Fresh cheeses such as Minas frescal and ricotta are excellent means for undesirable microorganisms to thrive, damaging quality and wholesomeness of these products. In this context, this study aimed at evaluating the contaminating microorganisms in the processing line of fresh cheese, namely Minas frescal and ricotta, of a dairy plant nestled in the city of So José do Rio Preto-SP. The analyses were carried out with the following steps: water, pasteurized milk, curd, mass, whey, palmar surface and coagulation tank, and cheeses with zero and five days of shelf life. Such steps were monitored by determining the MLN of total coliforms and thermotolerants; counting of coagulase-positive Staphylococcus and mesophilic aerobic bacteria; search of Escherichia coli, Salmonella spp. and Listeria monocytogenes. Twelve samples were evaluated in each step. Among the water samples, three are provided with higher values than the ones recommended in terms of mesophilic aerobic bacteria. Three milk samples did not comply with thermotolerant coliforms. The mass samples, curd and whey showed a decrease in the counting for all microorganisms. Both palm surface and coagulation tank showed low counting for all bioindicators. All milk samples showed compliance regarding phosphatase/peroxidase.

In order to assure the maintenance of foods integrity and quality, for avoiding chemical, physical or biological contamination, it is essential to follow the Good Manufacturing Practices (GMP). Among the techniques used for evaluating GMP there is the observational analysis carried out by means of a check-list form application. The present study evaluated the suitability of GMP in a dairy industry producer of Minas fresh and ricotta cheeses, located in So José do Rio Preto, SP, by applying a check-list form. A significant improvement in conformity was evidenced, increasing from 43% to 78%. Neither the blocks related to the handlers nor the existing documentation in the company showed any improvements, as poor conditions unchanged. All of the other evaluated blocks showed significant improvement after applying the GMPrelated corrective measures. Based on these findings, the observance of corrective measures by the dairy industry on dairy products, physical environment, GMP, and handlers training was crucial for assuring the improvements and to increase the product quality and consumers safety.

O Ensino de Ciência do Sistema Terra constitui o eixo articulador de um programa, que integra ações educacionais e de investigação, tendo por objetivo central o desenvolvimento e aplicação de propostas educacionais que incorporam princípios da complexidade. O programa articula as ações educacionais no âmbito de uma investigação-ação. As ações so realizadas em contextos de educação formal e envolvem comunidades escolares da rede pública do município de So José do Rio Preto (SP, Brasil). Os trabalhos e as ações consideram as diretrizes curriculares e as políticas educativas vigentes e seus resultados revelam-se na construção de materiais e práticas polidisciplinares, que exploram as conexões existentes entre as diferentes áreas do conhecimento para ensinar os conteúdos curriculares, em prol de uma educação científica mais efetiva e pertinente. Os resultados, até então obtidos, revelam alguns contributos das ações educacionais e de investigação do programa que, ao potenciar e incentivar o trabalho colaborativo, o diálogo multidisciplinar e a reflexão crítica, favorecem o desenvolvimento de uma percepção mais acurada do significado e alcance da educação científica para a formação do indivíduo e das sociedades.

Frying is a widely used method of preparing food, because it is a very fast and convenient process, and because it provides specific characteristics of color, flavor, odor, and texture, besides having great consumer acceptance. Therefore, the interest in the physiological effects that oils heated at high temperatures can cause to the human body arises. The aim of this work was to analyze the levels of frying used oil alteration in different kinds of foods served at the university restaurant at “Instituto de Biociências, Letras e Ciências Exatas (IBILCE), in So José do Rio Preto-SP. In addition, it aims to make the restaurant aware of the good ways to fry and the commitment of providing good quality food to students and professionals of the Institute. With this purpose, determination of total polar compounds, conjugated dienoic acids, peroxide value, and fatty acid profile were analyzed. Two rapid tests were also used: 3M Fat Monitor and Oil Test kit. The results were compared with limits recommended for the disposal of oils and fats used in frying by the Brazilian Health Surveillance Agency (ANVISA), by other countries, and by other researches. Thus, it was concluded that the university restaurant provides the consumers with fried food of good quality, since none of the analyses showed results above recommended, although there is a need of improvement in the quality control of the oil used, in order to avoid unnecessary costs to the university restaurant.

