The response of the tropical ocean to global climate change and the extent of sea ice in the glacial nordic seas belong to the great controversies in paleoclimatology. Our new reconstruction of peak glacial sea surface temperatures (SSTs) in the Atlantic is based on census counts of planktic foraminifera, using the Maximum Similarity Technique Version 28 (SIMMAX-28) modern analog technique with 947 modern analog samples and 119 well-dated sediment cores. Our study compares two slightly different scenarios of the Last Glacial Maximum (LGM), the Environmental Processes of the Ice Age: Land, Oceans, Glaciers (EPILOG), and Glacial Atlantic Ocean Mapping (GLAMAP 2000) time slices. The comparison shows that the maximum LGM cooling in the Southern Hemisphere slightly preceeded that in the north. In both time slices sea ice was restricted to the north western margin of the nordic seas during glacial northern summer, while the central and eastern parts were ice-free. During northern glacial winter, sea ice advanced to the south of Iceland and Faeroe. In the central northern North Atlantic an anticyclonic gyre formed between 45° and 60°N, with a cool water mass centered west of Ireland, where glacial cooling reached a maximum of >12°C. In the subtropical ocean gyres the new reconstruction supports the glacial-to-interglacial stability of SST as shown by CLIMAP Project Members (CLIMAP) [1981]. The zonal belt of minimum SST seasonality between 2° and 6°N suggests that the LGM caloric equator occupied the same latitude as today. In contrast to the CLIMAP reconstruction, the glacial cooling of the tropical east Atlantic upwelling belt reached up to 6°-8°C during Northern Hemisphere summer. Differences between these SIMMAX-based and published U37[k]- and Mg/Ca-based equatorial SST records are ascribed to strong SST seasonalities and SST signals that were produced by different planktic species groups during different seasons.

Extensive investigations of sedimentary barium were performed in the southern South Atlantic in order to assess the reliability of the barium signal in Antarctic sediments as a proxy for paleoproductivity. Maximum accumulation rates of excess barium were calculated for the Antarctic zone south of the polar front where silica accumulates at high rates. The correspondence between barium and opal supports the applicability of barium as a proxy for productivity. Within the Antarctic zone north of today's average sea ice maximum, interglacial vertical rain rates of excess barium are high, with a maximum occurring during the last deglaciation and early Holocene and during oxygen isotope chronozone 5.5. During these periods, the maximum silica accumulation was supposedly located south of the polar front. Glacial paleoproductivity, instead, was low within the Antarctic zone. North of the polar front, significantly higher barium accumulation occurs during glacial times. The vertical rain rates, however, are as high as in the glacial Antarctic zone. Therefore there was no evidence for an increased productivity in the glacial Southern Ocean.

Absolute abundances (concentrations) of dinoflagellate cysts are often determined through the addition of Lycopodium clavatum marker-grains as a spike to a sample before palynological processing. An inter-laboratory calibration exercise was set up in order to test the comparability of results obtained in different laboratories, each using its own preparation method. Each of the 23 laboratories received the same amount of homogenized splits of four Quaternary sediment samples. The samples originate from different localities and consisted of a variety of lithologies. Dinoflagellate cysts were extracted and counted, and relative and absolute abundances were calculated. The relative abundances proved to be fairly reproducible, notwithstanding a need for taxonomic calibration. By contrast, excessive loss of Lycopodium spores during sample preparation resulted in non-reproducibility of absolute abundances. Use of oxidation, KOH, warm acids, acetolysis, mesh sizes larger than 15 µm and long ultrasonication (> 1 min) must be avoided to determine reproducible absolute abundances. The results of this work therefore indicate that the dinoflagellate cyst worker should make a choice between using the proposed standard method which circumvents critical steps, adding Lycopodium tablets at the end of the preparation and using an alternative method.

The quantitative diatom analysis of 218 surface sediment samples recovered in the Atlantic and western Indian sector of the Southern Ocean is used to define a base of reference data for paleotemperature estimations from diatom assemblages using the Imbrie and Kipp transfer function method. The criteria which justify the exclusion of samples and species out of the raw data set in order to define a reference database are outlined and discussed. Sensitivity tests with eight data sets were achieved evaluating the effects of overall dominance of single species, different methods of species abundance ranking, and no-analog conditions (e.g., Eucampia Antarctica) on the estimated paleotemperatures. The defined transfer functions were applied on a sediment core from the northern Antarctic zone. Overall dominance of Fragilariopsis kerguelensis in the diatom assemblages resulted in a close affinity between paleotemperature curve and relative abundance pattern of this species downcore. Logarithmic conversion of counting data applied with other ranking methods in order to compensate the dominance of F. kerguelensis revealed the best statistical results. A reliable diatom transfer function for future paleotemperature estimations is presented.

