The rise of extended-spectrum beta-lactamase (ESBL)-producing Escherichia coli in food-producing animals is a growing concern for public health. We investigated ESBL producers isolated from broiler chickens in Brazil and characterized 19 CTX-M-2-producing E.coli. The ISCR1 was detected upstream of the chromosome-located gene bla(CTX-M-2), associated with sul-1 type integron structure. CTX-M-2-producing E.coli exhibited different PFGE-types and phylogenetic groups, showing a non-clonal dissemination. The sequence types found (ST93, ST155 and ST2309) have been associated with humans and animals worldwide. Herein, we report the chromosomal location of bla(CTX-M-2) on E.coli, highlighting the risks of multidrug-resistant bacteria in food-producing animals.

Aim: To evaluate the use of organic acids (OAs) and competitive exclusion (CE) product administered continuously in the feed and transiently in drinking water on the control of Salmonella enterica subspecie enterica serotype Enteritidis (SE) prior to slaughter.Methods and Results: The influence of treatments were evaluated on pH, population of the lactic acid bacteria (LAB) and bacteria of the family Enterobacteriaceae, concentration of volatile fatty acids and SE colonization in the crop and caecum. The birds were challenged with SE 24 h before being slaughtered, and then, the caeca and crop were removed and subjected to SE counts. Continuous administration of OAs reduced the population of bacteria from the Enterobacteriaceae family in both crop and caecum, positively influenced the butyric acid concentration and reduced SE colonization in the caecum. The diet supplemented with CE product positively influenced the quantity of LAB in the crop and caecum, elevated the butyric acid concentration and reduced both Enterobacteriaceae quantity and SE colonization in the caecum. There was no effect from administering the treatments via drinking water on the variables measured.Conclusions: Continuous supplementation in feed with OAs and CE product reduced SE colonization of the caeca.Significance and Impact of the Study: Supplementation of OAs and CE product in diet to turkeys can reduce the SE load, potentially leading to a lower contamination risk of meat during slaughter.

Biological processes are complex and possess emergent properties that can not be explained or predict by reductionism methods. To overcome the limitations of reductionism, researchers have been used a group of methods known as systems biology, a new interdisciplinary eld of study aiming to understand the non-linear interactions among components embedded in biological processes. These interactions can be represented by a mathematical object called graph or network, where the elements are represented by nodes and the interactions by edges that link pair of nodes. The networks can be classi- ed according to their topologies: if node degrees follow a Poisson distribution in a given network, i.e. most nodes have approximately the same number of links, this is a random network; if node degrees follow a power-law distribution in a given network, i.e. small number of high-degree nodes and high number of low-degree nodes, this is a scale-free network. Moreover, networks can be classi ed as hierarchical or non-hierarchical. In this study, we analised Escherichia coli and Saccharomyces cerevisiae integrated molecular networks, which have protein-protein interaction, metabolic and transcriptional regulation interactions. By using computational methods, such as MathematicaR , and data collected from public databases, we calculated four topological parameters: the degree distribution P(k), the clustering coe cient C(k), the closeness centrality CC(k) and the betweenness centrality CB(k). P(k) is a function that calculates the total number of nodes with k degree connection and is used to classify the network as random or scale-free. C(k) shows if a network is hierarchical, i.e. if the clusterization coe cient depends on node degree. The reducionism method has helped in the clari cation of functioning of many biological process. However, such process are extremely complex and have emergent properties that can not be explained or even predicted by reducionism methods. To overcome these limits, researchers have been used a set of methods known as systems biology, a new area of biology aiming to understand the interactions between the multiple components of biological processes. These interactions can be represented by a mathematical object called graph or network, where the interacting elements are represented by a vertex and the interactions by edges that connect a pair of vertexes. Into graphs it is possible to nd subgraphs, occurring in complex networks at numbers that are signi cantly higher than those in randomized networks, they are de ned as motifs. As motifs in biological networks may represent the structural units of biological processess, their detection is important. Therefore, the aim of this present work was detect, count and classify motifs present in biological integrated networks of bacteria Escherichia coli and yeast Saccharomyces cere- visiae. For this purpose, we implemented codes in MathematicaR and Python environments for detecting, counting and classifying motifs in these networks. The composition and types of motifs detected in these integrated networks indicate that such networks are organized in three main bridged modules composed by motifs in which edges are all the same type. The eggs are pointed in several studies as the main cause of human salmonellosis. Have been identified that eggs are eaten raw or poorly processed are mainly responsible for outbreaks of human infection with Salmonella spp. Besides causing problems to public health, the presence of bacteria impedes or hinders the international food trade, as a sanitary barrier. Several factors predisposing to contamination of the internal contents of eggs for Salmonella spp., including the egg shell quality (shell quality), which is related to levels of calcium (Ca) and phosphorus (P) in the diet of quails . The experiment used eggs of Japanese quail under different diets containing two levels of Ca (2.0 and 3.5%) and two levels of available P (0.25 and 0.45%). Eggs of 120 japanese quails were divided into four treatments with three replicates. The experiment was divided into three production stages: initial, intermediate and final. Were assessed at each stage the presence of bacteria in internal and external content of experimentally contaminated eggs during periods of 0, 24, 96 and 168 hours after immersion in broth containing Salmonella Enteriditis. Salmonella Enteriditis was detected in the shell during all periods of storage, in decreasing amounts in all treatments. None of the treatments within the three production stages analyzed, we detected significant amounts of the bacteria inside the egg, in our experimental conditions. Therefore, the levels of Ca and P in the diets of quail do not determine higher or lower risks to public health represented by eggs

