In assessing the quality of cosmetics, sensory analysis has an undisputed role as a tool of scientific measurement, since no analytical tool is capable of replacing the human senses. In product development, sensory analysis is a uniquely useful tool to measure consumer acceptance. The objective of this paper is to present a critical review of the issue based on published papers and sensory test results obtained by our research group, which can assist cosmetics development.

O objetivo deste trabalho foi avaliar sensorialmente o mapará in natura e com pré-tratamento osmótico antes da secagem. Para o teste de aceitabilidade do bolinho de músculo de mapará, foram utilizados peixes in natura e desidratados osmoticamente, nas melhores condições de processo, em soluções de NaCl, NaCl + sacarose e em solução de NaCl + xarope de milho e secos. Foram utilizados 25 provadores não treinados, de ambos os sexos, com idade variando de 20 a 60 anos. Os atributos sensoriais avaliados foram aparência, aroma, sabor, textura e impressão global. O aroma e a textura das amostras com e sem pré-tratamento osmótico foram os atributos que obtiveram maior aceitação por parte dos consumidores. Pôde-se concluir que as amostras tratadas com soluções osmóticas, com exceção das tratadas com solução de NaCl + xarope de milho, proporcionaram produtos com textura, sabor e aroma mais agradáveis.

This research had as objective to evaluate the effect of extrusion temperature and screw speed on physical and rheological properties, as well as, the sensory acceptance of cassava and passion fruit snacks produced in single-screw extruder. A central composite design with 11 treatments was used, considering as dependent variables: expansion index (EI), specific volume (SV), water solubility index (WSI), water absorption index (WAI), color (L*, a*, b*) and pasting properties (RVA). The products were flavored and analyzed for global acceptance. The results showed significant effects of temperature and screw speed on the dependent variables. The chocolate flavored snacks obtained good acceptance.

In this work were prepared with three ice cream added peppers of different varieties: Capsicum baccatum, Capsicum annuum and Capsicum frutescens. The peppers were first pasteurized and evaluated in relation to the effect of heat treatment on the ascorbic acid content. Results showed that the Capsicum annuum showed higher ascorbic acid content, but the heat treatment resulted in greater loss of biocompounds. The higher retention of ascorbic acid was observed with Capsicum frutescens, which presented lower content of biocompound, but near of the pepper Capsicum annuum. The follow attributes was performed to evaluate the acceptance of ice cream through the sensory attributes: color, aroma, flavor and texture. Analysis of variance showed no significant difference between ice cream formulations at the 5% level of significance with regard to color, aroma and texture. Regarding taste, the samples differed significantly, at 5% significance, and the most preferred was the ice cream made with pepper Capsicum frutescens.

The dulce de leche or milk candy is a food widely consumed in Brazil, which shows typical characteristics of taste, color, flavor and texture. The lady-finger red pepper is regularly present on the Brazilian people table as this product contains a pungent flavor favoring various spices; and it is also rich in ascorbic acid (vitamin C) which is an excellent antioxidant. This study aimed at developing a dulce de leche containing lady-finger red pepper, and to determine the composition of the product. Also, the ascorbic acid contents were quantified in products stored for different periods (0, 30 and 60 days). The product acceptance by consumers on the sensory characteristics was evaluated by means of hedonic scale for color, aroma, flavor and texture attributes. The composition of the product was in accordance with the legislation in force, and the ascorbic acid contents were practically stable during the storage, and the sensory analyses indicated that the red pepper-containing dulce de leche was well accepted.
