The use of bovine rumen protein (raw and extruded) as a replacement for extruded soy protein concentrate in three meat products (pork sausage, chicken hamburger, and kibbe) was investigated. Similarity between rumen and soy protein meat products was assessed using triangle tests and sensory acceptability evaluated by consumer panelists using a nine-point hedonic scale. The addition of raw rumen protein was detected in all meat product types tested, while extruded rumen protein was only detected in kibbe. The addition of raw rumen protein decreased the acceptability of pork sausage aroma and flavor, but improved kibbe appearance, texture and overall acceptability. The addition of extruded rumen protein reduced the acceptability of chicken hamburger texture, but improved pork sausage flavor. Replacement of soy protein by bovine rumen protein is feasible based upon sensory results, but depended upon its form and the type of meat product to which it was added. (C) 2011 Elsevier Ltd. Stingless bee honey samples were evaluated by sensory descriptive analysis using free choice profile methodology. Appearance, flavor, and aroma were described and the data were treated with Generalized Procrustes Analysis. Individual descriptive terms ranged from 8 to 20. Plotting the samples in a bidimensional plan indicated that appearance attributes (color and viscosity) and sweet, sour and acid flavor were strongly correlated with x axis (Dimension 1) while coconut, wood, acid, sour, and sweet flavor aroma attributes were correlated with y axis (Dimension 2). The affective test was also performed and with the exception of the Melipona scutellaris honey, all the other samples showed good acceptance. Honeys that were described as sweeter and less acid were preferred by nontrained assessors, indicating that the regular consumer recognizes honey produced by Apis mellifera bee as a standard.

This work evaluated the effect of pressure and temperature on yield and characteristic flavour intensity of Brazilian cherry (Eugenia uniflora L) extracts obtained by supercritical CO(2) using response surface analysis, which is a simple and efficient method for first inquiries. A complete central composite 2(2) factorial experimental design was applied using temperature (ranging from 40 to 60 degrees C) and pressure (from 150 to 250 bar) as independent variables. A second order model proved to be predictive (p <= 0.05) for the extract yield as affected by pressure and temperature, with better results being achieved at the central point (200 bar and 50 degrees C). For the flavour intensity, a first order model proved to be predictive (p <= 0.05) showing the influence of temperature. Greater characteristic flavour intensity in extracts was obtained for relatively high temperature (> 50 degrees C), Therefore, as far as Brazilian cherry is concerned, optimum conditions for achieving higher extract yield do not necessarily coincide to those for obtaining richer flavour intensity. Industrial relevance: Supercritical fluid extraction (SFE) is an emerging clean technology through which one may obtain extracts free from organic solvents. Extract yields from natural products for applications in food, pharmaceutical and cosmetic industries have been widely disseminated in the literature. Accordingly, two lines of research have industrial relevance, namely, (i) operational optimization studies for high SFE yields and (ii) investigation on important properties extracts are expected to present (so as to define their prospective industrial application). Specifically, this work studied the optimization of SFE process to obtain extracts from a tropical fruit showing high intensity of its characteristic flavour, aiming at promoting its application in natural aroma enrichment of processed foods. The production of volatile organic compounds (VOC) by plants is well known. However, few scientific groups have studied VOC produced by green, brown and red algae. Headspace collection of volatiles and solid phase microextraction, as well as the traditional extraction by hydrodistillation combined with analytical chromatographic techniques (i.e., GC-MS), have significantly improved the investigation of VOC from plants and algae. The major volatile compounds found in seaweeds are hydrocarbons, terpenes, phenols, alcohols, aldehydes, ketones, esters, fatty acids and halogen or sulfur-containing compounds. This article presents an overview of VOC isolated from and identified in marine macro-algae. Focus is given to non-halogenated and non-sulfur volatile compounds, as well as strategies to analyze and identify algal VOC by GC-MS.

