This research was designed to study the elaboration of chicken loaf with ground meat. The products were elaborated in laboratory scale utilizing broiler meat bought at the market. The products were conditioned in vacuum-packages and stored for 133 days at 5 and 10 degrees C. Chemical, sensorial and microbiological analyses of the elaborated products were performed. The storage temperature affected the total bacterial counts, pH, characteristic aroma and rancid aroma. In both treatments (storage temperature: 5 and 10 degrees C), depletion of nitrites, reaching 24 ppm in 133 days of storage, and exudate formation after 77 days were observed. The storage of chicken leaves, vacuum-packaged, at 5 degrees C for a maximum of 77 days is recommended.

Quantitative estimates of time-averaging in marine shell accumulations available to date are limited primarily to aragonitic mollusk shells. We assessed time-averaging in Holocene assemblages of calcitic brachiopod shells by direct dating of individual specimens of the terebratulid brachiopod Bouchardia rosea. The data were collected from exceptional (brachiopod-rich) shell assemblages, occurring surficially on a tropical mixed carbonate-siliciclastic shelf (the Southeast Brazilian Bight, SW Atlantic), a setting that provides a good climatic and environmental analog for many Paleozoic brachiopod shell beds of North America and Europe. A total of 82 individual brachiopod shells, collected from four shallow (5-25 m) nearshore (<2.5 km from the shore) localities, were dated by using amino acid racemization (D-alloisoleucine/L-isoleucine value) calibrated with five AMS-radiocarbon dates (r(2) = 0.933). This is the first study to demonstrate that amino acid racemization methods can provide accurate and precise ages for individual shells of calcitic brachiopods.The dated shells vary in age from modern to 3000 years, with a standard deviation of 690 years. The age distribution is strongly right-skewed: the young shells dominate the dated specimens and older shells are increasingly less common. However, the four localities display significant differences in the range of time-averaging and the form of the age distribution. The dated shells vary notably in the quality of preservation, but there is no significant correlation between taphonomic condition and age, either for individual shells or at assemblage level.These results demonstrate that fossil brachiopods may show considerable time-averaging, but the scale and nature of that mixing may vary greatly among sites. Moreover, taphonomic condition is not a reliable indicator of pre-burial history of individual brachiopod shells or the scale of temporal mixing within the entire assemblage. The results obtained for brachiopods are strikingly similar to results previously documented for mollusks and suggest that differences in mineralogy and shell microstructure are unlikely to be the primary factors controlling the nature and scale of time-averaging. Environmental factors and local fluctuations in populations of shell-producing organisms are more likely to be the principal determinants of time-averaging in marine benthic shelly assemblages. The long-term survival of brachiopod shells is incongruent with the rapid shell destruction observed in taphonomic experiments. The results support the taphonomic model that shells remain protected below (but perhaps near) the surface through their early taphonomic history. They may be brought back up to the surface intermittently by bioturbation and physical reworking, but only for short periods of time. This model explains the striking similarities in time-averaging among different types of organisms and the lack of correlation between time-since-death and shell taphonomy.

Over 14,000 specimens-5,204 brachiopods, 9,137 bivalves, and 178 gastropods-acquired from 30 collecting stations (0 to 45 m depth) in the Ubatuba and Picinguaba bays, southern Brazil, were compared for drilling frequencies. Beveled (countersunk) circular-to-subcircular borings (Oichnus-like drill holes) were found in diverse bivalves but also in the rhynchonelliform brachiopod Bouchardia rosea-a small, semi-infaunal to epifaunal, free-lying species that dominates the brachiopod fauna of the southern Brazilian shelf. Drill holes in bivalve mollusks and brachiopods are comparable in their morphology, average diameter, and diameter range, indicating attacks by a single type of drilling organism. Drill holes in brachiopods were rare (0.4%) and found only at five sampling sites. Drillings in bivalves were over 10 times as frequent as in brachiopods, but the average drilling frequency was still low (5.6%) compared to typical boring frequencies of Cenozoic mollusks. Some common bivalve species, however, were drilled at frequencies up to 50 times higher than those observed for shells of B. rosea from the same samples. Due to scarcity of drilled brachiopods, it is not possible to evaluate if the driller displayed a nonrandom (stereotyped) site, size, or valve preference. Drilled brachiopods may record (1) naticid or muricid predation, (2) predation by other drillers, (3) parasitic drillings, and (4) mistaken or opportunistic attacks. Low drilling frequency in brachiopods is consistent with recent reports on ancient and modern examples. The scarcity of drilling in brachiopods, coupled with much higher drilling frequencies observed in sympatric bivalves, suggests that drilling in brachiopods may have been due to facultative or erroneous attacks. The drilling frequencies observed here for the brachiopod-bivalve assemblages are remarkably similar to those reported for Permian brachiopod-bivalves associations. This report adds to the growing evidence for an intriguing macroecological stasis: multiple meta-analytical surveys of present-day and fossil rhynchonelliform brachiopods conducted in recent years also point to persistent scarcity and low intensity of biotic interactions between brachiopods and drilling organisms throughout their evolutionary history.

