Several strains of Enterococcus spp. are capable of producing bacteriocins with antimicrobial activity against important bacterial pathogens in dairy products. In this study, the bacteriocins produced by two Enterococcus strains (Enterococcus mundtii CRL35 and Enterococcus faecium ST88Ch), isolated from cheeses, were characterized and tested for their capability to control growth of Listeria monocytogenes 426 in experimentally contaminated fresh Minas cheese during refrigerated storage. Both strains were active against a variety of pathogenic and non-pathogenic microorganisms and bacteriocin absorption to various L. monocytogenes, Enterococcus faecalis ATCC 19443 and Lactobacillus sakei ATCC 15521 varied according to the strain and the testing conditions (pH, temperature, presence of salts and surfactants). Growth of L. monocytogenes 426 was inhibited in cheeses containing E. mundtii CRL35 up to 12 days at 8 degrees C, evidencing a bacteriostatic effect. E. faecium ST88Ch was less effective, as the bacteriostatic affect occurred only after 6 days at 8 degrees C. In cheeses containing nisin (12.5 mg/kg), less than one log reduction was observed. Lactic acid bacteria ( LAB) are currently used by food industries because of their ability to produce metabolites with antimicrobial activity against gram-positive pathogens and spoilage microorganisms. The objectives of this study were to identify naturally occurring bacteriocinogenic or bacteriocinogenic-like LAB in raw milk and soft cheese and to detect the presence of nisin-coding genes in cultures identified as Lactococcus lactis. Lactic acid bacteria cultures were isolated from 389 raw milk and soft cheese samples and were later characterized for the production of antimicrobial substances against Listeria monocytogenes. Of these, 58 (14.9%) LAB cultures were identified as antagonistic; the nature of this antagonistic activity was then characterized via enzymatic tests to confirm the proteinaceous nature of the antimicrobial substances. In addition, 20 of these antagonistic cultures were selected and submitted to genetic sequencing; they were identified as Lactobacillus plantarum (n = 2) and Lactococcus lactis ssp. lactis (n = 18). Nisin genes were identified by polymerase chain reaction in 7 of these cultures. The identified bacteriocinogenic and bacteriocinogenic-like cultures were highly variable concerning the production and activity of antimicrobial substances, even when they were genetically similar. The obtained results indicated the need for molecular and phenotypic methodologies to properly characterize bacteriocinogenic LAB, as well as the potential use of these cultures as tools to provide food safety.

This study developed and validated a method for moisture determination in artisanal Minas cheese, using near-infrared spectroscopy and partial-least-squares. The model robustness was assured by broad sample diversity, real conditions of routine analysis, variable selection, outlier detection and analytical validation. The model was built from 28.5-55.5% w/w, with a root-mean-square-error-of-prediction of 1.6%. After its adoption, the method stability was confirmed over a period of two years through the development of a control chart. Besides this specific method, the present study sought to provide an example multivariate metrological methodology with potential for application in several areas, including new aspects, such as more stringent evaluation of the linearity of multivariate methods.

Pesquisou-se a ocorrência de Escherichia coli toxigênica, em queijo produzido com leite não pasteurizado, na Região Centro Oeste do Brazil. Foram utilizados 50 queijos adquiridos em diferentes supermercados. As amostras isoladas foram classificadas por sorogrupo, avaliadas em relação à sensibilidade para 13 agentes antimicrobianos e submetidas à reação em cadeia da polimerase para a presença de genes característicos de E. coli verotoxigênica (VTEC) e enterotoxigênica (ETEC). E. coli foi recuperada em 48(96,0%) dos queijos. Foram identificados os sorogrupos O125 (6,0%), O111 (4,0%), O55 (2,0%) e O119 (2,0%). Três (6,0%) amostras de E. coli foram classificadas como VTEC e uma (2,0%) como ETEC. Os maiores índices de resistência foram verificados para: cefalotina (60,0%), ácido nalidíxico (40,0%), doxiciclina (33,0%), tetraciclina (31,0%) e ampicilina (29,0%).

A floristic study of the family Apocynaceae im Poços de Caldas was carried out, since the family is well represented in the region and many species have phytochermical and ornamental value. The family is represented by 17 species distributed in 8 genera: Aspidosperma Mart e Zucc., Condylocarpon Desf., Forsteronia G.F.W. Mey., Macrosiphonia Muell. Arg., Mandevilla Lindl., Peltastes R.E. Woodson, Prestonia R. Br. and Rauvolfia L.

This work is a floristic survey of arboreous and climbing shrub taxa of Papilionoideae in a semideciduos forest at Parque Estadual do Rio Doce, eastern Minas Gerais State. Field work was carried out from April/1998 to May/1999, when montly visits were conducted to collect botanical material along trails and of the main road. The floristic survey resulted in 22 taxa belonging to eight genera. An identification key, descriptions, illustrations and comments on the analyzed taxa are presented.

In the present study, composition, functional properties and sensory characteristics of Mozzarella cheese produced from milk with somatic cell counts (SCC) at low (<200,000 cells/mL), intermediate (≈400,000 cells/mL) and high (>800,000 cells/mL) levels were investigated. Three batches of cheese were produced for each SCC category. The cheeses were vacuum packed in plastic bags and analysed after 2, 9, 16, 23 and 30 days of storage at 4ºC. SCC level did not affect the moisture, fat, total protein and ash content, mesophilic and psychrotrophic bacteria, and sensory parameters of Mozzarella cheese. However, meltability increased in cheese manufactured from high SCC milk. Results indicated that raw milk used to produce Mozzarella cheese should not contain high SCC (>800,000 cells/mL) in order to avoid changes in the functional properties of the Mozzarella cheese.