An analytical procedure for the separation and quantification of ethyl acetate, ethyl butyrate, ethyl hexanoate, ethyl lactate, ethyl octanoate, ethyl nonanoate, ethyl decanoate, isoamyl octanoate, and ethyl laurate in cachaca, rum, and whisky by direct injection gas chromatography-mass spectrometry was developed. The analytical method is simple, selective, and appropriated for the determination of esters in distilled spirits. The limit of detection ranged from 29 (ethyl hexanoate) to 530 (ethyl acetate) mu g L-1, whereas the standard deviation for repeatability was between 0.774% (ethyl hexanoate) and 5.05% (isoamyl octanoate). Relative standard deviation values for accuracy vary from 90.3 to 98.5% for ethyl butyrate and ethyl acetate, respectively. Ethyl acetate was shown to be the major ester in cachaca (median content of 22.6 mg 100 mL(-1) anhydrous alcohol), followed by ethyl lactate (median content of 8.32 mg 100 mL(-1) anhydrous alcohol). Cachaca produced in copper and hybrid alembic present a higher content of ethyl acetate and ethyl lactate than those produced in a stainless-steel column, whereas cachaca produced by distillation in a stainless-steel column present a higher content of ethyl octanoate, ethyl decanoate, and ethyl laurate. As expected, ethyl acetate is the major ester in whiskey and rum, followed by ethyl lactate for samples of rum. Nevertheless, whiskey samples exhibit ethyl lactate at contents lower or at the same order of magnitude of the fatty esters.

O café é um produto de forte apelo nacional e tem estado presente nos hábitos do consumidor deste produto, denotando uma busca por cafés diferenciados e de qualidade. As avaliações do produto se baseiam nas posições descritivas, dedutivas e de informações do mesmo. As características percebidas podem ser intrínsecas como o sabor, o aroma, a cor, a aparência e a consistência e extrínsecas, que referem-se a parte externa e que envolve o produto, tais como o ambiente, a embalagem, a marca e também o país de origem. Este estudo teve por objetivo investigar se as características intrínsecas (sabor, aroma, cor, aparência e consistência) da bebida café e as características extrínsecas associadas ao produto estimulam o consumidor em frequentar cafeterias (ambiente especializado em café). Para tal foi realizada uma pesquisa de caráter exploratório, com levantamento de campo e bibliográfico cujos resultados foram tratados por meio de análise de conteúdo. Utilizou-se como instrumento de coleta de dados um roteiro de entrevistas e foram entrevistadas 87 pessoas, frequentadoras de cafeterias. As cafeterias pesquisadas estão localizadas na cidade de São Paulo sendo: duas num Shopping Center do bairro de Higienópolis e uma cafeteria em uma universidade no centro da capital. Os resultados obtidos demonstraram que o sabor, prioritariamente e, depois o aroma do café foram as características intrínsecas consideradas mais relevantes entre os respondentes. Por outro lado, um ambiente agradável, confortável e requintado foram fatores valorizados pelos entrevistados. Ambas características se mostraram complementares e estes fatores citados foram os apontados como aqueles que estimulam o consumidor a frequentar as cafeterias.

A atmosfera de loja é um poderoso instrumento de marketing, presente em quase todas as situações de compra. Acadêmicos e profissionais de marketing reconhecem que os elementos da atmosfera de loja são capazes de afetar as emoções e os comportamentos dos clientes. No caso particular dos estímulos olfativos, há forte convicção de que o odor de um ambiente é capaz de afetar o estado emocional dos consumidores. Ciente da importância que este estímulo pode ter na composição da experiência de compra, a presente pesquisa teve como objetivo verificar os impactos de um aroma ambiental agradável sobre as emoções e comportamentos dos consumidores em locais onde são comercializados produtos sem cheiro característico. A viabilização dos experimentos contou com a realização de uma revisão bibliográfica, apoiada por entrevistas em profundidade. Definidos o método e o instrumento de coleta dos dados, passou-se à aplicação dos questionários em duas lojas de vestuário que fabricam e comercializam malhas retilíneas do tipo tricot. Os resultados da pesquisa não permitem concluir que a presença de um aroma agradável tenha sido capaz de alterar o estado emocional dos consumidores ou de interferir nas intenções de comportamento. Da mesma forma, não foi possível comprovar que o comportamento de compra tenha sido afetado pela fragrância adicionada aos ambientes. No entanto, os resultados sugerem que a presença de um aroma agradável pode ter conduzido a distorções na percepção do tempo. Indivíduos expostos ao tratamento experimental apresentaram uma diferença entre o tempo imaginado e o tempo real menor que o grupo de controle. Finalizada a análise dos resultados, aproveitou-se para fazer algumas considerações sobre as implicações acadêmicas e gerencias desta pesquisa, bem como são abordadas questões relativas a pesquisas futuras.

