In this work cassava bagasse, a by-product of cassava starch industrialization was investigated as a new raw material to extract cellulose whiskers. This by-product is basically constituted of cellulose fibers (17.5 wt%) and residual starch (82 wt%). Therefore, this residue contains both natural fibers and a considerable quantity of starch and this composition suggests the possibility of using cassava bagasse to prepare both starch nanocrystals and cellulose whiskers. In this way, the preparation of cellulose whiskers was investigated employing conditions of sulfuric acid hydrolysis treatment found in the literature. The ensuing materials were characterized by transmission electron microscopy (TEM) and X-ray diffraction experiments. The results showed that high aspect ratio cellulose whiskers were successfully obtained. The reinforcing capability of cellulose whiskers extracted from cassava bagasse was investigated using natural rubber as matrix. High mechanical properties were observed from dynamic mechanical analysis. (C) 2010 Elsevier B.V. All rights reserved.

In this study the relationship between the enzymatic susceptibility and the size of the com and cassava starch granules was studied. The starch granules were separated by size and classified according to their average diameter in: a) larger than 16 mum; b) between 15 and 10 mum and c) smaller than 10 mum. The starch granules of various sizes were hydrolyzed by bacterial alpha-amylase and fungal amyloglucosidase. The results showed a relationship between the enzymatic susceptibility and the size of the starch granules; smaller size of the starch granules resulted in a higher percentage of hydrolysis. A basic difference in the mode of action of enzymes on small and large granules was observed. Enzymatic attack on the large granules was characterized by considerable surface corrosion, mainly at the radial axis. For small granules, the enzymatic action occurred on the surface of the granules and was characterized by an erosion with solubilization of the granules. Chemical and physical analysis of the starches suggested that hydrolysis should occur mainly at the amorphous areas of the granules.

The effect of deacetylated xanthan gum, additives (sucrose, soybean oil, sodium phosphate and propylene glycol) and pH modifications on mechanical properties, hydrophilicity and water activity of cassava starch-xanthan gum films has been studied. Sucrose addition resulted in the highest effect observed on cassava starch films elongation at break. The deacetylated xanthan gum had higher effect on elongation at break when comparing to the acetylated gum, although both gums presented an inferior effect in relation to the obtained with sucrose. However, when comparing to the control and PVC films, lower tensile strength resistance values were observed when adding sucrose. Increased water activity was observed for films added with sucrose, thus, increasing the material biodegradation. Sucrose and deacetylated xanthan gum addition resulted in a slight hydrophilicity increase. (C) 2004 Elsevier Ltd. All rights reserved.

Peruvian carrot and cassava starches were isolated, adjusted to 30 and 35% moisture, and heatedat 90°C for 8 h. Structural and physicochemical characteristics of the treated starches wereevaluated and compared. High performance anion exchange chromatography with pulsedamperometric detector (HPAEC-PAD), gel permeation chromatography (GPC), and amylosecontent, revealed that the HMT did not change the chemical structures of the starches. A largeagglomeration of granules was observed from SEM, particularly in the Peruvian carrot starch.Crystalline patterns in Peruvian carrot and cassava starches changed from B to C and CAto A,respectively. Relative crystallinity decreased from 30 to 25% in Peruvian Carrot starch, andincreased from 35 to 37% in cassava starch adjusted to 30% moisture. SF and peak viscositydecreased, breakdown was almost completely eliminated (particularly in the Peruvian carrotstarch), and final viscosity increased. WAI and WSI increased as moisture levels of bothstarches increased. Gelatinization temperatures increased and enthalpy decreased. Degrees ofgelatinization increased as the moisture level increased, reaching 33 and 72% in the cassavaand Peruvian carrot starches, respectively. HMT strengthened the intra- and intermolecularinteractions of starches and increased their stability during heating and shearing, but also causeda partial gelatinization in the starches, particularly in Peruvian carrot starch.

Penaeus monodon juveniles were reared on semipurified diets containing various carbohydrates (maltose, sucrose, dextrin, molasses, cassava starch, corn starch or sago palm starch). Significant differences were observed between the type as well as the level of carbohydrate in the diet on the survival of the juveniles. Results indicate that there does not seem to be any correlation between survival and the complexity of the carbohydrates.

