The food habits of 20 species of pelagic nekton were investigated from collections made with small-mesh purse seines from 1979-84 off Washington and Oregon. Four species (spiny dogfish, Squalus acanthias; soupfin shark, Galeorhinus zyopterus; blue shark, Prionace glauca; and cutthroat trout, Salmo clarki) were mainly piscivorous. Six species (coho salmon, Oncorhynchus kisutch; chinook salmon, O. tshawytscha; black rockfish, Sebastes melanops; yellowtail rockfish, S. f1avidus; sablefish, Anoplopoma fimbria; and jack mackerel, Trachurus symmetricus) consumed both nektonic and planktonic organisms. The remaining species (market squid, Loligo opalescens; American shad, Alosa sapidissima; Pacific herring, Clupea harengus pallasi; northern anchovy, Engraulis mordax; pink salmon, O. gorbuscha; surf smelt, Hypomesus pretiosus; Pacific hake, Merluccius productus; Pacific saury, Cololabis saira; Pacific mackerel, Scomber japonicus; and medusafish, Icichthys lockingtom) were primarily planktonic feeders. There were substantial interannual, seasonal, and geographic variations in the diets of several species due primarily to changes in prey availability. The California Department of Fish and Game's Natural Stocks Assessment Project (NSAP) collected water quality data at high tides on a monthly basis from February 1991 to October 1994, and during low tides from March 1992 to June 1994 in the Klamath River estuary to describe water quality conditions. NSAP collected data on water temperature, dissolved oxygen, salinity, depth of saltwedge, and Klamath River flow. Klamath River flows ranged from 44.5 cubic meters per second (1570 cfs) in August 1994 to 3832.2 cubic meters per second (135,315 cfs) in March 1993. Saltwater was present in the estuary primarily in the summer and early fall and generally extended 2 to 3 miles upstream. Surface water temperatures ranged from 6-8° C in the winter to 20-24° C in the summer. Summer water temperatures within the saltwedge were generally 5 to 8° C cooler than the surface water temperature. Dissolved oxygen in the estuary was generally greater than 6 to 7 ppm year-round. A sand berm formed at the mouth of the river each year in the late summer or early fall which raised the water level in the estuary and reduced tidal fluctuation so that the Klamath estuary became essentially a lagoon. I hypothesize the formation of the sand berm may increase the production of the estuary and help provide favorable conditions for rearing juvenile chinook salmon.

After 4 months frozen storage at –18 °C cold smoked Atlantic salmon in consumer packages can hardly be differentiated from the freshly smoked product by sensory assessment by an expert panel and cannot be differentiated by consumers.

Fish muscle as food is to be seen as highly perishable. In unfrozen fish, freshness is considered the most important quality attribute. It is well known that there are several biochemical changes that can affect dramatically the texture of fish muscle. Immediately after death the fish texture is soft and elastic. In connection with rigor mortis the fish texture changes markedly. It becomes harder during rigor and after its resolution it becomes softer. This softness increases due to proteolysis during further storage at refrigerated conditions. Texture is a very important indicator for evaluating the quality of fish. Barroso et al. (1997) have recently reviewed mechanical methods in use for texture measurements on fresh fish. Further reviews on texture measurement performed on fish muscle were recently published underlining the importance of texture as quality attribute (Hyldig et al 2001, Coppes et al. 2002). The position along the fish can influence the results and was investigated by several authors (Sigurgis-ladottir et. al. 1999). Different methods have been compared for their ability to differentiate between recently killed salmon and salmon stored on ice for up to 24 days (Veland et al. 1999).

The sprat of the Baltic Sea is not as short-lived as inother Seas probably because fish predator species arerestricted mainly on cod and salmon. Sea bird popula-tions are much smaller and marine mammals are rare inthe Baltic Sea. The sprat stock biomass is fluctuatingstrongly. The fluctuation is mainly influenced by thestock recruitment and is also dependent on the strengthof the cod stock. After a strong decrease during the1980ies sprat catches increased again from 1992 onwardsand reached a peak with over half a million tonnes in 1997. At about the same time the character of the BalticSea sprat fishery changed from catches mainly for hu-man consumption to catches mainly for industrial pur-poses initiated by the fishery of Sweden. The recentrecord high catches of sprat have been possible only dueto the low level of the cod stock of the main Baltic SeaBasins over some years. A sprat fishery on such a highcatch level might cause conflicts with a recovering codstock in future.

Raw fillets of saithe, red fish and salmon were stored over a period of 2 days at 6 to 9 °C before preparing by frying, deep-frying or cooking in a microwave oven. The raw and prepared fillets were tested for bacterial loads, TVBN (total volatile basic nitrogene) and for the sensorial status. It was shown that saithe and red fish started more rapidly to spoil under these conditions than salmon. The fillets showed growing bacterial populations and produced high amounts of TVBN. Sensory changes, especially in flavour and odour, took place but the scores kept in an acceptable range. The investigations indicated that it is possible to store raw fillets for 1 or even 2 days in refrigerator but due to the loss of quality it is recommended to use only really fresh fillets stored in very clean containers. It was further shown that it is very important to heat fillets sufficiently during cooking or frying in order to destroy all microorganisms and to obtain safe and stable meals.