A set of 114 samples from the sediment surface of the Atlantic, eastern Pacific and western Indian sectors of the Southern Ocean has been analyzed for 230Th and biogenic silica. Maps of opal content, Th-normalized mass flux, and Th-normalized biogenic opal flux into the sediment have been derived. Significant differences in sedimentation patterns between the regions can be detected. The mean bulk vertical fluxes integrated into the sediment in the open Southern Ocean are found in a narrow range from 2.9 g/m**2 yr (Eastern Weddell Gyre) to 15.8 g/m**2 yr (Indian sector), setting upper and lower limits to the vertically received fraction of open ocean sediments. The silica flux to sediments of the Atlantic sector of the Southern Ocean is found to be 4.2 ± 1.4 * 10**11 mol/yr, just one half of the last estimate. This adjustment represents 6% of the output term in the global marine silica budget.

Between December 1996 and February 1997, weaned pups and postmoult female southern elephant seals (Mirounga leonina) were fitted with satellite transmitters at King George Island (South Shetlands). Of the nine adult females tracked for more than two months, three stayed in a localized area between the South Shetlands and the South Orkneys. The other six females travelled southwest along the coast of the Antarctic Peninsula up to the Bellingshausen Sea. Two of them then moved far northeast and hauled out on South Georgia in October. One female was last located north of the South Shetlands in March 1998. In total, eight females were again sighted on King George Island and six of the transmitters removed. The tracks of the weaners contrasted with those of the adults. In January, five juveniles left King George Island for the Pacific sector ranging about four weeks in the open sea west of the De Gerlache Seamounts. Three of them returned to the tip of the Antarctic Peninsula in June, of which one was last located on the Patagonian Shelf in November 1997. A computer animation was developed to visualize the animal movements in relation to the extent and concentration of sea ice. The juveniles avoided sea ice while the adults did not. The latter displayed behavioural differences in using the pack ice habitat during winter. Some females adjusted their movement patterns to the pulsating sea ice fringe in far-distant foraging areas while others ranged in closed pack ice of up to 100 %. The feeding grounds of adult female elephant seals are more closely associated with the pack ice zone than previously assumed.

The surface layer of bottom sediments on the Barents Sea shelf has an irregular but generally very low abundance of diatoms. Tests of species belonging to present-day diatom flora were absent in nearly half of samples; their abundance was only a few shells per gram of dry sediment in 30% of the samples, it was up to 100 shells per gram in 9% of the samples, and was in thousands of shells per gram in only 13% of the samples. The lowest abundances of diatom shells were found in sediments of the eastern and northeastern parts of the sea owing to unfavorable sedimentation conditions and deficiency of dissolved silica in water. But distribution of diatom species on the surface of bottom sediments is strictly consistent with their present-day ranges. About 30% of the samples contained re-deposited Cretaceous and Paleogene diatoms indicating that bottom sediments have largely formed by scouring and re-deposition of underlying material.

Planktic foraminifers Neogloboquadrina pachyderma (sin.) from 87 eastern and central Arctic Ocean surface sediment samples were analyzed for stable oxygen and carbon isotope composition. Additional results from 52 stations were taken from the literature. The lateral distribution of delta18O (18O/16O) values in the Arctic Ocean reveals a pattern of roughly parallel, W-E stretching zones in the Eurasian Basin, each ~0.5 per mil wide on the delta18O scale. The low horizontal and vertical temperature variability in the Arctic halocline waters (0-100 m) suggests only little influence of temperature on the oxygen isotope distribution of N. pachyderma (sin.). The zone of maximum delta18O values of up to 3.8 per mil is situated in the southern Nansen Basin and relates to the tongue of saline (> 33%.) Atlantic waters entering the Arctic Ocean through the Fram Strait. delta18O values decrease both to the Barents Shelf and to the North Pole, in accordance with the decreasing salinities of the halocline waters. In the Nansen Basin, a strong N-S delta18O gradient is in contrast with a relatively low salinity change and suggests contributions from different freshwater sources, i.e. salinity reduction from sea ice meltwater in the south and from light isotope waters (meteoric precipitation and river-runoff) in the northern part of the basin. North of the Gakkel Ridge, delta18O and salinity gradients are in good accordance and suggest less influence of sea ice melting processes. The delta13C (13C/12C) values of N. pachyderma (sin.) from Arctic Ocean surface sediment samples are generally high (0.75-0.95 per mil). Lower values in the southern Eurasian Basin appear to be related to the intrusion of Atlantic waters. The high delta13C values are evidence for well ventilated surface waters. Because the perennial Arctic sea ice cover largely prevents atmosphere-ocean gas exchange, ventilation on the seasonally open shelves must be of major importance. Lack of delta13C gradients along the main routes of the ice drift from the Siberian shelves to the Fram Strait suggests that primary production (i.e. CO2 consumption) does probably not change the CO2 budget of the Arctic Ocean significantly.