Biocomposites with two different fillers, garlic and wheat bran, were studied. They were based on cassava starch and contained glycerol as a plasticizer and potassium sorbate as an antimicrobial agent and were characterized by scanning electron microscopy (SEM), differential scanning calorimetry (DSC) and infrared spectroscopy (IR). The mechanical performance at room and lower temperatures was also studied. SEM micrographies of fractured surfaces of the wheat bran composite films showed some ruptured particles of fiber while fibrils of garlic on the order of nanometers were observed when garlic composite films were studied. Mechanical tests, at room temperature, showed that the addition of wheat bran led to an increment in the storage modulus (E`) and hardening and a decrease in Tan delta, while the garlic composite showed a diminishing in the E` and hardening and did not produce significant changes in Tan delta values when compared with systems without fillers (matrix). In the range between -90 degrees C and 20 degrees C. all the materials studied presented two peaks in the Tan delta curve. In the case of the wheat bran composite, both relaxation peaks shifted slightly to higher temperatures, broadened and diminished their intensity when compared with those of the matrix; however garlic composite showed a similar behavior to the matrix. DSC thermograms of aqueous systems showed a slight shift of gelatinization temperature (T(gelatinization)) to higher values when the fillers were present. Thermograms of films showed that both, garlic and wheat bran composites, had a lower melting point than the matrix. IR data indicated that interaction between starch and fillers determined an increase in the availability of hydroxyl groups to be involved in a dynamic exchange with water. (C) 2010 Elsevier B.V. A semente de milho doce é leve e rugosa. A rugosidade torna difícil a classificação das sementes quanto à forma e ao tamanho e isso dificulta a semeadura. Uma solução para esse problema seria a utilização da técnica de revestimento. Assim, este trabalho teve por objetivo avaliar diferentes materiais de enchimento, cimentantes e corantes na peletização de sementes de milho superdoce e verificar quais combinações de materiais seriam eficientes na manutenção da qualidade fisiológica das sementes após o armazenamento e que permitissem vazão e distribuição uniformes durante a semeadura. Foram então testados doze materiais de enchimento (calcários 1 e 2, caulim, carvão vegetal ativado, areia, vermiculita, fubá de milho, farinha de trigo, polvilho de mandioca, amido de milho, celite e terra de diatomáceas), dois cimentantes (goma arábica e cascorez extra) e seis corantes (tintas guache, acrílica, plástica e para tecido, corante para alimento e gelatina). As avaliações da qualidade física e fisiológica das sementes revestidas e nuas foram efetuadas por meio dos testes: teor de água, fragmentação, peso de mil sementes, volume aparente e plantabilidade, germinação, primeira contagem da germinação e emergência de plântulas em campo. O revestimento de sementes de milho superdoce proporciona homogeneidade de forma e tamanho às sementes, melhora a vazão e a distribuição dos péletes na semeadura e não compromete a emergência de plântulas em campo depois de quatro meses de armazenamento.

Cyclodextrin glycosyltransferase (EC 2.4.1.19) is an enzyme that produces cyclodextrins from starch via an intramolecular transglycosylation reaction. An alkalophilic Bacillus strain, isolated from cassava peels, was identified as Bacillus licheniformis. CGTase production by this strain was better when potato starch was used as carbon source, followed by cassava starch and amylopectin. Glucose and amylose, on the other hand, acted as synthesis repressors. When the cultivation was supplemented with sodium ions and had the pH adjusted between 6.0 and 9.0, the microorganism maintained the growth and enzyme production capacity. This data is interesting because it contradicts the concept that alkalophilic microorganisms do not grow in this pH range. After ultrafiltration-centrifugation, one protein of 85.2 kDa with CGTase activity was isolated. This protein was identified in plates with starch and phenolphthalein. Determination of the optimum temperature showed higher activities at 25 degrees C and 55 degrees C, indicating the possible presence of more than one CGTase in the culture filtrate. Km and Vmax values were 1.77 mg/mL and 0.0263 U/mg protein, respectively, using potato starch as substrate.

Neste trabalho buscou-se avaliar o efeito de parâmetros operacionais do processo de extrusão no desenvolvimento de biscoitos de polvilho com fibras, utilizando como matérias-primas o polvilho azedo e o farelo de mandioca. O processamento foi realizado em um extrusor mono-rosca, sendo considerados parâmetros variáveis: temperatura na 3ª zona de extrusão, umidade e porcentagem de fibras na mistura. Para analisar o efeito combinado das variáveis independentes nas características tecnológicas dos extrusados, utilizou-se o delineamento 'central composto rotacional' para três fatores. Os resultados obtidos mostraram efeitos significativos da umidade e porcentagem de fibras sobre o volume específico, sendo que a temperatura afetou os índices de solubilidade e absorção de água dos produtos extrusados. Condições de baixa temperatura (65 °C), baixa umidade (12%) e baixo teor de fibras (<4%), nas condições de processo utilizadas, produzem biscoitos com boas características tecnológicas.

Duas metodologias de expansão ao forno foram comparadas em 52 amostras de polvilho azedo de três Estados: Santa Catarina, Paraná e Minas Gerais. Os resultados obtidos permitiram visualizar uma proposta de classificação em nível nacional da expansão ao forno do polvilho azedo. No método instrumental foi usado o Farinógrafo Brabender para estabelecer uma massa de consistência padrão de 60UF e no método prático, a consistência semelhante da massa foi determinada de forma empírica. Com a metodologia instrumental obteve-se biscoitos com expansão superior à metodologia prática, mas maior coeficiente de variação, o que pode ser devido a maior sensibilidade do método. Ambas as metodologias poderão ter aplicação, dependendo da finalidade. A metodologia instrumental, pelo custo do equipamento, é mais adequada para laboratórios, desde que se utilize maior número de repetições, para reduzir o coeficiente de variação. Ambas as metodologias ensaiadas permitiram classificar as amostras com o mesmo perfil de desempenho. As amostras provenientes do Estado do Paraná apresentaram as maiores expansões ao forno quando comparados com os outros Estados. Pela metodologia prática a expansão média das amostras do Estado do Paraná foi de 14,1mL/g. As amostras do Estado de Minas Gerais apresentaram as menores expansões ao forno, em média de 13,3mL/g. Foi proposta neste artigo uma classificação para avaliar a qualidade do polvilho azedo, complementando a legislação brasileira que não estabelece este índice para o produto. Quanto à propriedade de expansão ao forno, as amostras avaliadas podem ser divididas em 3 tipos A, B e C. No tipo A (10%) amostras de polvilhos azedo são classificadas como qualidade extra, no tipo B (80%) os polvilhos são de média qualidade e o tipo C (10%) de qualidade inferior. Os resultados obtidos pela metodologia prática permitiram estabelecer como tipo A o polvilho azedo que apresenta um índice de expansão ao forno superior a 16,0mL/g, o tipo B o polvilho com índice de expansão entre 12,0mL/g a 16,0mL/g e o tipo C o polvilho com índice de expansão menor que 12,0mL/g.