O cultivo de citrus é uma das principais atividades agrícolas no Estado de So Paulo, sendo realizado em solos gerados a partir de diferentes materiais que conferem, naturalmente, variações na constituição química e mineralógica destes, além de poderem, ou não estar contaminados por metais tóxicos oriundos dos métodos defensivos. Com o objetivo de quantificar os atributos químicos e os teores de metais pesados do solo foi realizado um estudo comparativo entre solos assim cultivados, das regiões das cidades de Mogi Guaçu e So José do Rio Preto. Este estudo envolveu a determinação do pH do solo, análises volumétricas para quantificação dos teores de matéria orgânica, Ca+2, Mg+2 e Al+3 , espectrofotômetro de chama para o estabelecimento dos teores de Na+ e K+ e espectrofotômetro de absorção atômica para determinação dos teores de Cobre, Zinco, Cádmio, Cromo, Níquel e Chumbo. O solo da região de Mogi Guaçu apresentou-se mais ácido devido, provavelmente, a uma maior concentração de Al3+. Apresentou, também, teores mais elevados de matéria orgânica. Os solos de ambas as regiões apresentaramse deficientes em Na+ , K+ , Ca+2 e Mg+2 . A análise realizada para os metais pesados mostrou uma elevada quantidade de Níquel observada nas amostras de solo da região de So José do Rio Preto e, Níquel e Cobre, nas de Mogi Guaçu, com valores classificados como de prevenção, de acordo com os Parâmetros Orientadores da CETESB (2005). Estes teores de alerta devem-se, muito possivelmente, à adição exagerada de defensivos agrícolas.

This paper aims to present the representations of the working world of high school students, the State School Prof. Dr. João Deoclécio da Silva Ramos, Distrito de Talhado, So José do Rio Preto (SP), through the use of virtual media, specifically the Blog de Aula – Mutirão de Sociologia (www.mutiraodesociologia.com.br). Understanding the representations of the world work enables students to think of a profession which identify themselves, and stimulate reflection as future professionals. The virtual media, especially blogs, allow students to express their ways of living and thinking the world of work. In the context of the city of Rio Preto, is especially relevant these representations of the world’s rural work, so this project is to collaborate in the development of research concerned with the description and understanding of processes that involve relationships between work, education and rural.

This paper describes a project called “Development of educational workshops on text reading, interpretation and writing in elementary school”, which took place at the So Paulo State University (UNESP) with financial support given by the PROEX-UNESP (Pro-Rectorate of Extension). This project aimed to organize and run educational workshops on reading, interpreting and writing different genres for students enrolled at a public elementary school in So José do Rio Preto, So Paulo state. The analysis of the texts produced by the students unfolded the project into two essential approaches. In the first one, it was possible to identify problems and inaccuracies in language usage, which was the starting point to prepare the minicourses that would be offered. These mini-courses promoted a deep involvement of undergraduate students (in Portuguese Language and Literature) with the practice of Portuguese teaching at the school. In the second one, 5.468 texts, which were produced during the four-year project, founded researches whose goal is to describe processes in which there is a relation between speech and writing, and are based on a theoretical framework that values the multiplicity of literacies associated with social practices experienced by the students. Thus, this extension project aimed to articulate the service to the external community – in this case, public school students - to the internal community – undergraduate students in Portuguese Language and Literature.

Este texto tem por objetivo apresentar as representações do mundo do trabalho dos alunos do Ensino Médio, da Escola Estadual Prof. Dr. João Deoclécio da Silva Ramos, Distrito de Talhado, So José do Rio Preto (SP), através do uso de mídias virtuais, especificamente o Blog de Aula - Mutirão de Sociologia (www.mutiraodesociologia.com.br). Compreender as representações de mundo trabalho possibilita aos alunos pensar em uma profissão a qual se identifiquem, além de estimular a reflexão enquanto futuros profissionais. As mídias virtuais, especialmente os blogs, possibilitam aos alunos expressar seus modos de viver e pensar o mundo do trabalho. No contexto da cidade de Rio Preto, é especialmente relevante aquelas representações do mundo do trabalho rural, de modo que este projeto vem a colaborar na elaboração de pesquisas interessadas na descrição e compreenso de processos que envolvem relações entre trabalho, educação e mundo rural.
