Este projecto apresenta-se em três capítulos, antecedida da introdução onde serão apresentadas as questões teóricas, metodológicas e conceptuais. No primeiro capítulo faremos um enquadramento dos conceitos relacionados com o transporte turístico, em particular o ferroviário, onde serão focalizados a estratégia e competitividade, a gastronomia, a restauração, bem como catering. No segundo capítulo faremos a análise do catering do TGV europeu, analisando os serviços de catering de cada TGV, examinaremos a importância das linhas TGV para o futuro do turismo no espaço europeu, bem como esboçaremos um indicador de atractividade potencial do catering a bordo do TGV. No terceiro capítulo concentraremos o foco na concepção de um projecto empresarial para a exploração do catering a bordo do TGV para ligação de Lisboa a Madrid, tendo por base as previsões de passageiros anunciadas pela RAVE, projectando receitas e despesas potenciais para os próximos cinco anos, respeitando os indicadores de gestão para o sector, com base em três cenários (realista, optimista e pessimista). Finalmente, inferiremos se a empresa apresentará potencial para ser viável ou inviável do ponto de vista operacional e financeiro, com base nas opções tomadas ao longo do projecto de dissertação.

Mulsemedia—multiple sensorial media—captures a wide variety of research efforts and applications. This article presents a historic perspective on mulsemedia work and reviews current developments in the area. These take place across the traditional multimedia spectrum—from virtual reality applications to computer games—as well as efforts in the arts, gastronomy, and therapy, to mention a few. We also describe standardization efforts, via the MPEG-V standard, and identify future developments and exciting challenges the community needs to overcome.

É indiscutível, nos dias atuais, que o turismo deva ser encarado como importante motor de desenvolvimento com base local, contemplando as potencialidades endógenas, já que produz mutações no ambiente fisico e social onde se instala .. O município de Bento Gonçalves - RS, abarca inúmeros fatores que podem ser considerados potencialmente atrativos turísticos, como clima, relevo, gastronomia, cultura, eventos, produção agrícola e industrial, etc. Com base nestes fatores, a presente dissertação - que surgiu da detecção de que o mercado do turismo está em franco crescimento em todo mundo e da possibilidade de encontrar uma forma de impulsionar cada vez mais a economia do município - terá como meta estudar cientificamente o fenômeno turístico (prioritariamente receptivo) desta cidade, tendo em vista detectar ações e atividades que ensejem incremento e que possam contribuir para alavancar economicamente a economia local. Embora a palavra "turismo" tenha surgido no século XIX, algumas de suas formas já existiam desde as mais antigas civilizações e a sua participação, até recentemente, estava restrita a uma elite que dispunha de tempo e dinheiro para realizar suas viagens. Atualmente, porém, a maioria das pessoas dos países desenvolvidos, e um número significativo daquelas dos países subdesenvolvidos, têm realizado viagens turísticas uma ou mais vezes por ano, de modo que o turismo já não é uma prerrogativa de alguns cidadãos privilegiados; sua existência é aceita e constitui parte integrante do estilo de vida para um número crescente de pessoas em todo mundo. Por isso, o planejamento é fundamental e indispensável para o desenvolvimento turístico equilibrado e em harmonia com os recursos fisicos, culturais e sociais das regiões receptoras. Num ramo de negócios como o do turismo, sujeito a rápidas mudanças no comportamento da demanda, a pesquisa caracteriza-se como instrumento valioso que permite posteriores previsões e projeções de tendências sobre a evolução futura do setor. Com base nos dados levantados (que deverão espelhar a maior aproximação possível da realidade), a presente dissertação, intitulada Perspectivas de Incremento Econômico Alavancado Pelo Turúmo no Município de Bento Gonçalves - RS, pretende dimensionar equipamentos e serviços que serão necessários para atender as expectarivas da clientela turística que visitar o município de Bento Gonçalves - RS, nos próximos anos. Por último, as informações obtidas neste trabalho auxiliarão nas escolhas de estratégias que poderão ser utilizadas pelas organizações públicas e privadas, que disputarão os cliente-turistas no mercado.

