Collective food services have been increasing worldwide, and the self-service restaurant has been the current preference by consumers. Considering the importance of hygienic quality of food, the microbiological composition of ready-to-eat food was assessed. In the second semester of 2008, 20 samples of meals, mainly meat-based foods, were collected from different self-service restaurants in Araçatuba city, SP. Bacteriological analyses were performed following the conventional methodologies, and the results were compared with the standards established by the effective Brazilian legislation. Coliforms at 35ºC were detected in 90% of analyzed samples. Coliforms at 45°C were found in 55% of the samples and, among these, in 63.63%, the occurrence of Escherichia coli was confirmed. Coagulase-positive staphylococci were detected in 10% of samples and no sample showed Salmonella spp. or Bacillus cereus contamination. Sulfite reducing clostridia at 42o C were not investigated in this study. These findings indicate the need for a rigorous approach for improving the sanitary conditions during preparation and presentation of ready-to-eat food, as the consumption of contaminated products represents a potential risk to public health.

This study has as main objective to identify the complains occurrences about pain in the spine segments, that are related to work standing posture, adopted by the collaborators in the production section of a food industry, in the city of Marília São Paulo state. A descriptive research and studying case was made, using 30 employees as a sample. It was used as methodological procedure, a questionnaire to obtain information on professional and personal data, posture to remain standing, the most uncomfortable postures in the work environment (signed by the form of Ranney, 2000) and pain (pointed out by Corllet and Manenica Diagram, 1980). It was also used the Nordic questionnaire (Kuorioka et al.,1986), validated in the Brazilian culture by Barros e Alexandre (2003) and adapted for the study, the direct evaluation and, a direct observation was made in the production work, a posture analysis using the OWAS Method. It was noticed that the posture of standing up is adopted during work, and 73.3% of the people that was interviewed said that they felt tired in consequence of this posture, especially when associated with trunk twists, trunk inclination and elevation of their arms above their heads. Most complains regarding pain through their bodies, by Corllet e Manenica (1980) pointed to the lumbar region, followed in the dorsal area and legs and in the neck area, shoulders and right thigh. The adapted Nordic questionnaire reveled the lumbar area, in 10 interviewed people (33.3%) as the area mostaffected by musculoskeletal symptoms, next in the dorsal area, with five people interviewed (16.7%) and one of them (3.3%) felt pain in the cervical area, none reported pain in the hips area. The postural analysis was applied using OWAS method, and it was identified the postures that demanded more effort in the four levels of musculoskeletal injuries. As conclusion, the standing up posture and the asymmetric and incorrect movements are related to pain in the spine, mostly in the lumbar area.

Apparent digestibility coefficients (ADC) of starch and calcium (Ca) and phosphorus (P) apparent availability were evaluated in five cereal grain products and byproducts (corn, wheat meal, rice grain, rice bran and sorghum) for Nile tilapia. Chromic oxide was used as an external digestibility marker. The highest Ca and P apparent availability, respectively, were obtained for rice grain (43.03 and 64.79%), sorghum (39.89 and 58.09%) and corn (22.18 and 19.48%), while rice bran (-31.49 and 3.25%) and wheat meal (5.80 and 1.18%) showed the lowest values. Starch digestibility varied between 99.45 and 95.59% among the evaluated ingredients. This high ADC of starch observed in this study confirms that Nile tilapia is able to efficiently digest and utilize complex carbohydrates.

The aim of this study was to evaluate the effect of gamma radiation associated with modified atmosphere on postharvest quality of guavas ‘Pedro Sato’. It was used guavas from the region of Vista Alegre do Alto/São Paulo/Brazil. After harvest, the fruits were immediately transported to the Fruit and Vegetables Laboratory from the Agroindustrial Management and Technology Department, Agronomic Sciences College - UNESP - Botucatu / SP, where they were kept at 10 ° C and 90-95% RH in cold storage, for 28 days. It was used the randomized design, with factorial scheme 5 x 5, three repetitions. The first factor consisted of the following effects: control 1 (without package or irradiation), control 2 (polystyrene package/PS + package low density polyethylene/LDPE and without irradiation), treatment 1 (PS + LDPE and 0.2 kGy ), treatment 2 (PS + LDPE and 0.6 kGy) and treatment 3 (PS + LDPE and 1.0 kGy). The second factor consisted of the evaluation periods: 0, 7, 14, 21 and 28 days. The analyses were: firmness, soluble solids (SS), titratable acidity (TA), maturity index, pH, respiration rate. Concluded that high doses of irradiation promoted a negative effect on physical-chemical characteristics of guava ‘Pedro Sato’, verifying that only the lowest dose associated with modified atmosphere provided fruits with higher quality and acceptability, due to higher maturation rate and soluble solids obtained. Regarding the days of analysis, there were no positive effect of the treatments during storage, where only the early days promoted better values for the variables studied.