Rock art paintings from Abrigo do Janelão (Minas Gerais, Brazil) were non-destructively investigated by Raman Microscopy, aiming at the identification of materials used, their interaction and degradation. This technique is particularly tailored for heterogeneous samples and allows unequivocal identification of the substances present in the investigated sample. Pigments, were identified together with products of microbiological degradation; no binders were detected. White pigment was identified as calcite (CaCO3), whereas charcoal was used as black, goethite (α-FeOOH) as yellow and hematite (α-Fe2O3) as red. Whewellite (CaC2O4.H2O) and weddelite (CaC2O4.2H2O) were detected and their origin was assigned to degradation products from microbiological activity.

The present study investigated the infection by spotted fever rickettsia in an endemic area for Brazilian spotted fever (BSF; caused by Rickettsia rickettsii) in Minas Gerais State, Brazil. Human, canine and equine sera samples, and Amblyomma cajennense adult ticks collected in a rural area of Itabira City, Minas Gerais State were tested for rickettsial infection. Through Immunofluorescence Assay (IFA) we demonstrated the presence of antibodies anti-R. rickettsii in 8.2%, 81.3% and 100% of the human, canine and equine sera, respectively. None of the 356 tick specimens analyzed were positive for Rickettsia by the hemolymph test or Polymerase Chain Reaction technique (PCR) for the htrA and the gltA genes. Our serological results on horses and dogs (sentinels for BSF) appoint for the circulation of a SFG Rickettsia in the study area, however in a very low infection rate among the A. cajennense tick population.

Realizou-se um estudo para caracterizar a situação epidemiológica da brucelose bovina no Estado de Minas Gerais. O Estado foi estratificado em sete circuitos produtores. Em cada circuito foram amostradas aleatoriamente cerca de 300 propriedades e, dentro dessas, foi escolhido, de forma aleatória, um número pré-estabelecido de animais, dos quais foi obtida uma amostra de sangue. No total, foram amostrados 20.643 animais, provenientes de 2.204 propriedades. Em cada propriedade visitada aplicou-se um questionário epidemiológico para verificar o tipo de exploração e as práticas zootécnicas e sanitárias que poderiam estar associadas ao risco de infecção pela doença. O protocolo de testes utilizado foi o da triagem com o teste do antígeno acidificado tamponado e a confirmação dos positivos com o teste do 2-mercaptoetanol. O rebanho foi considerado positivo, se pelo menos um animal foi reagente às duas provas sorológicas. As prevalências de focos e de animais infectados do Estado foram de 6,0% [5,0-7,1%] e 1,1% [0,78-1,4%], respectivamente. Os resultados para os circuitos pecuários da prevalência de focos e de animais foram: circuito 1, 4,7% [2,7-7,7%] e 0,82% [0,06-1,6%]; circuito 2, 7,2% [4,6-10,6%] e 1,2% [0,53-1,8%]; circuito 3, 6,8% [4,3-10,0%] e 1,5% [0,47-2,4%]; circuito 4, 6,5% [4,1-9,8%] e 1,1% [0,39-1,7%]; circuito 5, 3,8% [2,0-6,5%] e 0,40% [0,11-0,69%]; circuito 6, 6,2% [3,8-9,6%] e 0,66% [0,29-1,0%]; circuito 7, 11,0% [7,7-15,0%] e 1,7% [0,92-2,6%], respectivamente. Os fatores de risco (odds ratio, OR) associados à condição de foco foram: compra de reprodutores (OR = 1,66 [1,13-2,44]), ocorrência de aborto nos últimos 12 meses (OR = 1,81 [1,26-2,60]) e presença de cervídeos na propriedade (OR = 1,56 [1,08-2,27]). A vacinação contra brucelose foi identificada como fator protetor (OR = 0,38 [0,19-0,79]). Concluiu-se que o programa obrigatório de vacinação de bezerras, iniciado na década de 1990, está sendo eficaz ao reduzir a prevalência em todo o Estado e em todos os sistemas de produção animal. As autoridades sanitárias devem priorizar o controle da compra de animais para reprodução, que não apresentem garantias sanitárias e incorporar essa medida às ações de educativas.

Yoghurt consumption has been increasing since 1980 decade due to the search for healthy foods by consumers, including Brazil. In order to evaluate the quality of the yoghurt commercialized in Vicosa, Minas Gerais, Brazil, 36 samples were collected from markets and analyzed for coliforms (total and thermotolerant) and lactic acid bacteria (LAB) enumeration and pH, considering different times for expiration. Coliforms were not detected at levels higher than 0.3 MPN/g, and only 7 (19.4%) samples showed LAB counts lower than 10(7) CFU/g. However, the mean pH observed in these samples (4.4) was not significantly different when compared to samples with higher LAB counts, suggesting addition of weak starter cultures during the processing. In the samples with less than 15 days for expiration the LAB counts and pH values were 7.4 log CFU/g and 4.1, respectively, and they were lower when compared to samples with more than 16 days of commercial viability, but without significant differences. The obtained results indicate adequate quality of yoghurt commercialized in Vicosa.

We describe and illustrate the new species Paepalanthus bonsai Trovo & Sano (Eriocaulaceae, Pacpalanthoideae) from the Espinhaco Range in Minas Gerais, Brazil. This species is placed in Paepalanthus Martius subsect. Dichocladus Ruhland due to its dicholoniously branched stem with rigid linear leaves. The new species is compared with the sympairic and morphologically similar species P. glaziovii Ruhland.
