A survey of processing hygiene in the Sri Lankan prawn industry has shown that the incoming raw material has extremely high bacterial loadings; about 50% of samples analysed had a total count in excess of 10,000,000/g. Although beheading reduces the count, ineffective temperature control during processing means that the final total count of raw, shell-on, P.U.D. and P.A.D. prawns, as well as cooked prawns, is in excess of 1,000,000/g. - the maximum level specified by many importing countries.

Since estimated dietary selenium intake in the UK has declined steadily from around 60 mug day(-1) in 1975 to 34 mug day(-1) in 1997, there is a need to increase selenium intake from staple foods such as milk and milk products. An experiment was therefore done to investigate the relationship between dietary source and concentration of selenium and the selenium content of bovine milk. In a 3 x 3 factorial design, 90 mid-lactation Holstein dairy cows were supplemented over 8 weeks with either sodium selenite (S), a chelated selenium product (Selenium Metasolate(TM)) (C) or a selenium yeast (Sel-plex(TM)) (Y) at three different dietary inclusion levels of 0.38 (L), 0.76 (M) and 1.14 (H) mg kg(-1) dry matter (DM). Significant increases in milk selenium concentration were observed for all three sources with increasing inclusion level in the diet, but Y gave a much greater response (up to +65 mug l(-1)) than the other two sources of selenium (S and C up to +4 and +6 mug l(-1) respectively). The Y source also resulted in a substantially higher apparent efficiency of transfer of selenium from diet to milk than S or C. Feeding Y at the lowest dietary concentration, and thus within the maximum level permitted under EU regulations, resulted in milk with a selenium concentration of 28 mug l(-1). If the selenium concentration of milk in the UK was increased to this value, it would, at current consumption rates, provide an extra 8.7 mug selenium day(-1), or 11 and 14% of daily recommended national intake for men and women respectively. Food safety, alongside food quality, remains a primary concern of both consumers and those along the whole food supply chain, leading to regulation by government alongside private third party certification. Much has been written about the value of these systems primarily from the perception of the consumer. This paper reports on a study that examined industry perceptions on the regulatory and assurance systems within the dairy sector of England and Wales. It found that the primary producer found value in both systems, although from a food hygiene focus regulation was seen to be more rigorous. Other stakeholders along the dairy food supply chain saw the assurance scheme as more rigorous. All stakeholders recognised the need to reduce duplication in delivering food safety through combining key elements of both systems with the added potential for better communication of both food safety and quality to the final consumer.

Rapeseed meal (RSM) hydrolysate was evaluated as substitute for commercial nutrient supplements in 1,3-propanediol (PDO) fermentation using the strain Clostridium butyricum VPI 1718. RSM was enzymatically converted into a generic fermentation feedstock, enriched in amino acids, peptides and various micro-nutrients, using crude enzyme consortia produced via solid state fermentation by a fungal strain of Aspergillus oryzae. Initial free amino nitrogen concentration influenced PDO production in batch cultures. RSM hydrolysates were compared with commercial nutrient supplements regarding PDO production in fed-batch cultures carried out in a bench-scale bioreactor. The utilization of RSM hydrolysates in repeated batch cultivation resulted in a PDO concentration of 65.5 g/L with an overall productivity of 1.15 g/L/h that was almost 2 times higher than the productivity achieved when yeast extract was used as nutrient supplement.

Basic activated alumina with negatively charged surface is considered as a potential adsorbent for a targeted molecule with positive polarity. Adsorption of sodium by basic activated alumina was investigated as a method for desalting dairy waste streams, in which sodium ion concentration averaged 600 mg/L. Sodium equilibrium and kinetic adsorption were investigated using basic activated alumina with synthetic brines. The results of equilibrium adsorption show that uptake of sodium by activated alumina is significantly higher when the pH is greater than 8 and increases as the pH of the brines increases until pH reaches around 10. The results of kinetic adsorption show that 90 hours were needed to reach equilibrium for sodium adsorption. Binding and diffusion processes are suggested to have taken place within the activated alumina.