In March 1993, a specimen of Carcharhinus leucas was captured by fishermen on the south coast of Terceira Island, the Azores Archipelago. Its head was recovered and its jaws were preserved. This is the first capture of this species on an oceanic insular shelf in the Atlantic. The distribution of C. leucas in this ocean is commented.

Rhynchonelliform brachiopods were diverse and often dominant benthos of tropical seas in the Paleozoic. In contrast, they are believed to be rare in open habitats of modern oceans, especially at low latitudes. This study documents numerous occurrences of rhynchonelliform brachiopods on a modern tropical shelf, particularly in areas influenced by upwelling. Extensive sampling of the outer shelf and coastal bays of the Southeast Brazilian Bight revealed dense populations of terebratulid brachiopods (>10(3) individuals /m(2) of seafloor) between 24 and 26 S. on the outer shelf, brachiopods are more abundant than bivalves and gastropods combined. However, brachiopod diversity is low: only four species belonging to the genera Bouchardia, Terebratulina, Argyrotheca, and Platidia were identified among over 16000 examined specimens. Brachiopods occur preferentially on carbonate bottoms and include two substrate-related associations: Bouchardia (40-70% CaCO3, weight content) and Terebratulina-Argyrotheca (70-95% CaCO3). All four species display a broad bathymetric range that contrasts with a narrow depth tolerance postulated for many Paleozoic rhynchonelliforms. The most abundant populations occur in the depth range between 100 and 200 m, and coincide with zones of shelf-break upwelling, where relatively colder and nutrient-rich water masses of the South Atlantic Central Water are brought upward by cyclonic meanders of the South Brazil Current (a western boundary current that flows poleward along the coast of Brazil). This is consistent with previous biological and paleontological studies that suggest upwelling may play a role in sustaining brachiopod-dominated benthic associations. The presence of abundant brachiopods in the open habitats of the tropical shelf of the western South Atlantic contrasts with current understanding of their latitudinal distribution and points to major gaps in our knowledge of their present-day biogeography. The ecological importance of rhynchonelliform brachiopods in modern oceans and their role as producers of biogenic sedimentary particles may be underestimated.

Mangoes cv. Keitt were individually sealed in a heat-shrinkable polyolefin film (D-955) and a low-density polyethylene film (LDPE), stored for 0-5 weeks at 12°C and 17°C, and then ripened unwrapped at 22°C. Weight loss of packaged mangoes was significantly lower than that of the non-wrapped control. A sensory panel ranked the mangoes for overall eating quality and appearance. D-955 and LDPE film-sealed mangoes and control had shelf lives of 33, 15 and 7 days at 12°C and 17,10 and 7 days at 17°C, respectively.

The objective of this study was to evaluate the shelf-life of peeled giant river prawn Macrobrachium rosenbergii stored directly in contact with ice (DCI), and without direct contact with ice (WCI). The prawns from DCI treatment showed an intense leaching of non-protein nitrogen (NPN) and total volatile bases nitrogen (TVB-N), thus suggesting that NPN or TVB-N should not be used as freshness indicators of peeled tails stored directly in contact with ice. Loss of flavor and a quick texture tactile decrease with time occurred in both treatments. The shelf-life of peeled tails prepared from M. rosenbergii was 7 days for DCI and 10 days WCI. © 2006 by The Haworth Press, Inc. All rights reserved.

Fresh-cut fruit products, including carambola (Averrhoa carambola L.) have limited marketability due to cut surface browning attributed to oxidation of phenolic compounds by enzymes such as polyphenol oxidase (PPO). The objective of this study was to evaluate postharvest changes of carambola slices in three different packagings. Carambola fruit (cv. Fwang Tung) were picked from the orchard of Estação Experimental de Citricultura de Bebedouro at mature-green stage. Fruit were washed, dipped in NaOCl solution (200 mg.L -1 for 5 minutes), and stored overnight at 10°C. Fruit were manually sliced into pieces of approximately 1 cm. Slices were rinsed with NaOCl solution at 20 mg.L-1, drained for 3 minutes, and packaged in polyethylene terephthalate (PET) trays (Neoform N94); polystyrene trays covered with PVC 0.017 mm (Vitafilm - Goodyear); and vacuum sealed polyolefin bags (PLO, Cryovac PD900). The packages were stored at 6.8°C and 90%RH for 12 days and samples taken every 4 days. PET trays and PVC film did not significantly modify internal atmosphere and the high water permeability of PVC led to more rapid slice desiccation. PPO activity was lower when slices were packaged in PLO vacuum sealed bags, which reduced discolouration and led to better appearance maintenance for up to 12 days.