O estudo do comportamento dos consumidores nomeadamente, os rituais de consumo associados ao consumo de café e os fatores envolvidos nesse processo é importante para podermos compreender e comparar o comportamento dos consumidores cariocas e lisboetas no que tange ao consumo de café. Por outro lado, também é importante averiguar a influência da cultura e da sociedade nesses rituais de consumo, de forma a compreender a evolução do varejo de café pronto no Brasil. Os modelos que vêm sendo aplicados aqui se adaptam às características do público local, o que traz para a nossa discussão, a noção de cultura. Como em Portugal o uso do café expresso já é mais maduro que no Rio de Janeiro, a comparação entre as duas culturas pode ser interessante para ajudar o varejo brasileiro a se desenvolver. Para tal, neste estudo, foram entrevistados moradores das cidades do Rio de Janeiro e de Lisboa, a fim de descrevermos de que modo consomem café, os rituais associados a esse bem de consumo, assim como seus hábitos, motivações e justificativas para esse consumo, mostrando que não trata apenas de uma decisão de compra utilitária, mas também simbólica. Com esse objetivo, foram entrevistadas 69 e pessoas e os resultados dessas entrevistas avaliados de forma interpretativa. A conclusão foi a de que a bebida é consumida por uma parcela heterogênea dos entrevistados e que, geralmente, os consumidores associam o consumo de café a hábito, prazer, círculo de amizades, trabalho – como break –, colegas e família. Isso revela que o significado social da bebida está enraizado no âmbito doméstico, no trabalho ou no círculo de amizades e que esse significado está intrinsecamente associado aos hábitos e costumes das sociedades brasileira e portuguesa como fruto de suas culturas. Consequentemente, grande parte dos rituais de consumo dessa bebida está interligada ao seu significado social. Observou-se a necessidade de expansão desse mercado, particularmente, entre os jovens no Rio de Janeiro, e que muitas vezes o aroma é preferível ao sabor, pois mesmo aqueles que não apreciam muito a bebida, de uma forma geral, afirmaram gostar bastante do aroma. Assim, é fundamental para os gestores de estabelecimentos de varejo de café pronto conhecerem o cliente, serem inovadores e anteciparem as tendências, de modo a satisfazerem as necessidades deste. A preocupação não deve ser apenas com a qualidade do produto oferecido e com o conforto do cliente, mas também em agregar valor ao café e ao serviço prestado, proporcionando à clientela uma experiência única, a qual pode ser um diferencial importante, pois a conotação simbólica associada a esse bem de consumo é cada vez mais destacada.

Um dos produtos mais consumidos do mundo vem passando por grandes transformações, e a cerveja que conhecemos como tipo Pilsen (Light Lager) deixou de ser opção única nas prateleiras. Dado o potencial de crescimento do setor no Brasil, o objetivo deste trabalho é mapear as preferências do consumidor de cerveja artesanal, usando técnicas de preferência declarada, a partir da aplicação de questionários que convidam o entrevistado a elencar suas preferências diante das combinações dos atributos Cor, Paladar, Aroma e Álcool. A partir da estratificação da amostra em Idade e Experiência, os resultados indicam que Paladar, seguido da Cor e, por último, o Aroma são os atributos mais relevantes para o entrevistado Experiente, enquanto o Não Experiente atribui maior peso à Cor, seguida do Paladar, sendo o Aroma um atributo irrelevante em suas escolhas. O atributo Álcool revelou-se insignificante em todas as estratificações realizadas.

Madeira wine is a product of well-established reputation, whose aroma and flavour is the result of unique combinations. Particularly, its maturation may include estufagem, wherein wine is usually heated at 45 °C for three months. During this period, several chemical changes may occur, so it is essential to assess its impact on the wine. In this sense, the main objective of the thesis was to evaluate the effect estufagem on the chemical constituents of Madeira wine, specifically on those molecules potentially important in the development of its typical features. Firstly, analytical methodologies capable of determining the target compounds, combining precision and reproducibility to execution effectiveness, were developed. Then various monovarietal Madeira wines were analysed during estufagem under standard and overheating conditions in order to assess its effect. The following compounds were evaluated: furans, amino acids, biogenic amines, polyphenols, organic acids and volatile compounds. In addition, the total polyphenolic composition, the antioxidant potential and the colour of these wines were also evaluated. The results show that most constituents change due to the heating process. Particularly, the heating promotes the development of 5-hydroxymethylfurfural (HMF) in sweet wines submitted to estufagem at higher temperatures. Moreover, estufagem provides the decrease of most amino acids, suggesting their involvement in the formation of the bouquet of these wines. Regarding the total polyphenol content and antioxidant potential of these wines they do not seem to be greatly affected by the heating step, however most monomeric polyphenols decrease during this process. The thermal processing of Madeira wines favours the development of the volatile composition, especially of volatiles usually reported as typical aromas of Madeira wines. Finally, it was demonstrated that the thermal degradation of sugars, especially of fructose, promotes the emergence of volatile compounds identified in baked wines.