Pet animals are closer to their owners and for this reason erroneously share the same alimentation. Several substances can cause intoxication or poisoning in dogs and cats, being many of those also found in human food. Some foods that are edible for humans or even to other animal species can be risky for dogs and cats due to different metabolic pathways, and further damage can be caused depending on the amount or concentration consumed. Poisoning in animals occur intentionally or accidentally in the household of its owner, occurring acute onset of clinical signs. Thus, the objective of this review was to present the food products for humans that cannot be given to dogs and cats as well as clinical signs characteristic of a toxicosis, also demonstrating the therapy for the damage created by consumption of those substances. This review explores the mechanisms of action and clinical signs of toxicosis caused by chocolate, xylitol, macadamia nuts, onions, garlic, grapes and raisins, avocado, alcoholic beverages and milk.
Características pós-colheita em frutos de pitaya orgânica submetida a diferentes doses de irradiação

The objective was to evaluate the influence of different irradiation doses in post-harvest characteristics of pitaya organic species Hylocereus undatus grown in the municipality of Itajobi - SP. The experiment was conducted at the Fruit and Vegetable Department of Agribusiness Management and Technology - FCA / UNESP - Botucatu - SP from December 2008 to January 2009. The radiation process was conducted at the Institute for Energy and Nuclear Research (IPEN) located in Sao Paulo. The design was randomized blocks with six treatments and three replications. The fruits were harvested on the third day after onset of color, selected, cleaned, packed in polystyrene trays covered with PVC film, pre - cooled (8 ° C for 24 hours) and subjected to different doses of gamma irradiation (0.0; 0.2, 0.4, 0.6, 0.8 and 1.0 kGy of cobalt-60) and subsequently stored in cold temperature of 8 degrees C, with relative humidity of about 85 ± 5%. The fruits were evaluated at twenty days after irradiation for pH, soluble solids (SS), Titratable Acidity (TA), ratio (SS / TA) and percentage loss of mass (weight). Data were subjected to analysis of variance and means compared by Tukey test at 5% probability. There were no statistically significant differences (p <0.05) for pH (4.82), soluble solids (11.33) Titratable acidity (0.12) and ratio (79.42) compared to non-irradiated fruit. Regarding the percentage of loss of mass (weight), the highest among the patients treated irradiated with 0.8 kGy (12.12%), whereas for treatment at a dose of 0.0 kGy (irradiated) showed a lower loss weight (11.59%), a result that differs significantly (P <0.05) from the remaining doses of irradiation. The loss of mass (weight) of fruit irradiated with other doses was not statistically significant (P> 0.05).

O Brasil é considerado um grande produtor e consumidor de carnes, leite e alimentos de origem animal e os medicamentos veterinários têm sido amplamente utilizados na criação dos animais destinados ao consumo humano, com o intuito de prevenir o aparecimento de doenças e também como promotores de crescimento. Os fármacos utilizados para esta finalidade, no entanto, podem ocorrer nos alimentos derivados desses animais tratados, com conseqüências sobre a saúde humana. Além das substâncias utilizadas intencionalmente, a contaminação ambiental ou a presença de contaminantes em rações constitui uma fonte potencial de compostos cuja concentração no alimento final processado pode exceder os limites de segurança estabelecidos para garantir a saúde humana. Com o intuito de promover maior segurança alimentar, no Brasil, foram estabelecidos os programas PNCRC e o PAMVet, que são responsáveis pelo monitoramento da presença de substâncias ilegais (como os antimicrobianos nitrofuranos) e também, visam o controle do Limite Máximo de Resíduos (LMR). O objetivo do presente trabalho é reunir e discutir as informações sobre os principais resíduos e contaminantes de medicamentos veterinários em alimentos de origem animal no Brasil, assim como as publicações referentes às avaliações mais recentes desses produtos alimentícios presentes no mercado brasileiro. Estas informações serão utilizadas para novas discussões relacionadas ao uso adequado de medicamentos veterinários e à proposição de estudos de farmacocinética que poderão fundamentar o estabelecimento do período de carência para esses produtos farmacêuticos.