We present 30 new planktonic foraminiferal census data of surface sediment samples from the South China Sea, recovered between 630 and 2883 m water depth. These new data, together with the 131 earlier published data sets from the western Pacific, are used for calibrating the SIMMAX-28 transfer function to estimate past sea-surface temperatures. This regional SIMMAX method offers a slightly better understanding of the marginal sea conditions of the South China Sea than the linear transfer function FP-12E, which is based only on open-ocean data. However, both methods are biased toward the tropical temperature regime because of the very limited data from temperate to subpolar regions. The SIMMAX formula was applied to sediment core 17940 from the northeastern South China Sea, with sedimentation rates of 20-80 cm/ka. Results revealed nearly unchanged summer temperatures around 28°C for the last 30 ky, while winter temperatures varied between 19.5°C in the last glacial maximum and 26°C during the Holocene. During Termination 1A, the winter estimates show a Younger Dryas cooling by 3°C subsequent to a temperature optimum of 24°C during the Bölling=Alleröd. Estimates of winter temperature differences between 0 and 100 m water depth document the seasonal variations in the thickness of the mixed layer and provide a new proxy for estimating past changes in the strength of the winter monsoon.

The presence of a di-unsaturated highly branched isoprenoid (HBI) lipid biomarker (diene II) in Southern Ocean sediments has previously been proposed as a proxy measure of palaeo Antarctic sea ice. Here we show that a source of diene II is the sympagic diatom Berkeleya adeliensis Medlin. Furthermore, the propensity for B. adeliensis to flourish in platelet ice is reflected by an offshore downward gradient in diene II concentration in >100 surface sediments from Antarctic coastal and near-coastal environments. Since platelet ice formation is strongly associated with super-cooled freshwater inflow, we further hypothesize that sedimentary diene II provides a potentially sensitive proxy indicator of landfast sea ice influenced by meltwater discharge from nearby glaciers and ice shelves, and re-examination of some previous diene II downcore records supports this hypothesis. The term IPSO25-Ice Proxy for the Southern Ocean with 25 carbon atoms-is proposed as a proxy name for diene II.

Based on the quantitative study of diatoms and radiolarians, summer sea-surface temperature (SSST) and sea ice distribution were estimated from 122 sediment core localities in the Atlantic, Indian and Pacific sectors of the Southern Ocean to reconstruct the last glacial environment at the EPILOG (19.5-16.0 ka or 23 000-19 000 cal yr. B.P.) time-slice. The statistical methods applied include the Imbrie and Kipp Method, the Modern Analog Technique and the General Additive Model. Summer SSTs reveal greater surface-water cooling than reconstructed by CLIMAP (Geol. Soc. Am. Map Chart. Ser. MC-36 (1981) 1), reaching a maximum (4-5 °C) in the present Subantarctic Zone of the Atlantic and Indian sector. The reconstruction of maximum winter sea ice (WSI) extent is in accordance with CLIMAP, showing an expansion of the WSI field by around 100% compared to the present. Although only limited information is available, the data clearly show that CLIMAP strongly overestimated the glacial summer sea ice extent. As a result of the northward expansion of Antarctic cold waters by 5-10° in latitude and a relatively small displacement of the Subtropical Front, thermal gradients were steepened during the last glacial in the northern zone of the Southern Ocean. Such reconstruction may, however, be inapposite for the Pacific sector. The few data available indicate reduced cooling in the southern Pacific and give suggestion for a non-uniform cooling of the glacial Southern Ocean.

The objectives of this thesis were to (i) study the effect of increasing protein concentration in milk protein concentrate (MPC) powders on surface composition and sorption properties; (ii) examine the effect of increasing protein content on the rehydration properties of MPC; (iii) study the physicochemical properties of spraydried emulsion-containing powders having different water and oil contents; (iv) analyse the effect of protein type on water sorption and diffusivity properties in a protein/lactose dispersion, and; (v) characterise lactose crystallisation and emulsion stability of model infant formula containing intact or hydrolysed whey proteins. Surface composition of MPC powders (protein contents 35 - 86 g / 100 g) indicated that fat and protein were preferentially located on the surface of powders. Low protein powder (35 g / 100 g) exhibited lactose crystallisation, whereas powders with higher protein contents did not, due to their high protein: lactose ratio. Insolubility was evident in high protein MPCs and was primarily related to insolubility of the casein fraction. High temperature (50 °C) was required for dissolution of high protein MPCs (protein content > 60 g / 100 g). The effect of different oil types and spray-drying outlet temperature on the physicochemical properties of the resultant fat-filled powders was investigated and showed that increasing outlet temperature reduced water content, water activity and tapped bulk density, irrespective of oil type, and increased solvent-extractable free fat for all oil types and onset of glass transition (Tg) and crystallisation (Tcr) temperature. Powder dispersions of protein/lactose (0.21:1), containing either intact or hydrolysed whey protein (12 % degree of hydrolysis; DH), were spray-dried at pilot scale. Moisture sorption analysis at 25 °C showed that dispersions containing intact whey protein exhibited lactose crystallisation at a lower relative humidity (RH). Dispersions containing hydrolysed whey protein had significantly higher (P < 0.05) water diffusivity. Finally, a spray-dried model infant formula was produced containing hydrolysed or intact whey as the protein with sunflower oil as the fat source. Reconstituted, hydrolysed formula had a significantly (P < 0.05) higher fat globule size and lower emulsion stability than intact formula. Lactose crystallisation in powders occurred at higher RH for hydrolysed formula. In conclusion, this research has shown the effect of altering the protein type, protein composition, and oil type on the surface composition and physical properties of different dairy powders, and how these variations greatly affect their rehydration characteristics and storage stability.
