O interesse da indústria de alimentos por produtos desenvolvidos a partir de farinhas acrescidas de proteína não se deve somente às suas características nutricionais, senão também às suas propriedades funcionais e reológicas, as quais definem as suas aplicações comerciais. Este trabalho teve por objetivo avaliar o efeito de parâmetros operacionais do processo de extrusão sobre as propriedades de pasta de misturas de farinha de mandioca e caseína. O processo de extrusão seguiu o delineamento 'central composto rotacional' para três fatores: teor de proteína (2,5 a 9,5%), umidade (14,5 a 19,5%) e temperatura de extrusão (65 a 135 ºC). As misturas antes e após a extrusão foram analisadas no Rapid Visco Analyser (RVA) quanto a: viscosidade inicial, pico de viscosidade, quebra de viscosidade, viscosidade final e tendência à retrogradação. Os resultados obtidos nas misturas antes da extrusão mostraram aumento dos valores de viscosidade com o aumento da concentração de proteína até o ponto central (6%) e, nos teores mais elevados de proteína, ocorreu redução destes. Após a extrusão, observou-se que o teor de proteína foi a variável de maior efeito sobre as propriedades de pasta, seguida pela umidade das misturas.

Weight-age and hip height-age relations of Nellore calves, from birth to 10 months old were fitted using a logistic model including sex and year of birth as fixed effects. Calves and their dams were reared on natural pasture using continuous grazing system. The crude protein content and total digestible nutrients were analyzed for pasture selected by the animals. The weights of the calves were adjusted to 205 days and 365 days. There were no significant effects of sex and birth year on the growth curve parameters, but there were significant effects of sex on hip height. The average weight (a parameter) at 10 months of age was 170 kg and the inflection point was observed at 93.5 days old. When weight-age and hip height-age curves were combined in the same graph, the intersection occurred at 142 days. The number of days to gain 160 kg from birth to 205 days of age (adjusted) and number of days to gain 240 kg from 205 days to slaughter was different between the birth years, which were probably due to the quality of the natural pastures. It is necessary to implement nutritional management strategies such as high quality pasture and/or feeding supplementation for calves once they reach three months of age.

O objetivo deste estudo foi avaliar o rendimento de carcaça e os aspectos físicos e químicos da carne de avestruzes abatidos comercialmente no Brasil. E para isso acompanhou-se o processo de abate e desossa de um abatedouro comercial de avestruzes. Utilizou-se 12 machos e 12 fêmeas, com idade entre 13 e 15 meses, da subespécie African Black. No momento da desossa foram avaliados: o pH, a temperatura e a coloração dos músculos. A composição química e mineral foi determinada segundo metodologias propostas pela AOAC. O pH apresenta diferença significativa em relação aos diferentes músculos. Ao avaliar a coloração dos músculos em relação ao sexo, observou-se que a luminosidade foi maior para os machos, contribuindo significativamente para que a carne fosse mais brilhante que a das fêmeas. Houve diferença significativa em relação ao sexo sobre os teores de proteína bruta e lipídios. O teor de minerais não apresentou diferença significativa em relação ao sexo. Porém, observa-se diferença significativa entre os diferentes músculos avaliados. Conclui-se então que, a rentabilidade das carcaças de avestruzes tem sido comparável à média mundial, demonstrando o empenho entre os criadores em produzir carne de avestruz de maneira competitiva, além da mesma apresentar características organolépticas e nutricionais que agradam ao consumidor.

The objective of this study was to evaluate the chemical composition and dry matter in vitro digestibility of stem, leaf, straw, cob and kernel fractions of eleven corn (Zea mays) cultivars, harvested at two cutting heights. The experiment was designed as randomized blocks, with three replicates, in a 2 × 11 factorial arrangement (eleven cultivars and two cutting heights). The corn cultivars evaluated were D 766, D 657, D 1000, P 3021, P 3041, C 805, C 333, AG 5011, FOR 01, CO 9621 and BR 205, harvested at a low cutting height (5 cm above ground) and a high cutting height (5 cm below the first ear insertion). Cutting height influenced the dry matter content of the stem fraction, which was lower (23.95%) in plants harvested at the low, than in plants harvested at the high cutting height (26.28%). The kernel fraction had the highest dry matter in vitro digestibility (85.13%), while cultivars did not differ between each other. Cob and straw were the fractions with the highest level of neutral detergent fiber (80.74 and 79.77%, respectively) and the lowest level of crude protein (3.84% and 3.69%, respectively). The leaf fraction had the highest crude protein content, both for plants of low and high cuttings (15.55% and 16.20%, respectively). The increase in the plant cutting height enhanced the dry matter content and dry matter in vitro digestibility of stem fraction, but did not affect the DM content of the leaf fraction.

Purpose: To evaluate the effects of mechanical ventilation (MV) of high-oxygen concentration in pulmonary dysfunction in adult and elderly rats. Methods: Twenty-eight adult (A) and elderly (E), male rats were ventilated for 1 hour (G-AV1 and G-EV1) or for 3 hours (G-AV3 and G-EV3). A and E groups received a tidal volume of 7 mL/kg, a positive end-expiratory pressure of 5 cm H2O, respiratory rate of 70 cycles per minute, and an inspiratory fraction of oxygen of 1. We evaluated total protein content and malondialdehyde in bronchoalveolar lavages (BAL) and performed lung histomorphometrical analyses. Results: In G-EV1 animals, total protein in BAL was higher (33.0 +/- 1.9 mu g/mL) compared with G-AV1 (23.0 +/- 2.0 mu g/mL). Upon 180 minutes of MV, malondialdehyde levels increased in elderly (G-EV3) compared with adult (G-AV3) groups. Malondialdehyde and total proteins in BAL after 3 hours of MV were higher in elderly group than in adults. In G-EV3 group we observed alveolar septa dilatation and significative increase in neutrofiles number in relation to adult group at 60 and 180 minutes on MV. Conclusion: A higher fraction of inspired oxygen in short courses of mechanical ventilation ameliorates the parameters studied in elderly lungs.

