The knowledge currently stands as one of the intangible assets of fundamental importance in the competitive market in which it is organizations. Knowledge management has become mandatory in the competitive environment of today, as a tool to systematize knowledge within the organization. Underscoring the importance of this management process, this thesis aimed to identify possible problems and generate recommendations for improving the performance of Knowledge Management. The objective was achieved by conducting the analysis of a case study of a fast-food franchise through a case study in the ground plan of all the franchise restaurants. For the preparation of the case study was required to respect a theoretical review on the introduction of the concepts of knowledge management in fast-food restaurants, in addition to reviewing the theory on the concepts of organizational learning and on Standardization. When finalizing the theoretical review and analyze the case study was proposed recommendations and highlight difficulties and good practice found in the analyzed organization, and procedures for demonstrating the success of knowledge management in organizations

This experimental project focused on a specialization in journalism that is becoming increa-singly present in the media: the gastronomic journalism. The aim was to understand the speci-ficities of segmentation in the news and editorial spreads profile area for deepening the dining experience in contemporary society, considering the contribution of information to maintain proper eating habits and cultural enrichment of the reader. The research involved a literature review and survey of the history of gastronomy and cultural aspects, analysis and reporting framework for the months of August and September 2010 the Food section of the newspaper Folha de S. Paul, Taste of the book, the newspaper O Estado de S. Paul and the Menu maga-zine segment, Publisher of Three in order to identify the presence of aspects related to culture, history, health and nutrition

In this project the Pattern Recognition Problem is approached with the Support Vector Machines (SVM) technique, a binary method of classification that provides the best solution separating the data in the better way with a hiperplan and an extension of the input space dimension, as a Machine Learning solution. The system aims to classify two classes of pixels chosen by the user in the interface in the interest selection phase and in the background selection phase, generating all the data to be used in the LibSVM library, a library that implements the SVM, illustrating the library operation in a casual way. The data provided by the interface is organized in three types, RGB (Red, Green and Blue color system), texture (calculated) or RGB + texture. At last the project showed successful results, where the classification of the image pixels was showed as been from one of the two classes, from the interest selection area or from the background selection area. The simplest user view of results classification is the RGB type of data arrange, because it’s the most concrete way of data acquisition

The aim of this work is to study some of the density estimation tec- niques and to apply to the segmentation of medical images. Medical images are used to help the diagnostic of tumor diseases as well as to plan and deliver treatment. A computer image is an array of values representing colors in some scale. The smallest element of the image to which it is possible to assign a value is called pixel. Segmen- tation is the process of dividing the image in portions through the classi¯cation of each pixel. The simplest way of classi¯cation is by thresholding, given the number of portions and the threshold values. Another method is constructing a histogram of the pixel values and assign a portion to each pike. The threshold is the mean between two pikes. As the histogram does not form a smooth curve it is di±cult to discern between true pikes and random variation. Density estimation methods allow the estimation of a smooth curve. Image data can be considered as mixture of different densities. In this project parametric and nonparametric methods for density estimation will be addressed and some of them are applied to CT image data

Composting is considered a process that enables adding value to organic solid waste turning them into organic fertilizer. In this process, factors such as mishandling the windrow, failed to control the temperature, aeration and moisture content will result in the quality of waste decomposition, and thus affect the quality of the final compound. Decentralized systems such as home composting, composting in restaurants, food courts and schools are one of the solutions for valuing these waste in a non expensive way and with greater quality. For this purpose, the project aims to analyze the conditions for composting of solid waste of the University Restaurant of Rio Claro- SP, through two different composting systems: manual revolving windrow and static pile. It was found that in University Restaurant (RU) on average 33% by weight of the total waste generated in the property are capable of composting. In this sense, in order to investigate the preliminary process operation parameters were mounted one manual windrow composed of 100% of the UR waste and a static pile composed of 60% of the UR waste and 40% of pruning and grass residues (PG). This study analyzed the manual revolving windrow and static pile systems for the parameters: moisture content, pH, C / N ratio and temperature. The study of the proportions of the PG and UR waste pointed to the need for pruning and grass residues addition for composting, considering that the manual revolving windrow composed by 100% of the UR waste had no satisfactory performance due to low temperatures measured during 60 days analysis. The best ratio for manual revolving windrow method analyzed in this study was 60% of the UR waste and 40% of PG waste, in dry weight. From this proportion a static pile was assembled, composed of 60% of UR waste e 40% of PG waste from the maintenance activities of the green area of the university. Collective food services have been increasing worldwide, and the self-service restaurant has been the current preference by consumers. Considering the importance of hygienic quality of food, the microbiological composition of ready-to-eat food was assessed. In the second semester of 2008, 20 samples of meals, mainly meat-based foods, were collected from different self-service restaurants in Araçatuba city, SP. Bacteriological analyses were performed following the conventional methodologies, and the results were compared with the standards established by the effective Brazilian legislation. Coliforms at 35ºC were detected in 90% of analyzed samples. Coliforms at 45°C were found in 55% of the samples and, among these, in 63.63%, the occurrence of Escherichia coli was confirmed. Coagulase-positive staphylococci were detected in 10% of samples and no sample showed Salmonella spp. or Bacillus cereus contamination. Sulfite reducing clostridia at 42o C were not investigated in this study. These findings indicate the need for a rigorous approach for improving the sanitary conditions during preparation and presentation of ready-to-eat food, as the consumption of contaminated products represents a potential risk to public health.

