hoagland & Arnon n.2, cujo aumento dos níveis de N, P e Cu estabeleceu as diferenças entre os tratamentos. Utilizou-se o delineamento experimental inteiramente casualizado, com quatro repetições. As variáveis fisiológicas avaliadas foram área foliar, peso de matéria seca e taxa de crescimento absoluto, taxa de crescimento relativo, taxa assimilatória líquida, razão de área foliar, peso específico de folha, área foliar específica. Foram determinados também os teores de açúcares totais e redutores e de aminoácidos totais e a atividade das enzimas glutationa S-transferase e superóxido dismutase. Os extratos enzimáticos foram obtidos da matéria fresca da parte aérea das plantas. Após a coleta, foram determinados os pesos de material seco de raízes, pecíolos e folhas, que foram utilizados para a determinação de açúcares solúveis totais e redutores e de aminoácidos. O excesso de nitrogênio causou aumento de açúcares nas folhas e de aminoácidos nas raízes. Já o tratamento com excesso de fósforo levou ao aumento de açúcares nas raízes. Os resultados apresentados sugerem que, entre os nutrientes em excesso avaliados, o cobre (0,12 mg L-1) foi o maior indutor da atividade da GST e SOD, sugerindo que este elemento induziu estresse nas plantas de aguapé.

Milk from different animals can be used for dairy production. Yoghurt is a popular fermented milk product and considered to be one of the greatest importance in terms of consumer acceptance and consumption. The present research deals with the production of strawberry set-type yoghurt by mixing goat and buffalo s milk and it has the objective of taking advantage of the intrinsic characteristics of each milk to produce a final product with desirable attributes. It was conducted by analyzing five experimental groups with different proportions of goat and buffalo s milk: C 100% goat s milk; 7C3B - 70% goat s milk and 30% buffalo s milk, 5C5B - 50% goat s milk and 50% buffalo s milk, 3C7B 30% goat s milk and 70% buffalo s milk; B - 100% buffalo s milk. Each group was evaluated for total solids content and the acidification profile was monitored every 30 minutes by pH analysis. The yoghurt samples were analyzed for physical-chemical (pH, acidity, protein, fat, total and reducing sugars, ash and total solids), rheological (syneresis and viscosity) and sensory characteristics (appearance, odor, consistency and flavour). Samples with higher percentual of bubaline milk reached Vm faster, but the time necessary for pH 4.6 (Te) were similar between groups. Statistical differences (p<0.05) were observed for fat and total solids content of yoghurt, with superior values for groups higher proportions of buffalo s milk. The parameters of behavior reached by the model of Ostwald of Waale pointed yoghurt samples as non-Newtonian and pseudoplastic fluids. Yoghurt made only with goat s milk (C) had higher values (p<0.05) for syneresis, which can be explained by its fragile coagulum. Additionally, this group also had the lowest sensory scores for the attributes consistence and taste, while bubaline yoghurt (B) obtained the best acceptance indexes for all of the appraised parameters

This study conducted chemical analyzes of the fruits of Licania tomentosa Benth belonging to the Chrysobalanaceae family, order and superorder Rosiflorae Rosales. Samples were collected in February 2011 in the city of Natal - RN. The fruits were separated into peel, pulp and seed, and the samples were analyzed on moisture and ash by thermogravimetric methods, reducing and total sugars, lipids by Soxhlet extraction, minerals by ICP / OES and other analyzes by physical measurements of the fruit. The fruits for the analysis of determination of flavonoids and phenolic compounds were dried at 40 ° C and ground. For the analyzes to determine the content of phenolics and flavonols was used spectroscopy in the visible region, and also performed the characterization of ethanol extracts by high performance liquid chromatography and test for antioxidant activity hydroethanolic extracts. The results obtained are about 83.9% of the fruits have a length between 4.0 to 6.0 cm with respect to the diameter of the fruit about 97.4% of the fruits have a diameter between 2.0 - 4, 0 cm, mean weight of 36.14 g (7.86), the bark showed 60.5 (1.5)% relative humidity, the flesh 72.3 (0.9) and 44.4 seeds (0.4 )%, the bark showed 0.22 (0.00)% ash, the pulp 1.41 (0.01)% and the seed 1.18 (0.01)%, the bark showed 3.73 (0, 09) mg lipids / 100 g sample of the pulp 0.40 (0.04) and the seed 0.05 (0.00). With respect to reducing sugars and total gave the results, 16.23 (0.23) g/100g and 20.70 (0.24) g/100g. The fruit is presented with a good source of nutrients especially carbohydrates and lipids. The analysis for determining the antioxidant activity tests were performed reducing power and antioxidant capacity, the antioxidant capacity of hydroethanolic extracts of peel and pulp showed similar results, with higher concentrations however hydroethanolic bark extract. Regarding the content of phenolics and flavonoids hidroetanílico bark extract showed higher concentration values. The characterization of the extracts by high performance liquid chromatography identified the following compounds by retention time indicated by the race of the standards: galic acid, kaempferol and kaempferol derivatives. Considering the results of the fruit Licania tomentosa Benth may be an alternative food by analysis of their nutritional content and has substances with antioxidant action