An analytical procedure based on manual dynamic headspace solid-phase microextraction (HS-SPME) method and the conventional extraction method by liquid–liquid extraction (LLE), were compared for their effectiveness in the extraction and quantification of volatile compounds from commercial whiskey samples. Seven extraction solvents covering a wide range of polarities and two SPME fibres coatings, has been evaluated. The highest amounts extracted, were achieved using dichloromethane (CH2Cl2) by LLE method (LLECH2Cl2)(LLECH2Cl2) and using a CAR/PDMS fibre (SPMECAR/PDMS) in HS-SPME. Each method was used to determine the responses of 25 analytes from whiskeys and calibration standards, in order to provide sensitivity comparisons between the two methods. Calibration curves were established in a synthetic whiskey and linear correlation coefficient (r ) were greater than 0.9929 for LLECH2Cl2LLECH2Cl2 and 0.9935 for SPMECAR/PDMS, for all target compounds. Recoveries greater than 80% were achieved. For most compounds, precision (expressed by relative standard deviation, R.S.D.) are very good, with R.S.D. values lower than 14.78% for HS-SPME method and than 19.42% for LLE method. The detection limits ranged from 0.13 to 19.03 μg L−1 for SPME procedure and from 0.50 to 12.48 μg L−1 for LLE. A tentative study to estimate the contribution of a specific compound to the aroma of a whiskey, on the basis of their odour activity values (OAV) was made. Ethyl octanoate followed by isoamyl acetate and isobutyl alcohol, were found the most potent odour-active compounds.

The influence of the age in the volatile composition of Madeira wines made with Boal, Malvazia, Sercial and Verdelho varieties and aged in oak barrel during 1, 11 and 25 years old was been studied. For this purpose, the evolution of volatile compounds: higher alcohols, ethyl esters, fatty acids, furan compounds, enolic compounds, γ-lactones, dioxanes and dioxolanes, of the four most utilised varieties were determined using liquid–liquid extraction with dichloromeihane. Octan-3-ol was used as internal standard. The wines made with these varieties showed great differences in sugar content and small variations on pH and alcoholic degree. The results show that during ageing, the concentration of fatty acids ethyl esters, acetates and fatty acids decrease significantly contrarily to the great increase of ethyl esters of diprotic acids. There is a strong correlation between sotolon, 2-furfural, 5-methyl-2-furfural, 5-hydroxymethyl-2-furfural and 5-ethoxymethyl-2-furfural with wine ageing. These findings indicate that these compounds can be used as ageing wine markers. Among the molecules studied, sotolon [3-hydroxy-4,5-dimethyl-2(5H)-furanone] was one of the few molecules present in concentrations above the perception threshold in Madeira wines. 5-Eihoxymethyl-2-furfural formed from 5-hydroxymethyl-2-furfural and 2-furfural, derived from sugars, are also involved in the aroma of sweet fortified white wines aged in oxidative conditions. The sensory properties change significantly after long periods of conservation.

The maturation of Madeira wines usually involves exposure to relatively high temperatures which affect the aroma and flavour composition leading to the formation of the typical and characteristic bouquet of these wines. The formation of heterocyclic acetals (1,3-dioxanes and 1,3-dioxolanes) was investigated in order to determine levels and for possible use as indicators of wine age. The results show a linear correlation of the investigated acetals with wine age but suggest that the acetalization reaction is not particularly affected by the drastic oxidative conditions observed during maturation.

Boal, Malvasia, Sercial and Verdelho are the main white grape varieties used in Madeira wine production. To estimate the free fraction of varietal aroma compounds of these varieties, 39 samples of musts were analysed to determine their content of monoterpenols and C13 norisoprenoids (terpenoids), using dynamic headspace solid-phase microextraction coupled with gas chromatography–mass spectrometry. The r-values for linearity studies of the analytical method used, varied between 0.977 (nerolidol) and 0.999 (linalool). The repeatability for each compound varied between 2.5% (citronellol) and 11.8% (β-ionone). The mean values from three vintages (1998, 1999 and 2000) confirmed that these musts have differentiated contents of terpenoids. In opposition to Verdelho musts, Malvasia showed the highest free terpenoids content. In order to establish relations between the compounds and the varieties under investigation, principal component analysis and linear discriminant analysis were applied to the data, revealing a good separation and classification power between the four groups as a function of varietal origin.