Escherichia coli é uma bactéria Gram-negativa, pertencente à família Enterobacteriaceae, que habita o intestino de animais de sangue quente, com 90% sendo comensais para o ser humano e 10% patogênicas. Quando presente em alimentos esse grupo é considerado um bom indicador higiênico-sanitário de alimentos. Em alimentos, a cepa patogênica mais estudada é E. coli produtora de toxina de Shiga (STEC) O157:H7. Entretanto, muitos casos vêm ocorrendo em todo o mundo devido a cepas patogênicas não O157, como O103, O111, O145 e O26. As STECs são responsáveis por desde uma simples diarréia até diarréia sanguinolenta que pode evoluir ainda para síndrome hemolítica urêmica e púrpura trombótica trombocitopênica, que podem ocasionar danos crônicos como falência renal. A transmissão destas cepas se deve a carnes mal cozidas, leites e derivados não pasteurizados, água e vegetais contaminados. Uma característica interessante de E. coli O157:H7 é o seu mecanismo de resistência ao estresse ácido – ácido tolerância – de modo que os alimentos ácidos não podem mais ser considerados seguros contra tais organismos. A fim de ampliar o conhecimento acerca das cepas não O157 e dos mecanismos de ácido resistência, este trabalho teve por objetivo verificar o comportamento de linhagens de STEC não O157:H7 submetidas às condições de estresse de baixo pH utilizando para tanto meios de cultura acidificados e polpas de frutas como matriz alimentar. Constatou-se que quando mantidas em condições-controle e as ácido-adaptadas mantêm populações da ordem de 2 a 3 log UFC/mL quando em polpas de frutas sabor cajá (pH 2,3) e tamarindo (pH 2,3) armazenadas a 4 C por até 30 dias

Escherichia coli O157:H7 is a foodborne pathogen associated with enteritis in humans, ranging from a mild to bloody diarrhea to hemolytic uremic syndrome, thrombotic thrombocytopenic purpura and even death. Large E. coli O157:H7 outbreaks have been reported worldwide and are frequently associated with consumption of undercooked beef. Cattle are a major reservoir of the pathogen, which is found in the intestinal tract of the animal. The carcasses can be contaminated with feces during the slaughter and production process. Ground beef remains the most common vehicle. The purpose of this study was to determine the E. coli O157:H7 importance associated to human illness and productivity losses to the meat industry, as well as identifying mechanisms of contamination related to beef and strategies to improve the safety of beef products

A Doença Inflamatória Intestinal (DII) engloba um grupo de processos inflamatórios crônicos de causas não conhecidas. Duas formas clínicas da DII são reconhecidas atualmente: a Retocolite Ulcerativa (RU) e a Doença de Crohn (DC). Foram isoladas de 348 amostras, dos quais 17 foram diagnosticados com com DC, e 40 com RU. Os 41 restantes apresentavam outras patologias e compreenderam o grupo controle. Entre as amostras que apresentaram adesão positiva, 110 delas apresentaram padrão de Adesão Agregativa (AA) e 19 apresentaram padrão de Adesão Difusa (AD). A cepa, DII/013, apresentou o padrão de adesão agregativo e invisibilidade média 18 vezes superior à cepa da EIEC. Quando observada ao microscópio eletrônico, bactérias intracelulares foram detectadas na amostra. Assim, a maioria das amostras apresentaram padrão de adesão agregativo, indicando juntamente com estudos anteriores, que esse padrão teria uma possível relação com a patogenicidade da bactéria em relação a DII