The shelf life of the organic passion fruit pulp, both fresh and pasteurized at 70C and 90C and stored under refrigeration, was evaluated. The heat treatment did not affect the sensory and physicochemical characteristics of the pasteurized pulps when compared with the fresh pulp, except for the ascorbic acid content. The pulps were also microbiologically safe. The pulps pasteurized at 70 and 90C were suitable for consumption for a minimum shelf-life period of 207 days of storage under refrigeration and for the fresh pulp it was attributed a shelf-life period of 60 to 90 days. The pulp pasteurized at 70C showed higher acceptance scores for all the attributes and purchase intention scores, suggesting a more stable behavior and higher sensory quality. Practical Applications: This work intended to evaluate the influence of the minimum pasteurization on the sensory acceptance and microbiological and physicochemical characteristics of the organic passion fruit pulp stored under refrigeration, with the aim to identify the shelf life. Heat treatment is one of the processes used for food preservation. Lower pasteurization temperature than that used by the Brazilian industries and storage under refrigeration showed to be appropriate for passion fruit pulp quality. In this way, the microbiological, physicochemical and sensory features of passion fruit were preserved. This work can be used as a reference for passion fruit pasteurization, which is able to increase the shelf life of this fruit while preserving its desirable original features. This investigation aimed to study the relative growth, morphological sexual maturity and fecundity of the swimming crab Achelous spinicarpus in a tropical region, on the south-eastern continental shelf of Brazil (25°S). Biometry of all specimens was conducted, including measurements of the cephalothorax, cheliped, abdomen and gonopods. Relative growth was described based on the equation for allometry (y = axb), and size at sexual maturity was determined from inflections in relations involving the cheliped, gonopods (males), and abdomen (females), as dependent variables, related to the cephalothorax width (independent variable). Fecundity was estimated by the gravimetric method. The relations of the length of the chelar propodus and carpal spine to the carapace width without the lateral spines (CW) showed positive allometry in both sexes, with a significant variation in the constant 'b' for males between the developmental stages (juvenile and adult) and the size at maturity estimated at 37 mm CW. In females, the abdomen was most appropriate for the estimate of morphological maturity, which occurred at a smaller size (32 mm CW), with a change in the growth pattern between the stages, passing from isometric (juveniles) to positive allometric (adults). The gonopods also showed different growth rates between developmental stages, in synchrony with the variables of the cheliped. Mean fecundity for the species was 53,984 eggs, with a positive correlation between the number of eggs exteriorized and the size of the female; the equations allowed interconversion between these variables, due to the adjustment of the power function (r2 ≥ 86%). © 2012 Marine Biological Association of the United Kingdom.

O estuário do rio Amazonas é notável na Plataforma Continental do Amazonas, onde a presença das águas fluviais foi detectada, mesmo durante o período da diminuição da descarga desse rio, pelos baixos valores de salinidade e altos valores de nutrientes. Contudo, a presença das águas oceânicas também foi marcante. Em relação às fases do ciclo do nitrogênio, o nitrogênio orgânico dissolvido foi a forma predominante, seguido do nitrogênio total particulado, nitrato, amônia e nitrito. Os dados de clorofila a indicaram uma área eutrófica onde há nitrogênio embora os valores da anomalia do nitrogênio inorgânico dissolvido tenham mostrado que ocorre maior remoção do que adição dessa forma nitrogenada na área em estudo. Os resultados das simulações com o modelo bidimensional MAAC-2D confirmaram que as águas ricas em nutrientes são deslocadas para noroeste (dois núcleos em 2,5°N-50°W e 4°N-51°W), pela ação de uma CNB mais forte durante o período de decaimento da vazão dos rios. No período de vazão máxima, estas lentes de águas ricas de nutrientes distribuem-se próximo de 0,5°N-48,5°W, bem como ao longo da plataforma Amazônica rasa (20m-50m profundidade, 1°N-3,5°N), como resultado do espalhamento da água doce de origem continental.