Five years ago, Coca-Cola Brasil launched a program named “Coletivo Project”, with the purpose to enjoy an opportunity of increase on the potential consumption power of the low-income pyramid population that lived on the “favelas”. At the same time, it had the objective to offer to them a social and financial impact, which is a trust on the future, the first job for the young adults’ participant of this program and an increase on their family source of revenues, through salaries. This was possible because through Coletivo Project, Coca-Cola identified the assets they have through its value chain, focusing on its competencies, such as retail, merchandising and logistics to apply them on courses to teach the young people of the communities and, as a result, form them to be able to find their new jobs. Internal indicators followed in a monthly basis by Coca-Cola demonstrated that the communities that had the presence of Coletivos, in comparison to those without Coletivos, had social and financial impacts. The social was the fact that the young formed started to have more confidence on their future and felt with a higher self-stem to apply for and obtain their first job. On the financial aspect, they were benefit through the increasing of their revenues and also their families and Coca-Cola had an increase on sales, when compared to a community without a Coletivo Project installed. This dissertation seeks to identify the current relationship between Coca-Cola and the communities, through the Coletivo Project classes performed on the NGOs located at this places, in order to identify opportunities for improvement the benefits and the impacts (financial and social) on the NGOs, communities and all stakeholders of this project. This dissertation examines this relationship, through presence interviews performed on four NGOs selected, and located on four of the twenty communities, that are participants of the Coletivo Project on Rio de Janeiro city. These interviews performed with the students, representatives and educators of these NGOs. The covered period of the interviews ranges from April 2014 to August 2014. This dissertation draws on first-hand qualitative empirical evidence gathered through extensive fieldwork. The main findings among possibilities for improvement by Coca-Cola are: • Implement new courses, beyond those existent at Coca-Cola (Retail, Logistics, etc.). • Increase the content of the employment module of Coletivo classes, focusing on improving educational, cultural, economic, political, social and professional life. • Increase the scale, through the quantity of positions on the Retail Coletivo classes. • Develop cultural and sports events with the communities. • Support the points of sales, participant of the practical classes of the Coletivo Retail, with refrigerators and furniture with the Coca-Cola logo. • Provide coffee breaks and meals during the Coletivo classes, using Coca-Cola beverages and partners for food items, developing the nutrition platform of the company and filling a need of the students. • Perform a research with all stakeholders related to this Project, including those students and mothers that are not participant of the Coletivo, in order to listen to them, understand their needs, and offer solutions to fulfill these gaps. and on the side of the • Perform partnerships with educational institutions to make viable other type of courses, more technical, but that have a relation with the core business of Coca-Cola Brasil, such as marketing. • Implement the Coca-Cola University, already existed at the Company. • Create courses or activities focused on the children. Regarding the impossibilities, the findings are: • Improve the basic sanitation of the communities. • Improve the safety on the communities. • Provide a home to those do not have. • Implement courses that have no relationship with Coca-Cola business and expertise, such as gastronomy. However, Coca-Cola can influence stakeholders on that. The results suggest to executives of Coca-Cola that a deep and a qualitative research on the communities of Brazil, in order to listen young people, educators, mothers, partners that offer jobs, from Coletivo and out of the project, is mandatory, to understand their needs, dreams, complains and offer valuable solutions to all.

Foodborne and waterborne diseases are spread by the consumption of food or water contaminated with bacteria and/or their toxins, viruses, parasites or chemicals. The aim of the research reported here was to establish the spectrum of etiologic agents of foodborne outbreaks at 15 tourist resorts in three geographic regions of the State of Sao Paulo (Brazil). The study was based on the cases reported to the Epidemic Surveillance Center (CVE) of the Public Health Authority of the State of São Paulo (SES), from 2002 to 2005. The tourist centers were chosen at random in three regions of the state (Capital, Interior and Coast) and offered the following attractions: events, agribusiness, cultural history, shopping, town center, gastronomy, health and leisure, sun and sea. Among the bacteria, the results showed that Salmonella spp. were most frequently associated with outbreaks, followed by Shigella spp., enterotoxigenic Escherichia coli, Staphylococcus aureus, Clostridium perfringens, Bacillus cereus and Campylobacter spp. Viruses (Rotavirus and Hepatitis A) played a part in many of the cases, while the frequency of parasites and worm infestations was low in the foodborne disease outbreaks at these resorts. The mixed foods (rice, beans, liver, potatoes, barbecue, juice), fish and poultry were the three commonest vehicles implicated in the outbreaks.

This experimental project focused on a specialization in journalism that is becoming increa-singly present in the media: the gastronomic journalism. The aim was to understand the speci-ficities of segmentation in the news and editorial spreads profile area for deepening the dining experience in contemporary society, considering the contribution of information to maintain proper eating habits and cultural enrichment of the reader. The research involved a literature review and survey of the history of gastronomy and cultural aspects, analysis and reporting framework for the months of August and September 2010 the Food section of the newspaper Folha de S. Paul, Taste of the book, the newspaper O Estado de S. Paul and the Menu maga-zine segment, Publisher of Three in order to identify the presence of aspects related to culture, history, health and nutrition

Gastronomy is art. Perhaps the most popular of all, because there is always an achievement for all culinary tastes. In the search for a journalistic product that show the gastronomy not only with recipes and restaurant guides exponents, the creation of the blog - Pop With Farofa - seeks to bring to the newspaper market the gastronomy in its most popular and accessible art. The experimental design reported here seeks to relate the food editor with the culture, revealing to the public and the food is present in various cultura genres

The present paper aims to analyze and problematize the manner that Brazilian gastronomy is treated in didactic books of Portuguese as Foreign Language. To reach such objective, it will be considered, specially, the approaches and the methodologies of four of those books, from distinct periods of publication: Fala Brasil (1989); Aprendendo Português do Brasil (1993); Passagens (2002); Bem-Vindo! (2009). From this analysis, it’s possible to think of new possibilities to insert the Brazilian gastronomy in a Portuguese class for foreigners, considering that the aspects of Brazil’s culture are also held inside its language; this language shows a universe beyond linguistics structure and maintains the habits and history of its people inside itself