This paper examines how the adoption of a system's perspective to the use of both marketed and public resources can be incorporated into an analysis of productivity measurement.  A biophysical model is used to measure the environmental inputs which are combined with conventional marketed inputs to develop a Malmquist Productivity Index to determine social productivity growth over the perios under study.  The analysis is applied to data collected from selected farms in south west Victoria and includes a measure of leaching and run-off as a proxy measure of the impact the application of fertilizers has on ground and surface water.  Although the sample is small, the results show measured productivity growth differs when environmental factors are considered.

The publication of a Preliminary Final Assessment Report on 4 April 2007 heralded another step towards the introduction of a new Health Claims Standard to be inserted into the Australia New Zealand Food Standards Code. This Health Claims Standard, once approved by the Board of Food Standards Australia New Zealand and by the Australia New Zealand Food Regulation Ministerial Council, will permit the making of certain substantiated health claims. Prior to the introduction of the new Standard, health claims have not been permitted on food labels, with the exception of claims in relation to maternal folate consumption and its positive effect in reducing the risk of foetal neural tube defects. The new Health Claims Standard as outlined in the Preliminary Final Assessment Report is likely to have a significant impact on the dairy industry. This paper seeks to analyse that impact, including threats, opportunities and challenges that the Standard poses to the dairy industry and other food suppliers.

The ultrafiltration of whey solutions is a common feature of dairy processes. However, the frequent fouling of ultrafiltration membranes and the subsequent cleaning cycle significantly affect the economics of such a process. In this work, we investigated the effect of ultrasonics on the cleaning of whey-fouled membranes and examined the variables that influence this effect. Experiments were conducted using a small single sheet membrane unit that was immersed totally within an ultrasonic bath.

Results show that the use of ultrasonics enhances the flux recovery following fouling. The extent of flux recovery is independent of the length of sonication time and increases with ultrasonic power. The use of surfactants in combination with ultrasonic irradiation shows a synergistic effect, providing a better efficiency than either cleaning process alone. Repetitive use of ultrasonic cleaning over a 1 month period does not result in any significant change in the permeate flux of a cleaned membrane, indicating that the ultrasonic treatment does not appear to damage the membrane structure itself.

Recentemente, os mercados emergentes se tornaram um alvo potencial para a indústria da beleza e o Brasil está se tornando um mercado lucrativo para os produtos cosméticos Premium (Euromonitor International, 2013). A população de baixa renda no Brasil representa 70% de seus habitantes ao considerar as classes C, D e E (Barki e Parente, 2010), sendo a classe C representada por 56% da população (Neri, 2012). Este é um mercado potencial para as empresas multinacionais (MNCs), que enfrentam desafios de fazer negócios no país, visto que a classe C opta por gastar parte de sua renda com produtos relacionados a beleza (Silva e Parente, 2007) e ainda há um pouco conhecimento sobre o comportamento de consumo na base da pirâmide. Portanto, o objetivo deste estudo é investigar e descrever o comportamento de consumo das mulheres brasileiras da classe C no setor de beleza, em relação aos produtos Mass Premium, melhorando o conhecimento no que diz respeito a essa população e ao tema proposto. Para atingir esse objetivo, o autor utilizou uma metodologia baseada em uma análise descritivas qualitativa em que foram entrevistadas 20 mulheres de todas as faixas etárias, que pertencem à classe C brasileira e citações foram usadas para fornecer a confirmação dos resultados da análise. Os resultados sugerem que, ao longo dos anos, houve de fato um movimento de trade up no consumo de produtos de beleza. Além disso, foram identificados cinco aspectos principais, que conduzem decisão de compra das mulheres de classe C, no setor de beleza: confiabilidade, qualidade, status, autoestima e bem-estar. Apesar das limitações de um estudo exploratório, espera-se que a pesquisa aumente o conhecimento sobre o mercado da base da pirâmide, especialmente no que diz respeito à indústria da beleza.