The objective of this work was to verify the rational use of energy in restaurants of the city Botucatu, that apply the Good Manufacturing of Production (GMP). Ten restaurants were appraised regarding the number of meals and energy consumption. A check list of the sanitary surveillance was also applied, regarding just the related items to electric installation, ventilation, and equipment maintenance, that are related to the energy consumption. It was asked and observed if there were some program or orientation for conscious consumption or reduction of the energy consumption. The energy consumption of the restaurants was positively related to the number of served meals and operation time of the establishment. In none of the visited establishments it was observed the control measures of the energy consumption, neither cooling equipments of low energy consumption.

Many rural communities are experiencing population decline. However, rural residents have continued to show a strong attachment to their communities. How do rural Nebraskans feel about their community? Are they satisfied with the services provided? Do they own their home? What is the condition of their home? This report details 2,851 responses to the 2005 Nebraska Rural Poll, the tenth annual effort to understand rural Nebraskans’ perceptions. Respondents were asked a series of questions about their community and housing. Trends for some of these questions are examined by comparing data from the nine previous polls to this year’s results. For all questions, comparisons are made among different respondent subgroups, that is, comparisons by age, occupation, region, etc. Based on these analyses, some key findings emerged: Rural Nebraskans’ views of the change in their community are similar to those expressed last year. This year, 28 percent believe their community has changed for the better, compared to 26 percent last year. And, in 2005, only 20 percent think their community has changed for the worse, compared to 22 percent last year. The proportion of expected movers who plan to leave the state decreased this year. Last year, 56 percent of the persons planning to move from their community expected to leave the state. That proportion decreased to 47 percent this year. Rural Nebraskans living in or near the largest communities are more likely than persons living in or near the smaller communities to say their community has changed for the better. Thirty-nine percent of persons living in or near communities with populations of 10,000 or more believe their community has changed for the better during the past year, but only 15 percent of persons living in or near communities with less than 500 people share this opinion. The community services and amenities that rural Nebraskans are most dissatisfied with include: entertainment, retail shopping and restaurants. At least one-third of rural Nebraskans express dissatisfaction with these three services. They are most satisfied with parks and recreation, library services, basic medical care services, highways and bridges, and education (K - 12). At least one-half of rural Nebraskans are satisfied with the following items in their community: appearance of residential areas (66%), crime control (61%), maintenance of sidewalks and public areas (57%) and noise (54%). Rural Nebraskans generally have positive views about their community. Sixty percent agree that their community is an ideal place to live and 52 percent say their community has good business leaders. Rural Nebraskans have mixed opinions about the future of their community. Fortyfour percent agree that their community’s future looks bright, but 42 percent disagree with this statement. Fourteen percent have no opinion. Rural Nebraskans living in or near the larger communities are more likely than residents of the smaller communities to think their community’s future looks bright. Fifty-nine percent of persons living in or near communities with populations of 10,000 or more agree with this statement, compared to only 25 percent of residents living in or near communities with less than 500 people. Further, 61 percent of the residents of the smallest communities disagree with this statement, compared to only 28 percent of the residents of the largest communities. Over three-quarters of rural Nebraskans disagree that younger residents of their community tend to stay there after completing high school. Seventy-six percent disagree with this statement, 16 percent have no opinion and eight percent agree that younger residents stay after completing high school. When comparing responses by age, younger persons are more likely than older persons to agree that younger residents stay in their community after high school. Sixteen percent of persons age 19 to 29 agree with this statement, compared to only six percent of persons age 50 to 64. Younger persons are more likely than older persons to be planning to move from their community next year. Fifteen percent of persons between the ages of 19 and 29 are planning to move next year, compared to only two percent of persons age 65 and older. An additional 17 percent of the younger respondents indicate they are uncertain if they plan to move. Most rural Nebraskans own their home. Eighty-four percent of rural Nebraskans own their home. Older persons are more likely than younger persons to own their home. Eighty-eight percent of persons over the age of 50 own their home, compared to only 52 percent of persons age 19 to 29. Housing in rural Nebraska has an average age of 50 years. Twenty-four percent of residences were built before 1930. Another 24 percent were built between 1930 and 1959. Twenty-nine percent were built between 1960 and 1979 and the remaining 24 percent were built in 1980 or later. The housing stock in smaller communities is older than the housing located in larger communities. Over one-third (35%) of the residences in communities with less than 1,000 people were built before 1930. Only 12 percent of the homes in communities with populations of 10,000 or more were built in this time period. Most rural Nebraskans appear satisfied with their home. Only 24 percent say the current size of their home does not meet their needs. The same proportion (24%) say their home is in need of major repairs. Thirty-eight percent agree that their home needs a lot of routine maintenance, but 87 percent like the location (neighborhood) of their home. One-third of rural Nebraskans living in or near the smallest communities say their home is in need of major repairs. Only 19 percent of persons living in or near communities with populations of 5,000 or more are facing this problem. Home ownership is very important to most rural Nebraskans. Eighty-two percent believe it is very important to own their home. An additional 12 percent say it is somewhat important and six percent say it is not at all important. However, persons who do not currently own their home do not feel it is important for them to do so. Only 32 percent of renters say it is very important to own their home, compared to 91 percent of home owners. And, 35 percent of renters say it is not at all important to own their home.

How might the continuous changes in the standing orders of the Camera dei Deputati between 1861 and 1922 be explained? To answer this question, the text investigates the political events associated with standing order reforms. Two results are emphasized. On the one hand, and contrary to common views, the study shows that the reforms were not casual or episodic, but resulted from different sets of political pressure, internal or external to the parliamentary ambit. This fact, on the other hand, draws attention to the need to go deeper into the question of the institutional evolution of the liberal parliament, chiefly with regard to relations among institutional actors.