An overview is presented on the M74-Syndrome of Baltic salmon which is known since 1974 and which, since 1992, has caused considerable losses of artificially produced yolk-sac larvae in Swedish and Finnish hatcheries responsible for compensatory salmon stocking programmes. The syndrome only affects offspring of wild salmon ascending the rivers for spawning and not offspring derived from salmon broodstocks permanently kept in hatcheries. The syndrome seems to be restricted to the Baltic Sea where it has been recorded in all of the remaining Swedish (except the west coast) and Finnish salmon rivers as well as in populations of Estonian rivers and the Russian River Neva. In Sweden and in Finland, the syndrome has been recorded in recent years in offspring of up to 80 % of female salmon used for spawning and resulted in a larval mortality of up to 90 %. A nutrition-associated thiamine (vitamin B1) deficiency is considered as primary cause. However, other environmental factors seem to be involved in addition. There is concern that the syndrome constitutes a major threat with respect to the survival of the few still naturally reproducing populations of Baltic salmon.

Deutscher Caviar, made from roe of lumpfish or capelin, gives species specific patterns in protein electrophoresis. The same techniques can be used to differentiate caviar from salmon and trout. The differentiation of sturgeon caviar (beluga, osietra, sevruga) is possible by isoelectric focusing, but not by SDS-PAGE. PCR-based methods of DNA-analysis for identification of the origin of sturgeon caviar are under development.

Colour measurements were performed on smoked Norwegian salmon sides using an objective method based on the CIELab-system. The influence of a freeze/thaw cycle was evaluated. Already after a short frozen storage of 8 hours a signiticant colour difference could be noticed. This was manifested by an increase in lightness as well as in redness and yellowness as result of the freeze/thaw cycle. These colour changes were observable by eyes too.

Examination of 40 time series of multidisciplinary environmental variables from the Pacific Ocean and the Americas, collected in 1968 to 1984, demonstrated the remarkable consistency of a major climate-related, step-like change in 1976. To combine the 40 variables (e.g., air and water temperatures, Southern Oscillation, chlorophyll, geese, salmon, crabs, glaciers, atmospheric dust, coral, carbon dioxide, winds, ice cover, Bering Strait transport) into a single time series, standard variants of individual annual values (subtracting the mean and dividing by a standard deviation) were averaged. Analysis of the resulting time series showed that the single step in 1976, separating the 1968-1975 period from the 1977-1984 period, accounted for 89% of variance within the composite time series. Apparently, one of the Earth's large ecosystems occasionally undergoes large abrupt shifts.

The River Tweed is, in rod-catch terms, the second most important river in Britain for Atlantic salmon, with an annual rod catch of ca.10,000 fish. This article gives an outline of the second edition of the Tweed Fisheries Management Plan, which is defined as "The co-ordination of data collection and analyses with fundamental research into relevant topics to devise management actions that will beneficially affect the future state of fish stocks". Much of the work set down for the present is concerned with setting up recording and measuring systems for fish catches and exploitation rates, and for the operation of monitoring sites for juvenile densities and adult trout and salmon spawning runs. While surveys show the present state of affairs, the collection of records and regular monitoring of sites will mean that in the future, the past will be better known through a longer series of records. Two case histories are described. The first is concerned with setting aims for managing the brown trout of the Tweed and defining the present state of the fishery. The second is an investigation into the spring salmon of the Tweed.

Research laboratories in the Burrishoole catchment have been the focus of salmonid research since 1955. One aspect of the research has been to monitor the number of salmon and sea trout migrating to sea as smolts and returning to the catchment as adults. In the early 1990s it became clear that the smolt output from the catchment had declined over the previous two decades. At about the same time the presence of fine particles of peat silt in the hatchery became increasingly apparent and led to a higher incidence of mortality of young fry. These observations and management difficulties led to a study of silt transport in the surface waters of the catchment, which is described in this article. The authors describe geology, soils, climate and hydrology of Burrishoole before examining the sediment deposition in Lough Feeagh.

At high stream discharges salmonid eggs can he displaced from the gravel and may drift downstream. It has been suggested that developing salmonid eggs may be killed by ”physical shock”, especially during the period before ”eyeing”. Similarly, a progress report by the International Pacific Salmon Fisheries Commission (1966) states that salmonid eggs are most sensitive during the period between fertilisation and blastopore closure. However, it would seem unlikely that this sensitivity actually begins at the time of fertilisation because, in nature, a period, perhaps measured in hours, must occur during which the newly-fertilised eggs are exposed to physical shock during the deposition of gravel over them as a result of the cutting activity of the female fish. The present report describes simple channel experiments designed to answer the two questions: 1. After release of eggs from the gravel, does the process of drifting downstream, which implies some physical shock through movement and impact, decrease the survival of salmonid eggs? 2. Is the survival rate-influenced by the stage of development of the eggs?

This progress report summarises work on NSHEB Mark 10 fish counters which are installed at Woodmill on the River Itchen and Nurseling Mill and Connegar Bridge on the River Test. Counters are evaluated and salmon behaviour regarding the counters examined. The report includes a a list of equipment needed for the efficient running of the project in the future.
