This study aimed at evaluating the effect of total replacement of dry corn by wet grain corn silage (WGCS) in the feed of label broilers older than 28 days of age on performance, mortality, carcass, parts, breast meat and thighs meat yields, and meat quality. A mixed-sex flock of 448 ISA S 757-N (naked-neck ISA JA Label) day-old chicks was randomly distributed in to randomized block experimental design with four treatments (T1 - with no WGCS; T2 - WGCS between 28 and 83 days; T3 - WGCS between 42 and 83 days; and T4 - WGCS between 63 and 83 days) and four replicates of 28 birds each. Birds were raised under the same management and feeding conditions until 28 days of age, when they started to have free access to paddock with pasture (at least 3m²/bird) and to be fed the experimental diets. Feed and water were offered ad libitum throughout the rearing period, which was divided in three stages: starter (1 to 28 days), grower (29 to 63 days), and finisher (64 to 83 days) according to the feeding schedule. During the short periods of WGCS use (group T2 during grower stage and T4 during the finisher stage), performance and mortality results were similar as to those of the control group (T1). At the end of the experiment, it was observed that the extended use of WGCS (T2 and T3) determined a negative effect on feed conversion ratio. However, the best results of breast meat yield were observed with birds fed WGCS since 28 days (T2). It was concluded that WGCS can replace dry corn grain for short periods during the grower and finisher stages with no impairment of meat quality and yield in slow growth broilers.

The aim of this study was to evaluate the effects of different litter materials on litter compaction, broiler feathering and the incidence of carcass lesions. In the experiment, 3240 one-day-old Ross® chicks were selected by sex and distributed according to a completely randomized experimental design in a 2 x 6 factorial arrangement (two sex and six litter materials). The following litter materials were used: wood shavings, rice husks, chopped Napier grass, 50% sugar cane bagasse plus 50% wood shavings, 50% sugar cane bagasse plus 50% rice husks, and pure sugar cane bagasse. Litter compaction was weekly assessed using a penetrometer. on days 21, 35 and 42 of the experimental period, feathering on the back and legs was scored according to a 0 - 10 scale. on day 42, birds were slaughtered and the presence of bruises, scratches and footpad lesions was recorded. Litter material had no effect on bird feathering. Carcass lesions (scratches, bruises and footpad lesions) were influenced by the litter material evaluated. Birds reared on sugarcane bagasse and chopped Napier grass presented more scratches, bruises and footpad lesions than the others. Dermatitis was more evident in birds reared on sugarcane bagasse, chopped Napier grass and the combination of litter materials. It was found that males presented higher incidence of dermatitis and footpad lesions than females. Each litter material presented different compaction degrees, which increased along the experimental period. Sugarcane bagasse, chopped Napier grass and the combination of bedding materials presented the highest degree of compaction, compared with wood shavings and rice husks.

This article aimed at compiling recent studies on the main factors that influence ostrich meat quality and carcass yield. Few articles investigated the effect of subspecies, which generally are not even mentioned. There are important dietary effects, particularly those caused by dietary protein to energy ratio. Rigor mortis follow-up studies showed that there are no losses in meat quality when carcasses are hot-deboned. Age at slaughter influences some meat quality traits, such as tenderness and lipid content. Few effects of gender have been observed, and at the same age at slaughter, both male and female present the same meat quality traits.

O desenvolvimento de técnicas não invasivas e não destrutivas para a avaliação da composição e qualidade de carcaça em animais tem mobilizado consideráveis recursos em pesquisa. A ultra-sonografia aparece neste contexto como uma técnica viável, confiável e de custo aceitável para esta função. No presente trabalho foi avaliada a técnica de ultra-sonografia em tempo real como ferramenta para predição da área de olho-de-lombo (AOL) e espessura da camada de gordura subcutânea (ECG) a partir de imagens tomadas em animais vivos, quando comparadas com as medições na carcaça. Foram utilizados 115 bovinos jovens (30, ½ Angus x Nellore; 30, ½ Canchim x Nellore; 30, ½ Simental x Nellore, e 25 Nellores), com peso inicial médio de 329 kg e de dois tamanhos à maturidade (pequeno e grande), no sistema de produção do novilho superprecoce. As medidas de ultra-sonografia foram realizadas a cada 28 dias totalizando quatro medições até o final do confinamento. A precisão da predição aumentou em função da proximidade da data do abate, sendo máxima na quarta medida (R²= 0,68 para AOL e 0,82 para ECG). Houve efeito de grupo genético e de medida ultra-sonográfica para ECG. O tamanho corporal não teve efeito sobre nenhuma das características estudadas.

O presente estudo teve por objetivo avaliar o efeito da utilização de níveis crescentes do gluconato de sódio sobre o desempenho, o rendimento de carcaça e de partes e a morfometria da mucosa intestinal de frangos de corte de 22 a 42 dias de idade. Foram utilizados 1200 frangos de corte da linhagem Cobb, distribuídos em um delineamento inteiramente casualizado, envolvendo cinco tratamentos (0,00; 0,10; 0,20; 0,30 e 0,40% de gluconato de sódio) com oito repetições de 30 aves cada parcela. As variáveis foram submetidas à análise de variância e em caso de significância estatística foram realizadas análises de regressão pelos modelos polinomial e quadrático. A inclusão do gluconato de sódio não afetou o desempenho e o rendimento de carcaça e de partes. Entretanto, exerceu efeito benéfico sobre a morfometria da mucosa intestinal do duodeno e do jejuno.

Real-time ultrasonography (RTU) was used to measure the longissimus dorsi muscle (LM) volume in vivo and to predict the carcass composition of rabbits. For this, 63 New Zealand White × Californian rabbits with 2093±63 g live weight were used. Animals were scanned between the 6th and 7th lumbar vertebrae using an RTU equipment with a 7.5 MHz probe. Measurements of LM volume were obtianed both in vivo and on carcass. Regression equations were used for the prediction of carcass composition and LM volume using the LM volume measured obtained with RTU (LMVU) as independent variable. Carcass meat, bone and total dissectible fat weights represented 780, 164 and 56 g/kg of the reference carcass weight, respectively. Regression equations showed a strong relationship between LMVU and the correspondent volume in carcass. Furthermore, LMVU was also useful in predicting the amounts of carcass tissues. It is possible to predict LM volume in the carcass using the LM volume measured in vivo by RTU. The amount of carcass tissues can be predicted by the LM volume measured in vivo by RTU.

Objetivou-se, nesta pesquisa, o desenvolvimento de uma metodologia que permitisse a sexagem de carne bovina pronta para comercialização. Para tanto, utilizou-se primers seqüência macho-específica e posterior análise do produto amplificado. O método proposto mostrou-se eficiente para verificar o sexo, bem como sua utilização prática, a fim de evitar fraudes na comercialização de carne bovina.