This study aimed to evaluate the effects of operational conditions of the extrusion process (temperature, moisture and protein content) in production of cassava snacks added of casein, aiming to provide information to the cassava processing industry. The cassava flour and casein were characterized as their chemical components and color. The experimental design followed the central composite rotational design with three factors. The obtained products were characterized as for rate of expansion, specific volume, color and hardness. Data analyses showed that the lower moisture, protein and temperature conditions provided desired expanded products with light color attributes, high expansion and low hardness.

Water contaminants have a high potential risk for the health of populations. Protection from toxic effects of environmental water pollutants primarily involves considering the mechanism of low level toxicity and likely biological effects in organisms who live in these polluted waters. The biomarkers assessment of oxidative stress and metabolic alterations to cadmium exposure were evaluated in Nile tilapia, Oreochromis niloticus. The fish were exposed to 0.35, 0.75, 1.5, and 3.0 mg/l concentrations of Cd2+ (CdCl2) in water for 60 days. Fish that survived cadmium exposure showed a metabolic shift and a compensatory development for maintenance of the body weight gain. We observed a decreased glycogen content and decreased glucose uptake in white muscle. Lactate dehydrogenase (LDH) and creatine phosphokinase (CK) activities were also decreased, indicating that the glycolytic capacity was decreased in this tissue. No alterations were observed in total protein content in white muscle due to cadmium exposure suggesting a metabolic shift of carbohydrate metabolism to maintenance of the muscle protein reserve. There was an increase in glucose uptake, CK increased activity, and a clear increase of LDH activity in red muscle of fish with cadmium exposure. Since no alterations were observed in lipoperoxide concentration, while antioxidant enzymes glutathione peroxidase (GSH-Px) and superoxide dismutase (SOD) were changed in the liver and the red and white muscle of fish with cadmium exposure, we can conclude that oxygen free radicals are produced as a mediator of cadmium toxicity. Resistance development is related with increased activities of antioxidant enzymes, which were important in the protection against cadmium damage, inhibiting lipoperoxide formation. Trigona hypogea, T. crassipes, and T. necrophaga are obligate necrophagous bees that differ from the majority of bees by using animal material instead of pollen as a protein resource. Since T. hypogea does not store protein in cerumen pots, it was thought that glandular secretions were its only larval protein source. This is in contrast to T. necrophaga which stores a yellowish proteinaceous jelly in the pots. Our results show that the larval food of T. hypogea has a higher protein content than the food stored in the pots and that it presents an electrophoretical protein pattern similar to that of the hypopharyngeal gland, indicating that workers add glandular secretions to the larval food while provisioning the brood cells. Thus, it can be suggested that T. hypogea has a provisioning behavior similar to other Meliponinae. The presence of several bands of proteins in the food stored in the pots shows that this species stores carrion mixed with honey in storage pots. Morphological data suggest that both larvae and adults make use of the same foodstuffs. These results also suggest that T. hypogea is more similar to other necrophagous species than it is to T. necrophaga (a more specialized bee).

The protein content of many snake venoms often includes one or more phospholipases A(2) (PLA(2)). In recent years a growing number of venoms from snakes of Agkistrodon, Bothrops and Trimeresurus species have been shown to contain a catalytically inactive PLA(2)-homologue in which the highly conserved aspartic acid at position 49 (Asp49) is substituted by lysine (Lys49). Although demonstrating little or no catalytic activity, these Lys49-PLA(2)s disrupt membranes by a Ca2+-independent mechanism of action. In addition, this family of PLA(2)s demonstrates myotoxic and cytolytic pharmacological activities, however the structural bases underlying these functional properties are poorly understood. Through the application of X-ray crystallography in combination with biophysical and bioinformatics techniques, we are studying structure/function relationships of Lys49-PLA(2)s. We here present results of a systematic X-ray crystallographic and amino acid sequence analysis study of Lys49-PLA(2)s and propose a model to explain the Ca2+ independent membrane damaging activity. Para testar o efeito de seis doses de N (0, 20, 30, 40, 50 e 60 kg/ha) aplicadas em cobertura, no final do perfilhamento, sobre a produção e a qualidade das sementes de Avena strigosa Schreber cv. Comum, foi conduzido um trabalho, em condições de campo, em Terra Roxa Estruturada distrófica, textura argilosa, em duas glebas com diferentes condições de fertilidade de solo. A gleba de menor fertilidade (pousio) apresentava saturação de bases (V) de 35% e a de maior fertilidade (cultivo com batata), 49%; nesta aplicou-se calcário para elevar a V para 70%. Na semeadura, foram aplicados 20, 80 e 40 kg/ha de N, P2O5 e K2O, respectivamente. A adubação nitrogenada em cobertura não afetou nem os componentes da produção, nem a produtividade, nem a germinação das sementes, nos dois experimentos. em condições de maior fertilidade do solo, a dose de 60 kg/ha de N provocou aumento no acamamento das plantas e diminuição do peso hectolítrico. em condições de menor fertilidade de solo, a adubação nitrogenada ocasionou aumentos na produção de massa vegetativa seca da parte aérea, e quando na dose de 60 kg/ha, aumentou o teor de proteína das sementes.
